The first thing to say,we are now back in printed form, so I do hope youare now returning back to a more structured way ofworking and reading this in the tea room! The second thing, something you will have alreadynoticed – the July edition of the Bulletin is muchsmaller than usual. There are a couple of reasons forthis, obviously while we have been in lockdown, wehave not been attending any conferences, meetings, seminars orworkshops in person, these have all been postponed or pushed intovirtual meetings. Most of which have been done at very short notice – socurrently there is nothing much to report. Additionally, because of theunscheduled changes to our lives, the Bulletin has begun to get verybehind in our print schedule, which we now need to get back as wereturn to printed format. Our August edition will also be small – but Iguarantee our September edition will be back to normal!Back with this edition, we do have some articles of interest to you – let’sstart with MySociety – the IAT membership database. Read pages 8-11 foran explanation of how this works and how you can use it. This is the time to spend with our family and friends and I am glad that this year there will be no restrictions on travel or meeting people so we can go wherever we want and meet whoever we like.With that said, I am delighted to be able to report on four completely in person events in this issue. To start off with, there is a report on the University of Manchester’s 3Rs Strategy Launch, see page 26. I am heartened by the gravitas this subject now commands.The second event is the return of AALAS to a completely in person event, after two years of online and hybrid events. Attendance was down – only 3,200 people showed up! Apparently, Louisville is diffi cult to get to but was also the fi rst place to sell bourbon commercially, so expect a mention of this in the report on pages 7 – 15.While people were visiting a distillery in the USA, the Surrey, Hampshire and Sussex Branch were paying a visit to the Hog’s Back Brewery in Farnham. You can read both about the tour and the role of yeast and barley in making different types of beer on pages 22 – 25.The fi nal in person event we are reporting on is the North East Branch visiting the Pondarosa Zoo in West Yorkshire. There seems to have been a great deal to do and see in this small family run place. Even though I did not attend, I seemed to have my own homework to do, as John Bland left me to identify all the animals in their photographs! Read about how they had a great time and see if I have identifi ed all the animals correctly on pages 27 – 30.Since I have ascertained the creatures at the Pondarosa Zoo, I have left youto work out the Branch Liaison Committee’s Christmas movie crossword on page 31!Happy Holidays andKeep Reading!Carole

BulletinDecember 2022 • 7 72nd AALAS meeting Louisville Kentucky 23rd – 27th October 2022 This was the first non-virtual meeting for three years. The previous two had been either virtual or a hybrid. There were 3200 attendees, which is down on usual numbers but Louisville is not an easy place to get to. Even most of the USA attendees had to get two flights. It was a long journey in and a lost suitcase for me but it turned up eventually! The trade halls.
Bulletin8 • December 2022 There was a steady throughput of traffic at the IAT booth (stand) and I am sure being part of the Technician Fun Fair helped. We had to submit two questions and delegates had to come and ask for the answers. The ‘mascot‘ this year was an otter, who needed to be helped around so the tail did not get caught! Technicians were really impressed with our Animal Technology and Welfare journal (ATW) – we had a few hard copies left from previous years to give them. They were surprised that technicians write this for other technicians and they were super impressed that it was online with no subscription.At the IAT trade stand with the Otter!
BulletinDecember 2022 • 9 The trade stand had been in storage for 3 years and the photo shows a really creased tablecloth – I did take it back to my hotel room to iron but didn’t get another photo – sorry! They loved the British Cadbury chocolate and the flying saucers; I really wish I had taken photos of people eating them!They were also impressed we have a Tech Month (their’s is only a week) and several had asked me to share what we do, so they can copy as it sounds like a lot of fun. I attended the AALAS Affiliate Breakfast, with around 40 other people. We all gave a short update talk on what our organisations had been doing in the last three years. Ann Turner, the Executive Director retired this year – at 5.30pm on the day of the breakfast to be exact – however the new Executive Director has yet to be announced. The IAT had been invited to the AAALAC International Lunch and it was attended by several Brits, however the times clashed with taking the booth down – any movement prior to 1pm is frowned upon!The IAT booth was next to a clean room booth, which ‘sprayed’ four machines into the air approximately every five minutes. I have to say the noise was
Bulletin10 • December 2022 extremely annoying for four days, but I was probably standing in the cleanest part of the hall! NKP and LBS both had booths, always good to see the UK being represented.
BulletinDecember 2022 • 11 Robert Weichbrod, IAT Vice President visited the booth to say hello and pass on his best wishes to our members.An Allentown representative visited the booth to say she advertised with us and loved ATW journal and the Bulletin.Louisville is not the tidiest of ‘Downtowns’ I have stayed in. Lots of homeless people and run-down buildings. Most Downtowns have a busy area at night and Louisville’s was Fourth St, with lively bars and eateries. There’s always one!
Bulletin12 • December 2022 Louisville is the first place in the world to sell bourbon commercially, the distillery was started by Evan Williams (originally from Pembrokeshire) in 1783. We had a compulsory visit to the distillery, it is not my tipple, but the tour was well organised and informative. We sampled four different bourbons – the standard through to the small batch, although I think small batch means a big price tag! I have to say I could not taste the difference and I did not like any of them, however the expert with us, Jim from LBS was able to and apparently the small batch was mmmm…!Time outAnt and pudding

Bulletin14 • December 2022 The established LabDiet Technicians Award Dinner was held on the Sunday evening, with several previous winners in attendance. This was Mirren’s first AALAS and she thanked all for attending the evening, particularly Brit winner Keith Davies, “Congratulations and thank you again for your dedication, Keith.” Away from the centre, there was a gentle walk (14,000 steps) along the side of the Ohio River. Bulletin22 • December 2022 Surrey, Hampshire and Sussex Branch Brewery Tour On the 8th October a very select group meet for the Surrey, Hampshire and Sussex Branch guided tour of the Hog’s Back Brewery, near Farnham in Surrey. Despite notifi cation in the Bulletin, on the IAT website and via individual email to Branch members, only one non committee member decided to join the event and he is in the London Branch! Well done, Simon.So, the four of us had to drink for the twelve we had tickets for, not easy as two of the four were driving. BulletinDecember 2022 • 23The tour commenced with our guide Bruce giving a brief history of the family-owned brewery that was established in 1992. Two years later they decided to grow their own hops. The area around Farnham is a famous hop growing region, second only to Kent, so it was a natural progression to establish the hop fi elds, which took three years before their fi rst harvest. The hops don’t leave the site as they literally travel from ‘fi eld to fi rkin in a furlong’. We then had our fi rst beer on the tour, Surrey Nirvana, a session beer. After a glass or two, we then went into the brew house which holds a massive 11,500 pint brewing tank. Bruce explained how different beers are brewed and the importance of, not only the right quality of barley and water but more importantly the yeast.
Bulletin24 • December 2022 The fascinating microscopic organism that is yeast provides a tremendous impact on beer and brewing. Yeast plays a key role in creating the distinctive aroma and flavour components that make up an impressive variety of beer styles. Without the metabolism of yeast cells, the traditional production of alcoholic beverages would not be possible. Yeasts are single-celled organisms with a nucleus that belong to the fungus kingdom. Unlike plant cells, it requires no sunlight and has been the catalyst used in baking and the creation of alcoholic beverages for thousands of years. During fermentation, the primary beer yeast species, known as Saccharomyces cerevisiae, produces energy for metabolism by converting certain sugars into carbon dioxide, alcohols and fermentation by-products. Brewers in the Middle Ages had no idea about the presence of yeast or the role it plays in beer production. They would often stir a new vat of wort with a ‘magic’ wooden paddle inoculated with yeast cells from previous batches. Fermentation would kick in within a few hours. Thankfully, modern brewers possess an intimate scientific knowledge of yeast types, metabolism, reproduction and flavour production characteristics.Basically, two types of brewing yeast exist – classified originally on whether fermentation takes place at the top of the fermenter or near the bottom. Beer yeast that prefers warmer temperatures and working near the top of the fermenter is known as ‘ale’ yeast. Bavarian wheat beer yeast is also classified as a type of ale yeast. ‘Lager’ yeast likes to hang out at the bottom of the fermenter and thrives in colder temperatures.
BulletinDecember 2022 • 25Ale yeast strains ferment best at temperatures in the range of 60 to 72 degrees Fahrenheit. They are quite diverse in metabolism and in the production of fruity, spicy aroma and fl avour compounds imparted to the fi nished beer. Think of a traditional English brewery using ale yeast in open fermentation vats at a rather cool ambient temperature. The beer ferments in just a few days, and the resulting English bitter style offers elegant notes of dried fruit, stone fruit and perhaps just a hint of butterscotch – all of which are fermentation by-products from the ale yeast.During the science lesson we partook of the Brewery’s most popular beer its top selling, award winning, best bitter, Tongham TEA. In keeping with the Hogs Back’s aims of minimum waste and sustainability, all the spent grain from the brewing process is fed to local farm animals.We then went over to the large on-site bar and restaurant with its views of the hops fi elds. Here we had our fi nal beer of the tour, HOGSTAR which is a lager and one of the Hogs Back’s newest creations. Following the tour, we fi nished the afternoon with pizza and a catch up. Animal care technicians and researchers were joined by members of the University Leadership Team, including the Establishment Licence Holder and Registrar Patrick Hackett, for a seminar that introduced the strategy. Thiswas followed by a talk on the reproducibility crisis by one of the world’s leadingauthorities on the subject, Professor John Ioannidis of Stanford University. The 3Rs strategy was presented by Dr Jo Stanley, NTCO and 3Rs manager. Afterhighlighting the strong record that the University has in this area, Jo outlined ways in which the strategy would provide a more focussed approach to developing and implementing 3Rs approaches across the animal units. There will be a greater emphasis on communicating information to users, as well as recognising those that go above and beyond to champion 3Rs initiatives. A new 3Rs symposium will be held each year which will feature talks and posters from both staff and researchers, with 2 x £500 poster prizes being awarded. Manchester is also introducing an annual 3Rs prize, with £1500 recognising the year’s most impactful 3Rs paper from the University of Manchester.The audience were then honoured to be joined by Professor John Ioannidis, a leading voice on the reproducibility crisis, who spoke about some of his research into this important area. He outlined some of the major problems of reproducibility facing different scientifi c disciplines. It’s OK … NOT TO BE OKAY …Let’s Talk about ... Health and WellbeingTo continue the Equity, Diversity and Inclusion Let’s Talk series, we are focussing on general health and wellbeing. Animal Technologists devote their careers to looking after animals used in medical research and the welfare of their animals is of paramount importance. Current quality Culture of Care policies centre around providing the best welfare to ensure laboratory animals have the best possible life, whilst contributing to a better understanding of some of the world’s major diseases.Whilst putting so much care and attention into their animals, it is quite easy to forget an important element of Culture of Care is the health and wellbeing of the Animal Technologists involved. You can only afford excellent care and compassion if you are well within yourself. The role of the Animal Technologist leads to a roller coaster of emotions and it is important to keep on top of these emotions to avoid emotional burn out.There has been considerable previous work conducted within the UK to establish parity of esteem between physical and mental health (Morton & O’Reilly, 2019, Mitchell et al 2017). Current mental health policies aim to improve mental health and wellbeing, prevent the onset of mental and emotional distress and increase resilience. The nature of the relationship between physical and mental health is interlinked with mental health influencing physical health and vice versa. Good health and wellbeing are important in ensuring that all Animal Technologists are able to give the best form of themselves to their animals and ensure compliance to standards of Animal Welfare as practiced within the UK. As identified in previous articles, we have discussed that It’s OK … not to be OKAY and if your health and wellbeing are being affected there are steps you can take.The five step approach is well documented (https://www.nhs.uk/mental-health/self-help/guides-tools-and-activities/five-steps-to-mental-wellbeing/), and how can we embrace this within our industry?1. Connect with colleagues. Good relationships are important for your mental wellbeing. They can:- Help you build a sense of belonging and self-worth.- Give you an opportunity to share positive experiences and talk about the not so positive/challenging aspects of the Animal Technologist’s role.- Provide emotional support and accept support from others. The best people who understand what animal techs experience, are other Animal Technicians. Use them for support.- Try to set some time aside during the day to ensure you connect with others, at lunch or a tea break. - Try talking about issues outside of the workplace if it is a tough day.- See family or friends after work to switch off. If this is not possible use technology such as Teams, Zoom or FaceTime where you can see the person.- Use the journey home for reflection. 2. Be Active- Try to carry out some physical activity following a day at work which is important for physical and mental wellbeing.- Try exercise such as cycling, walking, swimming, running, going to the gym maybe with a friend. Learn new skills- This is vitally important within a role that may be repetitive at times and it is easy for your mind to wander. Learning new skills will ensure your mind is focussed on the task ahead. This will also help you with a sense of achievement and can be a focus point. This could also be extended to home life too, try cooking something new or adventurous, take up a new hobby or learn a new language. Just find activities that you enjoy and are not pressured to do.4. Supporting others- If you are feeling like things are starting to get on top of you, remember you are not alone. The feelings you are having are not unique and others before you and after you will feel the same, this is the emotion of caring. Reach out to others, this will improve your mental wellbeing, as research suggests that the act of giving and kindness will improve your wellbeing by creating positive feelings and a sense of reward, also giving you a feeling of purpose. Do not underestimate how much reaching out to a colleague and offering support can help not just them but you also. Being that ear that your colleague may need, helps so much and you never know that maybe a shared experience could help.5. Pay attention to the present (Mindfulness)- In the throes of a busy and hectic schedule it can be quite easy to forget to pay attention to your own thoughts, feelings and your body. This awareness of your mind and body is commonly termed Mindfulness.
