Board of Directors PRESIDENT S MESSAGE Barbara Willis barb willis sympatico ca As I write this article we have just had our first snowfall and it appears that winter is fast approaching The Club is once again preparing for a busy holiday season with many special events scheduled in the coming month This is the time of year when many family traditions are created I have fond memories of my father wearing his red Hunt Club blazer at our Christmas dinner as he carved the turkey with the skill of a surgeon In more recent years the Children s Christmas Party has become our annual family tradition In the coming weeks there will be many opportunities for you to join your fellow Members to enjoy all this season has to offer at the Club This is also the time of year when your Board and management prepare for 2018 by confirming our strategic priorities and finalizing our operating and capital budgets for the coming year This time last year we presented the Membership with a three year Strategic Plan In this initial year of the plan our committees and the Board examined various aspects of Club operations and policies within the context of each of our six strategic pillars We listened to your comments and feedback We recently issued a Membership 3 survey that will provide us with additional information on the Membership experience and expectations While positive changes have been instituted the Board and management team are committed to continue to improve the Membership experience and evolve as a family focused club Our strategies for 2018 will build on this commitment The budgeting process brought unique challenges this year as a result of the new provincial minimum wage legislation Our management team and Finance and Audit Committee were tasked with the challenge of establishing a budget that would control expenditures and enhance revenues while preserving programs and services for Members to the greatest extent possible Through their efforts we have now approved a financial plan for 2018 As Members we are not immune to the impact of this legislation and this will be reflected in increased dues and charges on some Member services in the coming year I recently issued a letter to the Membership on the recently approved Operating and Capital Plan WINTER 2017 2018

While we have welcomed many new families to our Club this year we need to continue to mitigate the impact of changing demographics and attrition within our Membership In this regard you are our best ambassadors and we look forward to you continuing to introduce your friends and business colleagues to the Club We also need to facilitate the transition of our younger Members to become Intermediates and eventually Shareholder Members On the recommendation of the Membership Committee we have introduced a revised Intermediate age and dues structure for 2018 that will help in this regard It is through these processes that we are able to sustain and renew our Membership base We recently had the pleasure of wishing two of our long term employees all the best in their retirement Kim and John each spoke to me with great pride about their many years of service and the special relationship they had with members and fellow staff They exemplify what each of our staff and managers contribute to the Club day in and day out Membership I would like to extend to our staff and management team our very best wishes for a happy and healthy holiday season And to our Members I look forward to seeing you at the many Christmas events in the coming month and wish you all the best for 2018 Barbara Willis Club President On behalf of the Board of Directors and our entire 4 WINTER 2017 2018

TIME FLIES WHEN YOU RE HAVING FUN Jon Nusink COO jnusink londonhuntclub com I can t believe it s December already This past year seemed to fly by This is a time to enjoy with family and friends at the Club Flash back to Canada Day this past year a Member that I was talking to surprised me when he made note that the staff were not only putting on a great event but he particularly appreciated the fact that every employee was working at the Club today and spending time away from their families during a holiday It caught me off guard mostly because I have been in the hospitality business most of my life so its natural to me but his sincerity was greatly appreciated The truth is like the Members the Club becomes a second home for many of the staff too We re lucky that we close shop for a few days at Christmas but for all other holidays we tend to spend it here and with our families at an alternate time For example as my kids were growing up the Easter Bunny always came on Sunday night instead of Saturday and Thanksgiving was always Saturday or Sunday instead of Monday New Year s Eve and Valentine s Day weren t even part of the discussion in my house But let me be clear this isn t a complaint I love to reminisce of all the holidays at the Club the glow on kid s faces and the great times had by friends The staff all put extra time and effort in this time of year It truly brings us the joy of the season So please come and enjoy the Club this holiday season We have a full calendar of the season s best events for all ages to partake in It s always a busy place We kick it off the first week of December with the Men s and Women s Christmas parties The Charitable beneficiary this year is the Teresina Larissa Charity Foundation who assist under privileged and seriously ill children especially at Christmas With your help we hope to raise close to 10 000 and present it on behalf of the Members To say the Club has had a successful year would be an understatement Financially speaking the Club has had a good year in every respect Our Members have supported the Club well and due to the hard work of our Department Heads expenses were kept in line creating what looks to be a favourable bottom line to budget for year end We welcomed 23 new Resident Shareholders to membership and plan to start 2018 with a full roster But that doesn t mean we can sit back and relax Referrals for new members are vitally important so please continue the good work in recommending the Club to friends and colleagues It s easy and all you need to do is forward me their names and I will do all the leg work Since the last edition of ClubLife Magazine we welcomed 7 new families to the Club Crawford and Evelyn Gray are retired and moved here from Scotland They were sponsored by Holden Rhodes and Paul Brisson Terry and Jill Dietz were sponsored by Doug Davis and Harry Van Ymeren Jill is retired and Terry is with Callon Dietz Inc Ontario Land Surveyors Carol Godby and Jim Holloway are lawyers with Harrison Pensa and Baker McKenzie respectfully They have two children Mackenzie 9 and Emma 17 They were sponsored by Iain Sneddon and Charles Wright Steve and Heather Wright are accountants with London Life and Ernst and Young respectfully They have two children Madeleine 14 and Andrew 11 They are introduced by John Sliskovic and Andy Grainger Mark Foris and Valerie Poole Foris were sponsored by Jeff Macoun and Jeff Aarssen Mark is Vice President at London Life Val is a teacher and spends most of her time volunteering 5 WINTER 2017 2018

60 E X TR A S ECONDS WITH JEFF MACOUN HOCKEY IN CANADA B r a n di e C ooper C om m uni c a tio n s Ma n a g e r b co o p e r lo n d o n h u n tclu b com I recently had the privilege to speak with Jeff Macoun Chair of the Local Host Organizing Committee for the Hockey Canada 2018 Gala Golf event During the conversation I learned that his lifelong passion for hockey and youth participation in sport were the driving forces behind a summer trip to Saskatoon with good friend and fellow Member Wayne Dunn On that trip the pair learned about the annual Gala Golf event and returned home with the same sentiment Wayne and I felt the city of London and the Hunt Club would be a great venue for the event because nobody does hockey better than London Ontario We believe there are few communities that can get behind charities and foundations like London We also knew the Hunt Club is a Canadian treasure that would be a huge draw for people bringing them out to support Hockey Canada Ultimately it s about raising funds to make hockey accessible at all levels in all forms for Canada and its communities and in doing so leave a legacy in London I grew up in a hockey family My brothers and I all played growing up and all received university scholarships to the States My brother Jamie played 17 seasons in the NHL and won two Stanley Cups When the Hockey Canada opportunity came up I was intrigued what s more Canadian than hockey Jeff Macoun I agreed hockey is much more than a sport to many Canadians I spent the first five years of my life in a small town We lived in a little red house a few down from the arena On winter evenings my dad would walk down the street equipment over his shoulder and play hockey in a league with friends Around the same time when the weather cooled down and the snow began to fly the school would gather in the gymnasium for a screening of The Hockey Sweater I loved those winter afternoons As a child it was always exciting to come together and enjoy a story that seemed as patriotic as the anthem we sang every morning These were my first introductions to the game of hockey camaraderie and allegiance Perhaps they are the same reasons Canadians have a devotion to hockey unlike any other If you have ever spent a morning in an arena in the dead of a Canadian winter you can attest that there are few purer forms of Canadian camaraderie than hockey Grandparents watch reminiscing about their own childhood days on the ice Parents volunteer time to the development of the team And children practice in the hopes of someday being just like their favourite player These routine hockey scenes are built on a foundation similar to our country history teamwork and hope That s why every winter between Christmas and New Year s we come together to pledge our allegiance and enforce our country s identity as the most dominant in the sport while we cheer on Team Canada at the World Juniors It is with a sense of pride that all generations of Canadians from various walks of life unite on common ground World Junior Gold Helen Keller once said The best and most beautiful things in the world cannot be seen or even touched They must be felt with the heart I hope regardless of which holiday you celebrate during the season you have time at the end to enjoy a little piece of the camaraderie and allegiance that a team of young Canadians will create in their quest for gold And that despite the cool air outside you enjoy the warmth in your heart that this special game has to offer 7 WINTER 2017 2018

A H O L I D AY T R A D I T I O N PLUM PUDDING Michael Stark Executive Chef mstark londonhuntclub com Plum pudding is an ubiquitous symbol of the holidays and a tradition that reaches far in the history of cookery The origin of plum pudding is based on savory puddings that were popular in pre Victorian era England The term plum in pre Victorian England was a term for raisins as there are no actual plums in plum pudding The popularity of this confection being consumed on Christmas can be attributed to King George the First In 1714 he requested that plum pudding be prepared for his first Royal Christmas Feast and it has became a staple at the Royal Christmas ever since The fact that the plum pudding was eaten by royalty on Christmas made it a desirable dish that was copied by common people through England and her empire It was affordable to create and could be cooked without the use of an oven which most people did not have as the pudding is steamed and this could be done with a large pot in front of a hearth Plum pudding would be changed forever in 1845 when Eliza Acton in her cook book Modern Cookery for Private Families re named the Plum Pudding calling it Christmas pudding From this point forward most people even today refer to it as Christmas pudding There was also religious symbolism that went into the Christmas pudding like the traditional recipe containing 13 ingredients to pay homage to Jesus and the twelve Apostles Also every member of the family was to stir the pudding from East to West to honor the Magi and their journey The pudding itself was to be made on the 25th Sunday after the Trinity which lead to that Sunday being called Stir up Sunday The last and most interesting fact about plum pudding is that if it was cared for and created properly it could last for a very long time Some families would age plum pudding a full year before eating it The pudding would be soaked in brandy sometimes rum and then wrapped in a cloth also soaked in alcohol which would prevent the cake from rotting or decaying Plum pudding is the predecessor of fruit cakes which are also cured with alcohol and aged for a year or more I have included a recipe for plum pudding which I hope you try and enjoy It is best served with a custard or vanilla ice cream 10 Fruit Mixture made 4 days ahead 1 pound seedless raisins 1 pound sultana raisins 1 2 pound currants 1 cup thinly sliced citron 1 cup chopped candied peel 1 teaspoon cinnamon 1 2 teaspoon mace 1 2 teaspoon nutmeg 1 4 teaspoon ground cloves 1 4 teaspoon allspice 1 4 teaspoon freshly ground black pepper 1 pound finely chopped suet powdery fine 1 1 4 cups cognac Pudding 1 1 4 pounds approximately fresh bread crumbs 1 cup scalded milk 1 cup sherry or port 12 eggs well beaten 1 cup sugar 1 teaspoon salt Cognac Method 1 Blend the fruits citron peel spices and suet and place in a bowl or jar Add 1 4 cup cognac cover tightly and refrigerate for 4 days adding 1 4 cup cognac each day 2 Soak the bread crumbs in milk and sherry or port Combine the well beaten eggs and sugar Blend with the fruit mixture Add salt and mix thoroughly Put the pudding in buttered bowls or tins filling them about 2 3 full Cover with foil and tie it firmly Steam for 6 7 hours Uncover and place in a 250 F oven for 30 minutes Add a dash of cognac to each pudding cover with foil and keep in a cool place 3 To use steam again for 2 3 hours and unmold Sprinkle with sugar add heated cognac Ignite and bring to the table WINTER 2017 2018

H O L I D AY F O O D A N D B E V E R A G E T R A D I T I O N S AROUND THE WORLD Chris Carnegie Food and Beverage Manager ccarnegie londonhuntclub com The most festive time of the year is right around the corner It is also when the spotlight is on food and drinks when hosting family and friends No matter where we go or who we visit there always seems to be a smorgasbord of traditional roasts cakes pies cookies and of course plenty of our favorite wines and spirits How can this not be your favorite time of the year A traditional British holiday dinner which most of us our accustomed to hits us with 7000 calories which includes all the sweets and beverages It sounds bad I know but let s be honest it s all so flavorful and delicious that we don t mind sacrificing our calorie count for just one night It s because of steeped tradition that we engage ourselves in these expansive dinners year after year What if we broke our tradition and tried another just for one night The results would be different fun and maybe even a little healthier maybe If you are someone who likes a little change over the holiday season then it may be time to see what other countries do for their traditional holiday offerings and bring it to your own dinner party The tour starts in Israel with the well known celebration of Hanukkah also known as the Festival of Lights This Jewish holiday celebrates a miracle that was documented in the Bible s Old Testament when one night s worth of oil lasted for eight days Because of this many of the foods traditionally consumed over Hanukkah are fried in oils With this brings two staple foods that are a must potato latkes and sufganiyots Potato latke cakes are fried until golden and crispy and most often than not will be served with apple sauce or an alternate sweet chutney or sauce Sufganiyots are the ultimate treat in Israel as they are deep fried jelly filled doughnuts For a Hanukkah inspired beverage look no further than a Hanukkah Gelt Martini Inspired by the gold foiled chocolate coins called Gelt handed out over Hanukkah this simple martini consists of potato vodka Goldschlager for the golden flakes and Godiva or another chocolate liquer Christmas in Sicily and Southern Italy means the celebration of seven fishes Traditionally Roman Catholics in the region fast on Christmas Eve so a feast of seven or even more seafood dishes at the end of the day marks a true celebration Baccala or salted cod fish fried smelt calamari and Italian spiced shrimp are all go to favorites for this over the top feast It is no surprise that when it comes to traditional Christmas beverages in Italy that wine is present Prosecco is an obvious staple and has crept into our homes in the West due to being a flavourful cost effective alternative to Champagne Mulled wine is a huge favorite in most of Europe known as Vin Brule in Italy While mulled wine is heated for a short time to keep the alcohol intact Vin Brule will let the wine come to a boil taking the alcohol completely out This procedure makes for a beverage that is friendly for all ages and can also combat common winter ailments such as the flu and common cold It consists of healthy herbs and restoratives such as cinnamon honey cloves and lemon and or orange peels Some say that if you were to ask what country holds the most holiday spirit it would be the Philippines The Filipino s celebrate the Christmas season from September until January which consists of elaborate light displays and numerous festivals This is extremely impressive considering the seasonal celebration officially starts on December 16th for them with continual daily masses leading up to Christmas Day The main feast happens after mass on Christmas Eve when it is traditional to have a whole roasted pig as the centre piece of the feast Aside from the trophy pork other traditional accompaniments are oxtail stew queso de bolo a kind of cheese and flan The preferred beverage on Christmas Eve is an intense hot chocolate called tsokolate Hard tablea chocolate is melted into perfect viscosity and mixed with a tool called a batirol which is believed to bring out the flavour of the cocoa The holiday season at the Club is my favorite time as it is always a pleasure to see everyone bring their families out to enjoy all the Club has to offer No matter how you celebrate the holidays I wish everyone a safe and happy holiday season 11 WINTER 2017 2018

ON THE CUSP OF CHANGE THE SERVICE INDUSTRY Brad Adams Clubhouse Manager badams londonhuntclub com We all know the technology craze has entered new heights We ve seen it in the service industry with iPads kiosks and self cashouts Although this is not why the service industry is dying in fact some of these technologies can even speed the process make it more accurate and enhance the experience You may even see iPads returning to a Country Club near you one day wink wink The death of the service industry in my view is the fast food dining experience slowly bleeding into the fine dining sphere What exactly does that look like you re probably asking I would relay it like this McDonalds service counter will be the norm in new restaurants I was texting with a mentor of mine this past summer He was telling me about an awesome new rooftop patio resto bar in downtown Ottawa I have to try very classy very modern and chic and he said he and his date had a fantastic evening It even overlooked the Parliament buildings stretching across to the Ottawa River Then he said something that surprised me We entered this beautiful rooftop patio packed full of people We found a table then walked up to the counter ordered our bottle of wine brought it back to our table and when we were ready to order our appetizers and entrees we went back over and placed our order Once upon a time when you went out to dine there were multiple pleasant people making your evening special A friendly face to greet and help seat you Another to tender and guide you to a delicious beverage selection another to show you to your table and most likely a new server there who was knowledgeable friendly and most importantly took pride in their profession creating a memorable dining experience Fast forward to 2018 and beyond and the new model you ll be seeing plenty of less staff more machines self serve The reality is restauranteurs are looking for new ways to decrease the costs of the labour dollar Fortunately here at the Club our mission is to have the best service and food possible to create a dining experience that is first class There is a pride our people take in making sure your anniversaries birthday parties business meetings New Years Eve or just a casual night out is enjoyable and comforting with great service and excellent food The Hunt Club will never relinquish these standards Over the past several months we ve been making a concerted effort to elevate our Glenmore dining service and culinary This is the season of celebrations and we are looking forward to seeing each of you and your families out to the Club this holiday season and well into the New Year Happy Holidays 14 WINTER 2017 2018

F E E L G R E AT A N D E N J O Y THE JOY OF THE SEASON Tracey Machesney Fitness Professional tmachesney londonhuntclub com All the wonderful feelings of the holiday season are now among us as we gather to spend time with family and friends When I was a child the holiday season was my favourite time of year Family friends great food and treats Santa and of course presents I ve noticed a little more each year that has past that the holiday season for many people is stressful exhausting and most can t wait until it s over What Why Don t let the holiday hustle and bustle get the best of you and all the feelings that the holiday season has to offer After all it only comes around once a year Here are some simple tips to guide you through the next couple months and hopefully will leave you feeling the joy of the season rather than the relief that it is over Stick to your regular workout routine as best as you can or start exercising to relieve stress This doesn t mean power lifting at the gym is the answer A simple walk around the block stretching for 10 minutes or taking time for yourself at the gym will all do the trick Lower expectations Remember there is only one Martha Stewart Instead of trying to win the holiday award for the best cookies elaborate decorations or the best gifts change your mind set to do less enjoy more Change routines Instead of hosting a 30 person feast try a hors d oeuvres and or light snacks party Instead of doing a secret Santa with co workers or friends make a donation to your favourite charity Instead of baking a dozen desserts have friends get together for a cookie exchange Plan ahead Avoid crowded malls by shopping early or bake your holiday desserts early and freeze them This season think work smarter not harder can t make time for everyone and everything is an important realization Instead of booking event after event dinner after dinner make time in your schedule to enjoy the little things about the holidays with your family like viewing the beautiful Christmas lights It is proven that long term stress can be a huge factor in weight gain due to emotional eating comfort eating high cortisol levels and more So this season enjoy the holidays and all the delights it has to offer What s Happening at Fitness This Winter Building the Ultimate Golfer This 4 week program includes 45 minutes with a personal trainer in the Fitness Studio mobilizing and enhancing golf specific weaknesses followed by a 45 minute indoor golf lesson with Chris Lawson or Craig Hare The session will run Thursday February 1 8 15 and 22 from 1 30 p m to 3 00 p m Cost is 200 contact Chris Lawson or Tracey Machesney for more details and or to register Holiday Bonus it makes a great gift Fitness Resolution Dinner Save the Date Wednesday January 24 for the 2018 Fitness Resolution Dinner If you have not attended in the past this year is definitely the year to start We are excited to share that Club Member Lorie Forwell will be this year s guest speaker Lorie will be sharing her knowledge of working through injuries for all ages including sports and balance related injuries through her experience at Fowler Kennedy Sports Medicine clinic The evening is a great opportunity to enjoy dinner and educate yourself with family and friends guests welcome New Year New Classes Begining in January we will be introducing a couple new classes including Jillian Michaels Body Shred and Baby and Me Yoga Stay tuned for start dates and times in the weekly eNews or contact me to learn more Please note the fitness facilities will be closed December 24 25 and 26 and January 1 7 and 14 Think quality not quantity Understanding that you 20 WINTER 2017 2018

PA R T T W O T H E A R T O F THE JOURNEY Adam Baranowski Director of Tennis abaranowski londonhuntclub com In the first part of the story my parents made a huge sacrifice to get me out of Poland I was nine when I went to Italy with my father on what I thought was a holiday The real plan however was for us to stay there leaving my mother and sister behind until the day came when we could be reunited Part 2 Through tears I told my dad I wanted to stay with him in Italy but had no concept of what that meant What I did know was there as no turning back only going forward My dad had a destination in mind He knew exactly where he wanted to go he just didn t know how to get there We stopped at a church where a priest gave us directions that led to a train station and a 60 km journey on rail from Rome to Latina Our destination turned out to be a converted immigration camp that had been barracks for Mussolini s military This was our new home We checked in and turned over our passports After receiving a couple of towels and blankets we went to find our room When I saw it I was devastated I already missed my mom and sister my friends and everything about home The room had one twin bed and a basic metal dresser It was plastered with magazine photo paper There were no appliances The washrooms were outside the hallway a row of sinks and squatting stalls It was just as well I didn t realize we would live there for more than a year waiting for our immigration papers to be processed In lighter moments dad joked that since I would not do my Polish military service I was doing this instead Meals where provided three times a day for all the refugees If you wanted something different to eat you had to go and buy it Dad used to always make sure I had plenty of fruit and quality food in my diet Those who wanted to work could find work If you stood outside the camp people would drive up close to the curb looking for immigrants to pick 25 watermelons or grapes on the farm or to do basic manual labour When we first arrived we had to choose the country to which we wanted to emigrate Australia the U S or Canada Dad chose Australia because he had a friend there who offered to sponsor us The approval process typically took 8 12 months After a long wait we were turned down for Australia Dad s next choice was the U S but he soon learned it would be difficult for my mom and sister to join us there so he changed course again Our third and final hope was Canada I m grateful for the way it turned out Canada was the best choice for so many reasons but we spent nearly two years living in the camp waiting for paperwork Before long dad and I went to explore the city and look for a tennis club We found one with four courts nestled in a park Latina Tennis Club I had only minimal broken English so dad spoke with a tennis director Dotore Romiti to see if I could be admitted to their tennis program on a scholarship After going through different drills and exercises on the court they saw I was the youngest and one of the better players on the court and gave me a full scholarship and court privileges I lived breathed and ate tennis I was at the club constantly playing either against the wall or with anyone who wanted to play I still attended regular school at the immigration camp but it was not as intense as it was back home Dad got a job at the club as maintenance staff and after work he would still find the time and energy to coach me and reinforce the things I worked on with the tennis pro I knew by one name Maurizio We soon met another Polish player at the club At 15 he had fled by himself hoping to get to the U S I remember thinking how brave he was to leave his entire family behind WINTER 2017 2018

Rewarded are those who take the chance luck shines upon those who are fearless It took many months for dad and me to adjust to life in Italy without the rest of our family The only way we could communicate with them back home was through mail or by phone To call Poland we had to go to the city and use one of the communication services sort of like a phone kiosk It wasn t all gloom and doom however We had a chance to travel to interesting historical places around Italy on trips organized for minimal fees We went on bus tours to Pompeii Alba and Monte Carlo to name a few Such opportunities would not pass my dad He was an ambassador for learning through experiences and I had a chance to be a part of it This time of year I always think of one particular experience organized by our tennis friend Dotore Romiti He had a wide wing span with what I assume were influential people to be able to provide us this opportunity During Christmas he arranged an invitation for my dad and me to receive holy communion with John Paul II at St Peter s Basilica This was a monumental moment for my dad and me To see Pope John Paul II up close and have him give us holy communion there are no words to describe this feeling Back home I heard about John Paul II constantly He was probably the most important controversial and yet influential Pope in history helping bring the communist regime to its knees which led to the Berlin Wall coming down We were very blessed to be in his presence Not long after that we learned we would be going to Canada Merry Christmas Even though we had a chance to stay and live in Italy after receiving asylum my dad was adamant about moving to the west and so we did 26 WINTER 2017 2018
