development of distinct flavor profiles. Lighter roasts boast bright acidity and floral notes, while darker roasts offer rich, chocolaty depths. It’s this diversity of fla-vors that keeps coffee enthusiasts com-ing back for more. Don’t always settle for your “favorite” as you just might miss a grand coffee. In the grand symphony of coffee produc-tion, the roaster serves as both conductor and musician. My personal preference for lighter roasts reflects a commitment to honoring the natural characteristics of each bean. However, I love our darker roasted Tiger Aceh from Sumatra. Whether guid-ing a batch to a delicate light roast or a robust dark roast, the goal remains the same: to unlock the fullestexpression of flavor. Coffee roasting is truly a union of sci-ence and art. Through precision, pas-sion, and a dash of creativity, Queen Bee Coffee breathes life into every batch of beans. So, the next time you savor that morning cup, take a moment to appreci-ate the journey it took to reach your mug — a journey fueled by a love for coffee and a commitment to perfection.ROASTMicah HodgestheDemystifying Coffee Roasting Coffee roasting, often hidden behind the scenes of our daily caffeine rituals, is an art form that transforms humble green beans into aromatic delicious delights. What began for me as a simple hobby evolved into a thriving career. As the proud owner of two cafes and a commercial roastingfacility, I’ve come to appreciate the intricate dance of heat, time, and technique that defines the roasting process. At its core, coffee roasting is the process of applying heat to green coffee beans to unlock its full potential. There are many different methods of roasting – air, infrared and drum are among the most popular. However, the drum roasting technique stands as a stalwart in commercial roasting fa-cilities like Queen Bee Coffee Co. This method ensures even roasting and allows for precise control over temperature and airflow. Behind the mesmerizing sight and aroma of roasting cof-fee lies a realm of scientific wonder. Chemical reactions such as caramelization and the Maillard reaction work in tandem to produce the complex flavors and aromas we love to ex-perience in our cups each day. No matter the roast, under-standing these reactions is key to crafting the perfect cup. It’s the careful manipulation of variables like temperature and airflow that truly defines our craft. Each batch of beans presents its own unique characteristics, demanding a deli-cate balance of technique and intuition. Just like there are many apple trees that produce unique apples, there are many different coffee trees that produce unique coffee beans. The elevation of the farm where the coffeetree grows as well as how the coffee bean is processed after picking create further variables in the uniqueness of every coffee. Each variety of bean is truly unique in its size and density making the dance of balancing all the factors a re-warding one. Consistency is paramount, ensuring that each sip delivers a familiar and satisfying experience. As green beans undergo the roasting process, they ex-perience a remarkable transformation. The application of heat triggers a cascade of chemical changes, resulting in the Micah Hodges, along with his wife Alicia, are the owners of Queen Bee Coffee Co. Micah has been roasting coffee for over fteen years and is a former biomedical engineer. 15SUMMER ISSUE | 2024

I love taking mini trips this time of year, and it almost always involves food by a pool, park, or a patio. While I am a year-round brunch enjoyer I know this is the time when my friends are feeling even brunchier outdoors, which is perfect for my furry friend, Mochi, to join us. For my friends and I, a good brunch is not complete without the mandatory Mimosas! Mimosas are such a fun, refreshing, and exciting way to enhance the brunch expe-rience. And this cocktail is easy to make at home. So, grab your bottle of Prosecco, and let’s talk Mimosas! A traditional mimosa is made with equal parts of champagne and orange juice. In a typical champagne flute, you can add up to 6 ounces - a 2 oz pour each gives you enough space for a garnish if you are feeling fancy. Ingredients: -Granulated sugar (Optional for a sugared rim)-Chilled sparkling wine (I like Prosecco, but Cava works great too)-Chilled Juice of your choice-Fruit or Mint for garnishInstructions: Moisten the rim of the flute with a lime or lem-on wedge . Pour some sugar into a small plate and dip the moistened rim into the sugarGently twist the glass to ensure an even coat.Pour 2 oz of wine into a champagne flute. Top with juice of your choice (orange juice tra-ditionally). Gently stir for a sufficient mix.Garnish with a slice of orange or a sprig of mint for extra fanciness!Brunch food that would complementbeautifully are: Eggs Benedict - The rich flavors of poached eggs are a classic match for the crispness of mimosas.Breakfast Sandwich - Bacon Egg and Cheese are my go -to.Avocado Toast - Topped with an egg and toma-to for a hearty healthy option.French Toast - Classic or dress it up with your favorite fruits!Brunch and mimosas are such a fun way to bring friends and family together. There are so many fun flavors to try, here are some ideas to substitute for the traditional orange:-Cranberry or Pomegranate juice - for a sweet and tangy taste.-Blood Orange Juice - adds a vibrant color Nancy Nguyenwith bold flavor.-Pineapple Juice - for a tropical twist and a pineapple garnish. DINERS’ dishJUICY RIBSCRISTY MCABEE When I think of summer, the foods that most come to mind are the ones that can be prepared on the grill or by a smoker. There’s nothing quite like walking up to the aro-ma of someone grilling in the summer. However, for many of us who are not itching to sweat it out over the grill, Henry County has many great local barbecue options. One of my favorite spots is Juicy Ribs, a take-out spot located alongside a convenience store in Hampton, Georgia, I’d like to add some of our best casual eateries in Henry are connected to convenience stores. Some that come top of mind include Chalo Fast Food, Holey Do-nuts, Fusion Restaurant & Bar, and my favorite BBQ spot, Juicy Ribs! Juicy Ribs has been serving up some of the best ribs, chicken, and pulled pork, in Henry County for over a de-cade. Their meats are smoked on-site and you can gen-erally nd them smoking their meats fresh when you stop in. Not only are their proteins smoked to perfection, but their sides are equally delicious. The rst time I had their baked beans, I was blown away. I was skeptical because there were tomatoes in the beans but it was an amazing combination and packed with avor. I usually order chicken when I eat here but the ribs are fantastic too. The chicken is always moist and full of smoky delight. And the few times I’ve had the ribs, there was plenty of meat that fell right o the bone. If you reside in Hampton and haven’t discovered this gem yet, you’re missing out on some of the best barbe-cue around! If you’re from a surrounding town, it’s de-nitely worth the drive. Just know, it’s a take-out restau-rant, so you may need to plan for a picnic. Juicy Ribs is located at 718 Old Highway 3 in Hampton; they’re open Thursday through Saturday 11 am to 6 pm. THE BBQ REVIEWJerry Belcastro. Cristy McAbee & Toye WheelerSWEET AUBURN BBQTOYE WHEELER In Henry County, we have a nice selection of barbecue options, but one restaurant in McDonough has added a unique twist to this popular Southern staple. At Sweet Auburn BBQ they’re serving up BBQ with an Asian are, oering unique menu items like pimento cheese wontons and brisket egg rolls . My family and I decided to dine at Sweet Auburn BBQ around 8 p.m. one evening to grab dinner after a dance recital. During our rst (and not our last) visit, we were blown away by the prompt service, the unique food, and the aordability. Patrons have the option to dine on the full patio or indoors. Inside you will nd a modern, hip, and fun design that gives subtle nods to a popular Atlanta rap group from the early 2000s. (Curious who the rap group is? Press the button in the women’s restroom.) Sweet Auburn BBQ attracts a variety of diners but is a family-friendly establishment. Included on the menu is a full kids’ menu with several non-alcoholic beverage selections for kids and adults alike.. Our server, Lynn, was top-notch and explained to us the daily dish while being prompt, knowledgeable, and accommodating. All dishes, including generously portioned appetizers, are served on a metal platter, and this detail adds to the authentic and industrial vibe Sweet Auburn BBQ abodes. At Sweet Auburn BBQ, the menu prices are aordable and reasonable. Most plates cost under $25, and all sides cost $5 at. Now, let’s talk about their delicious dishes! Sweet Auburn BBQ oers sizable appetizers “for the table” that include brisket egg rolls with sweet Thai chili sauce for dipping, smoked wings served with a generous portion of seasoned French fries, and some of the most scrumptious jalapeno cheddar cornbread and sorghum butter that my 17SUMMER ISSUE | 2024

family has ever tasted! Diners looking for a lighter option can choose between two full-size salad options, the Bulgogi Salad, and the smoked chicken garden salad. Both are served with your choice of dressings. All six sandwiches are served with a tasty side dish. The main entrees, also known as “plates”, in-clude BBQ pulled meat plates, pulled pork bowls, veggie plates, and even shrimp and grits topped with charred corn relish and scallions. Additionally, there are six kids’ options that include favorites such as mac and cheese, BBQ chicken sliders, and veggie plates. The aordable yet generous sides include pear coleslaw, bourbon beans, mac and cheese, and jerk spiced collards. The meats were moist and full of avor, and the mac and cheese rivals my own! There is no wonder why this restaurant has earned many awards, including the Atlanta Magazine Best of Atlanta in 2021. My family and I will be dining here again and again! THE BBQ REVIEWBBQ MASTERSJERRY BELCASTRO For this Barbeque venture, I visited BBQ Masters, locat-ed at 72 Hwy 138 SE in Stockbridge. The seating area was nice and clean. Here, patrons place their own order oncomputer monitors, very similar to the kiosks in McDonalds. I was craving a juicy rack of ribs, so I placed my order and had a seat in the dining area. The wait was not long at all, and much to my surprise when I opened the box, the ribs looked like competi-tion-style ribs. I am quite familiar with competition-style ribs, as I have been judging barbeque for the Georgia Barbeque Association for ve years. To the surprise of many people, ribs are considered overcooked when the meat falls o the bone. A perfectly cooked rib is when you hold each end of the bone and bite in the center of the rib, and it leaves a clean bite mark. These ribs were cooked absolutely perfect! I also liked that the ribs are served dry with sauce on the side. Their signature sauce was really tasty too, and compli-mented the nice char on the ribs! I could tell this pitmaster has been cooking for quite some time, and it sure was reected in the ribs. I look forward to going back and tasting his other smoked meats, including sausage, rib tips, chicken, pulled pork, brisket, and turkey. They oered a nice array of sides including, mac and cheese, potato salad, baked beans, cole slaw, candied yams, collard greens along with a few others. As I was leaving, I took a peek at their smokers. They had several that could be hooked up to a truck for o-site catering. BBQ Masters’ hours are Wednesday through Sun-day from 12pm – 8pm. I highly recommend them….a 10 out of 10 on my judges scorecard!DINERS’ dish continued19SUMMER ISSUE | 2024
