4Editor’s LetterOn the first anniversary of our very first issue of The Kent Review Magazine, let me start by thanking everyone who has supported our first year: the many businesses that have supported us in Kent and readers whose feedback has been invaluable to us, and another crucial part to our progress this year. The magazine has gone from strength to strength with increased circulation, readership and content. I am excited to see what the next year holds for us. Last month, we attended the Made in Kent Business Awards 2023 as a finalist in the Start-up Business of the Year Award, receiving the silver award. It is an honour to be recognised for all the dedication and hard work that has gone into the magazine over the past year. This month, we bring you our restaurant recommendations in Kent, including Frank's Restaurant and Mussel Bar in West Malling and the recently opened Lido Bon Vino in Sandgate. Autumn is a great time to take a break with our Autumn Hideaway feature this month, showcasing some of our favourite unique places to stay in Kent, and we have some great recommendations for Halloween events with the kids this half term. 6Franks Restaurant and Mussel Bar is a hidden gem in the picturesque market town of West Malling. Situated on the high street in a 16th-century historic building with an open log fireplace and exposed beams, you probably wouldn't expect to find a restaurant specialising in every combination of mussels you could dream of. Frank's has a main menu with starters such as pan-fried scallops, courgette fritters, squid, and crab cocktails. We tried the grilled octopus with chorizo and potatoes in a heavenly spicy sauce and the scallops with chorizo, samphire, courgettes, and garlic, which was just as divine. The food is not fancy, but just simple good food, fresh, with great combinations of ingredients and flavour. An extensive main menu includes steak options, beef bourguignon, lamb liver and bacon, and seafood options such as monkfish wrapped in bacon and lobster thermidor. I feel it would not be right to visit here without trying the mussels, which are available in over 20 different options. You can choose from mussels served in a classic pot, or platters, which are mussels served on a platter dish with garlic sauce and bread crumbs, or the brie and bacon platter, which is cooked in a rich sauce with the brie melted over the entire plate, incredibly indulgent, probably very calorific but also one of their best dishes. We also chose the mussels with blue cheese, wine, cream and bacon, which was just as indulgent and decadent. I can't wait to go back and try the 'bloody mary' mussels personally; a classic combination of tomato, Worchester sauce and vodka, but there are so many other great options to choose from, such as green or red Dining in Kent Our favourite places to eat this Autumn by Tiffany VivienneRESTAURANT REVIEWFrank's Restaurant and Mussel BarThai, tomato, garlic and white wine, or leeks with wine, brie and cream. Desserts include creme brulee, warm chocolate fudge cake, and strawberry and biscoff waffles, and they have a good selection of wine and beers. Portions are generous, and everything on the menu is very reasonably priced, with all mussel dishes being priced at £19.00, which is good value for the portion size and ingredients. 7Lido Bon Vino is a new Italian Restaurant from the team behind Hythe Wine Cellar and Bon Vino, Maltby Street. Situated on Wellington Terrace Sandgate at the former Sandgate Hotel, Lido Bon Vino serves traditional Neapolitan pizzas from Ruota di Carretto, where the dough goes through a 36-hour fermentation process, making it an unforgettable flavour and texture and also making it easier to digest. Pasta dishes are also served daily, including fettuccine contadina with sausage, garlic, mushrooms and cream, and lasagna or fettuccine bolognese, to name a few. Starters include a Caprese salad, perfect if you want to enjoy something lighter and for a sweet tooth, an array of Italian desserts including tiramisu and pistachio cheesecake. When it comes to Italian cuisine, simplicity is key, as well as good quality ingredients, something Lido Bon Vino understands well. A team of Italian chefs heads up the kitchen, and everything is cooked fresh to order using the finest imported Italian ingredients, including parma ham and the finest Fior di latte buffalo mozzarella. The venue has one of the most amazing sea views with open doors and an outside terrace, meaning you can enjoy your meal and glass of wine while gazing out to sea, with views across to France from the terrace. It is so refreshing to enjoy authentic Italian food locally in such a beautiful location. The atmosphere is always serene here - a relaxed vibe combined with a buzz of excitement for the views and delicious food. At the same time, the sea breeze circulates through the airy, recently renovated rustic interior of reclaimed wood. One of the things that I love is how they have converted this venue, which unfortunately became a bit of a drinking spot in the years before, into an elegant, unique Italian restaurant where you can only enjoy a glass of wine, spritz or beer only with your food, keeping this venue focused on their ethos of dine and wine, making it a family-friendly place to visit. 8The first thing that strikes you when you walk in is the vintage photobooth; however, we are quickly told that it is not a functioning booth but is cleverly concealing behind the scenes of this unique restaurant. For starters, the Kale patta chaat is a must. Other starters/ small dishes include tandoori hariyali king prawns, which are marinated overnight in coriander and mint, resulting in a vibrant green-coloured dish, and the goat seekh kebab is also another popular choice. Every dish is unique here. They are at the risk of sounding cliche, ‘trying to do something different.’ We tried the butter chicken, which came highly recommended. This was a delicious creamy dish which is perfectly complemented by a choice of biryani dishes. Desserts include saffron milk cake, which is served with a custard. Their signature dish here is Lobster Dum Biryani, picture perfection for Instagram, with a lobster head emerging from the pastry. Most dishes here are served on the classic 70’s Royal Albert crockery that most of us have probably owned, inherited or remembered as a child. It brings a sense of familiarity and comfort and works quite well with their brightly coloured dishes. Empire Empire is, after all, an ode to the disco era in the 70s, complete with a Bollywood playlist from their custom Marshall Jukebox. It is a great addition to Notting Hill, and an individual concept with some unique dishes and flavours. 9METHOD 1. Curry paste first – put it all in a jug that the blender stick fits into (I hope you’ve still got the milkshake container yours came with!) then blitz away. Use water to help it blitz – otherwise it’s too dry; 2. Blitz until the onion is puree – it won’t take much longer than 10 seconds, there’s nothing hard in this curry paste; 3. Cook off the curry paste – this is to make the spice flavours bloom and cook the onion, garlic and ginger. Also, to cook out the water that we added to help the paste puree; 4. Cook off tomato paste, add the tomato paste and tomato pulp/puree, and cook that for 2- 3 mins to get rid of excess water 5. Add coconut milk and remaining sauce ingredients 6. Simmer for 5 minutes to reduce and bring the flavours together 7. Add fish and prawns in the last few minutes – it only takes 3 to 4 minutes to cook 8. Garnish with fresh coriander and green chillies, then serve over basmati rice!GOAN FISH CURRY This fish curry comes to you by way of Goa, a little pocket of Indian paradise that’s all about the sun, surf, sand and excellent seafood! With a deeply aromatic tomato and coconut based sauceINGREDIENTS CURRY PASTE: 2 1/2 tbsp Kashmiri chilli powder 1 tbsp coriander 2 tsp cumin 1 tsp turmeric 1/2 tsp fenugreek powder 3/8 tsp ground cloves 6 cloves garlic , minced 1 tbsp fresh ginger , finely grated 2 tbsp tamarind puree 1/2 red onion , chopped 6 tbsp water (plus more, as needed) CURRY: 3 tbsp vegetable oil 1/2 tsp black mustard seeds 1/2 red onion , cut in half again and thinly sliced 1 tbsp tomato paste 2/3 cup canned tomato or passata 2/3 cup water 400ml/ 14oz coconut milk 1 1/4 tsp salt 1 1/2 tsp sugar 1/4 tsp chilli powder 2 long green chillies , cut into half lengthwise and deseeded, optional 1 tomato , cut into 8 wedges then into 2.5cm / 1" chunks 600g firm-fleshed white fish , cut into 3cm cubes 6/8 king prawns GARNISHES / SERVING: 1/4 cup fresh coriander/cilantro leaves Finely sliced green chillies, optional Basmati riceThe Kent Review - October - Issue 6.qxp_Layout 1 26/09/2023 09:53 Page 9

It’ll be no easy feat to find, as it hides amongst over 60,000 pumpkins and squash, but for those who complete the challenge there will be a reward. The lucky finder will instantly become loaded….loaded that is with pumpkins, as the finder will win a wheelbarrow full of pumpkins for free! Pick Your Own Pumpkin, near Ashford is opening this October welcoming families across Kent to put on their wellies, get outside and go stomping through the patch to find their perfect pumpkin for Halloween. Each year Pick Your Own Pumpkin support a local charity. This year they held a vote on social media, and their followers chose Club AUsome as the charity for 2023. Club AUsome are based in Kent and support families with children who have disabilities or need additional learning support. 14Love To Cook DELICIOUS AUTUMN RECIPES TO TRY AT HOME Inspired by the Sicilian combination of sweet lamb, dried wild mint and crushed chilli flakes. INGREDIENTS 1½ tablespoons garlic infused olive oil, 4 spring onions (finely sliced), 1 teaspoon dried mint, 1 teaspoon dried oregano, 5 sprigs of rosemary ( leaves picked), ¼ teaspoon crushed chillies, 250 grams minced lamb, 1 x 400 grams can chopped tomatoes, 1½ teaspoons condimento morbido, A splash of white wine, pinch of Maldon sea salt flakes, grinding of pepper, 250 grams pappardelle. METHOD 1. Put a large pan of water on to boil for the pasta, and warm the garlic oil in a small, heavy-based pan that comes with a lid, and cook the spring onions, stirring for a minute or so. 2. Sprinkle in the herbs and chilli, add a splash of white wine and stir again before adding the meat. Cook for a couple of minutes, stirring, until it loses a bit of its pinkness. 3. Add the tomatoes, condimento morbido, salt and pepper, stir and bring to the boil. Partially cover with the lid and simmer for 20 minutes. 4. Cook the pasta (approx 8 minutes), and once cooked and drained, dress with the lamb ragù. Sprinkle with fresh rosemary or mint to serve. Make a comforting bowlful of chicken noodle soup with warming Vietnamese spices. INGREDIENTS 1 tbsp vegetable oil, 3 shallots, sliced, 3 garlic cloves, sliced, 1 lemongrass stalk, chopped, 2.5cm piece ginger, sliced, 3 star anise, 1 cinnamon stick, 1 tsp coriander seeds, ¼ tsp Chinese five spice, ¼ tsp black peppercorns, 1 tsp brown sugar, 1 tbsp fish sauce, 1.5 litres chicken stock, 3 large chicken breasts (skin on if possible) To serve: 450g rice noodles, 4 spring onions, finely sliced on an angle, 1 carrot (ribbons), handful of coriander, chopped, small bunch mint leaves chopped, 1 red chilli, thinly sliced (optional), 2 tbsp crispy onions 1 lime, cut into wedges. METHOD 1. Heat the oil in a small frying pan on medium heat and gently cook the shallots and garlic until caramelised and golden brown (about 4-5 mins). 2. In a large saucepan, add the shallots and garlic, lemongrass, ginger, star anise, cinnamon stick, coriander seeds, Chinese five-spice, peppercorns, sugar, fish sauce, chicken stock and chicken breasts. Cover with a lid and bring to a very gentle simmer for about 15 mins. 3. Cook the noodles until just cooked throug. Rinse under cold water to prevent them sticking together. Drain and divide between serving bowls. 4. Strain the soup through a sieve. Discard the spices. Shred the chicken and return soup to the pot and bring to a boil. Season to taste with more fish sauce if needed. 5. Italian Pinot Gris clones went through 100% malolactic conversion before spending five months on the lees. The result of the short bottle ageing gives rise to a really interesting wine.On the nose, you get pear and blossom. The light bread aromas make it reminiscent of a col fondo. The palate brings to life the pear alongside some stone fruit. Like all Yotes Court wines, it has lovely acidity. The bread notes create a rich mouth feel. This is a really interesting and fun traditional method of sparkling wine. It uses one of my favourite grapes grown in the UK, and I love the playful nature of it.Perfect as an aperitif. I CACCIAGALLI ZAGREO 2019 FIANO ROCCSMONFINA IGT Campania, Italy. 100% Fiano. As skin contact wines go, there aren’t many more elegant than those from I Cacciaglli. This is a white grape that has been macerated (left on its skins). This method results in a tannic white wine. This is an organic and biodynamic wine grown from volcanic in-nature soil. The grapes are vinified and aged in clay amphora. This leads to such wonderful mouth feel. On the nose, there is a cherry and almond floral aroma. Green apple and rich stone fruit follow. The palate is robust and rich. The tannins are light and lead to elegant stone fruit. The acidity keeps the wine fresh. It is a wine with layers, and the finish is long. This is perfect for our Ricotta and Spinach Cannelloni at our Lido Bon Vino restaurant at the Sandgate Hotel. GIOVANNI ROSSO LANGHE NEBBIOLO DOC Serralunga D’Alba, Italy. 100% Nebbiolo. This is a classic example of Nebbiolo from the Langhe in Piedmont. It is all about the terroir in the vineyard. The wine is kept in contact with the skins by pumping the wine over them daily. The aroma is bright red fruit with violets and roses. Spice and cedar come through from the oak aging in 50hl casks.The palate is vibrant with high acidity and elegant tannins. The red fruit shines with each sip. This is high-quality structured wine. Perfect with roasted meats like pork or lamb. It will also work well with cheese. Converted by master craftsmen, this beautiful property has been styled beautifully, ensuring guests have a comfortable and indulgent stay. The open-plan living space has a vaulted ceiling and is heavily beamed. There is underfloor heating on the ground floor and a wood-burning stove to provide extra cosiness. 36Strictly Come Dancing winner Kevin Clifton will be making his panto debut as The Marlowe brings Aladdin to life in its ever-popular festive bonanza. Joining him will be children’s TV icon Phil Gallagher (Mister Maker) and, of course, Marlowe legend Ben Roddy. Boasting pyrotechnics, acrobatics, dancing, and a flying carpet, The Marlowe is again co-producing the show with Evolution Productions with whom they won Best Pantomime at the 2022 Pantomime Awards. Opening in Canterbury on Friday 24 November and running until Sunday 7 January 2024, The Marlowe’s signature high-quality production will also feature West End stars Alistair So (Matilda, The King & I) and Lauren Chia (Disney’s Aladdin, The Sound of Music) as Aladdin and Jasmine. Unlike pantomime newcomer Kevin Clifton, Ben Roddy’s role this year marks his 14th consecutive appearance in The Marlowe’s pantomime, with his 1000th performance taking place this year. It will also serve as a reunion between himself and the BAFTA-nominated Phil Gallagher, A.K.A. Mister Maker, with whom he shared the Marlowe stage in 2018’s Cinderella. Professional dancer Kevin Clifton is best known for competing in seven series and five finals of BBC One's Strictly Come Dancing, before he was crowned Strictly champion alongside partner Stacey Dooley in 2018. His world-class dancing skills have translated into a successful career as a West End performer, recently starring in critically acclaimed productions including Singin’ In The Rain and Strictly Ballroom: The Musical, where he visited The Marlowe during the UK Tour. Kevin said, “I'm absolutely over the moon to be returning to The Marlowe for Aladdin! This will be my first ever pantomime, and I'm so excited that I get to play the baddie! It'll be totally different from anything I've done before, and I can't wait to revel in all the boos and hisses. “After performing in Canterbury with Strictly Ballroom and Rock of Ages, I knew I had to come back. Canterbury is going to be the perfect place to soak up the festive cheer! Get ready for some villainous dance moves and a whole lot of fun.
