HOW BOURBON IS MADEThere are specific guidelines thatdistiller's must follow in order toput the word bourbon on the label.The Process- Most bourbon starts withsour mash. It is taken from a previousbatch of mash (crushed grain goingthrough the fermentation process), set outto sour overnight, and then added to a newbatch. The process is much like that ofstarting a sourdough bread.The Recipe- Bourbon is distilled from afermented mash of grain, yeast and water.The “mash bill” must have a minimum of51% corn. For most bourbons, the averageis about 70%. Other grains such as rye,malted barley and wheat are consideredthe “flavor” grain.Length of Aging- Bourbon must be agedfor a minimum of two years. Many premium bourbons on the market areaged between 5 -12, with some as long as 27years.The Barrel- Bourbon must be aged in brandnew barrels which are made of white oak andhave been charred on the inside. Brandsdetermine the varying levels of char for theirbarrels from 1 to 4.Flavor– By law nothing can be added atbottling except water. Nothing is added thatmight enhance flavor, add sweetness or altercolor.Proof- Bourbon is bottled at between 80 and125 proof. Only water may be used to lowerthe proof of the alcohol.Location– Bourbon can be made anywhere inthe US.
