We are often asked, 'Where can I take my dog in Kent?' so we have gathered up the best restaurants and pubs to bring you the best dog-friendly venues (p.8). We have loved trying different places in Kent for our Friday Night Curry feature, taking us away from the traditional takeaway to find something fresher and more authentic. With Valentine's Day just around the corner, we have some great present ideas on our wishlist (p.20) that you might even want to treat yourself to if there is no significant other in your life. 5Head Chef Dave brings us his take on Winter comfort with a fine dining twist. Each course is well curated with unique flavour combinations, including a seared Rye Bay scallop with caper and raisin puree, pickled red grapes, samphire and kohlrabi slaw. This is just one of the six courses on the Chef Tasting Menu, which we had the pleasure of experiencing this week. The pub has recently been taken over by its warm hosts, Gemma and Kristian, and they are passionate about celebrating everything Kent has to offer. 6Kent’s only Grain to Glass Distillery in the heart of Chatham's Royal Dockyard Copper Rivet Distillery can be found in the beautifully converted 'Victorian Pump House no.5', a vast and stylish industrial building on a scenic corner of Chatham Dockyards. From the outside, it is a behemoth of class and commerce. The vaulted ceilings, high windows, and steel beams within the luxuriously decorated restaurant leave an impression of its industrial past. But beyond the restaurant, behind an inconspicuous door, there is a bustling production area teeming with shining machinery, copper stills, oak barrels, and (most importantly) tasting areas, proving the pump house is as alive and productive as ever. Our visit began with a meal in their restaurant, 'The Pump House'. After a lovely South African sparkling rosé as an aperitif, we tucked into a beautiful meal. My partner Millie tried the vegetarian options, and I tried the seafood options that day. Our starters were Butternut squash with 'XO' sauce, burnt squash puree and raw kohlrabi, and I had hand-picked Devon Crab with brown crab custard, confit shallot and wild rice. Both dishes were delicious. For my main course, I chose Wild Scottish Cod with Chatham-ite rarebit, smoked mussels, roast celeriac and cauliflower puree, and Millie loved the Confit BBQ leek with olive oil mash, crispy yeast, and pickled mushroom. I couldn't help but try a glass of their champagne - 'Marquise de Sy' Grande Reserve was a real treat. The food was fresh, vibrant, flavourful, and artistically presented; the extensive wine list featured some excellent English wines, such as Gusbourne Blanc de Blanc. We were delighted with our dining experience. Then, we embarked upon the whisky blending experience. We were led through a small door by the bar and found ourselves in an impressive distillery of towering stills, huge fermentation tanks, rows of barrels, and jars of ingredients lining the walls. The tour was very informative; I was most impressed that they are one of only a few distilleries in the UK that craft their spirits from grain to glass, and they source their grain from within 15 miles, making their whiskies and gins unique - a real taste of Kent. Then, we were invited to the tasting room, where we sampled three distinctive whisky batches that had each been crafted, processed, and aged in different ways. Then, we blended them to create our bespoke whisky - a bucket list event for me, a singular experience. I can't speak highly enough about the quality of the event and the staff who ran Copper Rivet Distillery - Dining, Bar and Whisky Blending by Ethan Dunlop Wright and Millie Geldardit. Bring a notebook; you will receive an absolute masterclass in whisky making. Go and enjoy the excellent food, lovely wines, and fantastic cocktails, all with a gorgeous view of Chatham Dockyards' crisp blue water - with a perfect sunset view over the bay, I might add - and do not miss the outstanding whisky blending experience. Bouji vibes and a menu to match It's not often you will find a restaurant in Kent with bouji Dubai vibes and a menu to match. Sekkoya is located in Canterbury's new riverside development, complete with moody lighting, plush booths in rich colours, and a dramatic emerald bar, giving it a very fancy feel. The new venue in Canterbury's new riverside development is chic and glamorous, while the menu follows suit with a pan-Asian theme. Friendly and attentive staff welcome you through the doors into the bustling, high-energy venue. Their menu has been carefully curated by chef Jay Morjaria and is cooked on a Japanese robata grill with a sharing concept. Their impressive and creative cocktail list includes split base Tommy's margarita carefully constructed with tequila, mezcal, lime, chile pepper, coriander and agave syrup; this is a great aromatic cocktail to awaken your senses before delving into your first dishes, amongst many other classics with a pan Asian twist. Some of Sekkoya's smaller plates include sweet soy-coated chicken wings, prawn tempura, Thai salad or grilled lamb skewers cooked on the robata grill with a ginger and black bean marinade. Sekkoya has a great selection of bao and dumplings; our favourites include truffle vegetable gyoza with a truffle soy dressing, a pan- Asian combination that goes surprisingly well. Bao buns include iso aubergine, pulled chicken, peppered beef, or our firm favourite, the duck bao with spicy mayo and pickles. Sekkoya, Canterbury by Tiffany Vivienne You can opt for a side of truffle and parmesan fries if you are feeling lavish or the tenderstem broccoli with soy garlic sauce for a healthy alternative, as well as rice dishes. Larger plates cooked on the robata include BBQ lemongrass and chilli broccoli, miso aubergine, drunken pork belly, and masala cod. We loved the miso lamb chops in a spicy chipotle miso marinade or the truffle soy rib eye with truffle butter and soy glaze, which come served with fries and Padron peppers; this may be a better option if you are not a keen sharer! There is a selection of pasta and noodles, including miso truffle tagliatelle or seafood xo linguine, which proves to be very popular. If you have room for dessert, try the mochi sundae or yuzu cheesecake in keeping with the pan-Asian theme. You'll want to swag up your usual attire when dining here, as the crowd certainly dress to impress. With a 1.30 am closing time on a Friday and Saturday night, this is bound to be Canterbury's new destination for dining, with an afterparty to boot. 12Situated on bustling Berwick Street in Soho, in a small entrance that could easily go unnoticed, Fatt Pundit deceptively offers 60 covers within its narrow walls, which adds to its exclusive feel coupled with its trendy concrete interior and bustling atmosphere. We loved the concept here of Chinese-Indian' Hakka' style food, originating in Kolkata, which traces back to Hakka KR LONDONChinese traders who settled in the city in the late 1700s when it was the capital of the British Empire in India. Hakka cuisine tends to use more dry stir-frying, steaming, and braising techniques than other Chinese cuisines, leading to a richer, more intense flavour. I suggest their Guava Chilli Sour (Himalayan salt, red chilli, guava + Tequila) to start with to wet your taste buds - their take on a spicy margarita. We start with their famous momos- chicken with soy, garlic, spring onions, beef with leeks, red chilli, coriander, and two dipping sauces. Vegetable dishes are something they do well here, and we opt for the crackling spinach with sweet yoghurt, dates and plum sauce, with pomegranates, I could not get enough of this dish; it felt so wholesome but indulgent at the same time. The sticky sesame vegetables were just as good; my fellow diner was convinced this was a beef dish; I would say more of a Korean chicken vibe- but again, very moreish. The main dish not to be missed is the Malabar monkfish curry with saffron butter and fresh coconut; this would be a great lighter option if you wanted to skip the indulgent starters and appetisers. We were told we must try the lamb chops - not a favourite of mine usually, but these were melt-in-your-mouth lamb chops with a black bean 'dust' and stone flower masala rub, very tantric on the taste buds! If you stick around for dessert, try their famous snowflake gelato sizzling brownie. I would quite like to end up here after a few drinks in Soho or a trip to the theatre. 13SLOW COOKED LAMB CURRY WITH TOMATOES, GARLIC AND GARAM MASALAMughlai Karahi GoshtMETHOD 1. Mince the garlic and use a pestle and mortar to grind the garlic and ginger to a rough paste, cover the lamb with this mixture and set aside for an hour or overnight if you have time. 2. In a large saucepan, heat the oil on a medium heat. Add the lamb chunks and fry for 5 minutes stirring well to seal the lamb. Add the sliced tomatoes and cook for a further 8 minutes until they soften. Add the onions and chilli powder and stir, cooking for a further 3 minutes. Season to taste, lowering the heat and simmer with the lid on for 30 minutes stirring halfway through the cooking process. 3. Add the greek yoghurt to a small bowl and mix in the ground spices; coriander, turmeric, cumin and black pepper. Add this to the karahi gosht and stir well making sure the yoghurt does not split. Continue simmering on a low heat and with the lid half over the pan, cook the lamb for 45-50 minutes stirring half way through cooking making sure it doesn’t stick to the bottom of the pan. 4. Turn the heat off and while it’s still warm add the garam masala, coriander, mint and ginger slivers. 5. Serve with roti, naan or rice.INGREDIENTS 1 kg leg of lamb on the bone cut to bite size pieces 5 garlic roughly chopped 1½" ginger roughly chopped 4 tbsp vegetable oil 500g tomato thinly sliced 200g onions thinly sliced 1½ tsp kashmiri chilli powder (or mild paprika) Salt to taste 2 tbsp greek yoghurt 2 tsp coriander powder Pinch turmeric powder 1 tsp black cumin seeds coarsely crushed ½ tsp black pepper coarsely crushed 1/4 tsp garam masala powder 2 green chillies slit lengthwise (optional) 1 tbsp chopped coriander leaves 1 tbsp chopped mint leaves ½" ginger slivers for garnish

14Plant Based Living THINKING OF GOING PLANT-BASED THIS JANUARY?'Veganuary' is an annual campaign to encourage and support people worldwide to go vegan for January. It is the most popular time of year to try a plant-based diet, as many health benefits are associated with making these changes, including weight loss. Interest in plant-based diets has grown significantly in recent years, with vegan, vegetarian and flexitarian diets becoming more popular. It has been estimated that 2-3% of the UK population follow a vegetarian or vegan diet. WHAT ARE THE BENEFITS, AND ARE THEY WORTH IT? Eating a plant-based diet improves your gut's health, so you can better absorb the nutrients from food that support your immune system and reduce inflammation. Studies that have explored the relationship between plant-based dietary patterns with an emphasis on plant foods have shown them to be linked with reduced risk of heart disease, strokes and type 2 diabetes compared to less healthy dietary patterns. Scientific research also indicates that healthy plant-based diets can reduce the risk of disease by, for example, lowering blood pressure, reducing blood cholesterol and promoting a healthy body weight. Plant-based diets tend to be higher in many essential foods, such as fruit and vegetables, whole grains, nuts, seeds and pulses. As a result, these diets tend to provide higher amounts of dietary fibre whilst being lower in saturated fat and free sugars than other dietary patterns. WHAT ARE THE DRAWBACKS TO A PLANT-BASED DIET? The two primary risks associated with a plant-based diet are inadequate protein intake and vitamin and mineral deficiencies, particularly vitamin b12, iron and calcium. If plant-based diets do not include foods such as fish, poultry, or low-fat dairy products, it can be challenging (though not impossible) to obtain the right amount of protein. As long as you ensure that you are replacing your protein with foods high in vitamin b12, iron and calcium, a plant-based diet may be a great way to help you get in shape and feel better this January. 15INGREDIENTS 1-cal oil spray 1 large courgette, finely diced 100g smoked tofu, finely diced ½ tsp smoked paprika 1 ½ tbsp balsamic vinegar 250g sachet cooked puy lentils 1 red onion, finely chopped 1 medium roasted red pepper from a jar (not in oil), about 85g, sliced good handful pea shoots or rocket METHOD 1. Spray a non-stick pan with 3 sprays of oil and add the courgettes, tofu and smoked paprika. Cook for a few minutes to soften the courgettes. Stir in the balsamic vinegar and allow to sizzle and reduce. 2. Tip the lentils, onion and pepper into a bowl and toss gently to break up any clumps of lentils. Add the tofu and courgettes, and toss again. Will keep for 2 days in the fridge. 3. Scatter over the pea shoots just before serving. High Protein Plant based recipes to try at homeINGREDIENTS 1 onion, chopped 2 cloves garlic, crushed 1 red chilli, chopped olive oil spray 2 tsp ground cumin 1 tsp hot smoked paprika 1/2 tsp (optional) chilli powder 200g quinoa, rinsed and drained 600ml vegetable stock 400g tin chopped tomatoes 400g tin black beans, rinsed and drained 400g tin chickpeas 1 small avocado, sliced coriander leaves, to serve METHOD 1. Fry the onion, garlic and red chilli in a spray of olive oil until soft, then add the spices, including chilli powder (according to taste and spice level) 2. Tip in the quinoa, stock, tomatoes, black beans,and chickpeas, and season well 3. Cover and simmer for 30 minutes until the quinoa is tender and the sauce has thickened. With so many of us now choosing to eat more seasonally and sustainably rather than crash dieting, it is important to find a healthy way to eat that fits in with a busy lifestyle rather than giving up certain foods or eating in a restrictive way which can result in fatigue. Here are some tips to upgrading your diet in 2024... TRY NOT TO RESTRICT CERTAIN FOODS TOO MUCH By trying to increase the range of foods you eat, rather than cutting out ‘bad’ foods, you are more likely to maintain a healthy weight and lifestyle, rather than feeling you have ‘fallen off the wagon’ if you choose to eat food that you enjoy. MAKE A 10-A-DAY RULE Use herbs to pack out a plant-based diet. You will get a broader range of phytonutrients if you aim to eat 10 varieties of plants in a day. An easy way is to make a hearty soup of cabbage, carrots and onions, spiced up with garlic, ginger and turmeric, and seasoned with a mix of several dried herbs.’ Experiment with fennel for digestive health, and sage and rosemary for a sharper mind. REWRITE YOUR SCHEDULE Spending Sunday prepping the week’s dishes is a good way to ensure you stick to a healthy diet – but it’s not for everyone. Pre-planned meals can also lead to feelings of deprivation and obsessing about the foods you can’t eat. Cooking for two days ahead often works better than trying to micromanage your whole week. KNOW YOUR NATURALS Not all ‘natural’ foods wear a halo and not all processed ones are bad. Vegetables can be superior if they’re frozen at the point of picking; tinned pulses such as butter beans are a low-fat source of fibre and plant proteins. Remember, too, any fruit or veg blitzed in a blender has its cellular structure altered so it releases more “free” sugars – the type we’re supposed to limit. Variety is king. You’ll benefit most if you eat a variety of fresh, frozen and tinned fruit and veg. PUT OFF YOUR BREAKFAST There’s evidence skipping breakfast facilitates a healthy overnight fast. ‘Start by eating 30 minutes later than usual, then slowly push it back. Our gut flora needs a period of not digesting food to carry out other tasks, such as running a healthy immune system. Decreasing your eating window to eight or 10 hours a day will help balance your blood-sugar levels. SEVEN FOODS FOR YOUR DIGESTIVE HEALTHGood Gut HeathGood gut health is linked to fewer sick days and lower risk of allergies and autoimmune conditions. Finally, even if you put the healthiest food into your body, if you don't have a healthy intestinal lining to digest it, you won't get all the benefits of what you are eating. For most people, a balanced and gut-friendly diet is the easiest and most effective way to keep our microbiome in check. Eating probiotic and prebiotic sources, such as fermented foods, in appropriate doses has also been seen to cause specific changes in the structure of our gut microbiota and may benefit our health. 1. Yoghurt Live yoghurt is an excellent source of friendly bacteria. Yoghurt drinks can also contain high-live bacteria that are good for the gut, far more than you would find in a regular yoghurt; make sure you read the labels for sugar content. 2. Miso Miso is made from fermented soya beans, plus barley or rice, and contains a range of goodies such as helpful bacteria and enzymes. Miso is considered to have both prebiotic and probiotic qualities. Soybeans have the highest level of oligosaccharides compared with any other food, and the oligosaccharides in soybeans have been found to promote the growth of probiotic bifidobacteria in the colon. 3. Sourdough This is very fashionable, but there's a good reason for that. Made by fermenting the dough, it's more digestible than regular bread, and its energy is released slowly. It makes fantastic toast too. 4. Kimchi Kimchi is a fermented food, which makes it an excellent probiotic. The same lactobacilli bacteria in yoghurt and other fermented dairy products are also found in kimchi. Consuming the so-called "good bacteria" in kimchi can help you maintain a healthy digestion. 5. Olive oil Gut bacteria and gut microbes like a diet of fatty acids and polyphenols. These are found in olive oil. Studies have shown that it helps reduce gut inflammation. Some studies have also found olive oil beneficial in easing indigestion problems. 6. Kombucha Kombucha is a fermented tea drink thought to have originated in Manchuria that is full of probiotic good bacteria. 7. Ginger Fresh ginger can help in the production of stomach acid, and it stimulates the digestive system to keep food moving through the gut. Add fresh grated ginger to soups, stews, smoothies or stir-fries. Pour boiling water on grated ginger to make refreshing ginger tea. 27

The wine has been on its lees for 72 months and has no added sugar (dosage) after the wine is disgorged. The wine has aromas of wild strawberry, pomegranate, floral notes and biscuit. On the palate, the bubbles just dance on your tongue. The wine is clean and crisp. The aromas come through on the palate and are simply delicious. Try this with semi-hard cheese, shellfish or a fish risotto. PALAZZO TRONCONI, GIZZIELLO, 2020, FRUSINATE IGP Lazio, Italy, 100% Lecinaro This is perfect for those looking for a wine that leans more towards the natural style. This is a Metodo Ancestrale, meaning that the second fermentation takes place in the bottle, but the wine is not disgorged. The fine lees sit in the bottle and the wine reacts with it until the bottle is open. This type of wine has a textural nature to it. The wine is biodynamic and uses spontaneous fermentation using indigenous yeast. There is no fining or filtration. On the nose, it has a fruity and floral perfume. The palate has a silky texture and a light bubble. The acidity is bright, and the red fruit is rich. A wine to try with vegetables, including soups. WOODCHURCH ROSÉ BRUT 2018 Woodchurch, Kent, 60% Pinot Noir, 20% Pinot Meunier and 20% Chardonnay This is a local gem. A traditional method of sparkling wine from Woodchurch. The wine was made by Dermot Sugrue, an English wine maverick. On the nose, there is strawberry sorbet and tangerines. There is a delicate note of biscuits. On the palate, the red fruit sings strawberry, redcurrants and cranberry. The acidity is bright and electric. A vineyard well worth visiting if you want to see more of English winemaking.
