PULLED PORK “STACK” WITH A “SMOKEY CHIPOTLE CHEESE SAUCE”INGREDIENTS • 1 bag Foothill Farms® Cheddar Cheese Sauce Dry Mix • 1 gal hot water (180°-190°F) • 2 1/4 c Tabasco® chipotle sauce • 5 lb shredded pulled pork • Cornbread squares, fully baked, 2 dozen • 6 c bacon jam • 3 c crispy jalepeño crisps • Chopped cilantro, garnishINSTRUCTIONS • In a mixing container, pour in hot water. Add contents of Foothill Farms® Cheddar Cheese Sauce Dry Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth. • Add chipotle sauce to cheese sauce. Whisk to combine. Reserve hot (never boil). • Heat pulled pork and set aside. • Warm cornbread squares and set aside. • Place cornbread square on a plate. Top with pulled pork and ladle chipotle cheese sauce on top. • Garnish with bacon jam and crispy jalapeños with a sprinkle of cilantro.MEXICAN STREET CORN SOUPINGREDIENTS • 1 bag Foothill Farms® Cream Soup Base Mix • 1 gallon hot water (180°-190°F) • 4 tbsp butter • 1 medium yellow onion (nely chopped, 1 ½ c) • 1 rib celery (nely chopped, ½ c) • 1 medium poblano pepper (seeded, stemmed, and nely chopped, ½ c) • 4 cloves garlic (minced) • 1 tbsp chili powder (plus more for garnish) • 1 tsp dried oregano • 3 medium yukon gold potatoes (peeled and cut into ½-inch pieces, about 1 lb) • 2 12-ounce bags frozen corn (or about 6 c freshly shucked corn) • 1 c heavy cream • 2 tsp sugar • ½ c Cotija cheese, crumbled • 1 tbsp lime juice • Kosher salt and pepper (to taste) • ¼ c cilantro (minced, plus more to garnish) • ½ c Mexican crema or sour cream • Lime wedges (for serving)INSTRUCTIONS • In a large stock pot, pour Foothill Farms® Cream Soup Base Mix (28 oz) into hot water while stirring with a wire whisk. Continue to stir until mix is completely dissolved and soup base is smooth. Set aside. • In a large pot over medium-high heat, melt the butter. Add onion, celery, poblano and a pinch of salt and pepper. • Cook stirring occasionally, until the onion softens, about 7-8 minutes. • Add garlic, chili powder, and oregano; sauté for about 1 minute, until fragrant. • Add chicken stock and potatoes. Bring to a boil, then lower heat to maintain a simmer. Cook, stirring occasionally, until potatoes are tender, about 15 minutes. • Stir in corn and prepared cream soup. Cook for 5 minutes, until warmed through. • Transfer 1 ½ cups of the soup to a blender and purée until smooth. Stir the puréed soup back into the pot of the remaining soup. • Add Cotija cheese, cilantro and lime juice. Season to taste with salt and pepper. • Serve garnished with additional cilantro, chile powder and crema. Serve with lime wedges.
