Whether you're taking a stroll through one of Kent’s many scenic parks or heading to the coastline for a springtime walk, there's no shortage of ways to enjoy the season.GOOD FRIDAY - 18TH APRIL Kent is renowned for its artisanal bakeries, and this time of year sees many of them pulling out all the stops with creative twists on the classic recipe. From chocolate chip versions to those laced with zesty orange and lemon peel, there's no shortage of unique takes on this beloved treat. Make sure to visit your local bakery or farmers' market to pick up a batch of these fresh, seasonal favourites.SPRING HAS SPRUNGThe season brings with it a wealth of exciting events, delectable treats, and reasons to celebrateINGREDIENTS 500g strong white bread flour 7g fast-action yeast 1 tsp cinnamon, mixed spice 50g caster sugar 50g butter, cubed 300ml milk, lukewarm 1 egg 1 pear, chopped 100g dulce de leche 100g currants or sultanas For the cross: 75g plain flour, 75ml water For the glaze: 2 tbsp golden syrup INSTRUCTIONS 1. Make the dough: Combine flour, yeast, spices, sugar, and salt. Add butter, then milk and egg. Knead for 8-10 minutes until smooth. 2. Proof the dough: Leave to rise in an oiled bowl for 1-1.5 hours until doubled in size. 3. Shape the buns: Divide dough into 12 pieces. Flatten, add a teaspoon of dulce de leche, pear, and currants, then shape into buns. Arrange in a greased 23cm square tin. 4. Cross & bake: Mix flour and water into a paste, pipe crosses onto buns. Let rise for 30 minutes, then bake at 180°C for 20-25 minutes. 5. Glaze: Heat golden syrup and brush over warm buns. The beef tartare, which is always a favourite of mine, was expertly seasoned, bright, and full of flavour, with homemade crisps adding a satisfying crunch that elevated the dish. The mains were equally impressive. The T-bone in sirloin, a popular sharing dish, was cooked to perfection, its smoky char giving way to tender, flavourful meat. The monkfish and cockle bouillabaisse, paired with Riesling, oered a rich, full-bodied broth that highlighted the delicate notes of saron and seafood. The Limousine veal, served with creamed borlotti and chimichurri, was both indulgent and well-balanced, with the sharpness of the herbs perfectly complementing the veal's richness. Like the T-bone, this dish was also designed to share, making it an ideal choice for a communal, satisfying meal. The spring greens paired with mash and fried garlic were an absolute favourite, bringing together a satisfying combination of textures and flavours, and pink fir potatoes provided the perfect supporting act. The desserts at Dorian are the perfect finale to an exceptional meal. The pear tart is a delightful blend of sweet pears, crunchy pecans, and creamy mascarpone ice cream. For something more daring, the black true ice cream with white true oers a luxurious, earthy twist that’s as surprising as it is indulgent. And then there is the wine. 38BUSINESSQ Anvil Chambers has built an impressive reputation given that it is only two years old. What do you believe has been the key to chambers’ rapid success? John Nee: I was called to the Bar in 2008. I entered law wanting to do things dierently, but I think that was gradually eroding. I have always been a bit of a black sheep. Many firms of solicitors and barristers chambers do things exactly the same as everyone else. I hate being told “we’ve always done it that way.” So what? The world is almost unrecognisable compared to 20, or even 10 years ago. We should shake things up, and I am trying to. When my wonderful clerk Linda Webb and I set up Anvil Chambers, we agreed that everyone we deal with matters. Whether it’s a brand new lawyer or a partner of 30 years, they will get our absolute best work, and our sense of humour. Law is a tough job, but that’s not a reason to be miserable all the time. Humour releases pressure. It doesn’t mean we aren’t taking it seriously: we are, and our results speak for themselves. It means we understand that we are dealing with a person first, and a problem second. Also, we are robust. Everyone at chambers has a feisty streak, which does come out from time to time. I think it makes us better at our jobs. Q In your view, how has the role of a barrister changed over the last two decades, and what skills do you think will be most important for future generations of lawyers? John Nee: It is so dierent now. I actually remember going to court with a blue counsel’s notebook and a fountain pen. When my opponent and I drafted an order after court, we would be crossing out, and re-writing over and again. Then the courts (after a bit of a lag!) allowed computer-drafted orders, but we had to get the usher to print them. After a 20 minute delay, and the usher returning, someone would notice a mistake. So, we repeated the process, ad nauseum. One usher once told me she does more daily steps in court than in her previous job as a dog walker! Now, it’s email back and forth between barristers until we have an agreed version, which we sign on someone’s iPad. Technology and AI are the most obvious skills we really need to develop as a profession. There is something nice about paper books and old legal libraries, but I am in favour of embracing AI and tech. There is a whisper of fear about AI. I say embrace it. I am part way through designing an AI version of myself to automate some of my work. It has been a real labour of love putting it together, but it is making a huge dierence to my repeat tasks that aren’t client-facing. Looking forward, I find the future generations are sadly hiding too much of their personalities. Those were the new skills. There are ‘old’ skills that are relevant to future generations. As lawyers, we deal with everyone. I have acted for royalty, the owners of an animal park, Cambridge colleges, immigrants speaking barely any English, and an 80-something year old author who refused to use any colour other than purple and was a famous bigamist! The point is that as a barrister, we deal with every type of person imaginable. They all appreciate authenticity. If a barrister is pretending to be someone they aren’t, the client will see straight through it. Be yourself, bring your personality to the job, and concentrate your eorts on doing your best work, not on acting a role. Q Which of your personal values do you think define Anvil Chambers, and how do they guide your approach to both internal operations and client relationships? John Nee: Anvil Chambers reflects my personal values of being dierent. I don’t care where someone works as long as they get the job done, and I make sure to support my colleagues when needed. I’m not available 24/7, but I’ll always prioritize time for them. While clients are important, the wellbeing of my colleagues comes first. We prove every day that it’s possible to fight hard in court while maintaining kindness, compassion, and humour. I believe in a healthy work-life balance—rarely working weekends and encouraging the same for others. Mental health awareness is growing, but there’s still progress to be made. I’m active on LinkedIn and happy to oer support, especially to junior colleagues in Kent. QAs Head of Chambers, you must face many important decisions. How do you approach leadership, and how do you ensure that every barrister’s voice is heard within Anvil Chambers? John Nee: I’m fortunate to work with a fantastic team at Anvil Chambers, where clear communication is key. My expectations are simple: treat everyone with respect, do your best, and no conversation is o limits. While I make the final decisions, I always listen to my colleagues. If a junior barrister needs training, I provide it; if the Senior Clerk suggests a better approach, I’m eager to listen. There’s no micromanagement here, I hire talented people to collaborate and show me the best way forward. I encourage healthy disagreement to help us solve problems, much like in the courtroom. Integrity is crucial, and I believe in taking the time to reflect on challenges before making decisions. It’s better to say "no" thoughtfully than "yes" impulsively.
