Lay the second piece of salmon on top and spread the remaining spinach mixture evenly over it. Cover with the second sheet of puff pastry, pressing gently to remove any air bubbles and sealing the edges of the two pastry sheets. Trim any excess pastry around the bottom sheet, then roll and crimp the sealed edges.
