Each course is a meticulously crafted journey through a landscape of flavours and textures, showcasing Sargent's masterful touch and unwavering commitment to quality. It's the kind of deal that makes you marvel at your good fortune, leaving you wondering how such a feast can be had without breaking the bank. The five course menu starts with bread service- honey, rosemary and sea salt focaccia served with Mark’s signature ‘ Markmite’ made with leftover sourdough bread trimmings whipped through with softened butter, along with smoked cods roe, and wagyu beef dripping. Hors d'oeuvres on the menu include The Omelette Arnold Bennett, which is nothing short of a decadent marvel, a dish that flirts shamelessly with the boundaries of opulence. Imagine this: tender, flaky smoked haddock mingling harmoniously with sweet, succulent Folkestone lobster, all nestled within the soft, golden folds of a perfectly cooked omelette. As if that weren't enough to make you swoon, a silky poached egg crowns the ensemble, its yolk ready to cascade and enrich the already luxurious tableau. And then, the pièce de résistance, a lavish spoonful of Oscietra caviar, its briny pearls providing a burst of indulgence with every bite. It's the kind of dish that makes you feel like royalty, a sumptuous symphony of flavours that lingers long after the last morsel has been savoured. The lasagne of seafood is equally decadent- layers of delicate pasta interlace with the freshest seafood, enveloped in a rich sauce aux crustacés. A fondue of tomatoes adds a luscious, tangy sweetness, Mark Sargent's Restaurant MS is a triumphant ode to the art of dining. The ambience strikes that elusive balance between relaxed and refined, humming with a wonderfully intimate buzz. It's a space where every detail, from the meticulously crafted dishes to the softly glowing decor, speaks of an unpretentious sophistication.

7perfectly complementing the dish, crowned with a regal king prawn and a decadent dollop of caviar. ( because why not!) I can recommend the shoulder and rump of lamb for entrees - The lamb, tender and succulent after being marinated for 12 hours, offers a rich, earthy depth that is beautifully complemented by the sweetness of beef tomato and the smoky warmth of red pepper. Crisp asparagus spears add a vibrant, fresh contrast, while the truffle dauphinoise is pure decadence, each creamy, aromatic bite an indulgence in itself. A dollop of tapenade provides a salty, olive-infused punch that ties the whole dish together, creating a plate that is as harmonious as it is indulgent. The bouillabaisse at MS Restaurant is a seaside serenade, a bowl brimming with the bounty of Folkestone's waters. Cod, mussels, and prawns luxuriate in a fragrant broth, nestled alongside are tender, grilled saffron potatoes, kale brings a touch of earthy greenery, and a generous dollop of aioli crowns the creation. The dessert menu at MS is a refined indulgence that leaves you longing for more. The RMS trifle is a nostalgic delight, with layers of lemon cream and a genoise sponge that melts in the mouth. For chocolate lovers, the marquise of 70% Callebaut chocolate paired with espresso ice cream is sheer decadence. The mousse of crème fraîche and lime, accompanied by a refreshing champagne sorbet and a delicate peanut tuile, offers a sophisticated, zesty finale. Each dessert ensures a perfect end to your dining experience. The wine list at MS Restaurant is nothing short of a vinous treasure trove, a thoughtfully curated selection that speaks to both the novice and the connoisseur. Each bottle is chosen with a discerning eye, offering a journey through the world's most celebrated vineyards and lesser-known gems. From the crisp, flinty notes of a Chablis that perfectly complements the seafood dishes to the robust, velvety richness of a Barolo that stands up to heartier fare, there's a wine for every palate and occasion. The list is a testament to Sargent's commitment to excellence, with each label promising to enhance the dining experience. If you fancy a cocktail, I can recommend my personal favourite here - the French 75. The service at MS Restaurant is nothing short of exemplary. The staff are polished and professional yet warm and personable, ensuring that every guest feels like the most important person in the room. As for the decor, it's a study in understated elegance—think muted tones, bare plaster against dark green tones, soft lighting, and plush furnishings that exude a quiet sophistication. The Brian Aris photography adorning the walls of MS Restaurant adds a layer of intrigue and sophistication, transforming the dining space into a veritable gallery. Each portrait, captured with Aris's unmistakable flair, exudes a narrative depth that draws you in, while the black-and-white compositions of celebrities and icons bring a touch of glamour. It's a nod to culture and style, a perfect complement to the culinary artistry on the plates. 10On Thursday, 20th June 2024, I found myself at the Firepit Restaurant, ready to embark on a culinary adventure orchestrated by Chef John Bingley. With 24 years of gastronomic prowess under his belt, Chef John Bingley has honed his craft to an art form, transforming simple ingredients into gastronomic masterpieces. His approach is both innovative and reverent, drawing on classic techniques while infusing each dish with contemporary flair. At the Firepit, Bingley's creativity knows no bounds—whether it's the delicate balance of flavours in his caramelised black cod or the inventive twist on traditional katsu curry ramen, every plate tells a story. His meticulous attention to detail and passion for the craft are evident in every course. The evening commenced with canapé katsu curry ramen, an intriguing start that teased the taste buds with its fusion of flavours. Paired with the effervescent Chapel Down Brut NV, it set a sparkling tone for what was to follow. Next came the voodoo shrimp with sugar snap peas, a dish that danced on the palate with its harmonious blend of sweetness and spice, beautifully complemented by the Solara Orange. The tuna tartare is a new dish to the menu, including a perfectly balanced combination of olive oil, coconut, and soy sauce to compliment the raw tuna; a delicate sake accompaniment really elevates the course. The beef fillet tataki is another old-time favourite - a beef fillet served rare, seared on the outside, and covered in a truffle ponzu, which cures the beef. The caramelised black cod with sticky Thai fried rice is a favourite of mine inspired by the classic Nobu dish, its silky, sweet richness balanced perfectly by a crisp Chapel Down Bacchus. The pastrami-cured chicken was an unexpected delight and another new dish on the menu - one that I think will be extremely popular. The chicken is perfectly smoked, and the rich buffalo flavours and blue cheese are a great American-inspired combination; this was served with fire-roasted cauliflower, another popular dish from the menu and a wine pairing of Albariño, the bright acidity cutting through the rich, smoky flavours with finesse. And just when I thought the evening couldn't possibly get any better, the raspberry millefeuille arrived, a perfectly executed delicate dessert paired with the luscious Royal Tokaji Late Harvest. To round off the evening, we were handed chocolate truffles to take away – a parting gift that ensured John Bingley's magic lingered a little longer. In sum, this is not just a meal but an exquisite journey through the mind of a culinary genius. Chef Bingley's creations are a testament to his skill, passion, and the very essence of haute cuisine. If you ever have the chance to dine in his world, grasp it with both hands – your taste buds will thank you. This allows the grates to get hot enough to create those coveted grill marks and helps prevent sticking. Aim for a medium-high heat for most grilling applications. 3 OIL THE GRATES: To prevent sticking and ensure easy flipping, lightly oil the grill grates before adding any food. Use a brush or a paper towel dipped in oil to coat the grates evenly, or spray with a non-stick cooking spray. 4 CHOOSE THE RIGHT FUEL: Whether you prefer charcoal, gas, or wood pellets, choose a fuel that suits your cooking style and personal preference. Each type of fuel has its own unique flavor profile and requires different techniques for optimal results. 5 USE DIRECT AND INDIRECT HEAT: Master the art of using both direct and indirect heat on your grill. Direct heat is ideal for searing meats and creating grill marks, while indirect heat is perfect for slow-cooking larger cuts of meat or delicate items that might burn easily. 6 INVEST IN QUALITY MEAT AND INGREDIENTS: Start with the best-quality ingredients you can find, including fresh meats, seasonal vegetables, and flavorful marinades and seasonings. Visit your local butcher or farmer's market for the freshest options available. 7 DON'T OVERCROWD THE GRILL: Give your food plenty of space on the grill to ensure even cooking and prevent overcrowding. Avoid stacking or overlapping items, and leave some room between each piece for air circulation and proper heat distribution. 8 PRACTICE PATIENCE: Resist the urge to constantly flip or move your food around on the grill. Let each side cook undisturbed to develop a nice sear and caramelization before flipping. Use a meat thermometer to ensure meats are cooked to the proper internal temperature. 9 LET IT REST: Once your food is cooked to perfection, allow it to rest for a few minutes before serving. This allows the juices to redistribute and ensures a juicier, more flavorful end result. 10 EXPERIMENT AND HAVE FUN: Finally, don't be afraid to get creative and experiment with different flavours, techniques, and recipes on your BBQ. 13INGREDIENTS 2 bone-in ribeye steaks, 1 1/2 inches thick 2 tbsp olive oil Salt and black pepper CHIMICHURRI SAUCE 1 cup fresh parsley, finely chopped 1/4 cup fresh cilantro, finely chopped 3 cloves garlic, minced 1 shallot, finely chopped 1/4 cup red wine vinegar 1/2 cup extra virgin olive oil 1 tsp red pepper flakes Salt and black pepper to taste METHOD 1. Mix parsley, cilantro, garlic, shallot, vinegar, red pepper flakes, and olive oil for chimichurri. Season to taste and set aside. 2. Preheat the BBQ grill to high heat and oil the grates. 3. Brush steaks with olive oil and season with salt and pepper. 4. Grill steaks for 4-5 minutes per side for medium-rare. 5. Let steaks rest for 5-10 minutes. 6. Slice steaks and serve with chimichurri sauce. 7. Garnish with additional parsley and cilantro if desired. Serve with favorite BBQ sides.BBQ RECIPES FOR SUMMERINGREDIENTS 4 boneless, skinless chicken breasts, cut into 1-inch chunks Zest and juice of 2 lemons 3 cloves garlic, minced 2 tablespoons fresh rosemary, finely chopped 2 tablespoons fresh thyme, finely chopped 1/4 cup extra virgin olive oil Salt and freshly ground black pepper Wooden skewers, soaked in water for 30 minutes METHOD 1. In a large bowl, combine the lemon zest, lemon juice, minced garlic, chopped rosemary, chopped thyme, and olive oil to create a marinade. Season with salt and pepper to taste. 2. Add the chicken chunks to the marinade, making sure they are well coated. Cover the bowl or transfer to a resealable plastic bag, and refrigerate for at least 1 hour, or overnight for best results. 3. Preheat your BBQ grill to medium-high heat. Remove the chicken from the marinade and thread onto the soaked wooden skewers, leaving a little space between each piece. 4. Place the chicken skewers on the preheated grill and cook for 6-8 minutes, turning occasionally, until the chicken is cooked through and lightly charred on the edges. 5. Serve the grilled lemon and herb chicken skewers hot off the grill, accompanied by your favourite BBQ sides and a wedge of lemon for squeezing. 15INGREDIENTS 2 whole sea bass, cleaned and scaled 2 lemons, thinly sliced 4 cloves garlic, minced 2 tablespoons fresh parsley, finely chopped 2 tablespoons fresh thyme leaves 1/4 cup extra virgin olive oil Salt and freshly ground black pepper Lemon wedges, for serving Fresh parsley, for garnish METHOD 1. Preheat your BBQ grill to medium-high heat. 2. Score the skin of the sea bass on both sides with a sharp knife, making diagonal cuts about 1 inch apart. This helps the fish cook evenly and allows the flavours to penetrate. 3. In a small bowl, mix together the minced garlic, chopped parsley, thyme leaves, and extra virgin olive oil to create a marinade. Season with salt and pepper to taste. Grilled Mediterranean style Sea Bass4. Rub the marinade all over the sea bass, making sure to coat both the inside and outside of the fish. Stuff the cavity of each fish with thinly sliced lemon slices. 5. Place the sea bass on the preheated grill and cook for 6-8 minutes on each side, or until the fish is cooked through and the skin is crisp and golden brown. 6. Carefully transfer the grilled sea bass to a serving platter and garnish with fresh parsley. 7. Serve the sea bass hot off the grill, accompanied by lemon wedges for squeezing.

23Artist Spotlight ALISON JOHNSON Alison's atmospheric oil paintings are vibrant and seductive, serving as focal points in any space. By capturing the power of light interacting with water droplets, she reveals the abstract, surreal side of the natural world. Her seascapes follow a deep tradition that Johnson modernises, bringing it to a contemporary forefront. Colours sink beneath a piercing white surface as oceans and landscapes drift in and out of a sweeping, hazy mist. The sky appears deep and brooding, with colours that reveal a darkness battling flashes of light. When shapes and figures emerge, they seem lost and fragile against the vastness of the world around them. The atmosphere in her work is so compelling they could be viewed as pure abstractions, each detail significant enough to stand alone. Ephemeral, warm, powerful, and evocative, she creates a sense of movement through colour, light, and balance. Johnson's delicate portrayal of the world around her not only moves viewers but leaves a lasting impression. With a nod to the impressionist painters, Johnson's work has been compared to the great masters of our time, such as Turner. This high acclaim has led to numerous exhibitions in the UK, Italy, and Paris, with an upcoming show in the Middle East. Her work continues to captivate clients internationally. Artist Spotlight TONY HINCHLIFFE “I fell in love with painting as a child, using it as a way to let my imagination run free, particularly drawn to scenes where I wished to be. This imaginative process continues in my seascape paintings today. Painting seascapes feels liberating, with their infinite blue skies and the perfect interplay of sand and sea. For me, figurative painting is all about depicting mood and intimacy within a moment, using a loose approach to brushwork, a variety of mark making and in places, a strong contrasting value to create the illusion of depth. My artistic process is always evolving; I constantly experiment with new techniques to help me grow as an artist. I use a fast-drying medium in my oil paintings to maintain momentum. My goal is to create art that intrigues viewers, using a carefully thought out mix of detail and abstraction to guide their eyes through the painting. Initially trained as an illustrator, my work was very detailed, in my early twenties I became influenced by Edward Seago, I now aim for a balance of expression and focal detail. The Ashmolean in Oxford is my favourite museum, where I draw inspiration from its significant art pieces. I often sketch people in cafes, observing their interactions to inform my work. Painting occupies my thoughts constantly, even when flying my paramotor. Creativity is an expression of feelings, and you can’t get it wrong; it's about having the courage to try.”
