31Kent has a special place in the discovery of dinosaurs. Robert Plot of Borden, near Sittingbourne produced the world’s first known illustration and scientific account of a dinosaur bone in 1677 and then Gideon Mantell explored the Maidstone slab, which was almost the complete fossilised remains of an Iguanodon, the very first of its kind and significantly enhances our understanding of the prehistoric species. 2Kent has two notable railway records. The Canterbury and Whitstable Railway line was the first scheduled commercial passenger service in the world, beginning in 1830. In 1834, it was the first line to issue season tickets. 3Crickets believed to have begun in the Weald during the mid-1500s though the first real evidence of a game comes from 1611 in Chevening, near Sevenoaks. In 1709, Kent and Surrey played the first ever intercounty match starting the sport's oldest rivalry. 4In 597AD, when The Kingdom of Kent still existed, a monk from Rome called St Augustine arrived on the shores of the Kent coast to convert England to Christianity. He went on to become the first Archbishop of Canterbury, a position that today, is the spiritual leader of 80 million Anglicans worldwide. 5It was at Down House, near Orpington, that Charles Darwin crystalised his theory of evolution and began to write notes that would be used for his paper on the Origin of Species after his trip to the Galapagos Islands in 1835. 6Charles Dickens lived in Kent from 1816 to 1822, finding much inspiration for his novels in our great county from Broadstairs to Rochester and Higham. Some of his works written here includes David Copperfield, A Tale of Two Cities, Great Expectations and Our English Waterplace. 7Ian Flemming, who gave the world James Bond, spent much of his life in Kent after WWII, even taking the code 007 from the Dover to London bus Flemming wrote You Only Live Twice at the Duck Inn at Petts Bottom near Canterbury; Moonraker was partly set at St Margaret's Bay near Dover, Flemming's holiday home. 5Having never been to The Isle of Sheppey, I wasn't sure what to expect as we crossed the bridge surrounded by bleak and empty fields. The Ferry House is a short drive from the crossing and at the end of a windy road that looks out across the swale to Faversham Quay in a serene and peaceful setting that is unique and beautiful in every way. Being a cold sunny day in January, a warm, cosy fire on arrival was most welcome; staff were friendly and hospitable, and the building gives cosy country pub vibes. After being shown to our cosy, modern room with country boutique touches, I was treated to a full body massage in the onsite spa treatment rooms which was the perfect beginning to a relaxing stay at The Ferry House. You can enjoy a massage or facial as part of an overnight stay or visit solely for some you time. Treatments are offered seven days a week, whenever you need some self-spoiling. After a relaxing afternoon and drink for some, beside the fireplace, we enjoyed a three-course meal in the onsite restaurant with produce from the Ferry House Kitchen Dine and stay in Kent The Ferry House, Harty by Tiffany Vivienne RESTAURANT REVIEWGarden and family-owned farm. The menu is meat-heavy, with beef and game from the Ferry House family estate and local produce from local suppliers. Their menu is inspired by what's at its seasonal best, and as a third-generation farming family, food provenance is at the heart of the menu. Wild game, free-range eggs and many forages of the shoreline and hedgerows complete their homeborn menus. Grains from their farm are used by The Copper Rivet Distillery at Chatham to make their artisan spirits. For our starters, we had the Estate Duck Breast, Preserved Garden Glacé Cherries, Garden Celeriac & Apple Remoulade, Kentish pork, and black pudding croquettes with bacon and garden chilli jam—perfect winter warming first courses, from earthy rich ingredients that are fused perfectly. For the main course, we sampled the pan-fried hake, bisque brandade ravioli, an emulsion crafted from salt cod, olive oil, and potatoes, served with garden sea vegetables and mussels. To give a rounded perspective, we tried the Estate Duck Wellington, Duck & Garden Sage Farce, served with garden-roasted turnips and duck Jus; this is an excellent twist on a traditional beef wellington for any game lover. Sides include triple-cooked hand-cut chips with parmesan cheese, sauteed brussels, and garden Chinese artichoke. Desserts include garden pumpkin pie, bowyers brie tart, and preserved garden quince. We opted for Dark chocolate with garden aubergine, blackcurrant, salted caramel and hazelnuts. Another unusual but delicious combination that uses fresh onsite seasonal produce. After a peaceful night's sleep, breakfast is served back in the restaurant, with options including a full Kentish breakfast, vegetarian breakfast, pancakes, home-smoked fish, eggs royale, or a healthy grazing bowl. Breakfast is charged at £15.00 per person and includes fresh Kentish juices from Owlets, tea, coffee, and a continental buffet. 6Summer 2022- the longest, hottest summer seen for many years, resulting in a harvest of exceptional quality fruit with a high natural sugar level. Fast forward to 2023. A warm and sunny June followed by a wet and not seasonally warm July and August and then a hot September and October. WHAT WOULD THIS MEAN FOR THE ENGLISH WINE INDUSTRY? The 2023 harvest at Biddenden started on Monday 18th September, 19 days later than 2022. This is earlier than many other vineyards, but the picking start date will always vary between estates and depends on the varieties grown and other locational and situational factors. Ortega, our flagship variety here at Biddenden, is early ripening and always our first variety picked. After six weeks of hard work from our local pickers and winery team, harvest finished on Monday 30th October, with Riesling, our last variety to be picked. First planted at Biddenden in 2018, Riesling is a variety we are particularly excited about, and we planted additional vines of this variety in May 2023. With a good harvest in 2022 and 2023, we look forward to sharing the results of our work. In addition to Ortega and Riesling, ten other varieties are grown across 25 acres at Biddenden, and this has its advantages come harvest time, as each variety can be picked when it is perfectly ripe. All 12 varieties are picked by hand, by a team of local pickers, and all fruit is pressed within hours, or even minutes, of being picked. The start date of harvest is one variable, but the weather conditions throughout the year, alongside how the vines are cared for and managed, have a huge impact on the crop. Spring frosts after bud burst can spell disaster, but in 2023, the mild spring put o this potential damage. 2023 saw harvest records broken across the UK, with vineyards bringing in huge crops and recording their biggest-ever harvest. At the halfway point at Biddenden, we had picked more tonnes of fruit than the 2022 harvest altogether. But why the bumper crop? Water in the ground in April led to good bud break and canopy growth, and a dry, warm June resulted in a strong, early fruit set. July saw one of the highest rainfall levels recorded, and then the warmth of September came along, just enough to bring on final ripening and reduce rain damage. A lot of what happens in a vineyard is also down to the year before, and with an exceptional 2022, the vines have been able to build up strong reserves to support the fruit growth in 2023. Aectionately dubbed ‘the monster of 2023’, we picked approximately 121 tonnes of grapes this harvest, in contrast to the 52 tonnes in 2022. The last time Biddenden picked a crop of this size all three Barnes boys were o at college and Mum, Sally, was the driver of the 3910 tractor, built in July 1983. 7As far as venues go in Kent, this has to be one of the best I have been to for a Sunday Roast. There is something magical about eating a Sunday Roast in a grade-one-listed castle in Kent with your family. I love that you can wander around the Castle and grounds before and after your meal here with the most stunning panoramic views across to Dungeness from the Castle. There is a community-style table where you can dine with others and make new friends, which is a unique and lovely touch, especially for the local community, or you can book a table on your own. Their roast dinner includes all the trimmings, serving roast sirloin of beef, roast pork loin, half-roasted chicken and a homemade nut roast. Dinner is served from quirky cast iron dinner plates with farm-inspired gravy jugs, which sums up this venue pretty well; everything here is a bit quirky and fabulous. Staff are attentive, and hosts Michael and Katherin go above and beyond to ensure your visit here is enjoyable and memorable, imparting their knowledge of the Castle's history and ensuring everything runs smoothly every day. The roast sirloin of beef was my choice and didn't disappoint: generous, tender slices of medium rare meat served with a perfectly turned out Yorkshire pudding, the crispiest of roast potatoes and parsnips, al dente carrots and greens. Luckily, they haven't meddled too much with a winning formula. Still, a venue makes all the difference to a Sunday roast dining experience. I am so lucky to have this on my doorstep, and I will make this a regular Sunday treat. Lympne Castle is a fantastic, if not slightly eccentric, venue for getting the family together on a Sunday and has a sociable community focused feel. You feel at home immediately; of course, being a castle, there is plenty of room for large families. Part of the successful Big Mamma group, Carlotta is a nod to New Jersey-style Italian tradition. The decor is camp, lavish and loud, with vintage framed Gucci scarfs adorning the walls while every surface is mirrored or chromed. With its Boujee bathrooms and super glam interiors, Carlotta is Instagram heaven. Start with a Peach Perfect Bellini, White peach and raspberry puree, St-Germain elderflower liqueur, Champagne, and orange foam or peruse their extensive wine list for something to suit your palette. Antipasti includes Insalata di Liguria - Crispy endive salad with lamb's lettuce and confit lemon, topped with creamy gorgonzola, Parmigiano Reggiano toasted walnuts and pulled beef crochette. We opted for the classic shrimp cocktail and burrata di Puglia, which is interestingly served with a selection of toppings. The first speciality course here is Fettuccine KR LONDONAlfredo al Tartufo - Fettuccine with truffle butter and Parmigiano Reggiano, tellicherry pepper, and fresh seasonal truffle, which is made fresh to order and served at your table in a large portion- a great dish if you love truffle, which my companion enjoyed. I, of course, had to try. I opted for the Pasta alla Vodka con Frutti di Mare - Home-made conchiglie in a creamy tomato and vodka sauce, served with fresh Cornish crab, clams and tarragon oil; the sauce is rich and creamy, very filling and packed with flavour. For Secondi, you can opt for the pan-fried cod served on sautéed buttery leeks in a light buttermilk and trout roe sauce or the truffle flower-roasted half cauliflower head served on a Parmigiano Reggiano sauce with mushroom jus and finished with fresh black truffle shavings on top. Sides include crunch smashed potatoes, house green salad, and tenderstem broccoli with garlic and chilli. For dessert, choose from a not-so-classic 'Tiramisu' or Carlotta's famous 'wedding cake'- layers of almond génoise and bergamot curd, topped with light vanilla cream, lemon coulis and crunchy meringue. The food here is good, with some great twists on Italian classics. It is not going to blow you away if you are Michelin-minded, but the atmosphere, excellent service and diva-glam interiors certainly will. 16Easter Baking TREAT FRIENDS AND FAMILYMETHOD 1. Preheat oven to Gas mark 4/180'C/170'C fan. 2. Whisk the butter, flour, cocoa powder, sugar and eggs together in a large bowl (leave out the mini Creme Eggs, which should be in the freezer chilling nicely before you are ready to bake). 3. Spoon the mixture into the individual cupcake cases and add a frozen mini Creme Egg into each case. 4. Bake for 10-15 minutes. To check they are cooked just press gently and they should spring back. Leave the cakes to cool. For the frosting 5. Put the icing sugar and butter in a bowl and use an electric whisk to beat together until well mixed. If necessary add a drizzle of hot water to soften the mixture. 6. Now divide the icing between two bowls and in one bowl add a tiny drop of yellow food colouring. Mix well and keep adding more until you have the desired colour. 7. Now fill the piping bags with alternate dollops of yellow and white icing - this gives the two tone effect. Get piping! 8. Once finished, place half a Creme Egg on top of each cupcake, and serve! INGREDIENTS 3 x 150g bars milk chocolate, broken into chunks butter, for greasing 50g white chocolate, broken into chunks 1 x 90g pack micro eggs or Mini Eggs or whatever is leftover from Easter METHOD 1. Put the milk chocolate pieces into a heatproof bowl. Bring a pan of water to the boil and set the bowl on top, making sure the water doesn’t touch the bottom of the bowl. Leave the chocolate to melt, stirring occasionally. 2. Meanwhile, grease a tin about 20cm x 26cm and line with nonstick baking paper or cling-film. Once the milk chocolate has melted completely, pour into the prepared tin and spread out to the edges. (If you don’t have a tin the right size, then lay a piece of nonstick baking paper on a baking tray and just spread the chocolate out to around the same size.) 3. Clean the bowl, then add the white chocolate pieces and set over the pan of boiling water to melt. Once melted, drizzle over the milk chocolate and use a cocktail stick or skewer to swirl the milk and white chocolate together. 4. Bash the bag of micro eggs on one side to crush some of the eggs, then sprinkle the whole and crushed eggs over the swirled chocolate. Push in some marshmallow bunnies and chicks. Leave in a cool place to set, before breaking up into pieces.Easter Bunny BarkINGREDIENTS For the cupcakes 150g unsalted butter, softened 125g self-raising flour 25g cocoa powder 150g caster sugar 3 large eggs 12 mini Cadbury Creme Eggs (freeze before adding) For the topping 150g unsalted butter (never use margarine as you won't get the same consistency), softened 350g icing sugar yellow food colouring (optional) 6 Cadbury Creme Eggs (chilled - it's good to have a few extra in case they crack when slicing)METHOD 1. Tip the flour into a large mixing bowl and stir in the spices, yeast, caster sugar and 1 tps salt. 2. Measure 75ml boiling water into a jug and add the milk, which will give a tepid liquid that isn't too hot for the yeast. Add the melted butter and egg to this liquid, then pour into the flour mixture and bring together as a dough. 3. Tip out onto a lightly floured surface and knead for 10 minutes or until smooth and springy (or knead for 5 minutes on a low speed in a mixer with a dough hook). Knead in the dried fruit until evenly distributed. 4. Return the dough to the bowl, cover and leave to rise for 1½ – 2 hours or until doubled in size. 5. Punch the dough down to knock it back, then shape it into a round. Pop in a well-greased 20cm springform tin (about 6cm deep) and poke any bits of fruit that are sticking out back into the dough, so they don't burn. Cover with clingfilm and leave to prove for 30 minutes or until well risen above the top of the tin (roughly doubled in size). It should feel soft and pillowy when prodded gently. While the loaf is rising, preheat the oven to 180°C, fan 160°C, gas 4. 6. Mix the plain flour with a tiny pinch of salt and 2 tablespoons cold water to give a paste with a good piping consistency. Transfer to a disposable piping bag (or a plastic food bag) and snip off a 1cm opening. Pipe a cross on top of the loaf. Bake the loaf for 40 minutes, then remove from the tin and return to the oven for 10-15 minutes until the base sounds hollow when tapped. Cool on a wire rack. 7. To glaze, heat the granulated sugar with 1 tablespoon of water until dissolved. Brush over the cooled loaf. Tell us about yourself and your journey to where you are in your artistic career. I am a London-born, self-taught studio artist and now live near Folkestone in Seabrook, where I paint almost daily. I am addicted to leaving indelible marks on canvas and have expressed myself this way for over 25 years. My art has moved through different styles, genres and formats. About five years ago, I produced a piece of art that signified a change in my work and people's reaction to it.”It was interesting to note the sudden interest. I had produced something unique. I had found my style. Describe a typical day in your life. Most days, I rise early, between 6 and 7, and meditate for 15 minutes. This slows down my somewhat eager brain, which is exploding with thoughts, ideas, and lists from the moment my eyes open. I then either walk 4 miles and practise Italian, I'm currently learning the language, or I run and then return home to work on the language more. By 10, I then write a list of the day's needs, which will have either a painting or a series of paintings to work on or to make a film about painting for social media or possibly a trip to a gallery to view other artists' work which I think is equally important as painting itself. Most evenings, I cook; cooking is a great form of catharsis and an excellent way to unwind. I don't like to sit in front of the TV and feel I have to earn it, so maybe by 9 or 10, if I have utilised the day correctly, painted, spent time with my kids, and spent time reading, which I feel is also incredibly important, then I'll treat myself to an hour or so of something interesting on a screen. Where do you find your inspiration, and what are your influences? If you allow it, inspiration is everywhere. I'm very interested in how our societies function, whether that be politically, economically or socially. I'm also highly interested in the influence of digital technology on humans as it plays such a huge factor in all our lives now. If we look through the history of art, a lot of this has played a huge role in the works of many of the masters, obviously not so much the digital as this is relatively new. Graffiti street art has always been a huge influence, as seen in the motifs and attitude in my paintings. Still, I'm also hugely inspired by the works of many other artists, particularly the Abstract Expressionists from the 1950s: Jackson Pollock, Mark Rothko, Willem de Kooning, Clyfford Still and lately Franz Kline, plus more. Of course, there is Picasso, Matisse, Hieronymous Bosch, and Gogh; the list is endless. But there is one artist who is simply fascinating and incredibly perspicacious, and that is Barbara Kruger. Her work, for me, says it all. Can you tell us some of your favourite commissions you've worked on, what you're working on at the moment and what's next? Last year, I worked on a commission for Norton Motorcycles for their new clothing shop in the Bike Shed on Old Street. That was a good commission. It was huge, a piece at 5.5 metres long. I like to paint big! I have just finished another huge painting, a big monochromatic piece which is exhibiting at the Folkestone Gallery in the Old High street in Folkestone. Rob and Zoe, the owners, are lovely people to work with and supportive of the arts. It's also good to work in the local area. I had to build the frame in the gallery because the painting was so big that there was no other way to get it in there. As for what I'm working on now, I have an idea about utilising all the empty shops in Folkestone High Street to showcase art. It's common knowledge that our high streets are dying, so I have contacted the shop owners to see if I can hang art in the windows. Firstly, this will make the high streets a little more exciting, and if any sales occur, a percentage could be given to local food banks or charities to help with the cost of living crisis. This, of course, doesn't have to be in just Folkestone; it would be good to utilise all the empty shops in the high streets across the country. What three words best describe you? Obsessive. Try making a DIY Vitamin C face mask at home. 34It's a buzzword right now, but what exactly is sleep hygiene, and how can you improve yours? 'Sleep hygiene' is the term used to describe healthy habits you can practise during the day to help you get a good night's sleep. Sleep is essential for your physical and mental well-being, and creating the optimum environment for a good night's sleep is vital to allowing your body time to recharge and your mind to process information. Without enough quality sleep, our brains are unable to function correctly. Good sleep hygiene can help improve your sleep quality, which in turn can: • improve your mood • improve your concentration and memory • prevent you from developing sleep disorders (such as insomnia) • help you maintain a healthy weight • lower your risk of developing severe health conditions • help your body fight off diseases Top tips to practise good sleep hygiene; Create a restful bedroom environment. You can do this by: • Keeping the room temperature at a comfortable level (a hot room is more likely to disrupt your sleep) • Keeping the room as dark as possible • Keeping the room as quiet as possible or using earplugs • Avoid watching television, listening to the radio or reading in bed. This will help your brain to recognise your bed as a place for sleeping. Stop using electronic devices before going to bed. This includes computers, smartphones and televisions, which stimulate your brain for several hours after use, making falling asleep difficult. Avoid stimulants after lunch; caffeine can take up to six hours to wear off, so avoid anything containing caffeine after 2 pm. Nicotine is a stimulant and will keep you awake, so avoid smoking before going to bed. Alcohol may make you feel drowsy, but it does not improve sleep quality and will make you need the toilet more often than usual, which will disrupt your sleep. Avoid drinking alcohol before going to bed, and try not to rely on it to help you fall asleep. Eat a light meal before going to bed. Going to bed too full can force your digestive system to keep working when resting. Likewise, going to bed hungry can also disturb your sleep. Exercising during the day can help you have a better night's sleep. However, vigorous exercise within three hours of going to bed may delay your sleep. Create a relaxing bedtime routine. When you are stressed or anxious, your body produces more cortisol (the stress hormone). Give yourself one and a half hours to wind down before sleeping. Try meditating or having a warm bath before going to bed. Remove or hide any clocks from your view so you are not constantly checking the time. The key to good sleep hygiene is consistency. Find out what tips work best for you, and create your sleep hygiene checklist to help you get the best sleep possible each night. HEALTHSleep Hygiene Poor sleep is a massive issue across the UK.
