But that’s exactly how our stay at Castlemartyr Resort began: with Gerald, the best concierge we've ever encountered, who whisked us around the grand hotel before personally escorting us to what can only be described as the most sumptuous suite I have ever seen, The Presidential Suite. Draped in rich fabrics and bathed in soft natural light, the suite is a masterclass in five-star living. The vast bedroom opens into an equally majestic bathroom, with a deep marble bathtub fit for royalty, and your very own private sauna. This very suite has hosted some of the world’s most iconic names: Kim Kardashian and Kanye West, Bill Clinton, and Bruce Springsteen, to name just a few. The suite feels more like a luxurious private a, complete with a lounge area perfect for relaxing, panoramic views over the front lawn and manicured grounds, and the most comfortable bed and pillows you can imagine. The charm of Castlemartyr goes beyond celebrity glamour. The estate itself is steeped in history, dating back to the Knights Templar. The castle ruins on the grounds stand as a striking reminder of its storied past. Beyond the grandeur of the old castle, the resort masterfully blends heritage with modern comfort. The newer wing of the hotel, seamlessly connected to the historical structure, houses luxurious rooms, the serene spa, and elegant dining areas. The spa is a haven in itself. A glass-walled pool overlooks the gardens, inviting you to float while admiring nature. A cold plunge pool, Jacuzzi, and sauna await, making it the perfect reset. In the morning, breakfast was another highlight. A glazed banana bowl with berries, alongside a traditional cooked Irish breakfast and a continental buffet filled with Irish favourites like soda bread and fresh local produce. Dining options abound, Canopy offers elevated seasonal dishes with a creative edge, while just a short walk into the village leads you to The Hunted Hog, a characterful, traditional pub with beamed ceilings, roaring fireplace in cooler months, and sun-drenched beer garden in summer, it’s a year-round haven for both locals and visitors. The Hunted Hog serves up a hearty, locally sourced menu, with generously portioned favourites like chicken supreme, beer-battered fish and chips, and ever-changing seasonal specials that highlight the best of local produce. The atmosphere is lively yet laid-back, especially on live music nights when the pub really comes into its own. Behind the bar, the staff are as warm and inviting as the setting itself. Back in the hotel, evenings invite you to unwind in one of the elegant bar lounges, perhaps savoring a French Martini as we did in the Knights Bar, a unique space steeped in history. Once part of the old church when the building was a Catholic boarding school, the bar retains a sense of reverence and charm, with its vaulted ceilings, tall windows and soft lighting creating an intimate ambiance. Alternatively, you might choose to curl up in the quietude of the library with a good book, where a gentle serenity settles over the space, offering the perfect end to a day of exploration. Outdoors, the resort unfolds in green, lush layers. Horses graze peacefully in paddocks, herons stalk gracefully along serene ponds, and birdsong provides a natural soundtrack to the tranquil setting. The manicured fairways of the golf course stretch invitingly across the landscape, offering both challenge and beauty to enthusiasts. Adding a hint of glamour, it’s not uncommon to see golfers descending by helicopter, arriving in style to enjoy a round amid such stunning surroundings. Here, nature is part of the magic, and every walk, whether through woodland trails or along the course, brings a new discovery to savour. During our visit, the resort played host to a Gormley art exhibition, which included works from legends like Damien Hirst, Andy Warhol, and Bridget Riley. To be surrounded by both natural and artistic beauty was truly enriching. Castlemartyr Resort offers more than just a luxurious escape; it offers a connection to history, to nature, and to Ireland itself. With impeccable service, remarkable settings, and that rare feeling of true welcome, it’s a place that lingers in your memory long after you leave. 16KR TRAVELAjourney more than a dinner, welcome to Terre, a two Michelin star restaurant at the Castlemartyr Resort near Cork, Ireland, where each moment is designed to draw you deeper into the imagination and precision of Chef Vincent Crépel. This is no ordinary meal. It is theatre. It is ritual. It is storytelling told through flame, smoke, sea, and soil. From the outset, the experience is immersive. You don’t simply arrive at your table, you are led through hidden doors and hushed corridors into a low lit corridor, where anticipation begins to build. A pause. Then, the kitchen: all stainless steel and golden glow, where the team greets you with a cheer of ‘welcome’ and the first bite at the chefs table, a delicate, umami-rich "biscuit" of 36-month Parmesan with a drop of Method & Madness whiskey setting the tone. From this point forward, the outside world disappears. Chef Vincent’s tasting menu is masterfully paced and evocatively composed. It moves between land and sea with a confident, painterly hand: Ballycotton Blue Lobster arrives wrapped in hibiscus casing, gently spiced with Irish horseradish and bright citrus cream. Otoro tuna belly is a jewel like composition with trout roe, radish, and a whisper of Irish true seaweed. A5 Wagyu from Miyazaki Prefecture is treated with reverence, paired with barley koji to highlight its rich, melt-in-the-mouth texture. Every element is intentional, including the evolving backdrop. Courses unfold across a sequence of rooms, each more atmospheric than the last, from the intimate chef’s counter to the serene elegance of the main dining room. The mood shifts with the menu, building layers of narrative and intimacy. There’s emotional intelligence behind every dish. A sublime chawanmushi blends stone crab and scallops in a bone broth, crowned with caviar. Later, Pyrénées Spring Lamb, a nod to Vincent’s French roots, which arrives with black rice vinegar jus, stued morels, and umami-rich cavolo nero. Then, a perfectly restrained crescendo of desserts: Umeboshi sorbet with jasmine rice and Timut pepper, followed by a crème caramel infused with yuzu sake and salted lemon. Each petit four including a melting Charentais melon bite closes the meal with quiet poetry. What defines Terre is the feeling, the flow of the evening is seamless, choreographed with the subtlety of a seasoned conductor. From service to plating, everything speaks of respect for the ingredient, the guest, and the land itself. And at the heart of it all is Vincent Crépel, a chef who has brought the best of his global influences and poured them into Ireland’s soil. Long after the last dish is cleared, Terre stays with you, a memory crafted in layers, like the menu itself, this is one of my favourite dining experiences to date. 17Terre is led by French chef Vincent Crepel, whose culinary journey spans the Basque Country, Singapore, Paris, and now, Ireland. Born in Luz Saint Sauveur in the French Pyrenees, Vincent’s love of food was sparked in his grandmother’s kitchen, filled with the aromas of homemade pasta and sauces. With a mother from Florence and a deep appreciation for food as culture, he was drawn to cooking early, leaving school for culinary training and apprenticeships across Europe and Asia. After honing his craft at Spain’s Arzak and Singapore’s Restaurant André, Vincent opened his own Paris restaurant, Porte 12, blending French technique with SE Asian flair. Seeking a fresh challenge post-pandemic, he partnered with Loh Lik Peng of the Unlisted Collection to launch Terre at Castlemartyr. Inspired by Ireland’s seasonal landscape and rich produce, Vincent embraced open-fire cooking, collaborating with local artisans and repurposing whiskey barrels from nearby Midleton Distillery for smoke-infused dishes. Terre opened in September 2022, and within just 16 months, earned two Michelin stars—a testament to Vincent’s precision, creativity and reverence for ingredients. Terre offers a multi-sensory journey beginning with champagne at the chef’s table and a kitchen tour, followed by exquisitely crafted tasting menus that combine classical French technique with SE Asian notes and Irish ingredients. A standout tea pairing menu and curated wine list add further depth. At Terre, Vincent’s international experience, commitment to sustainability, and passion for storytelling through food come together to create a truly exceptional dining destination. Introducing: VINCENT CREPELL Meet Kevin O’Shea: THE GARDENER BEHIND TERRE’S BOUNTY Under the stewardship of Head Gardener Kevin O’Shea, the private garden at Terre has flourished into both a botanical haven and a creative catalyst for the kitchen. With a passion for horticulture and encyclopedic plant knowledge, Kevin plans each planting with long-term vision and care. Since joining Terre in early 2022, he has curated a garden that goes far beyond the typical kitchen patch. From Vietnamese coriander and lemon balm to lemongrass and heirloom vegetables, every plant reflects Ireland’s climate and the restaurant’s culinary ambition. More than a productive space, his garden is a place of experimentation. Meandering paths, vibrant seasonal blooms, and a focus on soil health create a living reflection of Chef Crépel’s ethos, sustainable, beautiful, and always evolving. Thanks to Kevin’s dedication, Terre’s garden is more than a backdrop, it’s the green heart of the restaurant.

We finished with a delicate panna cotta, which was the ideal light ending on a warm day. Earlier this year we spent the day helping our friends source local wines for their new restaurant, with Heppington high on the list—a name that kept coming up from people in the know. The sun was out, the Kent countryside was showing off, and each stop brought something new to taste, discover, and talk about. Naturally, we missed the turning twice, maybe three times, but eventually, Heppington Vineyard appeared as if it had been waiting for us all along.No signs, no grand gates, just a quiet lane leading us toward a home and vineyard tucked into the landscape. Henry greeted us at the door with a smile that made us feel instantly at ease. Moments later, we were in his garden, glasses of wine in hand, the sun above, the vines stretching out behind us like a sea of green, and the sound of birds flitting between the leaves. Then, Gill joined us, Henry’s wife—warm, welcoming, and effortlessly hospitable, appearing with a platter of snacks including slices of salami studded with walnuts, as if we were old friends dropping by rather than visitors on a vineyard tour. Henry, still practising as a barrister, hasn’t stepped away from the world of law just yet—but the vineyard offers a striking contrast to the courtroom. There’s a calm to him, a grounded presence. He talks about the soil not with technical terms, but with quiet reverence, as if tending the vines isn’t just a profession, but a kind of homecoming. A summer afternoon at the VINEYARD’S EDGE HOW HEPPINGTON STOLE THE SHOWWe tasted six wines that day, each one opened with care, each pour feeling like a welcome gesture, not just a tasting. The Pinot Noir was delicate yet structured—fresh berries, bright notes of raspberry sorbet and a cherry finish. Their still Rosé, pale as moonlight, was crisp and floral, and bright and perfect summer drink. The Classic Cuvée is balanced, layered, quiet in its complexity with fresh apple and citrus. The Sparkling Rosé bubbled with joy, capturing the essence of a sun-dappled afternoon in every sip. But it was their Chardonnay, that for us stole the show, it is fresh, almost mineral, with citrus notes that cut through the warmth of the day. But it wasn’t just the wine that made the afternoon so unforgettable—it was the experience itself. Heppington doesn’t have polished tasting rooms and isn’t open to the public, there are no rehearsed presentations here. It’s about sitting in a family’s garden, surrounded by their life, their love for the land, and their craft. It’s about feeling the warmth of the sun on your skin and hearing the rustle of the leaves as bees drift lazily from flower to flower. That afternoon became less about research and more about connection. We were reminded that great wine isn’t just shaped by grapes or barrels—it’s defined by place, by people, and by the quiet patience behind every bottle. It’s about the courage to take risks and the generosity to share the outcome. Gill modestly said they’d been “very lucky,” but it quickly became clear that their success is no accident. That kind of luck is the product of hard work, dedication, and the boldness to do things differently. You don’t just stumble into it, you shape it, bottle by bottle. The labels at Heppington are works of art in their own right—elegant, earthy, and deeply rooted in the land that inspires them. Each design draws from terre, the layers in the ground, echoing the geology beneath the vines. They are as thoughtfully crafted as the wines themselves—no surprise, then, that they’ve caught the eye of more than just wine lovers, earning awards for both design and content. We left Heppington with bottles in our arms, but more than that, we left with a deeper appreciation. We had discovered something rare, not just in the wine, but in the experience itself. A moment of pure joy, of wonder, of gratitude.I went home and immediately ordered a case of Heppington’s Chardonnay and Pinot Noir, which are firmly on my summer hit list.

Kaiseki originates from Kyoto and represents the pinnacle of seasonal Japanese cooking. Each dish is thoughtfully balanced, visually exquisite, and deeply rooted in nature and harmony. It is not just about what is served, but when and how. The rhythm of the seasons guides every element. The lunch Gozen set menu captures this philosophy in every detail. It begins with sakizuke, a small seasonal appetiser similar to an amuse bouche. On this visit, it was a jewel like square of beetroot tofu, silken in texture and topped with a light wasabi an sauce, delicate, slightly earthy, and refined. Next came the Gozen tray: a vibrant arrangement of sashimi, gleaming with freshness, served with perfectly steamed rice and delicate pickles. Then followed Owan, a clear, warming broth of white fish and seasonal vegetables. The meal continued with a plate of prawn and vegetable tempura, crisp and feather light. Then came the final savoury course, charcoal grilled Kagoshima wagyu soy steak, sliced with precision and seared to perfection. Rich and flavourful, it retained remarkable delicacy, indulgent without ever being heavy. The wine pairings are as carefully considered as the dishes themselves. Instead of relying solely on familiar European labels, Roketsu oers a refined mix of Japanese sake, biodynamic wines and light bodied varietals that echo the seasonal nuance of each course. RISE is a place to let yourself go through music and movement. “It’s about experiencing the mental and physical benefits of dancing in a group,” Mark explains. “There’s no alcohol, no phones on the dancefloor, and we encourage minimal talking during the session so dancers can be fully present with the music. We start with a warm-up, then dance to a live DJ set, and end with a short guided relaxation to ground everyone.” Q What inspired you to create it? Mark’s love for music and dance goes back decades, including years spent drumming at club nights across the UK and abroad. “Dancing with a drink in hand was the norm, but a friend invited me to a sober ecstatic dance in London—and I walked out feeling totally exhilarated. I knew I wanted to recreate that, but in a way that felt more accessible and true to me.” That vision became RISE: high-quality music, uplifting vibes, and an inclusive, alcohol-free space. Q How do you curate each session? “I work with a small group of DJs who completely understand what RISE is about. Because it’s all about the dancing—not chatting or drinking—the music has to be exceptional from the first beat to the last. We play a mix of House, Disco, Funk, Soul, and Hip Hop. I also play live percussion throughout, which really lifts the energy and helps people feel the rhythm.” Q How has the community responded? “I was nervous before the first event—what if no one danced? But everyone just went for it, and that energy has stayed strong.” Since launching in Folkestone, RISE has grown to Whitstable, with plans to expand to Dover, Rochester, and even London. Mark’s also developing corporate wellness versions of RISE. “I spent years in the corporate world and know how stressful it can be. Dancing together can be an amazing release.” Q Tell us more about the bongos—how did that start? “I bought my first drums in my teens and taught myself to play. I spent time in Brazil in my 20s, jamming with DJs there. After a break to focus on my career, I picked up the drums again after moving to Folkestone and haven’t stopped since. Playing at Café del Mar in Ibiza last year was a real highlight.” Q What would you say to someone nervous about attending? “Just come and give it a go. You don’t need alcohol to have a good time. You just need a safe space, good music, and the willingness to move. I visited Margate as a child in the '80s and '90s, it was always a highlight, but I fell in love with it when I returned as an adult in 2013. We originally started off by inviting friends and members of the community over for potluck dinners. Then we got a vintage JBL sound system and a pair of 1210s, and we’d play records during and after the food. Eventually, it would turn into a bit of a dance party. More and more people caught wind of it [and] with every knock at the door, a new face would arrive. Eventually, in 2015, we decided to make it a bit more official and open up to the wider public. What was the original vision? Our vision was to provide a safe, welcoming community hub. We’ve taken inspiration from small social spaces in Berlin, New Orleans, and the DIY art and music-centred warehouse gatherings of Hackney Wick. Venues like the Total Refreshment Centre, Passing Clouds, Bethnal Green Working Men’s Club- and nights like Beauty and the Beat and Lucky Cloud- have all informed what we do. What does a standard week look like for the arts club? It's very varied. Depending on the week, often we will have a queer knitting group, life drawing, various other social or community groups will use a space. We have dedicated goth nights, Morris dancing and folk gatherings, experimental electronic events, then we usually have a disco, world music, Latin Dance parties on a Saturday. How would you describe the community that’s grown around the venue? Very mixed and diverse. I believe community spaces, social clubs, art hubs, night clubs play an essential role in building unity- they set the foundation for connection. We need places where we can be loud, be free, get silly and express ourselves in physical movement. Spaces we can showcase, experiment, find like minded buddies and meet people that expose us to new ideas and ways of thinking. What are your favourite community focused businesses in Kent? We are very lucky to have so many great organizations in the area; Arts Education Exchange, Ark, CAMP, Margate Pride, Quench, Tom Thumb, it’s a wealth of creativity here. From intimate dinners to flooded dance floors, Margate Arts Club has grown into a vital hub for creativity and connection. With community at its core, it continues to carve out space for joy, expression and resistance in a time where it feels more important than ever to support local spaces that give so much back to their communities.by Sophie Serveld

On a sunny day, there’s no better place to be than their beautifully designed outdoor dining space. Thoughtfully laid out with plenty of room to breathe, the terrace is lined with rustic tables, fragrant planters, and a BBQ area that comes alive in the warmer months. The garden alone is worth the trip. But what really elevates a visit here is the food, and the people behind it. The menu is grounded in quality, much of it sourced from The White Hart’s very own Homestead Farm, where they raise their own livestock with care and respect. The result is meat with a richness and integrity you can taste on the plate. Guiding you through it all is General Manager and Sommelier Paul, charming, relaxed, and incredibly knowledgeable, especially when it comes to Kentish wines. He treats each dish like a conversation, offering pitch-perfect pairings that transform a great lunch into a memorable one. We began with a welcome glass of Kent, England, 12%, which set the tone: elegant, crisp, and local. The small plates are designed to share but demand your full attention—pistachio hummus was earthy and vibrant, while the smoked cheddar mac and cheese bites delivered satisfying crunch and depth. Burrata with salsa verde and soused peaches sang with summer sweetness, while radish with whipped goats' curd mousse was fresh and delicate. The beef teriyaki tortilla added a moreish, savoury contrast. These came paired with two standout wines: Domaine Preignes les Vieux, Vermentino Sur Lie 2023, zippy and textured, and the subtly fruity Villa Blanche, Picpoul Noir IGP 2024. For mains, the roasted Homestead lamb rump, sourced straight from the farm, which was cooked to a perfect blush, served with a clever tartlet of courgette, red onion and ricotta, and bright piquant peppers. The Herdade de Rocim, Mariana 2023 alongside it brought balance and structure. Equally impressive was the roasted cod, served with a green pea sauce, a crisp squid and vegetable fritter, and a hit of smoked pimento oil. We finished with a raspberry & passionfruit crème brûlée—zesty, smooth, and utterly indulgent. There’s a generosity to everything The White Hart does, from its stunning setting and top-notch produce to the warm welcome and thoughtful pairings. It’s a place to settle in, savour the view, and stay a little longer than planned, which you may well do as they have rooms too, and with beautifully appointed rooms on site, you can do just that. From the moment we arrived, greeted by Mooli’s warm smile and easy charm, it was clear The Gallivant was something special. He showed us around like we were old friends, past flickering fires and into inviting spaces layered with calm, creamy interiors and the kind of low-key luxury that feels immediately restful. Rooms are relaxed and restorative, with linen-draped beds, books on the bedside, and a deep, luxurious bath that practically demands a long soak post-beachwalk. Thoughtful touches abound: a pot of night-time tea waiting for us before bed, and yoga offered each morning in a soft-lit space. At 4pm, there’s homemade cake in the snug, which is a fire warmed room with cosy corners, shelves of books, and a stack of board games to while away the hours. By 5pm, it’s wine o’clock, and guests gather for a relaxed tasting featuring Kentish favourites and other well chosen pours. The bar itself is beautifully stocked, with a wine list that leans heavily and proudly on Kentish bottles. Breakfast at The Gallivant begins with a beautifully presented breakfast tray, and a beautifully curated buffet style offering. It includes a generous bowl of natural yoghurt, topped with a medley of stewed seasonal fruits and their house muesli, rich in seeds and grains. Alongside this, guests are offered a choice between charcuterie and cheese, featuring local cured meats and artisan wedges, or smoked salmon. It's a breakfast that feels both curated and nourishing, with just the right balance of indulgence and simplicity. Whether enjoyed with freshly brewed coffee or a pot of loose-leaf tea, it’s a slow and satisfying start to a morning by the sea. The menu shifts with the weather, and on our visit, a sudden nip in the air welcomed the return of a spiced butternut squash dish—warm, comforting, and deeply delicious. We began with the soup and grilled asparagus topped with a poached egg, a deceptively simple combination elevated by precision. The asparagus retained its snap and sweetness, while the egg—perfectly cooked—spilled its golden yolk like a sauce, binding everything together with indulgence. It was a dish that embodied the kitchen’s ethos: fresh, focused, and unfussy. A special of stone bass followed, served with seasonal greens. The fish was seared to crisp-skinned perfection, its delicate flesh flaking apart under the fork. Each component on the plate had a clear purpose, showcasing a clean, assured hand in the kitchen that knows when to let great ingredients speak for themselves. The fillet steak was another highlight, charred on the outside, meltingly tender within, and paired with a robust glass of red that brought warmth and depth to the table. Rich without being overpowering. The carefully curated wine list oers a thoughtful selection that perfectly complements the menu’s flavours, while no visit would be complete without trying Sig’s margarita, a refreshing twist that adds a lively element to the meal. For dessert, we shared two that were each memorable in their own way. A plum ice cream which was bright, tart, and silky with late-summer intensity, the fruit’s natural sweetness sharpened by a hint of acidity. Alongside it, a strawberry panna cotta oered a lighter finish: creamy, and floral, a soft exhale to end the evening. The interior of Harry’s is bright and inviting, filled with natural light and an abundance of plants that bring a sense of easy coastal calm. The walls are adorned with framed vintage swimsuits (a personal collection gathered over the years by owner Sigrid) which adds a playful, nostalgic touch. Harry’s feels both coastal and cocooned, intimate and calm. The service is polished yet warm, and there’s a genuine sense that the team cares deeply about what they’re doing, from the kitchen to the floor.
