Charcoal Oolong Our Charcoal Oolong is crafted by experienced tea artisans using ancient methods. It's smooth, refreshing, and has hints of chocolate and caramel. Our tea artist roasted the tea leaves slowly, stirring every 20-30 minutes to ensure that the tea leaves were evenly heated. The internal temperature of the tea leaves reaches around 150 degrees. This labor-intensive process brings out the full potential of the tea. What sets our Charcoal Oolong apart is the use of Longan wood, burnt at high temperatures of 800 degrees in a traditional kiln. Without oxygen, the wood cools down and carbonizes, releasing a unique energy that infuses the tea leaves. By using charcoal roasting, the characteristic of tea can be changed, making the flavor more rich and mellow, because the processing breaks down caffeine, theophylline, and tea tannins to make the tea smoother and less bitter with reduced caffeine content. Perfect for those who crave a balanced cup! Tea Identity Origin: Nan Tou, Taiwan Cultivar: Jin Xuan (TTES. No.12) and Cui Yu (TTES. Resting Tiger The production method of Resting Tiger is Taiwan's earliest Oolong tea, which we call "Fan Zhu Oolong". It is made by a process of heavy withering, heavy stirring, and heavy oxidation, which allows the tea leaves to retain a sweet and ripe fruit aroma while still maintaining the full-bodied flavor of black tea. Taiwan's record of tea exports dates back to around 1865, when tea was exported through Western trading companies to foreign countries. At that time, Taiwanese people referred to Westerners as "Hong Mao Fan" (it means Red-haired Foreigner, and therefore, the exported tea was called "Fan Zhu Tea" or "Fan Zhu Oolong". This is also known as "Formosa Oolong Tea" in foreign markets. Today, this traditional flavor has undergone some minor adjustments in the production process. The tea leaves are first processed into a semi-ball shape using a tong qiu machine(桶球機), and then precision-roasted to achieve a refined flavor. Red Phoenix Red Phoenix is a unique tea that combines the processing characteristics of Oolong and Red tea, resulting in a new creation that belongs to the heavily oxidized Oolong tea category. It emphasizes the floral aroma of the tea liquor, unique fruity notes, and a mellow taste that develops after undergoing long roasting sessions, exuding a honeyed aroma. Red Phoenix is vibrant, enduring through multiple infusions, making it particularly suitable for cold brewing. It can be enjoyed on its own or paired with meals and can easily complement a variety of foods. The cultivar used in making Red Phoenix is Da Ye Oolong, a tea tree species native to Taiwan. Da Ye Oolong was a selected strain during the Japanese occupation era and was further developed into a local Taiwanese variety through asexual reproduction, becoming one of the 'Four Great Cultivars' at that time. Currently, Hualien and Taitung are the main production regions for Da Ye Oolong. Due to global warming, this tea tree species is challenging to cultivate, resulting in reduced yield, and making it less common in the tea market. First Spring First Spring is harvested in Longtan, Taoyuan. Longtan District is the earliest area in Taiwan to promote tea cultivation, with a history that can be traced back to the Qing Dynasty's Jiaqing era. Most Longtan is a plateau terrain, with tea plantations mainly located at elevations of 300-400 meters above sea level. The region has a high temperature and high rainfall throughout the year, with a thin mist covering the area in the morning and evening. The tea trees thrive well, allowing for the production of oolong tea, Oriental Beauty, and black tea.First Spring is shaped using a tong qiu machine(桶球機) and initial drying process, resulting in a tea leaf appearance that is half-ball shaped and curled. Oriental Beauty Oriental Beauty Tea is a type of oolong tea that has many other names, such as 'White Tip Oolong Tea', 'Pengfeng Tea', 'Five-Colored Tea', and 'Champagne Oolong Tea'. Its origin may date back to the Japanese colonial era in the Hakka villages of Taiwan. Oriental Beauty Tea is also a unique and indigenous Taiwanese tea variety. We only produce high-quality Oriental Beauty Tea using the best variety of Qing Xin Da Mou tea leaves. The tea leaves require a special processing method, which involves selecting young, tender tea buds that have been bitten by the tea green leafhopper (a type of insect). After harvesting the tea leaves, we use natural sunlight to wither them, followed by indoor withering. During this process, we thoroughly stir the tea leaves to ensure uniform moisture loss and then oxidation. The purpose of this step is to make the tea leaves develop their unique flavor, aroma, and color. This step not only determines the degree of oxidation in partially oxidized tea but also affects the quality of the tea. Therefore, we carefully control this step to preserve the tea leaves' natural honey-like aroma and delicate floral and fruity notes, ensuring a smooth and refined flavor. Impermanence In 1973, Tea Research and Extension Station announced the release of Taiwan Tea No. 8, a type of Assam black tea, which was bred from a single plant of the Jaipuri strain of Assam from India, and is used to make red tea. We handpick the tea leaves in the summer to make the Oriental Beauty tea, which is available in five colorful shades. It is sweet and fruity (ripe pear flavor), and has a rich, sweet, malty, or sucrose aroma that is typical of the large-leafed cultivars used to make highly-oxidized teas. The Oriental Beauty tea is stir-fried, smothered, and then cloth-rolled to make the fruity flavor more rounded. After swallowing the tea, the mouth feels the bitterness and astringency that quickly turns into sweetness, followed by a long-lasting feeling of freshness and comfort in the throat. Gardenia Oolong Our Gardenia Oolong uses the renowned Jin Xuan Oolong tea paired with hand-picked Gardenia buds as the material, precise proportions and staged process improvements are applied. Through the use of alternating cold and hot scenting techniques, the gardenia fragrance is infused into the Oolong tea. The tea liquor has a bright yellow color, with a rich and sweet taste, along with a delicate and elegant floral fragrance and tropical fruit aroma, challenging your imagination and experience of floral tea. During the production process, some gardenia flowers are kept in the tea leaves. The tea leaves are purely natural without adding any essential oils. The "scenting" technique is blending fresh flowers with tea leaves in appropriate proportions, using the strong absorption characteristics of tea to absorb the fragrance of the flowers, allowing the tea leaves to carry the floral aroma. The flowers are then removed, and the tea leaves are dried to become scented tea. During the long scenting process, the aromas of tea and flowers blend together to create a delicate and unique aroma. Ruby Green Ruby Green's meticulous selection process involves harvesting the tender buds of one heart and two leaves, freshly picked in the morning after the Qingming Festival, when the weather is clear and optimal for tea production. Unlike traditional methods, we let the harvested leaves sit in a quiet room for a few hours to allow their natural aroma to develop, before using a high-temperature and pot-frying method to stop oxidation and fix the tea's delicate flavor profile. This fixation process yields a rich flavor, sweet entrance, refreshing mouthfeel, and abundant aroma. We adhere to environmentally friendly and sustainable cultivation practices, using the high-quality TTES No.18 cultivar, also known as Ruby (Hongyu), and harvesting fresh every day to ensure optimal freshness and quality. Our minimal withering and drying process preserves the tea's natural aroma, and our high-temperature short-time roasting method halts enzymatic activity, ensuring that our green tea remains fresh, fragrant, and full-bodied. Wild White In the wild of this highland tea garden, there has been no harvesting for 15 years. We refuse to use any pesticides or chemical fertilizers, and we do not weed or provide water for irrigation. We let the tea trees grow in soil rich in natural minerals and natural ecological balance, absorbing the essence of nature. A complete food chain naturally forms in the tea garden, and although insects may eat the tea leaves, reducing tea production, we are not afraid. However, the tea trees also become more resilient to survive, and the flavor of the tea leaves will become stronger, richer, and more unique. At our tea farms, we believe that the environment is just as important as the tea leaves themselves. We take pride in our organic and eco-friendly farming practices, which allow our teaplants to thrive and produce a rich, complex flavor profile. This means we use sustainable methods that promote healthy soil, conserve water, and reduce waste. Our simple packaging is a reflection of this philosophy - we avoid unnecessary packaging and opt for minimal, biodegradable materials instead. We're committed to transparency in our farming practices and want you to know exactly how each tea is produced. That's why we've created detailed "tea identities" for each product, giving you a glimpse into the journey from seed to cup. We offer a range of organic, eco-friendly, and commercially farmed teas, because we believe that every choice matters. As consumers become more aware of the impact of their choices, we're encouraged by the shift towards sustainable practices - not just for tea farmers, but for everyone. By seeing food and drink as medicine, we can all play a role in preserving the planet's natural resources for future generations. The tea within, a mind so pure and bright, Unadorned and simple, yet radiant with light. It's not the wrapping that makes it shine, But the beauty of its inner essence divine. The packaging, a facade so thin and weak, A veil that hides the truth we seek. It may be ornate, with colors bold and bright, But it's just a disguise, a fleeting light. The tea within, it's where the truth resides, A reflection of the mind that abides. Just as the packaging crumbles and fades away, So too do the superficialities of each new day. Beneath the surface, lies a depth so profound, A wisdom that's revealed when we lay our minds down. For in the stillness, we find our true design, A reflection of the beauty that's truly divine.
