RECIPE O1 SHRIMP SALAD 4 Servings 15 minutes INGREDIENTS For the shrimp 2 pounds shrimp peeled and deveined 3 tbsp olive oil 2 tbsp finely chopped red onion 2 tbsp chopped parsley 1 clove garlic minced For the salad 3 hearts of sliced romaine 2 ears of corn husked 2 bell peppers chopped 1 large avocado diced 1 small cucumber chopped For the dressing 1 tbsp dijon mustard 2 tbsp white wine vinegar 1 2 tablespoons honey cup olive oil DIRECTIONS 1 Shrimp Add the parsley garlic red onion lemon zest olive oil and salt in a bowl Add the shrimp and stir to combine Let marinade for 10 15 minutes while you chop all the veggies and prepare the dressing Place 4 6 shrimp on wooden skewers before grilling 2 Dressing Whisk together the mustard vinegar and 1 tablespoon of honey with a pinch of salt Continue whisking as you stream in the olive oil Taste and adjust with an additional tablespoon of honey if you prefer your dressing a little sweeter 3 Grilling Preheat the grill and spray with cooking spray if desired Grill time will vary for the ingredients so start with the corn Spray the corn with cooking spray season with a pinch of salt 04 and roast turning every 4 5 minutes for about 15 18 minutes total Add the whole bell pepper next and grill for 1 minute or longer if you d like it to char a bit Add the shrimp skewers near the end of cooking time they ll take about 2 3 minutes per side Spray the romaine hearts with cooking spray and sprinkle with a tiny pinch of salt grill for about 2 3 minute on each side 4 Make the salad Add the chopped cucumbers and avocados to a large salad bowl Remove the stem from the romaine hearts and chop Chop the corn kernels off the cobb Dice the bell pepper Add all the ingredients to the bowl and toss with the dressing Serve immediately SUMMER 2023

RECIPE O2 GRILLED KABOBS 4 servings 30 minutes INGREDIENTS 1 pound boneless skinless chicken breasts cut into 1 inch pieces 1 4 cup olive oil 1 3 cup soy sauce 1 4 cup honey 1 tsp minced garlic salt and pepper to taste For the veggies 1 red bell pepper cut into 1 inch pieces 1 yellow bell pepper cut into 1 inch pieces 2 small zucchini cut into 1 inch slices 1 red onion cut into 1 inch pieces 1 4 pound mushrooms of choice 1 tablespoon chopped parsley DIRECTIONS 1 Place the olive oil soy sauce honey garlic and salt and pepper in a large bowl 2 Whisk to combine 3 Add the chicken bell peppers zucchini and red onion to the bowl Toss to coat in the marinade 4 Cover and refrigerate for at least 1 hour or up to 8 hours 07 5 Soak wooden skewers in cold water for at least 30 minutes SUMMER 2023 6 Preheat grill or grill pan to medium high heat 7 Thread the chicken and vegetables onto the skewers 8 Cook for 5 7 minutes on each side or until chicken is cooked through 9 Sprinkle with parsley and serve

GET TO KNOW ONE OF OUR SPECIALISTS PAUL JACOBSON R PH Paul Jacobson is our pharmacist here at PHA Health He is a graduate of Drake University College of Pharmacy and Health Sciences in Des Moines Iowa His first pharmacy job was as a delivery boy for Sipes Pharmacy in Des Moines It is here where he learned the importance of good customer service as he was many times the only person from the company the customers would see as they were homebound or otherwise unable to make the trip to the pharmacy He served as a pharmacy intern while in school Shortly after graduating from Drake Cassady Pharmacy was opened and Paul had his first pharmacy manager position at the age of 22 and stayed with the company for nearly 20 years He later served in pharmacy management National Operation Management roles for Osco Drug and CHI Mercy Des Moines for over a decade Paul joined Wellness Partners Partners Health Alliance in the spring of 2021 and is enjoying the opportunity to interact and assist patients with their medication plans Paul and his wife Janet reside in Bellevue Nebraska where they spend time with their daughter s family which includes 2 grandsons and a 3rd one is expected soon If you have questions regarding your prescription medications you can contact Paul at pjacobson partnershealthalliance org The latest 15 years of his career was spent as Manager of Pharmacy Operations for 2 09 Critical Access Hospitals It is in this Pharmacists are setting where he honed his clinical skills required to pass SUMMER 2023 and provided guidance to physicians National and State regarding the dosing of medications licensure exams to including antibiotics renally dosed medications as well as chemotherapy and monoclonal antibody medications practice in their respective country

THE BRIEF JULY 23 Herbal Prescription Interaction Awareness Month by Paul Jacobson R PH One of the major concerns regarding the safety of dietary supplement ingredients is that interactions between a supplement and other ingested substances The list of side effects and drug interactions involving dietary supplements is quite long and complex and I certainly will not address all of that here e g drugs other dietary supplements conventional foods may result in adverse clinical outcomes due to an increase or decrease in the level of the dietary A couple examples include supplement an increase or decrease in the level of other medications or dietary supplements or combine toxicities For medications to be effective they much reach a certain blood level to obtain its effective Green tea extract or regular green tea contains enzymes which affect the metabolism breakdown of over 50 of the prescription drugs on the market today These enzymes may increase or concentration If the level is too low the medication will not be effective If the level is too high adverse decrease the blood level of the drugs to the point where they may not work at all or will produce a reactions side effects and potentially severe even fatal events may occur This is a delicate balance that is easily altered by the foods we consume as well as higher blood level to where side effects will be more prevalent to perhaps a level which is toxic other medications or supplements we take Grapefruit juice contains enzymes which break down the enzymes that metabolize cholesterol Prescription medications are inspected and approved by the Food and Drug Administration FDA It takes lowering drug class products referred to as statins This results in a higher blood level which can many years for a drug entity to receive approval by the FDA The process involves many phases of clinical trials showing its efficacy and safety as well as produce an increased number and severity of side effects determining how long the product is stable in its It is very important your provider as well as your container and what is the minimum and maximum pharmacist is aware of which dietary supplements you 10 dosing ranges A list of side effects and frequency of are taking The interactions between these products these effects is also required and your prescription items may be very serious or SUMMER 2023 Dietary supplements are NOT bound by the same requirements of FDA approved prescription drugs or may be of no significance at all It is good to know either way FDA approved over the counter medications Just because something is available without a prescription is natural or labeled as a dietary supplement does not make it guaranteed to be safe and effective

RECIPE O3 GRANOLA PARFAIT 6 servings 15 minutes INGREDIENTS 4 cups granola cereal 4 cups fresh fruit of choice 3 cups vanilla yogurt SUMMER 2023 DIRECTIONS 11 1 Divide ingredients between 6 of your favorite fancy glasses or jars I like to layer granola fruit yogurt and fruit then repeat until your container is full Use about 1 3 cup for each layer of granola and each double layer of fruit and about 1 4 cup for each layer of yogurt 2 Garnish with a little extra fruit and some sprinkles of granola
