Our summer 2024 class will betraveling to “the world capital ofgastronomy”, Alba, Italy to attend a two-week class at the Alba AccademiaAlberghiera. Alba is part of the UNESCOCreative City Network and has the highestnumber of Michelin star restaurants in all ofItaly! During the two weeks, students will beattending a hands-on class working withEnglish-speaking, Accademia chefs to learnthe art of laminated dough (croissant, puffpastry, and Danish), pies, tarts, and tea cakesthat are traditional in this country. TheItalian chefs will also include some savoryrecipes that are well known in the region.Hands-on classes will be held Mondaythrough Friday in the morning with a breakfor lunch. Twice a week, in the afternoon, wewill explore different locations to learn aboutflour milling, nougat manufacturing, andvisit Michelin Star restaurants to watchdemonstrations by famous Italian chefs. Students will also have free time to explorethe town, meet the locals, and of course eata lot of amazing food! This is the fourth trip that I have planned forculinary/ pastry students, and I have seenhow a special trip like this makes such adifference in their lives. Not only by learningthe art of Italian pastry making but byexperiencing life in another country andlearning a new culture. I look forward to having you come along! Buon Appetito!!
