Board of Directors PRESIDENT S MESSAGE Barbara Willis barb willis sympatico ca Well this has proven to be a real Canadian winter with lots of snow cold weather and many opportunities for outdoor sports Like some of you I have taken full advantage of the conditions to cross country ski and snowshoe the groomed trail at the Club What a wonderful way to enjoy our Club throughout the winter season Some of our more creative Members have even built a life size snowman on the tenth tee For those of you that winter south of the border you may have missed some of the pleasures of winter in London but I somehow think you didn t mind I am sure your tennis and golf games are in far better shape than mine will be this spring Many of our Members have participated in our indoor golf program to tune up their games and will be ready to take it outdoors before long Since the last issue of Club Life we have successfully concluded the fiscal year We well exceeded budgetary expectations in 2017 and remain in a strong cash position going into 2018 We completed the year having achieved our Membership goals and have already introduced new Members in 2018 We completed the annual Membership Survey and these results have provided management and the Board with valuable input 3 in developing our strategic priorities for 2018 Overall the results are very encouraging and we benchmark well with other top clubs across the country The survey has highlighted some areas of performance that we will continue to work to improve in order to better achieve your expectations The survey results are available on our website In January we began the interior renovations of the Tennis Chalet These will be completed in time for the spring tennis season The Golf Course Master Plan will move forward in the coming months with a view to having a draft plan ready for our consideration by the end of the summer The opening of the golf and tennis seasons is planned for this spring and we look forward to resumption of our leagues and all the events scheduled for the summer months With the arrival of spring we also look forward to many Club events resuming The Easter Brunch is first on my list of traditional family outings each spring Several generations of my family have enjoyed this celebration for many years SPRING 2018

The Easter Bunny is always very popular having hidden lots of chocolate treats for the children Our annual Opening Cocktail Party is next on the agenda for April 21st This is a wonderful time to reengage with your fellow Members in anticipation of the spring season and resumption of outdoor sports at the Club The Club s Annual General meeting is also held each spring The Governance Committee has completed a review of our bylaws and these will be presented to the Shareholders for consideration Once again we will introduce a roster of nominees for committee member and director vacancies We certainly appreciate each of these Club Members who willingly contribute their time and expertise to the governance of our Club Please join us on Wednesday April 18th as we review our accomplishments over the past year and look ahead to 2018 to make this Club so successful and can assure you that we are indeed fortunate to have the very finest team working with us throughout the Club I look forward to seeing you at the many spring events at the Club In the meantime enjoy these final days of winter Barbara Willis Club President As I approach the completion of my term as President this spring I want to take this opportunity to recognize our management team and the many staff that make our time at the Club so pleasurable I have had the privilege of getting a closer glimpse at what it takes 4 SPRING 2018

COO REPORT Jon Nusink COO jnusink londonhuntclub com Spring is almost here A time of fresh beginnings growth and the excitement of another summer just around the corner The smell of a fresh cut putting green and plans to eat and socialize with friends on the Terrace This winter was not without its challenges But as I write this it is a gloriously sunny February day In fact it feels we had more sun this winter than most The winter came in hard with a very cold December An abundance of snow kept Jayson s crew busy plowing maintaining ski trails and hand shovelling off greens to save them from ice damage A quick and sudden melt late February left holes 10 and 11 fully engulfed by the river causing some damage that we have already begun to repair The Tennis Chalet renovation began right after Christmas and is on track to be completed in late April in time for the start of our leagues Every inch of the interior of the building is being updated We had an extremely busy December in the Food and Beverage department with record figures Chef Michael s changes to the menu which were instituted late fall have had rave reviews so far and he will continue to build on the feedback we receive The Food and Beverage team have great plans for 2018 s social events calendar starting with our Spring Opening Cocktail Party on April 21st Membership recruitment was also very successful in 2017 and brought our roster back up to full A number of changes were instituted for 2018 with the largest of note being a revamped Intermediate structure All age groups were shifted up by five years to reflect our modern life cycle and dues were made more competitive in many categories In 2017 we welcomed 23 new Resident Shareholder families and 5 Intermediate families In the first two months of 2018 we have already welcomed 6 Resident Shareholder families and 3 Intermediate families Please help me welcome our newest Members to the Club Dr Jacob and Alanna Kipfer and their 3 children Kyla 7 Hayden 5 and Aria 3 Dr Kipfer is a Naturopathic Doctor and Alanna is a teacher with the Thames Valley District School Board The Kipfer s were sponsored by Nieff Houssian and Jeff Petrie David Carver and Catherine Burke were sponsored by Barb Willis and Colin Nash David Carver owns Carver Sheetmetal Inc and Catherine works with Credit Counselling Michael Penner and Jacobi Elliott were sponsored by Reg Jackson and Jeff Petrie Michael is employed by London Life as a Financial Security Advisor and Jacobi is a Project Lead with St Joseph s Health Care and Parkwood hospitals They are currently planning for a September wedding Ryan and Kylie McInerney and their twins Colt and Corbin 3 Ryan is the Director of Business Development Ontario Mortgage Division for WMS Financial and Kylie is a Senior Lab Technologist at University Hospital The McInerney s were sponsored by John Nash and Colin Nash Michael and Carrey Emery and daughter Laura 20 were sponsored by Glenn Jones and Denis Lemieux Both Michael and Carrey are employed with Clinical Research Dental and hold positions of COO CFO and HR and Payroll Manager respectively 5 SPRING 2018

INTRODUCING SOUS VIDE Michael Stark Executive Chef mstark londonhuntclub com While today s process of sous vide is a relatively new one the concept is not It has made a reappearance with home chefs and is a current trend There are two factors involved in the process of sous vide The first has to do with the sous vide itself which translates to under pressure The under pressure component is the food being vacuum sealed in a plastic bag This vacuum sealing makes a difference in the texture and flavor of the product Often to intensify fruit flavors the action of just vacuum sealing is enough But more commonly this process is used with meat where the sealing expands the meat as the air is being vacuumed out then places pressure on the meat once sealed This action breaks down some of the connective tissues in meat The second part of the sous vide process is the use of a low and steady heat that does not fluctuate sometimes in excess of 10 hours This leads to a product that is cooked perfectly from the inside out to create a uniform finish Another advantage to using very low heat is the cooking time is increased which means the product is often more tender The last advantage to using low heat is that the fat does not melt as readily at low temperatures which leaves more flavor because fat equals flavor The first documented example of this low temperature cooking was done by Benjamin Thompson in 1799 who wrote about placing a joint of meat in a machine intended for drying potatoes at a low temperature The result was not merely edible but perfectly done and most singularly well done While the science of low temperature cooking has been evolving for many years the stability of temperature has always been a problem A basic oven can swing in temperature wildly even if properly calibrated The first immersion circulators appeared in the early 1970 s and as very large baths that could not be moved and were often cooked as gas fires which still led to temperature instability One of the first pioneering agents of sous vide were the brothers Troisgros at their restaurant Masion Troigros in 1974 The technology they used was described as large and expensive The advent of the sous vide trend in the mid nineties was pushed by the arrival of small counter top units that were portable and could be purchased for a reasonable price Additionally these units were fully digital and able to keep a steady heat that did not fluctuate by more than a degree or two Once the technology was complete sous vide became popular and has remained very popular The combination of under pressure cooking and cooking at a low temperature lead to a product that has a uniform doneness is tender and retains more natural juices The infusion of flavor in sous vide is also easier and often much more intense The sous vide cooking process allows flavors to mingle with one another and preserve more of the foods flavors The Hunt Club Culinary staff will be offering a Sous Vide Beef Tenderloin on the Chef s Menu We have chosen to infuse the beef with butter and will serve it with a lobster croquette potato baby carrots and a rich veal jus This very tender steak can only be served medium rare and is quickly finished in a hot pan to create a slight crisp crust We look forward to seeing you at the Club and encourage you to try this special offering 10 SPRING 2018

EMERGING TREND WINE ON TAP Chris Carnegie Food and Beverage Manager ccarnegie londonhuntclub com When it comes to beverages on tap we synonymously think of one thing a cold frothy beer In the past few years in North America however a new trend of wine on tap has emerged taking pubs and fine dining establishments by storm Wine coming in barrels is a fairly ancient concept but the technology is now here to serve directly from these kegs This procedure is not only cost saving but eco friendly as well Of course there can be a lot of scepticism when it comes to wine coming out of a tap Will it be as consistent and true as its bottle counterpart Will it have any chemical or plastic tubing flavour from the lines Will it produce enough bubbles on sparkling wine options These are all fair questions but many testimonials have debunked all of these worries The process is quite simple The wine comes in roughly 19 5 Litre stainless steel kegs which use pressurized nitrogen to push the wine through a draught beer line system No sulphur dosing is needed since it is pressurized Unlike boxed wine there is no oxygen contact so it will come out consistent from the first glass to the last Prosecco and other sparkling wine offer a different method in that it uses an argon gas or carbon dioxide Additionally having wines on tap offers extra life from the product Wine is expected to have shelf life of 2 to 3 months once the keg is tapped and sparkling wine is good for 1 to 2 months once tapped In most of Italy restaurants have seemingly converted to Prosecco on tap If you are interested in trying this new trend look no further as we will be implementing Prosecco on tap this year at the Club If you have any upcoming events or weddings we will now be able to offer Prosecco on our portable draught machines I look forward to hearing your thoughts on this new and exciting trend 11 SPRING 2018

NEW BEGINNING TO A NEW SEASON Brad Adams Clubhouse Manager badams londonhuntclub com In looking ahead to what will be a fantastic 2018 here at the Club I cannot help but reflect first on the year past And what a year it was Records were set in attendance at all our major Club events Canada Day Thanksgiving Easter and Mother s Day Brunches the Men s and Women s Christmas Parties and Children s Christmas Party all of which were record breaking attendances These aren t small record attendances either we re talking 30 130 people more at each of these Club events To see that much engagement and enjoyment from you and your families at these substantial occasions and family events is motivation for continued success The year ahead has much excitement on the horizon from the Tennis Chalet renovation to the Opening Cocktail Party to Live Music on the Terrace and all the events and touch ups in between The Club is ever evolving and moving forward It s an exciting time to be a Member The number of new families that have recently joined is equally exciting At the Children s Christmas Party I had a new Member approach me and say We ve enjoyed the Club more in our first year than the past 20 years combined at our previous club To receive feedback of that stature is a lightning rod of motivation Our Culinary Team have made a tremendous effort since the fall in obtaining feedback on dining experience and making some changes The introduction of the new Chef s Menu has been very well received and replaces the traditional Glenmore Menu Its purpose is to provide Members with a more advanced and nouveau culinary experience A distinctive difference from the Casual Menu previously called the Oxford Menu allows Members a broader range of choices and styles The Chef s Menu changes almost monthly and the Casual Menu will change seasonally Both are available to order from in any dining area We appreciate your continued feedback so please let us know what you think Making your experience memorable with delicious food beverage and great service is our ultimate focus The year ahead brings much anticipation for continued growth and engagement We look forward to seeing you and your families at the Club often this year whatever your pleasure may be From golf to tennis fitness or dining business or pleasure we are proud to make your time at the Club as enjoyable as it should be 12 SPRING 2018

GETTING TO KNOW THE FACES IN THE CLUB BRET RIDGEWAY MIKE WISMER GLENMORE SOUS CHEF FACILITIES MAINTENANCE LEAD Bio After graduating high school in London I moved to Toronto to attend culinary school at George Brown where I completed the two year culinary management degree Following my degree I worked around Toronto exploring the different aspects of the culinary industry from breakfast cook to catering and high end cuisine working for Susur Lee After leaving Toronto I traveled to Florence Italy for nine months to stage in various restraunts learning Italian cuisine and exploring different Italian food products I have also worked in several kitchens in Montreal before returning to London to work at the London Hunt and Country Club Bio I was born in Southampton Ontario and grew up on the Saugeen River exploring everything that crossed my path In my early teens I won the Edna Johnston Art Award and an athletic award which allowed me to study with international artists train and work throughout the summers In my early twenties I became a fitness instructor tennis counselor for Georgian Village before attending Niagara to study art Although my dream was to be a full time artist I learned very quickly that it s impossible to live off of art alone and moved to London where I became a graphic artist In 99 I left my job as a Senior Graphic Artist sold my house and belongings and trekked into the northern wilderness for a year and a half After my travels I found my way back to London where I enrolled into Police Foundations at Westervelt College With a life of lessons learnt I m now a proud father of two beautiful children Future Goals My future goal is to gain and maintain the title of Executive Chef Hobbies Playing football and hockey reading and travelling Favourite thing about the Club The sense of unity amongst the staff to provide the best experience for the Membership Future Goals Quest for knowledge and experience in my field has always been my goal A few personal challenges I would love to achieve are the Talisker Whisky Atlantic Challenge Rowing and the Trans Am Bike Race Hobbies Art adventure cycling hiking backpacking rock climbing canoeing and anything that gets me out into the outdoors y a w e g d i R t e r B 13 Favourite thing about the Club The atmosphere inside and out Where the tranquility of the mornings and the energy that builds throughout the day creates a balanced energy Mike Wismer SPRING 2018

LESSONS FROM LAIRD Brandie Cooper Communications Manager bacooper londonhuntclub com What is life for For many this is one of life s most complex questions But maybe the most accurate answer is also the most simple When Abraham Maslow 1908 1970 an American psychologist pondered the question he answered naturally It s for you Simple enough right the art of living and loving life The only complication is we tend to confuse the idea of a good life with perfection We forget that in order to love life and all it has to offer we need to experience the highs and the lows and learn from both Meet Laird Hamilton Laird has ridden some of the most epic waves ever recorded At 53 years old he s an athlete actor and most recently author I ve had the privilege of catching a wave or two but that s not how I became familiar with Laird A few years back I found myself in a bit of a rut I wasn t where I thought I would be in life It s a bit like this time of year when we are somewhere between the winter blues and the promise of endless summers Then in Indigo one grey afternoon I came across Force of Nature Mind Body Soul Written by Laird Force of Nature challenges the reader to overcome their worst enemy their own mindset and to start living and loving life While I urge anyone looking for a simple read to pick up a copy I thought I d take this opportunity to share a few lessons from Laird as we look forward to a fresh start and the new season that is upon us L E S S ON ON E LE SSON T WO LE SSON TH R EE Make sure your worst enemy doesn t live between your own two ears There are two ways to learn something the easy way and the hard way Don t be afraid of death be afraid of a life half lived Opportunities present themselves every day and more often than not the reason we don t take advantage of them is because we give ourselves a reason not to This season challenge yourself to try something new Don t be afraid to fail at something even if it means failing at it the entire season Enjoy the process it forces your mind to engage so keep the journey fun Don t confuse the easy way with the path of least resistance Learning something the easy way can be hard But because it s hard you learn the lesson right away On the flip side learning something the hard way can be easy So easy that you end up making the same mistake several times before you learn the lesson When the going gets tough you can find an underlying lesson and learn from it or you can feel sorry for yourself the choice is always yours Sometimes it seems like if we aren t on vacation or in the midst of an epic event we are biding our time until the next big thing If this is true I d guess we re going through a life less than half lived Enjoy the everyday as much as the big days and everything in between And be sure not to tune out that s when life s most amazing opportunities come knocking so make sure you re ready to answer A pure surfer goes with the wave working with it In life the more successful we are at doing the same the more we will enjoy living and loving life and all it has to offer I hope you do the same at the Club this season jump in love life and take advantage of all the opportunities your Membership has to offer 14 SPRING 2018

GROUNDS REPORT Jayson Griffiths Golf Course Superintendent jgriffiths londonhuntclub com Nature s seasons are individually unique and provide a rhythm to life s intricate processes Our core senses have acutely developed over time to help us connect navigate and appreciate our surroundings This past winter the course returned to deep cold snow filled days with breezy sunlit forests Walking the winter trails I realized how the sense of sight and sound is acutely tuned to the environment The rush of the river the singing of birds but the sense of smell is vacant Spring is the antithesis to winter and with it brings a profound reminder of the sweet smell of freshly clipped grass or the scent of newly flowering tulips crocus and budding trees While writing this spring newsletter I came across an historic golf club flow chart titled THE GOLF CLUB TREE As referenced last year the results we see are often determined by what goes unnoticed Charles Darwin in his 1880 book The Power of Movement in Plants wrote there is no structure in plants more wonderful roots We are fortunate at the London Hunt and Country Club metaphorically speaking to have grown developed strengthened and added many rings to our historic tree A mighty Oak requires the foundational strength and life giving nourishment of deep fibrous roots When an acorn germinates the first thing it sends out is a tiny root to anchor its position in the soil and start drawing water Like a golf club a tree has many structural components that are essential for the tree to fully grow and flourish The many departments at the London Hunt and Country Club draw from the strength and support of our Membership Board of Governors President and Manager while gaining tremendous satisfaction in providing the special experiences you have come to enjoy This winter provided opportunities whether performing equipment refurbishment tree maintenance or team building and training these essential activities need to be completed in preparation for a successful 2018 golf season Looking ahead the arrival of sparkling sun kissed dew on morning grass and the placing of your golf ball on the 1st tee will soon be here Much as the highly anticipated spring visit of our pre eminent course architects Dr Michael and Dr Chris Hurdzan As outlined in communications last season the future enjoyment health and sustainability of this historic property requires the leadership and guiding wisdom of a trusted hand The eventual development of a Member focused Member supported Master Plan will help provide a clear vision to anticipate prioritize and schedule infrastructure improvements and renovations to the golf course for years to come In closing the Grounds Department greatly appreciates the investment and commitment extended to us by our Membership With your support and the co operation of favorable spring weather the entire Grounds Team look forward to preparing the setting for an exciting 2018 golfing season 17 SPRING 2018

MEET OUR NEW GOLF PROFESSIONALS Tim McKeiver Head Golf Professional tmckeiver londonhuntclub com It is with great pleasure that I introduce to the Membership two new Golf Professionals for the 2018 season Ken Fulton brings a wealth of experience to the Club as our new Teaching Professional He was born in Selkirk Manitoba and his parents worked for many years at St Charles Country Club in Winnipeg making golf a natural for Ken Through his hard work and an outstanding junior record Ken received a golf scholarship to Arizona State University After graduation he played on the P G A Tour from 1968 to 1972 where his teaching skills were developed by watching the best golfers of the era Ken has been the Head Golf Professional at Highland Country Club Scarboro Golf and Country Club Oakdale Golf Club and Glen Eagles Golf Club His career achievements include winning two Canadian Club Pro Championships in 1984 and 1992 and the Canadian Senior Professional Championship in 1996 In 2004 he was voted Ontario Club Professional of the year Ken has a number of golf schools and clinics planned and will be available for individual lessons He can be reached by email at kfulton londonhuntclub com Tyler Martindale from Ingersoll Ontario is our new Assistant Golf Professional Tyler is a graduate of the Fanshawe College Golf and Club Management program and became a member of the P G A of Canada in 2015 For the past eight years Tyler has worked in a number of different roles at Ingersoll Golf Club Chris Lawson has been a loyal and dedicated member of our Pro Shop team for over 20 years where does the time go This season Chris will continue in his role as Associate Golf Professional Tournament Director Craig Hare has been busy in the Winter Golf School and will be responsible for the coordination all women s golf leagues again this season Sarah Robinson and Deb Evans are returning and will continue to merchandise the Pro Shop and assist with all the Pro Shop s administrative duties Our goal is to have the Pro Shop up and ready to receive Members by April 1 Here s to an early spring 18 Hartley and Annabel son and daughter of Jeff and Becky Griffiths SPRING 2018

MEET OUR NEW PERSONAL TRAINER SPENCER THOMPSON I developed a keen interest in health and fitness at the age 15 when I began working in my first fitness club I set goals and I aim to complete them with the best of my ability providing the highest quality product I aspire to help all my clients reach their respective health goals by taking a holistic approach and providing custom tailored programs for each individual to best meet their needs I have a diverse background in the health field including four years of experience in class instruction personal training and membership coordination Furthermore I ve spent three years as a research associate in neurorehabilitation focusing on acquired brain injury spinal cord injury and stroke rehabilitation In addition I am employed as the study trainer for a randomized control trial evaluating tele rehabilitation and exercise based therapy for patients with a lower limb amputation Throughout my life I have been multitasking balancing school to attain a university education while playing OUA CIS varsity hockey and football on top of volunteering work and paid employment I completed my Bachelor of Science degree in Health and Aging Studies option in Gerontology at the University of Waterloo and recently graduated from my Master of Science degree in the field of Physical Therapy Health and Rehabilitation Sciences at the University of Western Ontario I have an extensive training background in fitness program design and personal training I personally began working out and developing my own fitness goals for over 10 years now I am a hard worker and enjoy working with a team I have a vested interest in health and plan on pursuing a long career in the health field I am an organized person who s held several positions in the past working with the public developing my communication and interpersonal relation skills to provide you with the best possible personal training experience 19 SPRING 2018

PA R T T H R E E T H E A R T O F THE JOURNEY Adam Baranowski Director of Tennis abaranowski londonhuntclub com Part 3 in Canada As my dad and I arrived in Canada in March of 1987 everything seemed big and spacious The flashback of Western movies came to mind Cars looked like big whales space seemed endless and the buildings overshadowed smaller structures Finally after so many years we were But as exciting as our arrival was the best part was still six months away When we arrived it was time for a new start in a country where anything was possible Money did not grow on trees like some people would say back home It was hard work right from the beginning We were located in Oshawa at the beginning of our adventure I was 11 and started going to school while my dad went to work He wasn t the type of person to wait for something to land in his lap He was a go getter so he quickly found odd jobs here and there It didn t take long for him to find tennis courts as well In the beginning we used to just travel by bus and train to get around places as some people do The transportation was not the same as it was in Europe and the distances where not as enormous Sometimes we got lifts from people we knew Unfortunately Uber was not yet established Six months into our adventure we finally were reunited with my mom and sister After more than two years they came to live with us and resume our family life I remember like it was yesterday when we drove to Montreal to pick them up in my uncle s car It seemed to take forever to get there but we had waited that long what was another eight hours We quickly resumed our lives together As they 21 had before my parents split the responsibilities and duties I was traveling with my dad to pursue my tennis career and my mom was pushing my sister in violin Time sacrifice and dedication came equally from both sides It wasn t long before I was allowed to play tournaments in Ontario and the first one I ever played believe it or not was not far from London Hunt and Country Club It was at the All Canadian Tennis Academy on Cheapside Street currently known as the Optimist Club As an 11 year old I played in the U12 category I won a couple of matches but eventually lost It was a tough loss as I remember not sleeping and crying during the night but being very competitive made me work harder One tends to learn more from losses but try explaining that to an 11 year old kid Good luck Eventually our family would move to Toronto so Ursula and I could have more exposure in our fields I got in on a full scholarship to a tennis academy at the National Tennis Centre and Ursula got into the Royal Conservatory of Music Day in and day out rain or shine I was out there on that tennis court chasing that yellow ball Each day before school started my dad would wake me up to go train That was the life I knew weekdays and weekends When I was not on the court I would come home and watch professional tennis matches my dad taped throughout years One could argue I was learning through osmosis Nothing came without effort sacrifice and dedication There are dozens of stories I could share with you but the one that stands out is when at age 18 I won Canadian Nationals and became the number one player in the country Soon after my dad and I drove to Florida He always wanted to see if I could get into Nick Bollettieri s Tennis Academy on a scholarship Located in Bradenton Florida it was the best tennis academy in the world It s where Andre Agassi Monica Seles Jim Courier Boris Becker and many other top tennis players trained SPRING 2018

Don t quit Suffer now and live the rest of your life as a champion After some persistent talking from my dad my test to get in was to beat three players two of whom were starting to play on the ATP or WTA circuits To the surprise of everyone except my dad I beat all three of them After a quick conversation with academy director Mike De Palmer I was awarded a full scholarship which allowed me to train and have meals three times a day at the academy Lodging was the only thing my dad and I would have to take care of so we did We stayed on a campground 30 minutes away from the academy It did not take long for coaches staff and some players to find out where we stayed After living in a tent for more than three months and training with the self styled Top Guns the top kids in the academy Mike asked if I would like to be Boris Becker s hitting partner in Monte Carlo At the time I was getting ready to play in a lower entry Futures professional tournament the first step on the path to play ATP events But I didn t hesitate for one second Absolutely I would be honoured Before I really knew what was happening we were on plane heading to Monte Carlo Not even a few hiccups at the border could stop me from going to meet Boris Becker the former number one player in the world 22 SPRING 2018
