6Located in the historic heart of Canterbury, The Cook's Tale restaurant offers a dining experience as rich and varied as the city's storied past. With its cleverly curated tasting menu, the restaurant promises a culinary journey through diverse flavours, reflecting the diverse palate of Indian cuisine, street food, and contemporary gastronomy. The atmosphere at The Cook's Tale is warm and inviting, creating a perfect setting for an enjoyable evening. The live pianist added a touch of elegance on the night we visited, providing a soothing backdrop to our dining experience. The staff are attentive and knowledgeable, offering detailed explanations of each course, which enriched our meal, especially given the diverse and intricate menu. The evening begins with a welcome cocktail that immediately sets the mood. It is refreshing and well-balanced, offering just the right amount of zest to start the meal. The cocktail is accompanied by a pre-starter that changes daily. The crepe was light and crispy, while the spiced potatoes were perfectly seasoned. The accompanying sambar and coconut chutney added depth with just enough heat and sweetness. Next was a seafood selection, which featured a delightful array of seafood, including a kebab of local mackerel and cod steamed in banana leaf. The crab pate was creamy and rich, contrasting nicely with the tangy pickled samphire and tamarind chutney. The variety of textures and flavours made this course another meal highlight. The freshness of the seafood was apparent, and the dish was beautifully presented. The game course was robust and full of character, featuring a game pate, wild duck terrine, and a game seekh kebab. The mango and red onion salad provided a necessary sweetness that balanced the earthy flavours of the game. The pooris were an interesting addition to the menu. They were filled with a flavorful mixture of potato and chickpeas and accompanied by tamarind-infused water. This dish was a delightful play on textures, with the crispiness of the pooris and the softness of the filling creating a satisfying bite. The tamarind water added a tangy punch that kept the dish lively. The catch of the day, served with cumin rice, sautéed spinach, and masala potatoes, was a beautifully executed dish that highlighted the freshness and flavour of the fish. The well-cooked fish paired wonderfully with the subtle spices of the cumin rice and the earthy notes of the spinach. The mustard jus added a lovely depth, making it a comforting and satisfying course. The next course—the Lamb Cutlet—was a theatrical triumph. It was presented to the table on a smoking grill, rich and packed with flavour. The Bengali-style sauce added a spicy kick, while the rosemary fondant potatoes were a perfect accompaniment, soft and infused with aromatic rosemary. The dish was well-conceived and executed with finesse. The dessert platter was a delightful end to the meal, offering a variety of sweet treats. The lemon bavarois was light and zesty, while the chocolate tart provided a rich, indulgent counterpoint. The coconut cheesecake was a tropical delight, and the white chocolate and brandy sauce added a luxurious finish. This course showcased the restaurant's ability to deliver desserts that are as thoughtfully crafted as the savoury courses.

71. Can you tell us about your journey of becoming a chef? My journey to becoming a chef started with a deep passion for food from a young age. I was inspired by family traditions and home-cooked meals, which led me to pursue formal training in one of the leading culinary schools in India. After completing my education, I worked in various kitchens around the world, gaining invaluable experience and learning different culinary styles. Over time, I refined my skills, developed my unique approach, and embraced the art of cooking as a way to tell stories through food. 2. How has travelling influenced your overall cooking style and choice of flavours? Travelling has been a significant influence on my cooking style and flavour choices. Each destination I’ve visited has introduced me to new ingredients, techniques, and traditions that have broadened my culinary perspective. I enjoy blending these diverse influences into my dishes, creating a fusion of global flavours that are both innovative and rooted in tradition. Travel has allowed me to see food as a universal language that connects people and cultures. 3. How would you describe ‘The Cook's Tale’? “The Cook’s Tale” is a reflection of my culinary journey—a narrative that captures the essence of my experiences, the challenges I've faced, and the lessons I've learned along the way. It’s a personal story that weaves together my passion for food, my commitment to innovation, and the joy I find in creating memorable dining experiences for others. It's not just a story about cooking; it's about the art of bringing people together through food. 4. What are your favourite dishes on the menu? My favourite dishes on the menu include the Seasonal Vegetable Cigar with Assorted Chutneys, which combines a crisp, delicate wrapper with a vibrant and flavourful mix of vegetables. I also love the Dosai with Gently Spiced Potatoes, Mustard, and Onions, offering a comforting and aromatic experience with its perfectly spiced filling and light, crispy exterior. Another standout is the Pan Grilled Seasonal Vegetable Steaks, paired with Sautéed Spinach and Greens, highlighting the fresh and natural Flavours of seasonal produce. These dishes exemplify my approach to using fresh, seasonal ingredients and crafting vibrant, balanced flavours. 5. You focus on an experiential dining journey – was this always the concept from the outset? Yes, the concept of an experiential dining journey was always at the heart of what I wanted to create. From the beginning, my goal was to offer more than just a meal—I wanted to craft an immersive experience where every aspect, from the ambiance to the plating, engages the senses and tells a story. It’s about creating a memorable journey for guests, where they can connect with the food on a deeper level and leave with a lasting impression. 6. What are your aspirations for the future? Looking ahead, I aspire to continue pushing the boundaries of culinary innovation.I am interested in writing a cookbook to share my recipes and experiences, as well as mentoring young chefs to help them discover their own culinary paths. Ultimately, my goal is to keep exploring, learning, and creating, while making a positive impact in the culinary world. 7. Where are your favourite places to visit in Kent? In Kent, I love visiting the charming coastal towns of Whitstable and Margate, known for their vibrant food scenes and fresh seafood. I also enjoy spending time in the beautiful countryside around Canterbury, which provides both inspiration and relaxation. These places offer a perfect blend of nature, history, and culinary delights, making them my favourite spots to explore and unwind.The Cook's Tale offers a well-rounded and carefully curated tasting menu that takes diners on a journey through a variety of flavours and textures. The experience is one of culinary craftsmanship and attention to detail. They also offer a fantastic vegan menu. It starts with a rotating pre-starter, followed by a South Indian dosai: The Vada Pav, a Mumbai street food favourite, features a chickpea and sweet potato dumpling in a brioche bun. Seasonal vegetable cigars, Pooris filled with spiced potato and chickpeas, and butter paneer with onion and pepper paratha. Pan-grilled vegetable steaks with Bengali roast potatoes offer a hearty main, a refreshing granita and a decadent vegan dessert platter. At £89.95 for the tasting menu or £110 with wine pairings, it represents good value for a special occasion dining experience in Canterbury. 9INGREDIENTS 450g semi-sweet or dark chocolate (chocolate chips or bar) 170g white chocolate chips (optional for drizzling) 30g mini marshmallows 30g Halloween-themed sprinkles 50g M&M's (Halloween colors) 30g pretzel pieces 30g gummy worms or eyeball candies (optional for spooky effect) INSTRUCTIONS: Prepare the baking sheet: Line a baking sheet with parchment paper or wax paper to prevent sticking. Melt the chocolate: Place the semi-sweet or dark chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted and smooth. Pour the melted chocolate onto the prepared baking sheet, spreading it out evenly to about 1/2 cm thickness using a spatula. Decorate the bark: Before the chocolate sets, quickly sprinkle the mini marshmallows, sprinkles, M&M’s, and pretzel pieces evenly across the surface. Add gummy worms or eyeball candies for an extra spooky look. Optional white chocolate drizzle: Melt the white chocolate chips in a separate bowl, using the same microwave method. Once melted, drizzle it over the top of the bark using a spoon or piping bag for extra decoration. Chill the bark: Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is fully set. Break and serve: Once set, remove the bark from the fridge and break it into pieces by hand or with a knife. Store in an airtight container until ready to serve. 10There’s something beautifully refreshing about Hélène Darroze’s lunchtime offering at Le Vol au Vent in The Connaught, a menu that quietly but confidently wears its femininity on its sleeve, it is after all a nod to her Great Aunt Ttantta Mayie’s recipe, ‘Le Vol-au-Vent. Stepping into Hélène Darroze at The Connaught feels like entering a beautifully curated space where soft, muted tones of pink, gold and red envelope you in a warm embrace. The interior is a masterclass in understated elegance, with a colour palette reminiscent of a Wes Anderson film—think subtle shades of pastels pink, yellows, golds, soft browns, with a soft lighting. The carefully selected furnishings blend modern design with classic touches such as the recreated existing facade of the dining room of this historic building, creating a sophisticated yet inviting environment. Adding to this aesthetic, the staff are dressed in soft blue suits for the men and 1930s-style burgundy dresses for the women, their attire perfectly harmonising with the surroundings and enhancing the overall experience. It’s a space that feels alive yet serene, perfectly setting the stage for the culinary artistry that unfolds at the table. From the moment you're greeted with a chilled, effervescent glass of kir royal—as elegant as the surroundings—it’s clear that this is no ordinary affair. It's a symphony of grace and precision, a delicate dance of flavours, textures, and presentation Even the bread service is a work of art here - beautifully crafted sourdough, accompanying it are two butters that elevate the experience—a classic salted butter that whispers of simplicity and a chilli butter, playfully shaped into delicate coral forms. The starter, a bowl of pink garlic velouté, sets the tone—an embrace of warmth, yet light and silken in texture. Floating within, Dorset snails, their earthy richness softened by smoky grollees and the crisp, salty umami bite of guanciale. The persillade emulsion adds a verdant whisper of herbaceousness, rounding out the bold flavours with a tender touch. The dish feels like an invitation—feminine, yet bold. KR LONDONAnd then, the vol-au-vent, which arrives in the kind of ceremonious silence usually reserved for unveiling great works of art. The golden, puffed pastry shell is pure comfort, yet inside lies a decadent surprise of lobster, veal sweetbreads, and plump champignons de Paris, all cradled in a parsnip mousseline so light it could float. The whole creation is bathed in the aromatic opulence of Vin Jaune d’Arbois. It’s indulgence, yes, but of the most delicate, measured sort, never tipping into excess. The interplay of flavours is masterful, and once again, there's that unmistakable sense of a woman’s hand at work here—deft, confident, precisely executed, but never overpowering. By dessert, you’re almost expecting the same level of precision, and of course, it arrives in the form of a fig leaf sorbet that sits atop a compote of Solliès figs, the fruit’s deep, honeyed sweetness perfectly countered by a whispering goat’s cheese emulsion. It’s a final flourish that feels as much about texture as taste, the sorbet’s icy freshness against the luscious figs and the creamy emulsion—a subtle balance of bold flavours and softness, presented beautifully -like a culinary nod to a Georgia O’Keeffe painting: subtle, sensual, and utterly beguiling. The service, much like the menu, is choreographed with the kind of elegance and care you’d expect at The Connaught. Each movement of the waitstaff feels deliberate, yet unhurried. And the details—the Zalto wine glasses that feel like they could shatter with a breath, the Hermès crockery that adds a touch of luxury without ostentation—speak to the kind of quiet sophistication that Darroze brings to every aspect of the dining experience. This is not just a meal; it’s a refreshing, intimate conversation between chef and diner, where each course feels imbued with a sense of delicate artistry. 20Warm and comforting Autumn recipes THESE RECIPES ARE PERFECT FOR A COSY AUTUMN EVENING INGREDIENTS 1 medium butternut squash (about 600g), peeled and diced 1 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, minced 300g Arborio rice 150ml white wine 1.2 litres vegetable stock 50g Parmesan, grated (optional) 2 tbsp butter A handful of fresh sage leaves, chopped Salt and pepper, to taste METHOD 1. Roast the squash: Preheat the oven to 200°C (180°C fan). Toss the diced butternut squash in olive oil, spread on a baking tray, and roast for 25 minutes until soft and slightly caramelised. 2. Prepare the risotto: In a large pan, heat a little oil and sauté the onion and garlic until softened. Add the Arborio rice and stir to coat. 3. Cook the risotto: Pour in the white wine, stirring until it's absorbed. Gradually add the hot stock, one ladle at a time, stirring continuously until the rice is cooked (about 20 minutes). 4. This isn’t just sushi and sashimi, though those do make an appearance, delicately prepared and finessed to a gleam. You’ll start with otoro, the fatty underbelly of tuna, luscious as velvet, or perhaps Wagyu beef—handled with reverence, served raw as tartare or nakaochi, or cooked just-so on a Robata barbecue. Brugnaux plays with contrasts in his tiraditos and ceviches too, sashaying from the cool tang of citrus to the heat of spice in a way that feels almost like a dance. Take the "Mido style" salmon tiradito—the kind of dish that leaves your tastebuds dazzled with sharp, spicy, and fresh, all at once. Start with the Edamame with miso truffle and spicy sauce—an elegant twist on a humble classic. Adapted from Roald Dahl's classic novel by the deft hand of Dennis Kelly (book) and the eccentric brilliance of Tim Minchin (music and lyrics), it's a show that delivers a double helix of wicked humour and heartfelt tenderness, reminding us that children's stories can be anything but childish. As the Royal Shakespeare Company celebrates Matilda entering its 13th year in the West End, the production shows no signs of slowing down. In fact, it's now booking through to May 2026, with new tickets available as this audience favourite continues to pack the Cambridge Theatre. Tiffany Graves as Mrs. Wormwood, Neil McDermott as Mr. Wormwood, and Eve Norris as Miss Honey—alongside the ongoing powerhouse performance by Kieran Hill as Miss Trunchbull. Not to mention the stellar young talent rotating in the title role, with Anna Deikalo, Ava Posniak, Sophia Saravanan, and Angelica Scott who is new to the role, now stepping into Matilda's shoes. The central figure, of course, is Matilda herself, a preternaturally bright child burdened by hideously neglectful parents. Her numbers, particularly "Naughty" and the rousing "When I Grow Up," delivered the type of pure, unguarded emotion that leaves you floating in the melody long after the orchestra's final note. In fact, Minchin's score is one of the production's greatest achievements. Each song feels like a mischievous playground of wordplay and sentiment. The lyrics shift from snappy and clever to surprisingly poignant at a moment's notice, balancing lightness and gravity in a way that so few modern musicals manage. The true marvel of this production lies in its sense of physicality. Director Matthew Warchus and choreographer Peter Darling have engineered a machine of movement so precisely timed and explosive that it feels like a circus act. The child actors—led by Matilda but supported by a remarkable ensemble of schoolmates—are impeccably drilled, turning every leap, spin, and skip into expressions of rebellion, joy, and fear.
