C A B E R N E T SAU V IG N O N: STORY :Paso Robles is the home to many dreamers and self-starters, those who have a spiritand the drive to create their own destiny. Paso Robles entices those individuals to betheir best, create the best from the land and all that it produces. This wine is a tributeto those who believe in Paso Robles and all of its greatness, just like our win emakers.: Harvest & Vineyard :We source from Paso Robles vineyards located mainly on the eastside of theappellation, they all have one thing in c ommon: Gravely-to-loamy soils withcalcareous deposits. This helps with quality consistency and makes for a true “Paso”flavor profile. The Paso Robles AVA distri cts we like most are Geneseo, Estrellaand Paso Robles Highlands, which is where the bulk of the viney ards are located.T he 2021 growing season was very typical through early spring with warm days andcool nights. Early summer through harvest gave us some unexpected heatwavesbut plenty of marine breezes and mil d weather prevailed. The result was a slightdelay of harvest while we waited for acidity, pH and brix to balance creating matureflavors and good color.: Winemaking :Our Cabernet Sauvignon is harvested and fermented individually by vineyard lotsand then barreled into a combination of French and American oak barrels, 10% ofwhich are new. Wines were matured in oak for an average of 15 months and rackedtwice during barrel-aging before an initial blend was assembled in mid-Septemberof 2022. Following another 2 months in 15% new French Oak, the blend was finalizedand racked a final ti me before a gentle cross-flow filtration and bottling in mid-November 2022.: Tasting Notes :Our third release of AUSTIN Cabernet Sauvignon remains focused on ou r goal toproduce a w ine t rue to ‘Paso Robles’. On the nose savory aromas intertwine withrich dark fruit nuances. On the palate, flavors evolve into layers of juicy blackberry,spicy nutmeg, toasted coffee and fresh vanilla bean. This wine is a tribut e to those who, like our winemakers, believein Paso Robles and its greatness.: Vineyards & HARVEST :Austin Chardonnay is grown in the Templeton Gap, Creston and San Juan Creek districts ofPaso Robles, drawing upon a diversity of soils and microclimates to create a multifacet edChardonnay. As required by Hope Family Wines, each contributing vineyard is certifieds ustainable. The Templeton Gap vineyard resides in the rolling hills of westside Paso Robles.This is one of the coolest areas of the Paso Robles AVA, with a pronounced marine influenceand Linne Calodo soils that drive the minerality of the wine. T he Creston vineyard is locatedon an ancient floodplain where sandy loam soils prevail, while the San Juan area vineyardsfeatu re similar loam soils. In both districts, cooling bree zes arrive by early afternoo n and theovernight temperature drops significantly each day—ensuring the classic golden hues andcrisp acidity that we desire in our Chardonnay.The 2022 growing season was slightly warmer than average overall, w ith a mild spring andearly summer followed by a sustained September heat wave. The grapes were harvested aweek earlier than normal to retain crisp acidity and ke ep the pH at a perfect balance .: Winemaking :After harvesting, Chardonnay grapes were whole-clus ter pressed into stainle ss steel tanksfor cold settling at 30 degrees. The juice was then racked off the heavy lees into French oakbarrels (20%) and stainless steel tanks (80%) for fermentation. The barrel fermented portionsaw eight months of sur lie aging and the barrels were stirred monthl y during the first threemonths to enhance the creamy nature of the wine. The blend was assembled in April of 2023,then stabi lized in stainless steel tanks b efor e bottling in May of 2023.: Tasting Notes :A beautiful golden hue anticipates bright tropical notes on the nose. This wine showsriper warm-climate qualities that are harmoniously balanced with the brisk acidity andlemon zest notes of the cool-climate fruit. TAITTINGERPrestige RoséGREEN CERTIFI EDThis elegant and racy cuvée is crafted with superb Chardonnay and PinotNoir fruit harvested from Montagne de Reims and Les Riceys. The majorityof the grapes are pressed in vineyard press houses. At the winery the mustundergoes a cool-temperature fermentation. 85% of the blend is vinified aswhite wine and the remainder is vinified as red wine. The delicate color andintense vibrancy on the palate is obtained by adding a small proportion ofstill red Pinot Noir from Ambonnay, B ouzy and des Riceys. The final cuvéeis blended from an extensive range of at least 15 diverse crus, and usuallymore, of the Champagne region as well as young reserve wines thatexpress the blend's fresh, lively Pinot fruit. The Chardonnay grapes comefrom the most renowned vineyards of the prestigious Côte desBlancs, and the Pinot Noir from the Montagne de Reims.
