T H E W H AT W H Y A N D W H E N O F DECANTING WINE Michael Hearse Food and Beverage Manager mhearse londonhuntclub com As we approach the holiday season many of us will reach for that special bottle of wine from the corner of our coolers or cellars to serve to our guests as a special treat It is for that reason that I thought I would present some tangible information about decanting wine that might dispel some common myths or encourage you to enjoy its benefits What is decanting Decanting wine is essentially the process of pouring the contents from one vessel typically a bottle into another vessel typically a decanter Most often the wine is then served from the decanter but it is also quite applicable to recant the wine back into the original bottle for service If the wine is to be served from the decanter I suggest leaving the empty bottle of wine and cork beside the decanter to allow your guests to view what special wine they are drinking Why do we decant Decanting is done for more reasons other than just transferring your wine to a decorative display vessel to adorn your table Although this is a side benefit as many decanters from Reidel and other manufacturers are quite impressive the real application of decanting is twofold First slow and careful decanting allows wine particularly older wine to separate from its sediment which if left mixed in with the wine will impart a very noticeable bitter or astringent flavor You may also use a specialized filter to pass the wine through as it cascades into the decanter to ensure that one hundred percent of the sediment has been removed Second when you pour wine into a decanter the resulting agitation causes the wine to mix with oxygen enabling it to develop and come to life at an accelerated pace which can be helpful for younger full bodied wines When should you decant This is a very subjective question to which my answer is always the same whenever you like As noted in the previous paragraph decanting is not just for older wines but also for young wines that might need some aeration to develop In either case the length a wine should be left to breathe prior to consumption can vary from 30 minutes to several hours for maximum bouquet smell and flavour development With some older or fuller wines more time should be expected and may be required It should be noted that if you are selecting something with a great deal of age from your cellar in excess of 20 or 30 years it is advisable to have the bottle standing erect for 8 to 10 hours prior to opening and decanting To summarize not only are there many physical benefits to decanting a wine like improved taste and smell but also visual benefits to impress your guests So whether you are enjoying a 1985 Sassicaia this holiday season or a 2010 Stags Leap Cabernet Sauvignon continue to treat yourself by decanting your bottle before enjoying with family and friends 10 2015 12 01 Club Life indd 10 winter 2015 2016 11 23 2015 8 54 40 AM 11
