Message with loveSeasonedfrom the RMHCK KitchenThis recipe is brought to you by INGREDIENTS1 carrot (julienne)1 cup of jicama (julienne)1 English cucumber (julienne)2 sticks of rice noodles (pre-soaked)1 lb poached shrimp (chilled)1 cup of thai basil leaves1 cup of mint leaves1 pack of rice wrappersHoisin sauce for serving DIRECTIONSBring a pot of salted water to a boil, drop the heat to low, add shrimp, and poach forapproximately 3-5 minutes or until the shrimp start to curl and turn pinkish red.Next, soak the rice noodles according to the instructions on the packaging, strain, and setaside.Lightly season your carrot, jicama, and cucumber with a dash of salt, and add a sprinkleof whatever vinegar and fish sauce you have on hand.Separate the Thai basil and the mint from the stems, then set aside.Prepare a bowl of warm water for dipping the rice wrappers, and soak individually justbefore assembly.Once soaked, place the wrapper on a board, then add shrimp, herbs, vegetables, andnoodles.
