Board of Directors PRESIDENT S MESSAGE John Vander Hoeven johnvanderhoeven1 gmail com Golf and tennis have wound down for the season and October was not kind to the diehards I was impressed driving into the Club on October 24 for the Town Hall meeting that despite the frigid temperatures there were a few regulars on the driving range and then I also heard the tat tat coming from the trap enthusiasts The fitness programs will pick up now and so will bridge activity at the Club never stops The Thanksgiving Brunch was well attended and the Hunt Kennels again treated Members to a longstanding tradition There were a number of events including the Speakers Series the Cookout in the Clearing and Cooking Classes lined up for the fall and winter culminating with the always well attended Women s and Men s Christmas Dinner Parties in early December as well as the always popular visit from Santa at the Children s Christmas party Strategic Plan Update The Board had its annual strategic planning session in late August and you will be able to find the summary of the 2019 plan under the Resources section of the Club s website As a reminder of the Club s pillars the Club continues to focus on Membership for Life Importance of Club Staff Continuous Improvement 3 Importance of Family and Mutual Respect and Openess Much progress has been made with respect to the 2016 Strategic Plan over the past two years and the Board and Committees continue to review and evaluate a number of these strategic issues and recommendations When I review all of the minutes of the various Committee meetings I realize we have so many committed Members who continue to support Management in making the Club exceptional It is so easy to think things are on remote control that we often don t realize how much change there is from year to year and what the Club does to adapt The Board travelled to Westmount Golf and Country Club in late September and were able to have an exchange with members of their Board and Management It was valuable to compare notes particularly with respect to recent changes in their governance structure Their Stanley Thompson golf course was in fine condition and showed well Golf Course Master Plan On October 24 I was fortunate to Chair the Town WINTER 2018 2019
Hall meeting to present the draft of the Golf Course Master Plan to the Membership As I indicated in my opening remarks the purpose of the meeting was to have our golf course architects Dr s Michael and Chris Hurdzan present the vision that has been endorsed by our Golf Course Standards and Conditioning Committee The Committee Chair Doug MacKenzie updated the Membership on the process that the Committee has followed over several months The Club is extremely fortunate to have a very knowledgeable and passionate Committee guiding the process For those who attended it s apparent the vision presented by Mike Hurdzan respects the design laid out by Robert Trent Jones and at the same time ensures that our golf course will continue to be exceptional as stated in the Club s mission statement A number of Members provided a variety of good observations and questions and these will be addressed by the architects and the Committee Over the next year there will be more information to come on this and more opportunity to review and comment on the plan The plan is by no means final and we will be constantly looking for feedback as we move through the process For those of you who missed the meeting please have a look under the Resources Golf Course Master Plan section of our website for a video of the meeting The website also addresses the background of the plan as well as a hole by hole analysis As more facts and questions are addressed the FAQ section will be expanded has been cancelled but the Club is still addressing compression issues among staff resulting from the 2017 changes to the minimum wage In addition there are no external golf tournaments scheduled for 2019 and the net revenue from these accounted for an amount equal to almost two percent of dues The number of external events currently scheduled for 2019 is also below historical levels and this is being experienced by all comparable venues 2019 Operating and Capex Budget From a financial perspective the Club s operations are ahead of budget to the end of October and the expectation is that the operations will be slightly profitable vs a small budgeted loss for the calendar year The balance sheet is strong Capital expenditures for the year will be in the range of 1 3 million and the Club s cash position is not expected to change substantively compared to the end of 2017 I continue to be impressed by the dedication of Management and staff and their acute attention to detail I have become a raving fan As Members we are privileged and should appreciate the tremendous efforts of these people The Finance and Audit Committee recently had a lengthy meeting to review the 2019 budget prepared by Management and the budget has been presented to the Board by the Chair of the Committee and Management One year ago the minimum wage increased significantly and was the primary cause for the increase in dues of five per cent For 2018 the Board addressed some of the additional increase in costs by adjusting winter Clubhouse hours and hosting two external golf tournaments Going forward the scheduled increase in minimum wage for 2019 Merry Christmas and Happy New Year 4 As a result of inflationary pressures the compression factor a tight labour market no external tournaments and fewer external events Management and the Finance and Audit Committee have recommended an increase in dues for 2019 of four per cent for the Resident Shareholder category and the Board have confirmed this recommendation Capital expenditures for 2019 are budgeted in the range of 1 3 million and the resulting cash position should be maintained through to the end of 2019 It is important that the cash positions be maintained as the Club contemplates moving ahead with the Golf Course Master Plan in the foreseeable future Membership The Club definitely has a vibrant Membership However naturally there is a bit of attrition at the beginning of each calendar year Now is a good time to introduce potential applicants to the Club so that they can enjoy the full season With the holiday season approaching Theresa and I would like to wish each and everyone Happy Holidays and a healthy and safe 2019 John Vander Hoeven Club President WINTER 2018 2019
WINTERREPORT Jon Nusink GM COO jnusink londonhuntclub com We are nearing that special season again I don t mean the holiday season well I guess in a way I do but what I am referring to is the food season It s that time of year when the leaves have fallen the air is crisp and bathing suit weather is a thing of the past If you re anything like me I think of food now more than anytime of year The first thing I want to do on a cold weekend morning is hit the farmer s market fill a couple bags with colourful fresh food and create There is nothing more cozy or relaxing than something slow roasting in the oven or simmering on the stove I don t follow recipes I m an awful baker because of that My father would tell you that I ve never been very good at following directions for anything I like to get an idea from a book a website whatever use it as a place from which to launch and make something happen It usually works out pretty good The joke in my house is I hope you like the version of this dish because you ll never get exactly the same thing again The secret ingredient however is always a pinch of love meaning the special ingredient is less of a thing and more of a feeling Food brings people together on many different levels It s nourishment of the soul and body It s truly love If you happen to more of eater than a creator the Club is the place for you this season as we offer a full array of possibilities for large banquets small dinners party food pick ups and themed events Our dedicated culinary professionals are ready to serve your needs The year that was 2018 was an interesting year The golf and tennis seasons started late due to very poor spring weather but once the summer settled in it was better than any I can remember We finished an impressive renovation on the Tennis Chalet which gave us vast improvements The Golf Course Standards and Conditioning Committee worked very closely with Drs Michael and Chris Hurdzan to further a recommendation on the golf course master plan which culminated in a Town Hall meeting on October 24 A video of the meeting is now available on the website under Members Home Resources Golf Course Master Plan All of the golf leagues saw record attendance The Men s Member Guest is now more popular than its ever been The tennis leagues faced a new challenge by running out of courts to use some weeks and Members support of the dining rooms and gym have both increased nicely Food and Beverage staff thought outside the box and created a Cookout in the Clearing on November 3 It was chilly but the seven fire pits live camp fire music spit roasted pig hen and whitefish and of course marshmallows were enjoyed by nearly a hundred Members and guests It was a fantastic experience and the start of a new tradition for sure For a year that was supposed to be more status quo than those of recent it certainly proved to be hopping The year ahead promises to be just as busy and exciting Some interesting items on the horizon include a paving project on the driveway and parking lots part of which will hopefully be an enhanced entrance to the Club from Oxford Street The Trap Chalet will receive an upgrade to both the interior and exterior and by spring we will be able to offer registered massage therapy in the Clubhouse In addition we will continue looking at ways to create more value for Members and to create community at the Club We have had a very successful year with new Members joining our Club including 18 new Resident Shareholder families and 39 Intermediates Our total active Member count is 1605 at the time of print 49 more than the end of 2017 Our Resident Shareholder Category is at 484 with a cap of 485 We are aware of a handful of changes coming January 1 mostly through category graduation but I suspect we will have 8 spots for this category open at that point We are at our cap for Tennis Associates at 80 with a waitlist in place Since the last issue of Club Life Magazine we have welcomed the following Members 5 WINTER 2018 2019

It s a WONDERFULLIFE Brandie Cooper Membership and Communications Manager bcooper londonhuntclub com There is nothing more human than our tendency to not appreciate what we have until it is gone To wonder what might have been if we had only done this or pursued that To undervalue the present and our relationships in it This tendency is the epitome of George Bailey s psyche in Frank Capra s It s a Wonderful Life Known as a heart warming holiday classic often the film feels like anything but as the viewer watches Bailey agonize over various events in his life that didn t go the way he had planned Driven to madness on a bridge in Bedford Falls New York on Christmas Eve Bailey is so preoccupied resenting his place in the world he is unable to enjoy the present and his relationships in it That is until a series of events unfold on the bridge that allow Bailey to appreciate what he has right before it would be gone The reality is we aren t that lucky The universe doesn t stand still while we wrestle with choices or give us fair warning of what lies ahead The universe keeps going Life keeps going There are so many passive inane thoughts that fill our mind it can be difficult to recognize when we are taking the present for granted by focusing on the future It can be difficult to recognize when we are shortchanging a relationship in the interest of splurging on a gift In short it can be difficult to recognize that the present and being present is the gift This winter give yourself a gift every day and be present Enjoy the day for what it is no matter how cold or chaotic it may be It is yours and will never be here again so embrace it and share it with the people you love Happy Holidays 9 WINTER 2018 2019

GINGERBREADHOUSE Michael Stark Executive Chef mstark londonhuntclub com The gingerbread house that has become synonymous with the holidays has a long and storied history The gingerbread house that many of us build with our children over the holidays bears little resemblance to the gingerbread houses of the past The modern gingerbread house is often found clad in icicles made of icing intentional or not and studded with loud and colourful flashes of our children s favorite candy The modern gingerbread house is often slowly picked at until it looks like a storm blew through and removed all the candy shingles and gumdrop bushes that lined the front garden Gospel of Matthew and his account of the birth of Jesus tells of a fourth wise man Magus who could not complete the trip to Bethlehem but did bare a gift of ginger root for Jesus When Magus fell sick and stayed in Syria he was cared for by a Rabbi who he gifted the ginger root to The Rabbi would then have his students create houses of bread to nourish their hopes of the coming messiah The fourth wise man suggested the addition of ground ginger to the bread house to add more flavour and creating the first gingerbread house The rest as they say is history The gingerbread house and gingerbread held a more revered place in past times In Germany throughout the 1600 s gingerbread baking and shaping became a distinct art form So much so that a sub section of the baker s guild was created and devoted solely to gingerbread bakers There were laws that made it illegal for anyone to bake gingerbread outside of the guild except for during Christmas and Easter when anyone could bake it The Guild of Gingerbread Bakers employed many skilled tradesmen and artists that formed the gingerbread in various shapes and intricate designs Some of the gingerbread was baked for eating but most of this intricately designed gingerbread served as a memento and was often hung in windows like a Christmas decoration The exceptionally designed gingerbread was even held on to and past down through families like heirloom decorations which was possible because of the preservative power of the ginger root Ingredients 7 tablespoons butter 3 4 cup honey 5 8 cup sugar 2 1 2 tablespoons cocoa powder 1 tablespoon gingerbread spice mix 5 cups flour 1 1 2 teaspoon baking powder 1 4 teaspoon salt 1 egg The history of the gingerbread house goes back even further in history right to the first Christmas The familiar tale of the three wise men that travel to Bethlehem to see the newly born Jesus is only part of the story A Christian legend that expands on the 11 I hope you have a wonderful holiday season and try to create your own brightly coloured candy smattered gingerbread house this year to celebrate the holidays and this wonderful tradition Make the Dough 1 Bring butter honey sugar cocoa powder and gingerbread spice mix to a boil in a medium size saucepan 2 Boil for several minutes until the sugar dissolves then remove from heat and cool slightly 3 Sift the flour with the baking powder and salt into a bowl 4 Make a depression in the bowl and add the egg then pour the honey mixture over the flour and mix on low speed until a ball of dough can be formed 5 The ball of dough might still be shaggy but will form a smooth dough as it cools down do not add flour 6 Wrap the ball of dough in plastic wrap and put in a safe place at room temperature for 4 to 48 hours WINTER 2018 2019
Bake the Cookies 1 Heat the oven to 350 F 2 Roll out half the dough to 1 2 inch thickness on a lightly floured board 3 Use a cookie cutter or your own template to cut out 4 Repeat with the rest of cookie dough This dough does not re roll well so take care to roll it into the right size the first time 5 Place the cookies of wall sections on a parchment lined cookie sheet and bake 20 to 25 minutes or until the cookies are set in the middle and lightly browned on the bottom Bake the trimmed scraps to use for practice decorating 6 Let the cookies cool completely on the baking sheet They will harden as they cool Although they are edible this dough is most often used to make decorative cookies that are hung on the wall 7 Decorate or create a gingerbread house with the gingerbread as it is very hard and durable 12 WINTER 2018 2019

VICTORIANCHRISTMAS Chris Carnegie Food and Beverage Manager ccarnegie londonhuntclub com The London Hunt and Country Club is steeped in tradition and one would not have to look further than the holiday season to uncover some of these customs The Club has been offering the Victorian Christmas event in its current form since 1995 marking its 23rd installment this year The Victorian era was responsible for giving us a lot of how we celebrate Christmas today including turkey dinners Christmas trees holidays Christmas carols and gifts Before Queen Victoria s reign began in 1837 no one in Britain had celebrated the traditions we do today No one had heard of Santa Claus no Christmas cards were sent and nobody could take holidays off from work The wealth and advancement in technology born in the Victorian era changed all this The industrial boom supplied many people with jobs at factories which in turn gave them a chance to financially take time off work for two days December 25 and December 26 The Victorian era was also responsible for the introduction of bird to be feasted on at Christmas time When Victoria took the throne poultry such as chicken and turkey were still too expensive for most people Roast Beef was the main fare for most at Christmas for those that could afford it while those that couldn t celebrated with rabbit By the turn of the century turkey had become the norm in every household The Christmas Tree which is said to have originated in Germany became popular in Britain when Victoria s German husband Prince Albert brought one to Windsor Castle from Germany in the 1840 s The rest is history as they are now found in nearly all households during the holiday season On December 23 the Club will be hosting the annual Victorian Christmas which features a traditional family style served turkey dinner Special musical guest Denise Pelley will perform Christmas songs in an interactive caroling concert style This event is the perfect way to get the family out to enjoy great food entertainment and camaraderie with fellow Members before Christmas day 14 WINTER 2018 2019

FACESINTHECLUB SARAH DRAPER BANQUET AND CATERING MANAGER Bio I came to London over 10 years ago to go to University for English and Philosophy While I was in school I discovered my passion for cooking and have been in the food and beverage industry ever since Sometimes life doesn t take you down the path you planned but it always takes you where you need to go After five years of managing and running a couple different restaurants in London my husband and I decided we wanted to buy our own restaurant We bought a 140 seat restaurant about an hour SW of London and ran it for a rewarding two years Nearing the end of our time there we were approached by a man who really wanted to buy our restaurant as it was a dream of his to own this specific place Missing London and getting a little tired of our 15 hour days we decided to sell and move back to London where I began working here at the Hunt Club as a Chef in the kitchen I have been here for over two years now eight of those months I was working the front desk Sundays and Mondays but just recently last July came into the Banquet and Catering Manager Position Future Goals As I have already been blessed enough to have owned my own restaurant which had been a dream of mine professionally my only real goal now is to start a family Hobbies A few hobbies I have include reading and writing As well as going for walks runs spending time relaxing at home and playing with my two adorable doggies Favourite thing about the Club My favourite thing about the Club would have to be the scenery As much as I love the social aspect and the family oriented Club we are all so lucky to be a part of I am always amazed by the beautiful landscape we walk into every single day we are here With every day of every changing season I am never disappointed with the visual I receive every time I drive up our winding driveway I am a nature girl at heart as I grew up in the country and never lived in a town until I moved here so I am always in awe of our vast amounts of trees and wildlife we have Next time you are driving in take a moment look around you We are all so busy ALL the time we forget to just look around us and experience the things we often overlook r e p a r D h a r a S 21 Sarah Draper WINTER 2018 2019
TENNIS4EVERYONE Adam Baranowski Director of Tennis abaranowski londonhuntclub com The expression it takes two to tango is not that far off when it comes to tennis unless you are using the ball machine or practice wall Often it takes four to tango Whatever the number it is a game for everyone at any age You can start as early as when you begin to walk bouncing a balloon on a miniature racquet with either your dad or mom I didn t start as a toddler but it wasn t far from that My sister dad and I were on the court almost every day spending time together Most moments were like blue skies and sunshine but occasionally storm clouds rolled in You hear stories all the time in the professional tennis world about parents uncles and aunts and other relations getting involved in some way or another in a child s tennis The prodigy either loves it and sticks with it for life or comes to hate the game and never picks up a racket again Those adults forget that tennis is after all just a game where people run around a rectangular box hitting a yellow ball to the other side a real life version of the early video game Pong Like anything else if you do something for the right reason you will enjoy playing but as soon as ego gets in the way it can be a nightmare It becomes more demanding and more rewarding once you master the game because trust me it s no fun to pick up balls after a one shot rally It can be very frustrating One thing is for sure though you can play this game anywhere in the world and on any surface In a way tennis is a universal language a passport to new experiences Doors open to opportunities that otherwise would not exist you get to know more people with different backgrounds who then might turn into life long friends 22 I always say we are fortunate to be involved in our sport It is a rarity to find something to do together that involves the following skills decision making coordination exercise agility body awareness physical demands intuition and mental toughness to name a few I ve often wondered if tennis reveals or builds one s character There are so many battles going on at the same time if not with yourself then with your opponent s Our sport is also very forgiving like a mother whose love is expressed with patience and understanding It does not matter that you perhaps started slowly made many unforced errors lost the first set and are down 0 5 serving love 40 You can still win the match You won t necessarily have a pint with your opponent after but that s the way it is Tables might turn next time you play and the outcome could be different It is a social game even if you are not It embraces everyone regardless of one s tennis ability sex religion or social status It is an equalizer that has no filters or prejudice After a game of tennis you have a beverage with your teammates and perhaps some popcorn and reminisce about the game you just had missed shots and the ones Novak Djokovic would be proud of For some the score is very important but for others it s just the pleasure of coming out and enjoying everyone s company well maybe not everyone s but you get the picture The comradery and unity we build with friends is everlasting FALL 2018
