3 = FREE Course = Online CourseREINVENTING TOMORROW’S ENVIRONMENTBy Ivan Idso, Adult Enrichment Coordinatore 9th Annual Rochester EarthFest Expo was held at the Northrop Education Center on April 22nd. e event drew around 500 people who browsed 40 sustainability exhibitors, attended classes, viewed electric vehicles, and listened to music. Kids could also get their faces painted. Classes oered included Solar Electricity, Heat Pump Technology, Urban Homesteading, Sustainable Living in Rochester, Permaculture, Energy Appreciation, and Energy Bills 101.Our keynote speaker was Joel Magnuson, Ph.D. Joel is an economist, writer, speaker, and aliated professor of economics at Portland State University. He has written ve books which includes “e Approaching Great Transformation: Toward a Livable Post Carbon Economy.” e presentation and his book are especially relevant to community education. In the introduction of the book, Joel denes the economic, energy, and environmental issues that are leading to future problems as we reach the limits of growth. “Resource limitations and climate change are beginning to shake the foundation of our entire way of life, an historic sea change is in the making. As we begin to feel these changes, we will be forced to reexamine what we consider to be the good life. Many of us in the so-called developed world have high expectations for our career choices, our levels of income, the things we want to buy, and all the other accoutrements of a plentiful lifestyle. But this is all beginning to change. The cause of this change is a fairly simple but sobering reality: the resource base of our planet can no longer sustain it. When I refer to a declining resource base here, I am not only talking about oil, though oil is the big one. Other fossil fuels, water, topsoil, basic metals, and virtually every other resource available to us are being consumed to exhaustion. We often say that our desire for high living standards is to provide for our families – our children. The irony is that our children and grandchildren will be the rst generations to experience the full brunt of the economic and ecological damage we are doing now. That is, unless we do something about that.Transforming our economic system into something new and better will require the development of educational programs aligned with this effort. Moving toward a livable future will require that people develop new skills and technologies, create new cultures, foster creativity, and raise awareness. Educational institutions need to develop new curricula and workshops that will provide tools and guidelines for people who seek to learn how to become citizens in their communities and to design, heal, manufacture, grow, repair, plan, rebuild, as well as to become the visionaries of their own generation.” 20232023EXPOYou can learn more and start developing these skills in our Arts & Crafts classes (page 1), in addition to our Sustainability class oerings (page 14). 11SPACE THE FINAL FRONTIERBy Ben Joslin, Mayo High School Planetarium Director“Space, the nal frontier,” is the famous phrase spoken at the beginning of nearly every episode of the TV show, Star Trek. With every discovery astronomers make, we are more convinced that this phrase is extremely accurate! As we learn more about the universe beyond planet Earth, we realize that humanity is in its infancy regarding its knowledge about space. When it comes to the universe, the more we discover, the more we realize how little we know. Questions in astronomy generally lead to few answers and a multitude of more complicated questions. But don’t worry, this is a good thing because it motivates us to learn and discover more! Hopefully, this leads you to ask how you can learn more about the universe around you. Fortunately for you, there is an amazing resource here in Rochester that will answer your space questions and help you blaze your trail into the nal frontier! Rochester has the unique distinction of having the longest continuously operated planetarium in Minnesota. Rochester Public School’s Planetarium at Mayo High School was built during the “Space-Race” era with the intent to motivate students to learn more about space and train them to work in space. Since 1966, former planetarium directors Howard Schriever, Larry Mascotti, Paul Larson, and now current director Ben Joslin have been showing locals the stars and helping them blaze a trail of knowledge into the unknown. Looking up into the domed replica of the night sky (and so many other places in our universe!) has lled each learner with awe and motivation to learn more. If you are starting your journey into the nal frontier, or if you need a refresher class, the planetarium is the perfect place for you!e longest-running regularly occurring planetarium show is “Rochester at Night”. During this class, you will learn about the 19 most visible constellations in Rochester, as well as tricks, tips, and secrets for following the stars, planets, and the Moon, all year long. You will also learn to use the stars as a compass, clock, calendar, and clinometer. So tasty, so nutritious, and with so many uses in cooking, garlic is one of those pantry staples I am NEVER without. And it’s been much easier to never run out since I started growing my own a few years ago. Garlic is easy to grow. It’s one of those crops that you put in the ground and can just about ignore until it’s time to harvest.Garlic is one of the only veggies in Minnesota that can and should be planted in October, preferably after a hard frost. And that is why, if you want to give it a try, you still have time to prepare a planting spot for this fall. Here is a very brief run-down on the basics of growing garlic.ere are two types of garlic: soft-neck and hard-neck. Soft-neck is what you typically nd in the grocery store. It tends to be less cold hardy, so I have been growing hard-neck and have had success with it. Another plus with hard-neck is that all of the cloves tend to be a nice big size in a single row around the stem, without those annoying tiny cloves in the center that are so much work to peel. Whether you try hard or soft-necked, there are many dierent varieties you can purchase from seed companies that come in a range of colors and avors. You can also look for organically-grown local garlic bulbs at the Farmer’s Market or Food Co-op in late summer or fall.In terms of growing garlic, you want to separate the cloves, leaving the papery layers intact, and plant each clove about 3 inches deep (pointy side up) in loose soil amended with compost. Plant the cloves about 4-6 inches apart, then (this part is important) cover the area with several inches of straw or leaves for mulch. In the spring, once the soil starts to warm up, you’ll see garlic leaves growing up through the mulch. As they grow, keep a layer of mulch on the soil to retain moisture, which garlic likes. If you are growing a hard-neck garlic variety, watch for the appearance of scapes in June. Garlic scapes are the ower stalks. ey grow right from the center of the leaves and curl as they grow. ese should be picked o so the plant can put all of its energy into producing bulbs, rather than owers. e scapes are edible and can be pickled, sautéed, or eaten raw for a garlicky treat. Hard-neck garlic is ready to harvest around mid-July once the bottom 2-4 leaves have turned brown. After harvest, it is important to “cure” the bulbs so they will keep as long as possible. is is done by allowing them to dry in a well-ventilated area out of direct sunlight and rain for 2-3 weeks. Bulbs that have been cured properly should easily last into the fall and can be your cloves for replanting. But as you move into the winter, garlic stored at room temperature will eventually start sprouting so preserve your garlic by freezing whole bulbs (my preferred method), mincing and dehydrating, or take it one step further and grind the dehydrated garlic into garlic powder.~Joy i growing~Heidi Kass has a life-long love of the natural world and gardening. I grew up on a dairy farm in southeast Minnesota, and I have a pretty big family on both sides. It was pretty much the typical Midwestern farm life, waiting on the boys, the farmers, the farm help. ey were always grateful for a good dinner and my grandma raised them to be very respectful in that regard. I think that was always something I appreciated. It was that kind of hospitality, and that appreciation for the hospitality, that was my big drive to go into the culinary world.I attended college at Johnson Wales University in Providence, Rhode Island. I love experiencing new things and meeting new people, and even though it was really intimidating going to the East Coast at rst, there was such a curiosity in me. I wanted to grasp everything I could because that was such a big opportunity for me at 18 years old. I currently work for Mayo Clinic in the kitchen at the Dan Abraham Healthy Living Center, our program helps people learn how to change their lifestyle. In our program they have to do a cooking class with me, and I make it simple so they understand the foundational principles of cooking and cooking healthy. It’s really good for all skill levels, and the knowledge they gain, transfers not just to one recipe but to all recipes. I love to travel, garden, work out, hanging out with my dog, and I truly enjoy cooking. I know that sounds ridiculous because for a lot of people, if they cook all day at work, they don’t want to cook when they get home. Because of the type of work I do, I always trying to practice what I preach. I think that describes the full circle approach in my life. I like to be a very grounded and spiritual person; I like to reect and to be very present in life and nature. I also love to learn. When I went abroad to Italy, I took classes and although I knew how to make homemade pasta, I wanted them to teach me. I wanted to see what’s dierent. I took classes all over parts of Italy and even took the same class over again because everyone does it dierent. ere’s a rhyme and a reason, and there’s a dierent type of passion in everyone. I learned so much from that experience.I have such an appreciation for farmers and I try to dive deeper into what I’m buying at the grocery store. If it’s local, that’s what I would like to buy. Even if some things are a little bit more expensive, I believe in trying to support all farmers, no matter what they are. I’m a big dairy consumer and I love cheese! I have my own garden and use a lot of natural things. I try to be a part of the solution, not the problem. I hate waste, so with chickens on my property, any refrigerator stu that’s going bad goes to the chickens. I have such an appreciation for farmers and I try to dive deeper into what I’m buying at the grocery store.Chef Jen Welper– “From Farm to Table”

Preheat oven to 425° F. Lightly coat a baking sheet with nonstick cooking spray. Peel the skin from butternut squash. Cut the squash into even sticks, about 1/2-inch wide and 3 inches long.2. In a medium bowl, combine the squash, thyme, rosemary, olive oil, and salt. Mix until the squash is evenly coated.3. Spread the squash onto the baking sheet, place in the oven and roast 10 minutes. Remove baking sheet and shake to loosen the squash. Place the sheet back in the oven and continue to roast another 5-10 minutes until golden brown. Serves 6.What career highlights are you most proud of? I would say writing my cookbook, it’s called Cook Smart, Eat Well. e process of understanding how that all comes together was such a great learning curve for me because I also had to work with a lot of other professionals and dierent opinions. I denitely had to play a lot of give and take and that was very humbling, but I was still able to pour my passion into the book where I feel like it will help people. I think a big part of my love for teaching comes from that passion, and there are so many people in our community that have the same passion.Do you have any new classes coming up this fall? e “Meal Prep for the Busy Parent” class seemed to be really popular last fall, so I’d like to do that again. I would like to do a homemade pasta sometime; tortellini are really fun. Another new class I will oer is making Popovers and Biscuits.I purchased one of Jen’s cookbooks and it is delightful. It has lots of colorful pictures, tips, shopping lists, and nutritional information. She truly went from the farm to the table and we are very fortunate to have her instructing for us, so make sure you check out one of her classes.What can I say – the kitchen space at Dakota Middle School is fantastic: so well equipped, large, clean; the course is very well thought out and useful; and the instructor, Jen, is fantastic: fun, smart, organized; I learned a lot. I highly recommend that anyone take a cooking class from Jen.

We will kick o the season with “No Town Like Motown” at the Ives Auditorium in Bloomington, followed by “Beetlejuice” at the Orpheum and “Million Dollar Quartet” at the Old Log. If you have not experienced the “Lunch and Lock” Cruise on the Mississippi River, try it this year! We have many community members that have made this trip a fall tradition. e paddleboat takes us through Lock and Dam #1 – it’s a very relaxing day on the river. New this year is the “Amish Country Tour” in Harmony, MN. We will visit several Amish farms, learn about their way of life, and enjoy lunch at e Branding Iron Restaurant in Preston. e Chanhassen is excited to feature “Jersey Boys” this fall – “it is a jukebox musical with music by Bob Gaudio, lyrics by Bob Crewe, and book by Marshall Brickman and Rick Elice. It’s presented in a documentary-style format that dramatizes the formation, success, and eventual break-up of the 1960s rock ‘n’ roll group, e Four Seasons.” It has been so popular that we are oering three trip dates, the Chanhassen is especially wonderful during the holidays. We will also be attending three matinees in the Fireside eater: “A ree Tenors Christmas,” “Rock & Roll Xmas Spectacular,” and “North Country Christmas” featuring Kat Perkins, a nalist on NBC’s e Voice.One of the best-kept secrets in the Twin Cities is the St. Paul History eatre, its mission is to “entertain, educate, and engage through creating, developing, and producing new and existing works that explore Minnesota’s past and the diverse American experience. Its work provides a unique lens which links our past to the present, explores our common heritage, and illuminates our understanding of what it means to be American.” e shows at the History eatre this fall include “Boy Wonder” about Harold Stassen, the youngest governor in Minnesota history, in 1938 and “I am Betty Crocker,” which highlights how Betty Crocker has helped shape America’s homes and appetites for over a century. Following a History eater show, we always enjoy lunch at a St. Paul restaurant.One of our favorite one-stop venues is the Ives Auditorium in Bloomington. Shows this fall include “e Marvelous Wonderettes,” a jukebox musical comedy that uses pop songs from the 1950s and 1960s as a vehicle to tell its story, paying homage to the high school Songleader squads of the 50s. “Cinderella and Waes with Santa” will be a fun way to kick o the holiday season with children or grandchildren. e Ives is also featuring a “HONKY TONK HOLIDAY” in December. Included in the price of these trips is a homemade lunch that never disappoints. And then there is the Orpheum! is fall, we will have the opportunity to take in “Company” with music by Bob Dylan, “Aladdin,” “Mrs. Doubtre,” and buy tickets for “Lion King” coming in April 2024. Make sure to watch your emails for updates on all of these performances. All Orpheum tickets are for main oor seating.And last but not least are the non-theater outings we have planned for you. We will again attend the Autumn Festival at Canterbury Park in Shakopee in early November. In December, we will make our “Jingle All the Way” annual tour—this year we will visit the Olde Fashioned Holiday Bazaar at the Landmark Center in St. Paul and then enjoy lunch at Bachman’s on Lyndale at Patrick’s Bakery and Café. Following lunch, we will tour Bachman’s Holiday Idea House.
