COO REPORT Winter Report Jon Nusink GM COO jnusink londonhuntclub com 2022 was an excitingly busy year Although the Golf Course Project began years ago the first shovel hit the ground on August 2nd We have benefitted from good weather in the latter part of the summer and early fall but faced an early winter in mid November that diminished our ability to stay ahead of schedule Regardless we continue to be on time and on budget Updates on progress will continue throughout the winter with visuals where available to keep all the snow birds informed If you haven t seen the frequent drone footage during regular updates they are all stored on our YouTube page for viewing anytime The year has also been a challenging one in terms of supply chain issues inflationary pressures and other economic uncertainties both nationally and locally Despite this our financial position remains very positive overall and our waitlist for new members continues to grow ensuring that we will be at our membership cap for at least the next few years The Covid era is slowly disappearing and although usage is still up in all sections compared to pre covid data it has been normalizing to a more reasonable level this year As mentioned in the President s Message the Board approved the Finance and Audit Committee s recommended budget which includes dues increases for 2023 The primary category of Resident Shareholder will realize a 7 590 per couple annual increase in the dues portion of their costs with no changes to the Long Range Planning Fund or Minimum Dining Requirement fees While this increase is above the 5 year average of 3 8 the Club s goal has been to keep dues increases at a minimum while remaining fiscally responsible for the coming and future years Industry wide Clubs in Canada are reporting an average increase of 7 2 according to recent consultant s reports The Consumer Price Index over the last 6 months has hovered between 6 9 and 8 1 percent some key items that we depend on have seen increases fluctuating between 10 and 55 including the cost of seed fertilizer fuel and food Labour has been a big challenge post Covid both from an availability and cost perspective Minimum wage continues to rise with the most extreme being in the food and beverage servers wage which has increased 20 over the last two years Coupled with the statistic by Restaurants Canada that over a third of all hospitality workers did not return to the job post Covid the result is a very high demand market where properties need to compete aggressively for workers The Club has been committed to besting the minimum wage and is working towards being a living wage employer to improve our attraction and retention which will in turn improve our employee s lives and result in a better member experience due to less turnover The Board commissioned a competitive wage analysis this year which revealed that we have some progress to make as most positions fell under the industry benchmarks We are committed to continue to improve this for the reasons mentioned above As we continue to learn to live with Covid and things continue to open up we saw a good spike in private events likely from pent up demand over the last few years especially with weddings However corporate business has not returned yet and we look forward to things further normalizing in the coming year If you know of any organizations or companies that would benefit from their event being hosted at the Club we would love to help make their celebration memorable and would greatly appreciate the referral The Entrance Fee was increased in September 2021 and remains unchanged for the time being but it would be a reasonable expectation that this also will rise as the waitlist continues to grow in time If you have any friends or colleagues wishing to join the Club in the future there is no better time to begin the process than now to avoid any further delays 5 WINTER 2022 2023

F B REPORT Braising Michael Stark Executive Chef mstark londonhuntclub com instagram com huntclubfoodandbeverage With the winter weather upon us now is the time of year we think about heavy rich foods to sustain us through the colder months One the best methods for preparing heavier rich foods that will surely nourish a person through the winter is braising Braising may be one of the oldest and simplest forms of cooking It is a combination of techniques that usually begins with searing or browning a large cut of meat that is typically not a prime meat The browned cut is then cooked in a liquid of some sort be it wine stock beer or milk This differs from stewing as a smaller amount of liquid is used in braising The attraction to braising is the simplicity of the technique a one pot meal that does not involve a large amount of time to prepare On the other hand it does take a significant amount of time to cook The finished product of a properly braised dish is a fork tender piece of meat and a wonderfully flavourful sauce or jus usually accompanied with flavourful tender vegetables The proper technique for braising is as follows The piece of meat chosen for a braise is usually a tough cut of meat Tougher cuts of meat have more connective tissues and tighter well formed muscle These cuts flanks legs etc also usually carry higher amounts of collagen and fat Searing the cut well on all sides to ensure a nice browning will create a full flavour for the finished product The slow cooking nature of a braise allows these fats and collagens to be broken down adding a richness to the resulting broth The meat itself through the slow cooking becomes very tender and palatable The vegetables added to the braise also become tender and very flavourful Another benefit to a great braise is that none of the nutrients are discarded they are all in the broth and not lost to a disposed cooking liquid like boiled and buttered carrots for example A proper braising pot should be thick walled and have a lid that is dimpled These dimples allow for the condensation to evenly disperse over the products being braised in the form of small droplets A braising pot like a Dutch oven is a great vessel to cook in I have included a recipe for a braised beef dish that I encourage you to try at home this winter B R A IS E D BE E F RE CI P E IN G R ED I EN TS M E T HOD 1 Heat braising pot to high and brown meat well on all sides a small amount of vegetable oil may be used one and half pounds of beef short ribs or beef chuck flat two cups of red wine your choice two cups of beef stock made from bouillon is okay sprigs of rosemary and thyme two carrots one large onion white 4 Add the vegetables all cut in larger pieces and the herbs one stalk celery 5 Place the meat resting on top of the vegetables one tablespoon of tomato paste one teaspoon brown sugar salt and pepper to taste 2 Remove the meat and add the wine Deglaze the pot until the wine has reduced by half and all the brown bits on the bottom of the pan have lifted 3 Place your stock in the pot with brown sugar and pepper to taste do not add salt until the end 6 Place a lid on your braising pot and place in a 375F oven for four to five hours 7 All ovens cook at a different rate check for fork tenderness at the fourth hour and return to oven if necessary You may have to add more liquid to the braise If so only use water as reducing more stock may bitter you braise 8 Once the meat is cooked taste the jus and adjust seasoning with salt at this point 12 WINTER 2022 2023

GOLF REPORT How to Prevent Your Game From Hibernating this winter Chris Lawson Director of Golf clawson londonhuntclub com instagram com londonhuntclub_proshop For those of us who live in cold weather climates the winter can be one of the most damaging things to our golf games If you want to make sure your game does not hibernate there are plenty of things you can do to ensure your game is fresh in the spring We have laid out several action items that can be done during the winter along with accompanying suggestions to implement them Most of them can be accomplished at the Club or from the comfort of your home this off season You don t have to do every single one of them but depending on your winter plans there s actually quite a bit you can do Review Evaluate and Plan Each of the Golf Professionals here at the Club complete an end of year review of their season to reflect on how they played compared to the goals they established last winter One of the best ways to evaluate these goals is to use the Golf Canada app Not just by inputting scores but using their hole by hole and stats inputs for feedback For myself one item I tried to improve was greens hit in regulation I spent more time last winter and throughout the season hitting mid to long irons It s not the most fun to hit 4 5 6 irons all the time but it helped my game In addition to this working out and trying to increase core flexibility were goals I worked towards this past season For Connor he worked on putting trying different model putters as well he joined me with the flexibility training Craig focused on minimizing errors and not letting one mistake leading to another Natalie worked on her short game which included chipping and trying out various wedge lofts and bounces to find what worked best for her and Andrew focused on his tee game with his fairway wood and driver knowing that finding fairways is always better than a couple extra yards 15 WINTER 2022 2023

Here are a few areas to consider for your game this winter GOLF REPORT Fitness Despite what you might have heard starting a fitness routine is a great idea Not only will it help your golf game but it will help you live longer and have a higher quality of life Golf fitness can play an integral part in your improvement plan This winter is a great time to start doing some exercises at the Club s fitness facility or perhaps at home We are happy to attend gym sessions with you and your trainer if you are using one This bridges the two areas and ensures that your golf and fitness goals align We can also provide a library of golf specific training videos or drills Please do not hesitate to ask Putting Almost every golfer has the ability to practice their putting at home It doesn t require much space and there are plenty of ways to make use of what you have at home Another way to maximize your putting practice at home is to add speed training Rather than just trying to make a putt work on speed and distance control consistency Attempt five putts from one location establish a goal line and see how many of the putts reach the line Give yourself a score one point for each ball that reached the line Use your imagination pick up a putting aid device that gives you feedback on whether you have made a putt or not as well as if the putt was hit the correct distance Most are effective with helping your putting stroke Remember you are trying to recreate the same stroke and path If you spend some time putting a few times a week you can easily improve this part of your game This will help you make more of those testy short putts Full Swing Continuing the full movement of your swing is the easiest way to keep your golf muscles active We encourage members to use the Golf Den hitting bays or simulators or if you have enough room swing a golf club at home then you can also stay loose there Mindlessly hitting balls into a net won t do much to fix your swing though There are a few things that I m always working on at home that I would suggest Working on your swing tempo and rhythm is a good place to start The winter months are also a great time to receive feedback or implement a swing change Working with one of our PGA Professionals using technology and setting goals will only improve your swing Regular hitting practice drills and viewing your swing on a screen will definitely help you better your swing and game Never Stop Learning For those of you who are readers there are plenty of great golf books to boost your knowledge during the winter months Books online articles or videos are a great way to change your perspective as a golfer While you don t want to overwhelm yourself with too much information reading up on a few topics can certainly help Should you find something of interest our team can help discuss the pros and cons before making any changes to your game If it s something that can be implemented we can play an integral part in working through how you incorporate the change Evaluate Your Equipment Reviewing your current golf bag and equipment is paramount Perhaps you are in need of new grips or have a club you struggle with Maybe your set is aging you and you wish to demo the latest version Testing clubs in the Golf Den is a great way to try something new so you can hit the ground running in the spring If you are thinking about getting a new set of irons driver or wedges the best thing to do is to speak with one of our knowledgeable PGA team members who can evaluate your current equipment and make suggestions They can accurately test if any of the newer clubs on the market can provide you with a performance upgrade You may find out that your current set of irons is performing just fine but you might need to make adjustments such as your lie angle The off season is a great time to do this because you ll have a few months to hit your clubs within the Golf Den and get used to them before the season starts up again We hope you will consider a few of these items to keep your golf game active Regardless of which items you focus on we are happy to review your season your game or your swing We are available to help you establish new goals and objectives for your game Remember just because it s winter doesn t mean you can t keep your swing in game shape for Spring 16 WINTER 2022 2023

TENNIS REPORT New Challenges Adam Baranowski Director of Racquet Sports abaranowski londonhuntclub com https www instagram com londonhuntclub_tennis New challenges and opportunities present themselves each day how we approach them will reveal who we are Each November I retrospect the entire year like a movie and make mental notes on how to make the coming year even better than the previous one In this case I am referring to my role as your Racquets Director When I started my first year as an assistant in 2012 I wanted to create a buzz within the tennis community get more members involved in adult and junior clinics programs and lessons and maximize the number of players playing in the leagues and court usage At the end of my first year court occupancy had risen just shy of 30 This year we are at a 41 increase over the last ten years and third busiest season in Club s history With growth and advancement come new responsibilities You can shy away from them and stay in your comfort zone or progress and create a new reality It takes drive and determination to get where you want to be and having the right foundation is key It builds on years of you perfecting your craft applying tweaks that worked and leaving those that didn t behind learning from previous lessons and utilizing them in the future Sharing this knowledge and experience in combination with positive energy brings everything together Sharing the same vision is required to coexist within a team as you work towards the same goal an exceptional member experience Your passion in your profession has to be visible while not loud Once you build this holistic approach you will find that magic happens This past year was our first with pickleball at the Club Even though I was completely new to the sport I was looking forward to this exciting challenge I immersed myself completely in it First I wanted to know more about the sport so I just entered a local tournament in St Thomas with more than 200 players competing in various divisions Here I saw what the fuss was all about It was vibrant fresh and inviting Everyone felt welcome and happy to be there participating A few months later I encouraged my staff Edgar and Ava to enroll in a pickleball certification clinic with me in Ottawa Without hesitation they were on board Since we had a tennis background already understanding and learning the sport came naturally to us Although the three of us became certified I felt it was necessary to hire someone whose experience matched their passion for the game similar to mine with tennis After many months of going through the interview process meeting potential candidates in person as well as on Zoom I finally felt I found someone that would be a perfect fit and exceptional pickleball resource to the membership Her passion enthusiasm and energy was undeniable There s an expression good things happen to those that wait I was that person fortunate to have found someone like Carolyn Stevens I knew once I gave Carolyn the reins she would run with it and did she ever Eager to learn a new operation and relentless to perform professional on and off the court firm but fair creative and passionate I couldn t be more pleased with how the first year of pickleball at the Club took off thanks to her I only see a positive trajectory for this section for years to come People s nature and tendency is to see the obvious what is happening in front of them But seldom do they realize what it takes to create such seamless rewarding and positive experiences especially this year The food and beverage service and execution has leaped many levels this season thanks to our Hospitality Supervisor and League Coordinator Krista Meriam New in her role Krista has been instrumental to our success in the Chalet That however did not happen overnight Her perseverance and work ethic got us there Her willingness to learn something completely new like the Salix reservation system and the tennis and pickleball environment were keys to our success and I must say that was a monumental effort I could not be more proud of our team this season Everyone s contribution played a large part in our success Thank you to each and every member of the Racquets Team 21 WINTER 2022 2023
