There once lived a little girl called Safia She loved eating Mandazi

She ate them for breakfast lunch snack and even dinner For her birthday she asked for a Mandazi cake

On the day of her birthday her mom made her a sparkly and humongous Mandazi cake When she took a bite she felt funny

Before she knew it she found herself in the land of Mandazis There were Mandazi rides everywhere She sat on all of them

After a fun day she felt tired and alone and missed her mommy She wanted to go home She sat on a Mandazi chair feeling sad and wondering how to get home

Suddenly a Mandazi frog appeared from the pond He told her that she had to promise to try new foods if she wanted to get home Safia made a pinky promise top the Mandazi frog

Suddenly she found herself on her own bed and heard her mom calling her for breakfast

As she went downstairs she could smell some fresh Mandazis She remembered her pinky promise and took a banana and began eating Her mom was so surprised that she nearly fainted

The End About the author Ruqayyah Zahra is 5 years old She is in Senior Kindergarten and lives with her parents and two younger siblings Her favourite color is pink and favourite subject at school is art All the illustrations in the book were also done by Ruqayyah In her free time Ruqayyah enjoys drawing and painting with her mommy You might also enjoy her previously written story Ruqayyah s story When she grows up she wants to be an artist Mandazi is a sweet african fried dough that is best enjoyed warm dipped in some tea

How my mommy makes Mandazi Ingredients 3 cups all purpose our 3 4 tsp instant yeast 7 tbsp sugar 1 tsp ground cardamom powder 3 4 cup heavy coconut milk light coconut milk just enough to make a soft but not sticky dough So approx 1 2 3 4 cup add slowly oil for deep frying

Sieve the our add in the yeast directly into it and the sugar and cardamom Start kneading with the coconut milk adding a little at a time until you have a good soft but rm not sticky dough Knead it for about 15 good minutes pounding it as much as possible Cover and leave to rise for an hour Divide the dough into four and roll them up into balls Roll out each ball to a circle of about quarter of an inch thickness and cut into 4 quarters Repeat with the remaining balls to make a total of 16 mandazis Cover and leave to rise again for an hour Then fry in hot oil Don t let it rise too much in the oil before turning otherwise it will bubble or burst and it won t have a perfect shape The minute each starts rising in the oil turn it over Remove from oil when both sides are a nicely browned color Enjoy
