A few months ago we ventured into one of the largest deserts in Colombia the Northern Desert of La Tatacoa On its outskirts there have been a few cacao farmers who have over centuries clearly shown why the people of Huila are known for their strong work ethic as their foundation is rooted in agriculture practices Today we feel this characteristic of its remarkable people will serve as a significant element in developing the true chocolate potential of Huila In a short time we have made great progress beginning to instill a more effective production chain and supporting enriching the production methods they ve used in the past There is cacao here with very old genetics and we are helping the local communities preserve this unique crop At the core of our efforts is to work with the youth and to ensure a sustainable check list of proper practices ensuring the highest quality As of today we working with a new generation in Rivera and all looks promising As of this month we haven t finished creating the perfect Huila chocolate but the beans are showing their potential and we are excited to see the final result We will be updating you as to how our progress is going but we are excited that we are dedicating so much time to this unique region
