Chefs will narrate the department’sexperiential education and how it supports the REAL Project, provideinsight into CFIT modalities and how they may affect CFIT students in anon-lab class. Since many JWU students encounter difficulty togglingbetween hands on and non-hands-on classes, the hope is that facultyinteraction will help aid this transition. Observe demos, lend a hand to create variations on a classic chocolate chipcookie, and participate in a chocolate tasting. Systematic CFIT guidelineswill be discussed, and Chefs will ask for feedback on the best ways forstudents to visualize, understand, and integrate industry relevant SOPs likesanitation and food safety practices. Math is also an important componentin all CFIT classes. Learn how to convert recipe yields and discuss bestteaching practices. Upon completion, participants should be able toarticulate experiential learning exercises based on Kolb's Learning Cycle andhow to apply it to different learning styles; discuss how CFIT's hands-onlearning environment may be adopted into other courses; and exhibitproper baking and pastry techniques in a professional lab kitchen setting.
