7Situated in the sought-after Elham Valley, this beautiful Grade II pub, The Kings Arms, has been restored to its royal glory in celebration of the coronation of King Charles III. The pub building has so many stunning features, which its complete transformation has complemented; the decor is quirky, country and British, and there is a warm feeling when you walk in. I like how the pub is separated into different areas but is still connected as one space, with a courtyard garden for outside dining. The Kings Arms is the latest offering from The Contemporary Pubs chain (The Tiger, Marquis of Granby) and yet has an entirely different feel with a well-designed menu to match. I love an Autumn menu; it is one of my favourite seasons for dining with family or friends in a cosy village pub, and I can't think of a better venue than The Kings Arms. Their small bites menu includes whipped cod’s roe with cumin seed lavosh, which their head chef recommended- a great dish and not overpowering- a perfect one to share. Lamb bon-bons with mint yoghurt are a must-try- you probably won’t want to share these! Vegan options on the small bites menu include charred flatbread with red pesto, roasted aubergine and Nutbourne tomato. Starters include Duck liver parfait with kumquat chutney, hazelnut, and duck fat brioche, which is incredibly indulgent and beautifully paired ingredients, a perfect Autumn starter, and Buffalo mozzarella, local cherries, smoked almonds, basil and olive tapenade if you want something slightly lighter. Vegan options include King oyster mushroom, charred ciabatta, truffle gremolata, and monk's beard. The main dishes include Rump of lamb, potato terrine, grilled tender stem, bagna cauda, served with a rosemary jus, which was my choice, perfectly seared lamb with a potato terrine that must have taken hours of preparation and was perfectly crisp. We tried one of their dishes on the specials menu that day: South Coast cod served with a nduja potato cake, samphire and a smoked prawn and coconut bisque; this is a great lighter main dish with a beautifully aromatic sauce. The presentation is perfect here; every dish bought out was impeccably presented. I had food envy at one point as the gentleman next to me was served his fish pie, complete with prawns emerging from the surface. If you have room for dessert, I can recommend the lemon & lime cheesecake, scorched meringue, with grapefruit sorbet and if you are feeling a little more indulgent, the Dark chocolate “Marquis of Granby” with orange sorbet and honeycomb. I am sure this beautifully restored village pub will become a Sunday staple for many and a great venue to travel to if you don't live close by, with beautiful surrounding countryside in Elham's picturesque chocolate box village. Turnips restaurants use their own produce, and other produce from stalls within the market to curate an exceptional fine dining experience where you are immersed within the heart and soul of their menu with the KR LONDONproduce visible from the restaurant. The bustling noise of the market, coupled with the rumbling of the station overhead and shouts of market sellers in the distance, makes this a truly unique experience that awakens all of your senses; I am hard-pressed to think of anywhere like it. The lunch menu follows nature and can change daily depending on the season. Our lunch-tasting menu started with freshly baked bread and black garlic butter, followed by Provence outdoor pineapple tomato with crispy tempura, fermented cucumber, mussel gel and mussels; the ingredients are paired to perfection, creating unique wholesome flavours by Chef patron Tomas Lidakevicius and his team. Having cut his teeth in some of London's best restaurants, Tomas was an apparent choice for Turnip's Chef patron, sharing as he does their belief that only magnificent produce can deliver truly unparalleled flavour. The following courses included Cevennes onion with brioche and parmesan, Brittany Jerusalem artichoke with pickled asparagus and Iberico pork, followed by a beautifully presented dessert of blackberries, pistachio and rich manjari chocolate followed by petit fours. There is an option of a selection of Neal's Yard cheeses for a supplement of £18 and wine pairing starting at £50. Don't be fooled by this restaurant's market setting. Turnips is a culinary genius, wholesome quality fine dining using seriously good ingredients without the pretence of a fancy restaurant—a true foodie heaven. 9From the team behind Applebee's fish restaurant, the menu is centred around fish, unsurprisingly, with authentic Spanish flavours. There is a terrace outside that would be perfect in the Summer. Inside, the restaurant is clean, fresh and adorned with wicker lighting and cosy calm fabrics. It is an excellent venue for a lunch meeting if you are catching the train to Charing Cross Station and only a short walk over the Golden Jubilee Bridges by Embankment. Their set lunch menu is reasonably priced at £19.50 per person on weekdays from 11am to 3pm. The crab croquetas are a must-have- cornish crab infused with squid ink and deep-fried. Other first courses include croquetas de jamon and classic ‘Pimientos del Padron’ . The larger dishes are Huevos Rotos Con Chorizo- cured chorizo with potatoes and fried eggs, or grilled chicken thighs served with Romesco sauce and ajillo. We tried the mussels cooked with chorizo and Albarino ( a Spanish white wine), which were fresh, flavourful, and authentic in style. Side dishes include aubergine filled with romesco sauce, goat's cheese salad with pistachio and crispy shallots, and patatas bravas, or if you want something lighter, go for the Heritage tomato salad with mint and citrus dressing. If desserts are your thing, ditch the basque cheesecake and instead pick the Torrija Caramelizada - Caramelised bread with cinnamon, orange and vanilla ice cream, a Spanish version of french toast with more flamboyance and flair. La Gamba is an excellent choice to dine when visiting next door's Southbank Winter Market over the Christmas season. 10BEST CHRISTMAS RECIPES DELICIOUS WINTER RECIPES TO TRY AT HOME INGREDIENTS 1 smoked gammon joint 1 onion, halved 1 carrot, chopped 1 tsp black peppercorns 1 handful cloves 1 lemon, juice and zest 4 tbsp maple syrup 25g light brown soft sugar 1 tsp ground cinnamon 4 tsp Dijon mustard 4 tsp smoked paprika Rosemary, to decorate Oranges, to decorate Pineapple to decorate METHOD 1. Place the gammon in a saucepan, deep enough to keep it submerged. Add the onion, carrot and peppercorns and cover with cold water. Bring to the boil, then reduce the heat and simmer gently for 1 hour 30 minutes, adding extra liquid as necessary to keep submerged.Take your food off the heat and insert a clean thermometer probe into the thickest part of the meat or poultry. It is fully cooked when the temperature reaches 75ºC. Skim off any oil and fat that rises to the surface. 2. Remove the joint from the water and set aside to drain and cool for 25 minutes. Discard the vegetables (but keep the water for stock). Preheat the oven to 190˚C, gas mark 5. Using a small, sharp knife, carefully remove and discard the skin from the ham, leaving as much fat as possible intact. Score the fat, making a criss-cross pattern with a knife, then stud the centre of each cross with a clove. Transfer to a roasting tin. 3. In a bowl, combine the lemon juice and zest with the maple syrup, sugar, mustard, paprika and cinnamon. Brush half the mixture over the ham; roast for 30 minutes. Remove from the oven and pour over the remaining mixture. Roast for another 30 minutes, basting the ham with the juices every 10 minutes. Remove from the oven and cool for 30 minutes before slicing. To decorate, surround the ham with fresh herbs such as rosemary,orange halves and pineapple or pomegranate seeds. Paprika and Maple glazed Christmas Ham

11INGREDIENTS 1 bunch of young carrots tops, all the same size ¼ cup olive oil 4 tablespoons unsalted butter 1 orange, halved 1 tablespoon brown sugar, 4 sage, leaves METHOD 1. Preheat the oven to 170°C. 2. Cut off all but 1 inch of the top of the carrots, leaving a little green, and peel them. Put the carrots on a tray add the oil, season with salt and pepper, and coat the carrots well. 3. Bake in the oven for 30 minutes, or until they are tender to the fork test. 4. In the meantime, melt the butter in a skillet over medium-low heat. Swirl the pan around and cook until the butter becomes brown and nutty. Squeeze in the juice from the orange halves, add the brown sugar and sage and continue to cook for 2 minutes or until it becomes syrupy. 5. Remove the carrots from the oven and arrange them on a platter. Drizzle the orange-brown butter over the carrots and serve. Roasted Carrots with Orange Brown Butter and SageSticky marmalade pigs in blanketsINGREDIENTS 18 bacon-wrapped cocktail sausages 1 tbsp Marmalade METHOD 1. Preheat the oven to 200°C. Put 18 bacon-wrapped cocktail sausages (you can buy these pre-wrapped to save time) on a baking tray and cook in the oven for 25-30 min until sausages are golden and cooked through. 2. Carefully stir in 1 tbsp marmalade, shaking the pan to ensure the sausages are coated. 3. Tip into a serving dish and serve with cocktail sticks. 12Red Cabbage with Balsamic Vinegar and Cranberries This vibrant veggie Christmas side dish beautifully contrasts sweet and savouryINGREDIENTS 300g mixed cabbage leaves (red, white, cavalo nero, savoy) 75g carrots, sliced julienne or grated 75g raw beetroot, sliced julienne or grated 2 x oranges, zested and segmented 75g walnuts, toasted and roughly chopped 75g cranberries Dressing 60ml sherry vinegar 60ml orange juice ½ tsp Dijon mustard 1 tsp maple syrup Pinch of mixed spice 100ml rapeseed oil Salt and pepper METHOD 1. In a small pan place the vinegar, orange juice and spices. Bring to the boil and simmer for 1 minute. Pour into a bowl and leave to cool 2. Add the Dijon mustard, maple, seasoning and mix well. Gradually whisk in the oil until emulsified 3. Shred the cabbage as finely as possible and mix with the carrot, beetroot, walnuts, orange zest and segments and cranberries 4. Drizzle over enough dressing to coat and mix well. Serve immediately – great with leftover turkey. Christmas Winter Slaw INGREDIENTS 4 tbsp olive oil 2 large onions, halved and thinly sliced 2 large apples quartered, cored and thinly sliced 1 tsp ground cloves 1 medium red cabbage, quartered, cored and thinly sliced 200ml vegetable stock 4 tbsp balsamic vinegar 100g brown sugar 200g fresh or frozen cranberry METHOD 1. 1.Heat the oil in a large pan. Add the onions and fry, stirring every now and then, for about 10 mins, until they start to caramelise. Stir in the cloves, then add the cabbage and apple and continue cooking, stirring more frequently this time, until the cabbage starts to soften. 2. Pour in the stock, add the vinegar and sugar, then cover and cook for 10 mins. 3. Stir in the cranberries and cook for 10 mins more. A healthy salad for serving on the side of cooked meats and other rich, festive dishes

13It all started in a small butcher’s shop in the Kent village of Rolvenden. Jim and John Hoad originally rented the shop in 1959 from where they ran a successful butcher’s and game shop. It was here that the original Korker Sausage recipe was made and has been in the Hoad family for four generatons. The customer response was so good that they decided to shut the shop and concentrate on the wholesale producton of Korker Sausages. In 2014 Jim retred and handed down the business to his children, with Ed Hoad managing the business ever since. In 2020 due to contnued business growth, Ed decided to expand the business with a larger freezer and producton area to help respond to market demand and in additon increase staff employment. KORKERS WINTER HAMPER This winter why not treat yourself or a loved one to a Korker hamper for £45www.korkersausages.co.uk 01580 241307   enquiries@korkersausages.co.uk  These mouthwatering festive sausage rolls are really easy to make INGREDIENTS 1 tbsp olive oil 1 small onion, finely chopped 450g Korkers pork sausagemeat 4 tbsp wild cranberry sauce ½ x 20g pack sage, leaves only, finely chopped 320g sheet all-butter puff pastry 1 Free Range Eggs medium, beaten METHOD 1. Preheat the oven to 200°C, gas mark 6, and line a baking sheet with parchment. Put the oil in a frying pan over a medium heat, add the onion and fry for 10 minutes, until soft and starting to brown. 2. Tip into a large bowl and add the sausagemeat, 2 tbsp cranberry sauce and the sage. Season with black pepper. Mash with a fork or squeeze together using your hands. 3. Unroll the pastry and slice in ½ widthways to form 2 rectangles. Spread 1 tbsp cranberry sauce down the middle of each piece of pastry. 4. Divide the sausagemeat mixture in ½, then roll each piece into a long, even sausage shape the same length as the pastry. Place one of the sausagemeat rolls on the top of the cranberry sauce on one of the pastry strips. 5. Brush the pastry with a little beaten egg, then roll up tightly. Repeat with the second pastry strip and sausagemeat filling, then cut each roll into 6 pieces. 6. Place the sausage rolls on the lined baking sheet, then brush the tops with the remaining beaten egg. Make several diagonal cuts on the top of the pastry. Bake for 30-35 minutes, or until golden brown and cooked through with no pink meat remaining. Serve the rolls warm, or leave to cool and keep in the fridge for up to 2 days.Festive Sausage Rolls

14Forgotten Delights DIARY-TURNED-RECIPE BOOK DATED 1968Georgie Williams was antique shopping in a South London street when her eyes were drawn to a vintage cabinet from the 1960s. She bought it on the spot. But unbeknown to Georgie, 30, she had also unwittingly purchased something. When she opened the cupboard at home, she stumbled upon an intricate handwritten diary-turned-recipe book dated 1968. The diary featured 366 homemade recipes for each day of the year (it was a leap year!). Tips and notes accompanied each recipe scribbled on its vintage pages. Now Georgie, who has been cooking a different recipe from the diary daily, wants to reunite the book with its owner, gleaning clues and hints from within its pages. Georgie, from Folkestone, said: "I became utterly engrossed in it and had so many questions. Who was this person? Was it a woman? What must it have been like to be a woman in 1960s or 1970s Britain? And how do culinary habits differ from how we cook and eat today?" "So I challenged myself to work through the book page by page, recipe by recipe, on a quest to try and find out who the owner of the diary is, explore the history of the time in which the diary was written and with delicious (if not questionable at times!) food along the way." Georgie started an Instagram account called Forgotten Delights to document the quest and adds: "Each recipe is set out the same- per date as if I were writing a diary myself. I dive into what would have been happening in Britain on that date, celebrating the music, film and fashion of the time." Instagram @forgottendelightsINGREDIENTS 2 egg yolks 2 1/2 oz [62 g] granulated sugar 1 oz [25 g] vanilla sugar 1 small glass rum 1/2 pint [250 ml] milk 5 leaves gelatine (or 3 level teaspoons of powdered gelatine dissolved in 1 tablespoon hot water) 1 can [6oz or 150 g] cream 1 can [8oz or 200 g] Morello cherries 4 tablespoons water 1 level tablespoon cornflour METHOD 1. Whisk the egg yolks, sugar, vanilla sugar and rum in a bowl until thick and frothy. 2. Meanwhile, heat the milk, and when it boils, gradually pour it into the egg mixture. 3. Simon’s wines are all outstanding, but this is one of the first English sparkling wines that really caught my attention. Aromas of baked apple and brioche. On the palate, you get fresh lemon acidity with hints of honey and that baked apple. Twenty-four months on the lees gives this a rich biscuity element, too. Try this with Fish and Chips or a classic prawn cocktail. AYUNTA NERELLO MASCALESE BIANCO 2021, TERRE SICILIANE Sicily, Italy. 100% Nerello Mascalese Located 700m above sea level on Mount Etna, this is the very essence of artisanal wine making. This is a white wine made from the black grape Nerello Mascalese. The grapes are pressed very gently and then spontaneously fermented in stainless steel tanks. The wine is then aged for seven months in cement tanks. On the nose, you have fresh citrus, stone fruit and wet stones. The palate replicates the aromas with bright acidity, elegant stone fruit and wonderful minerality. This is great with fish or even with spinach and ricotta cannelloni. TOSCANI, I TOSCANI 2021, COSTA TOSCANA IGT Tuscany, Italy. Syrah This wine stems as a tribute to the winemaker’s grandfather. The Syrah grapes are co-fermented with a small percentage of Greco. This leads to keeping the brightness in the Syrah. The wine is fermented in stainless steel tanks. On the nose, it has black fruit of black cherry and black plums. There are also aromas of cedar and cracked black pepper. The Greco gives this wine great acidity with blackcurrant, strawberry, cherry and cedar. There is also a hint of bitter almond. This is great for game or beef. 18CHRISTMAS COCKTAILS INDULGE AT HOME THIS WINTER WITH OUR FESTIVE COCKTAILSINGREDIENTS ice 300ml spiced rum 150ml dark rum 3 tbsp grenadine 4 limes, juiced 10 dried or fresh orange slices 1 litre ginger beer METHOD STEP 1 Fill a large jug with ice, add the spiced rum, dark rum, grenadine, lime juice and orange slices, and mix well. STEP 2 Top up with the ginger beer, stir gently, and serve in ice-filled tumblers decorate with cinnamon sticks and slices of orange. Festive Rum & Ginger PunchINGREDIENTS 8-10 fresh mint leaves, plus a sprig to garnish 25ml lime juice 2 tbsp caster sugar 50ml white rum 100ml cranberry juice soda water, to top up pomegranate seeds to garnish METHOD Muddle together the mint leaves, lime juice and sugar in a tumbler or highball glass. Pour over the rum and stir. Add a handful of ice cubes, followed by the cranberry juice and a little soda water to top up. Garnish with a sprig of mint leaves and a few pomegranate seeds. Turn off the heat and leave to infuse until cold. STEP 2 Strain through a fine mesh sieve and discard the lemon peel. 30BEAUTYHair Therapy Treating hair loss and scalp problems After a twenty-five-year career in hairdressing, Kate Holohan founded Hair Therapy after studying trichology in-depth in 2019. Kate decided to broaden her knowledge by studying trichology with the prestigious Institute of Trichologists in London, established for 120 years. She achieved a credit and is now a fully qualified member. Trichology is the science that studies the diagnosis and treatment of problems of the hair, scalp and hair follicles, which lead to symptoms of dandruff, texture problems, hair loss and other severe conditions. I was invited to meet Kate to find out all about the treatment that she offers for hair and scalp conditions. This couldn't have come at a better time for me after suffering damage to my hair from bleach and various other factors. Kate offered me a tailored scalp facial treatment to promote growth, which combines elements of a facial that you would use to treat your skin and obtain that healthy glow and repair your skin, but instead for your scalp, which is an area that often gets overlooked. The scalp facial starts with salicylic acid, which keeps the scalp follicles open and promotes hair growth as it gently exfoliates the scalp microbiome. This is followed by a metal detox, which helps detoxify the scalp of minerals and metals that can build up from hard water or hair products. The hair is washed using a Scandinavian Bio Labs shampoo and conditioner. A hair activation serum is applied, as well as a hair protection oil and then an infrared lamp, which dilates the blood vessels and helps to penetrate the scalp and follicles. This is followed by a head massage to enhance the absorption of the products further. Kate also uses a dermatoscope, which enables her to diagnose scalp conditions fully with a magnified visualisation of the hair follicles and scalp skin. Kate's knowledge of trichology is impressive, and my hair and scalp felt incredible afterwards. Kate can help with all scalp issues, such as alopecia, hair loss, hair thinning, dandruff, and psoriasis; you don't have to have a scalp problem to book an appointment. It will leave your hair and scalp feeling amazing and encourage new growth. We often overlook this area of self-care. I have noticed a difference in my hair after this treatment; it has left it shiny and feels clean after being detoxed of the minerals and deposits left by a build-up of products. A scalp facial is something that I look forward to having again as part of my self-care routine, especially in the Winter months when the temperature changes can often cause issues for our scalp and skin. If you are going to and from a place for exercise, wrap up in a coat or jacket to avoid getting chilly while travelling. Visibility is also worth paying attention to if you exercise outside in the dark. MIX IT UP Trying new exercises or activities can help keep you focused and engaged. For example, if you're a runner, you might try swimming or cycling to challenge your body in new ways. Another way to do this is to change the intensity of your workouts. This could mean incorporating high-intensity interval training (HIIT) or a more extended, steady-state exercise. TRAIN AT HOME No matter your fitness levels, exercise history, or at-home equipment set-up, home workouts can help you meet specific exercise goals (like improving strength or boosting cardiovascular fitness) and promote overall health. Training at WELLNESShome may be more accessible if you have a busier lifestyle and can't make it to the gym. There are many different programs online that you can follow, such as the NHS' Strength and Flex plan, which is designed to be equipment-free and easy to follow, as well as many apps that you can download. KEEP TRACK OF YOUR TRAINING Keep A Fitness Journal or use a fitness tracker or app. This will help you record your progress and is also a great motivation tool as you start to see results or snap workout progress pictures to see your progress. GIVE YOURSELF A REST DAY Rest and recovery are equally important, especially if you are exercising intensely. Rest days are an essential part of any exercise program. They allow the body to repair and recover and help prevent injury. Take time to heal, hydrate and eat well, and you will feel stronger and more motivated to do your next workout!
