Rozanna Salmon, a Locust Grove resident, switched to sourdough ve years ago. Aer realizing the shortage of local options for purchasing freshly made sourdough bread and baked goods, Salmon opened her cottage bakery, Rose Creek Family Farms, in January of 2024. Salmon bakes various sourdough products available for pre-order, including a classic sourdough loaf, bagels, English muns, sweet rolls, brownies, pre-sliced sandwich bread, and pizza crusts. “For those who are new to the avor and texture of sourdough bread, the sandwich loaf is a really great place to start; it pro-vides a soer interior and crust,” Salmon explained. “I also make a pre-baked pizza crust, which is phenomenal and convenient for a quick and easy dinner option.” e process of sourdough baking is much more tedious and time-consuming than traditional baking requiring several steps “Each recipe I make has been a learning curve because when you’re working with sourdough, there are so many variables that can aect the dough, including the ingredients, how you combine the ingredients, the temperature, and humidity,” Salmon said. “I’ve heard from several of my customers that they’re so happy I started my bakery because they wanted a true sourdough option but found the baking process daunting and dicult.” Aspiring sourdough bakers will soon be able to receive Salmon’s insight and expertise. Salmon will be oering sourdough baking classes this Fall. Class information will be made available on Rose Creek Family Farms Facebook and Instagram pages. This month, we’ll reveal a few coffee brewing methods to help bring some calm and simplic-ity to your daily routine. If you’re new to coffee brewing or simply over-whelmed with the choices out there, navigating the different methods can feel daunting. While there are a lot of options, some of my favorite brewing methods that I love for their own rea-sons are as follows: Espresso, Moka Pot, French Press, AeroPress, Chemex and the tried-and-true drip method. Each method is quite approachable and delivers a wide range of avors. Here’s a breakdown of each method, focusing on how easy they are to use and the avor proles they create. Espresso is typically very intimidat-ing but really shouldn’t be. It can re-quire expensive machines, but QBCC has a great at home / manual method that I’d put up against any expensive option on the market! Espresso, in general, delivers a shot of concen-trated coffee with a bold, rich avor. Espresso’s intensity makes it the foun-dation of drinks like lattes and cap-puccinos. It’s strong, with balanced bitterness and crema on top. I love to pull a shot with anything from a light roast to dark roast coffee. Moka Pot, a stove top method, brews coffee by passing hot water through ground coffee under steam pressure. It’s slightly more involved than drip coffee, but still very beginner-friendly. The result is a bold, concentrated cup with avors reminiscent of espresso—rich and robust with deep, dark tones. Ideal for coffee drinkers who enjoy intensity. Drink it solo or dilute with some hot water for a more “americano” drink. French Press & AeroPress are like siblings – similar yet very different so we’ll review them together. The French press is a manual method where coarse-ly ground coffee is steeped in hot water before being pressed through a mesh lter. It’s easy to use and doesn’t re-quire special equipment. This method produces a rich, full-bodied coffee with pronounced avors, often with a slightly oily mouth feel due to the lack of pa-per lters. The AeroPress is known for its versatility and ease of use. It brews coffee by forcing water through coffee grounds and a lter using air pres-sure. The lter results in a avor that is smooth, clean, and can be adjusted based on brew time. It’s a great option for those who enjoy experimenting but prefer a method that’s quick and porta-ble. The Chemex, a simple, elegant coffee brewer, is included in the permanent collection at the Museum of Modern Art. It’s an intentional slow-down in our rapid-re lives. Chemex uses a thick paper lter to produce a smooth cup of coffee. Simply hand pour hot water over the grinds into the glass container below to yield a light body and bright avored coffee. This slower method not only forces you to slow down and breathe but to also enjoy a more delicate coffee experience. Drip Coffee makers are among the simplest ways to brew coffee. All you need to do is add water, place ground coffee in the lter and let the machine do the rest. It’s hands-off and perfect for making multiple cups. The avor is typically balanced, but slightly less rich than other methods, with mild acidity and light body.Queen Bee Coffee Company has many of these brewing options available for sale in our cafes. Guacamole Restaurant I Stockbridge Review & Images: Jerry Belcastro Our theme for this issue is tacos, so, my journey took me to a hid-den gem in Henry County, Guacamole, located at 697 Davis Road in Stockbridge, just adjacent to the Walmart Shopping Center o 138. I was pleasantly greeted when I walked in and was seated promptly. e seating area was nice and clean, and the place had a nice Latin air to it! I placed my order for a variety of tacos, and minutes later, I had a beautiful plate of homemade authentic tacos! e corn tortillas were doubled, which I liked and they were absolutely delicious! I started with an Asada taco, and the meat was nice and tender. en I tried the Chorizo lled taco which had great avor. On to the shrimp-lled taco, which was cooked to perfection. Finally, I tried the chicken taco, and it was also very tender and had great avors. e tacos were accompa-nied by a side of homemade tomatillo salsa that I really enjoyed and a red salsa that had a nice kick of heat. All the tacos were topped with fresh cilantro, diced onions, a drizzle of crema, and freshly sliced limes. Guacamole’s tacos reminded me of the street tacos available in Cancun! You could tell they were freshly prepared homemade tacos and were full of crunch and avor. She derived the fast, casual concept of a counter restaurant oering cooked to order a-la-carte options while completing a research project at Clayton State University. Her desire was to provide her community a place to enjoy moderately priced Mexican- American dishes in a warm and friendly atmosphere. As a long-time taco enthusiast, I enjoy nding new restaurants that oer a twist on traditional Mexican fare close to home. Macon Street Tacos is quaint with limited seat-ing indoors, but oers additional outdoor seating and an indoor event area for private and on-going events, including live music. What I appreciate most about the concept is the fresh quality and the upfront service. Here, the food is cooked to order and is always hot, tasty, and fast. My family and I frequent Ma-con Street Tacos and usually opt to dine in. We nd the atmosphere and ambiance to be laid-back and enjoyable. As for their food, the menu oers twelve taco avor mainstays, including the Cajun sh taco, the chorizo taco, the fried brussels sprouts taco, and my personal favorite, “e Kurt”. e Kurt is a bualo chicken taco that is dressed in lettuce, cotija cheese, ranch, and both hard and so taco shells. It is so delicious that I can never eat just one! eir other menu items in-clude autas, quesadillas, taco salads, burritos, nachos, loaded fries, as well as alcoholic and non-alcoholic beverage options. Most tacos are under $5 each, and several menu items are un-der $10. Patrons can also enjoy a reasonable priced cocktail or beer. Additionally, most kid of-ferings, including the popular “e Luke” (a specialty taco), are priced under $10. Macon Street Tacos I McDonough Review: Toye Wheeler It seems I’m on a roll with spotlighting and reviewing restau-rants connected to convenience stores, so I’ll keep that theme alive for this issue by reviewing the highly-rated Chalo Fast Food o Highway 155 in McDonough. is spot is truly a hidden gem that I only discovered through compiling the Stars of HENRYeats listing, (and I’m so glad I discov-ered them!) is authentic Mex-ican joint has an astounding 4.7 star rating on Google with over 500 reviews! ey oer a wide gamut of true Mexican cuisine ranging from burritos and empanadas to tacos and even a few American staples like burgers and wings. is visit required me to order tacos, so I opted for the birria tacos (the same order placed by a construction worker in front of me). Full disclosure, this was my rst time ordering birria tacos, and I wasn’t quite sure what to expect. Within 10 minutes of ordering my food, I was handed a red basket with three birria tacos, accompanied with a stew, homemade sauce, and limes. e actual taco was very crispy and came pan-fried (similar to a quesadilla) with shredded beef that was moist and tender. e tacos came topped with grilled onions, cilantro, and melted white cheese (reminded me of mozzarella). e tacos were served alongside their birria consome (stew), and a homemade green sauce. Everything melded really well together and the stew was a nice pairing for the tacos that were plentifully stued with beef and cheese. If you’ve never had birria, it’s much dierent than a traditional ground beef taco. It’s similar to shredded roast beef and was surprisingly mild (not spicy at all), but still very avor-ful. is particular taco would be a great comfort food when the weath-er chills down; think taco Tuesday in January! I did dine -in for my visit, but do note, Chalo Fast Food oers limited indoor seating, so it’s advised to be prepared to order as takeout. On a pretty day, diners could also choose to sit at one of their picnic benches conveniently located under a shade tree.
Taste of Henry Raises Funds for Henry County Youth Shelter A Friend’s House held its annual fundraising event, Taste of Henry, on September 13. For over twenty years, Taste of Henry has provided locals with a foodie adventure in one location. Nearly 50 food vendors participated in this year’s event. is year’s fundraiser was hosted at Southern Belle Farm in Mc-Donough, with TruNorth Pest Control as the feature sponsor. Pro-ceeds raised benet the not-for-prot youth home and shelter in Mc-Donough that has assisted over 3,100 local children since its inception in 1998. I grew up in Morrow Georgia and graduated from Morrow High School (1979).When did Italian Oven open? The Stockbridge location opened in 2001 and the Peachtree City location opened in 1995. How long have you been with Italian Oven and when did you take owner-ship? I became the General Manager (GM) of the Peachtree City location in 2003 and became the GM of the Stock-bridge location in October of 2004. I’ve been the owner of both locations since January of 2020 after purchasing Italian Oven from Jim Dunn. What sparked you to become the owner? I’ve worked with really great people, like our current manager Liz Elam for many years, so that made it a pretty easy decision. It’s also been a great place to work for over twenty years!Interesting Fact? I’ve worked in the food and beverage industry since I was 15-years-old.What do you love about Henry County? August of 2018What makes Macon Street Tacos special? We are a family-owned and operated business and truly believe in our community, and being involved with our community. We are more than tacos!!! We are a place for friends and family to gather, visit, laugh, and enjoy the rest of historic downtown square.What do you love about McDonough and Henry County? We enjoy the small town feel. What inspired you to open a restaurant? We grew up in the restaurant industry and things just fell into place to give it a try.Why did you choose the McDonough Square? Such a quaint community! All of the small town feels without being stuck in a large parking lot.What has been the most rewarding experience of opening and owning a restaurant? Working with the community, being accepted into the community, giving back, hosting events that bring people to-gether, and being able to have the flexibility to spend quality family time! My son Luke is in 5th grade now, and I’ve been able to at-tend all of his school functions. We’ve hosted his birthday parties here, and it’s also be-come a hangout spot for him, as well as , a place for him to learn and help with the restaurant. We’re also able to close for his breaks so we can vacation together. Luke gets to see first hand what it’s like to be an entrepreneur and he gets to work alongside his Momma and Aunt B.What’s the most popular items on your menu? Our bualo chicken tacos are always in the tops along with our beef and chicken flautas! The buf-falo chicken taco is our grilled chicken breast chopped and tossed in a our bualo sauce and put in our soft & crunchy taco shell. We then top it with shredded lettuce, tomatoes, cotija cheese, and our bualo ranch. Same combo also served over french fries, tater tots, or in a quesadilla. We feature our Mash Burger every Wednesday and have a regular following for it! Single or double hand-pattied beef smashed, topped with cheddar, house made pico, pickles, and taco ranch. All stued in a quesadilla shell and grilled to perfection! What events do you have coming up between October to December? Weekly open-mic night, every Wednesday at 6:30. Third Saturday of the month we always feature local singer/songwriters. We host monthly trivia, (October 10, November 7, December 5). Anything you’d like to let our community know about your restaurant? We are always family-friendly and make our food fresh to order. We love what we do and love being a part of this community!
