You may think learning about the pretzel as a waste of time learning about, but you're wrong. For Example if it weren't for annoying children we would not have pretzels. Or if it weren't for pretzels the Turkish empire could have took over Austria. Pretzels are one of the oldest and most famous snacks we eat today. In this book you will learn about the history of pretzels, how to make them, and much more about this salty snack.

 The History of the Pretzel

No one knows for sure where pretzels came from. The pretzel’s beginnings can be traced to many parts of Europe.  There are many different stories where Pretzels have started the most popular theory is that pretzels were made in 610 A.D. The pretzel was made when an italian monk named Leibniz decided to make a treat for his students because the students made the monk angry by not praying.  So he make the pretzel look like a person is crossing their hands in prayer. The monk decided to call the pretzel brucellae, which meant in latin ¨little arms.¨ As the pretzel grew in popularity  the new name for pretzels became ¨Bretzels¨ and soon became known as Pretzels.

Much later, in 1510 B.C.E, when the Turkish empire tried to invade Austria, the invaders dug holes under the city’s walls. When the  Bakers were making pretzels they heard the Turkish invaders plans. The bakers told the officials of Austria which helped defeat the attack. After that, people believed that pretzels had a religious part to them, and people started putting pretzels on christmas trees back in the 16th century.  It is also believed that the pretzel may have made its way over to the west by coming over on the Mayflower.



Ceremonial Parts of the pretzel

In Switzerland, the pretzel was used as a marriage knot. People believed that when a couple got married they each would pull on a pretzel sort of like a wishbone but you could eat the bone after. The bigger half brought “prosperity” to the marriage. The Pretzel also symbolised love.  

Fantastic Flavors

As the Pretzel traveled throughout history people have made many different flavors. Some examples of different flavors of the pretzel are peanut butter filled pretzels, yogurt covered pretzels and chocolate pretzel.This created many different versions of what we eat and love today. Each  has it’s own special tastes and different flavors sometimes combining different dips like mustard to add even more flavor to this great snack.



Who made the chocolate pretzel?

The chocolate pretzel was created by Herr Franz Joseph Leibniz who decided to team up with a chocolatier because Herr Franz Joseph Leibniz’s pretzel company called Handover made different pretzels according to the holidays, for example Handover once made a gingerbread pretzel. In the handover Handover bakery one worker decided to experiment with the company's newest type of pretzel called the hard pretzel. The worker decided to cover the pretzel in melted chocolate to make the chocolate pretzel.

Another type of pretzel is a peanut butter filled pretzel. A pretzel company called H K Anderson started in a small  bakery in Lancaster, P.A. The worker decided to fill their original pretzel nuggets with peanut butter inside. Which makes a hard on the outside, soft on the inside taste. You can also find some peanut butter filled pretzels in a mall, or a shop.


More types of pretzels and Their Back Stories

One more type of a pretzel is a honey wheat pretzel. Handover ,which is now called Snyder's, also created twisted pretzels, or braided pretzels, and a new flavor for there new twists. The New flavor they made is the honey wheat pretzel which contains  whole wheat flour, honey and sesame seeds. You may also find honey covered pretzels in your local mall or you local grocery store.

How to make a pretzel

 1.  To begin, dissolve one ¼ oz. packet of yeast ( 2 ¼ tsp) and 2 teaspoons of sugar in ½ cup of warm water. Allow the yeast to mixture to sit for for five minutes, or until it becomes frothy on top. Meanwhile. Whisk together 2 cups of all purpose flour with ½ teaspoon of salt in a large bowl. Once the yeast mixture is frothy, pour it into the bowl of flour and salt, then stir until it forms a shaggy ball of dough. Turn the dough out onto a floured surface, and knead for 8 minutes, incorporating an additional 3/4 to 1 cup of flour.


2. After kneading for eight minutes, the ball of dough should be smooth, and it should spring back when poked with a finger. Coat a large bowl with a little oil or nonstick spray, then roll the dough around in the bowl until it is coated in oil. Cover the bowl loosely and let it rise for one hour, or until it doubles in volume. When the dough is doubled in volume, punch it down to deflate, then turn it out onto a clean surface. Flatten the dough into a disc, then cut it into 16 equal wedges. One by one, roll the wedges into a 24-inch thin rope, bring the two ends together, then twist into the classic pretzel shape.


 3.Next cover two baking sheets with parchment, then mist lightly with non-stick spray. Arrange eight pretzels on each baking sheet and allow them to rise for 30 minutes. Now Preheat the oven to 425 degrees F and bring a large pot of water to a rolling boil. Add 1/4 cup of baking soda to the boiling water. Take care when adding the baking soda as it will cause the boiling water to fizz and bubble a lot.

5. Finally, bake the pretzels for 15-18 minutes, or until the surface is deep goldish brown. Cool the pretzels on wire cooling racks, then serve. Alternatively, brush the surface of the pretzels with melted butter after baking, then dust with garlic salt and parmesan, or a mixture of cinnamon and sugar. Offer mustard, BBQ sauce, ranch dressing, cheese sauce, or cream cheese icing for dipping. You don't always have to choose already made flavors.

 4.Once the fizzing subsides, add two or three pretzels at a time to the pot. Boil the pretzels for about 60 seconds on each side, then transfer to a wire cooling rack to drain. Let the pretzels drain for a few minutes, then transfer them back to the parchment lined baking sheets. Next In a small bowl, whisk together one large egg with one tablespoon of water. Brush the egg wash liberally over the surface of the pretzels, then sprinkle with coarse sea salt.

You can make pretzels by hand, but many people make pretzels by machinery. For example did you know that about 90% of pretzel manufacturing is not touched by hands. There are 6 main steps in manufacturing a pretzel. Step one is the mixing of the dough, step 2 is dipping the pretzel in  alaline, step 3 is dipping and salting. Dipping and salting can depend on what type of pretzel the company is making. Step 4 is cooking the pretzels, step 5 is packaging, last but not least step 6 is quality control.

Step 1: Mixing the dough  

Mixing the dough is the first step of making a pretzel by machine. First flour and warm water are combined into a steel tank that mix the two ingredients together. More ingredients like sugar, yeast and salt are all transported into the same steel tank, as before, to make the dough for the pretzels. The second step is shaping the pretzels. Dough is then transported to a hopper which then transports the dough to the pretzel shaper.


Step 2: the alkaline bath  

The raw pretzels are then transported to to a different conveyor belt to be dipped in alkaline. The conveyor belt moves slowly so when he pretzel reach the alkaline the pretzels get soaked in alkaline. The pretzel stay in the alkaline for about 10 to 20 seconds. Then the pretzels go on a different conveyor belt with machines that drop salt onto the pretzels. Since the pretzels are still raw the pretzels are sticky letting salt onto the pretzels.


Step 3: Baking the Pretzel

The 3rd step is cooking the pretzel. The pretzel are sent to another conveyor belt with a oven tunnel. The oven’s heat is about 350-550 degrees fahrenheit, the pretzels are in the oven for 4-8 minutes.The pretzels go through is hotter near the front while the back of the oven is cooler. This makes sense because when the pretzel gets near the end of the oven, the moisture of the pretzel can get out of the pretzel easier.

When you think about the pretzel you, usually think about the pretzel knot shape. Did you know that there are many more shapes of the classic pretzel knot shape. For example, there is the line shape, or the pocket pretzel shape. The pocket pretzel shape is a combination of a hot pocket and a pretzel where you can add a filling.  Another shape of a pretzel is the grid shaped pretzel. This is where the pretzel makes squares and meet together.  Most of the time the grid shaped pretzels are about the size of a nickel.
