WELCOME TO THE HUNT CLUB FAMILY Jon Nusink COO jnusink londonhuntclub com The fall edition of this magazine in 2015 had my article stating that Clubhouse construction was nearing completion It s hard to believe that was a year ago time flies when you are having fun We set out to have as normal a year as possible in 2016 with as little disruptions as possible and I think for all intents and purposes we achieved that The golf course and tennis courts have been in what some Members have described to me the best shape I have ever experienced at the Club thanks to the hard work of Jayson Deb Brent and their dedicated crews on the course and Chris Greg and Matt on the courts All this despite the driest June and July in recent history followed by the wettest August It has certainly been a challenge but they were up to it In the last issue of Club Life I crossed my fingers to have as normal and typical year as possible but we are currently experiencing some key personnel turnover We pride ourselves in fostering the Hunt Club Culture in our key staff so when we lose one there is always an adjustment period for both Members and their fellow staff Monica Laprise our Controller for the past four years who was pivotal in the transition between General Managers and managing the financial side of the CP Women s Open and the Clubhouse Construction Project accepted a new challenge as the Chief Financial Officer at Elgin St Thomas Public Health Unit at the end of July Michael Hearse the Club s Food and Beverage Manager for the past four years a complete hospitality professional who dedicated more time and effort into the Club than anyone could have thought possible accepted the position of General Manager at Sarnia Golf and Curling Club starting in September Both Monica and Michael have played extremely important roles in the success of the Club and to me personally and will be terribly missed We wish them the best of luck in their exciting new jobs However with change comes new opportunity and I am very happy to introduce the new additions to our management team Monica Mick our new Controller started in early August She has a very strong resume with degrees from Ivey and Waterloo and experience with great companies including Ernst and Young and positions that have taken her as far away as Australia and Dubai A WARM HUNT CLUB WELC OME TO Monica Mick Controller Brad Adams Clubhouse Manager Chris Carnegie Food and Beverage Manager and Lisa Itterman Banquets Manager 5 FALL 2016

ANSWERING THE QUESTION BEER OR CIDER Michael Hearse Food and Beverage Manager mhearse londonhuntclub com As the production and consumption of craft beer has rose to new heights over the past several years it still as a percentage has not grown as quickly as the interest in hard cider The resurgence of this American colonial classic has ridden the craft beer and food trends to more than triple its production since 2011 It seems as though all the major breweries and microbreweries are fermenting their twist on hard cider using everything from apples and pears to infusions of raspberry and blackberry There are those who say hard cider is healthier for you than beer with the added advantage of a more pleasing taste but is this really the case And could any beverage other than wine hope to compete with beer for a place in our Canadian identity BATCH 1904 Sold here at the Club 7 50 for a tall can for you The amount of sugar Beer is sugar free This begs the question beer or hard cider and what is with only minuscule amounts added to balance its tartness Cider on the other hand needs no extra the difference sugars because it s high in natural fruit fructose Hard cider and beer differ in their composition and apples pears etc The amount of sugar in each hard makeup While hard cider is made primarily from cider beverage varies depending on the fermentation yeast relying on the fermentation process from apples process and type of fruit used as its base Sweet pears blackberries raspberries and other fruits beer hard ciders are slowly fermented to strain the yeast is comprised of yeast hops barley and other grains feeding on its natural sugars Dry ciders containing Hard cider contains more vitamin C and antioxidants less sugar allow the yeast to consume most if not whereas beer packs a lot more protein vitamin B and all of the ciders natural sugars resulting in a higher alcoholic content Calories between draft beers and potassium cider are the same across the board but hard cider The health benefits related to the moderate consumption typically contains more carbohydrates because of its of alcohol are everything from lowering the risk of heart sugar alone disease cognitive decline and dementia Alzheimer s In fact some studies have proven that hard cider contains Bottom line it s not so much a matter of which one poly phenol antioxidants which are linked to protection has higher alcoholic content For there to be more against certain kinds of cancer growth cardiovascular alcohol in hard cider requires it to lean more towards diseases and neuro degenerative diseases Other a dry process to achieve a similar ABV to draft beer studies show some beers contain as much as 10 of The difference is negligible at that point Even with your daily folate intake Of course this isn t a license a dry hard cider you get natural flavours Flavours to drink more alcohol as a cure but in small doses has in draft beer are typically artificially included limes berries etc whereas with hard cider it s natural been clinically proven to help While both beverages have health benefits as outlined So if you are feeling like exploring a hard cider why above there is one significant difference between the not try the Batch 1904 Brickworks Ciderhouse and two which may assist you in determining which is right decide for yourself 9 FALL 2016

C R E AT E D E L I C I O U S F I S H M E AT A N D V E G E TA B L E S AT H O M E SALT CURING Michael Stark Executive Chef mstark londonhuntclub com Salt curing is an old method of preserving meats vegetables and fish that has long been used to keep highly perishable products and retain their nutritional value Originally done out of necessity in preparation for winter and long voyages salt cured fare was a main stay on maritime vessels and was used to feed sailors and colonists playing a large part in the settling of North America There are many advantages to salt curing It protects the integrity of the meat or vegetables and helps retain a great amount of nutritional value The largest benefit of salt curing is that with higher amounts of salt food can be kept almost indefinitely Salt curing is a long standing tradition that has been around for thousands of years and was rarely done for reasons other than preservation The current methods of salt preservation differ greatly from those of the past in that current methods are done more for increasing a food s flavour and less for preserving it There are several different methods of salt curing Some methods involve sugar nitrates and varying levels of salt concentration Current salt cure methods include different ingredients to extend product life and also make it more palatable and flavourful A great example of this is lox salmon This salmon is preserved with a mixture of salt and sugar The salt changes the salinity level of the fish drawing moisture out of the flesh making the flesh less susceptible to spoilage while the sugar aids in growing certain strains of bacteria that help fend off less favourable bacteria This method of adding sugar to a salt cure adds more depth to the flavour of salt cured items The addition of other salts like salt peter to regular salt also aids in the retardation of bacteria that lend themselves to spoilage These specialized salts nitrates also assist in retaining the colour of the original product while elevating the curing concept from mere necessity to culinary perfection I am including a recipe for the salt curing of salmon lox This recipe will also work for vegetables so feel 12 free to add in other flavouring agents like your favorite spice or herb I personally like thick chunks of lox on a dense piece of dark Russian Rye bread smeared with chive cream cheese topped with sprouts capers and or chopped chives You can also add some chopped dill or parsley This is the perfect breakfast for me CURED SALMON LOX Ingredients 1 to 1 5 lb fresh salmon a fatty piece with an even thickness is ideal 1 4 cup Kosher salt 2 tablespoons brown sugar Optional Freshly ground black pepper to taste dried herbs such as dill or parsley Directions 1 Rinse salmon and pat it dry with a paper towel If it has skin leave the skin on If you feel any bones in the salmon remove them 2 Combine the salt and sugar and pepper and herbs and rub the seasoning all over the salmon You should have extra seasoning that you haven t used 3 Get a large piece of plastic wrap and put a bit of the seasoning on it Place the salmon skin side down on the seasoning Add more seasoning to the sides of the salmon and to the top Wrap it up tightly with plastic wrap and place it in a dish deep enough to contain the fish and the juices it will release 4 Weigh down the salmon with something heavy and place in the fridge 5 After approx 24 hours turn the salmon over and place the weights on the other side You can put a new piece of plastic wrap on top to make sure that the weights stay clean The salmon will have released some juices by now 6 After 2 days you can begin tasting the salmon or wait the full 3 days for a saltier taste 7 To taste the salmon cut off a small piece and rinse it under cold water If it is not salty enough to your liking wrap it back up and place it in the fridge for another 24 hours If it is salty enough rinse the whole piece under cold water 8 To serve cut it into thin slices without the skin and put on a bagel or your favorite bread smeared with cream cheese FALL 2016

GROUNDS REPORT Jayson Griffiths Golf Course Superintendent jgriffiths londonhuntclub com As referenced last year golf is a beautiful game one that is in constant flux with nature changing day to day regardless of the best efforts of many Greenkeepers It is this changing environment whether wind or rain or heat that contribute to our daily golfing experience This summers unprecedented early drought combined with the brutally uncomfortable heat stress alerts of July and August tested both plant golfer and Grounds Team alike In the spirit of the Olympics the intangible human equation has a profound effect on the outcome These effects much like a ripple in a pond began a few seasons ago With Membership support a few significant cultural practices were implemented including seasonal deep tine aeration Graden sand injection course aeration and the implementation of the Tree Management Plan These inputs over time have earned a positive return This season s early drought followed by the extreme summer temperature and rainfall events would certainly have taken a toll on mid summer plant health had it not been for your continued support In addition we are truly grateful for the emotional investment made daily by the young men and women who arrive before daylight and at times stay beyond dark This summer more than any in recent memory required the daily nurturing of plants throughout what could be considered oppressive conditions In particular Assistant Superintendents Brent McDougall and Deb Dale with the help of Assistants in Training Matt Deans and Robert Wilson worked tirelessly in fighting the good fight It is their emotional connection and vested interest in the stewardship of the London Hunt and Country Club that made the incredible staff on Grounds Looking ahead September and October are months where further improvements can be made to all playing surfaces The moderate soil and air temperatures allow for excellent rooting and seedling establishment Plans for the fall season include the building and establishment of a turfgrass nursery which will provide a source of insurance for immediate repair of turf loss due to vandalism mechanical and environmental pressures A nursery however is no substitute for improved growing environments In conjunction with the scheduled October and November aerification procedures an emphasis this fall and winter will again be placed on the selective removal of non native weak and declining hazardous tree features which inhibit necessary sunlight and airflow to all playing surfaces The Tree Management Report has been prepared to affect key growing environments and will continue to lead to stronger healthier consistent playing surfaces in future seasons Noticeable ball mark divot repair bunker raking and traffic stress improvements have been evident throughout the golf course these past few months and the Grounds Department acknowledge and thank the Golf Course Standards and Conditioning Committee and Membership for making course stewardship a daily priority On behalf of the entire Grounds Team I wish you a tremendous fall golfing season For those who are interested in learning more about turf related information and activities please visit the LHCC Grounds Twitter for regular updates 16 FALL 2016

P R E PA R AT I O N I N T H E O F F S E A S O N MIND BODY AND SOUL Adam Baranowski Director of Tennis abaranowski londonhuntclub com We had such an amazing season thus far perhaps too hot at times but soon we will appreciate it even more In terms of tennis we had one of the busiest seasons Members came out and enjoyed the facilities most of whom were so eager to start after a long winter they just wanted to get out and play Recalling the past season and heading into the post season was a reminder to me why it is so important to listen to your body and do the extra work in the off season It s not just about hitting the tennis ball but about preparation Just like when you are about to write an exam and the night before you force yourself to cram everything in chances are you won t do well Everything takes time including getting ready for next season When you look at the Professional circuit you will notice which player really focused on his hers off court season One player which comes to mind is Roger Federer His preparation and training before and during the season earned him 17 Grand Slam titles Everyone talks about how his technique is fluid and effortless how he can perform on such high level for so many years In Professional Tennis there are no breaks in the season it runs the course of an entire year with only 19 one or two weeks off We can all take something from professional athletes even at different stages levels of tennis the main on being it s important to be physically active throughout the year not just during the summer So as the season winds down and we head into the off season I ve included two keys to preparation I hope you enjoy BEING ON TIME MEANS YOU ARE ALREADY LATE This is a famous quote which I will never forget I learned my lesson when I was traveling with Boris Becker who at the time was ranked 4th on the ATP circuit The day after I met Boris my coach Mike Depalmer organized a training session We had to be ready in the hotel lobby at ten o clock in the morning so when the time came I went downstairs five minutes to ten thinking I will be right on time As soon as I came Mike pulled me aside and told me that I was thirty minutes late I quickly learned my lesson bodies are telling us until it s too late Several years ago I was taking a coaching certification though NCCP National Coaching Certification Program and was fortunate enough to have Olympic coaches facilitate the course One of the topics was nutrition and how we could improve in that department What I learned is we don t give ourselves enough time to eat properly We consume meals mindlessly without being aware of what we are putting in our bodies When we eat in front of the T V computer or even while being engaged in a conversation we absorb only 20 percent of the nutrients the rest is wasted I see this today when players come right on time straight from the car to the tennis court hitting balls I m sure if you come earlier take your time stretch a little and unwind from days work you will perform better Next time you step onto the court really work on having a clear mind to catch So the next time you are sitting yourself from drifting down to a delicious meal or trying to fight off sleep take a step back Most people don t realize that and remember how fortunate you most injuries occur when their are to be able to play tennis and body is tired We have tendency what steps you can take to enjoy these days living in fast pace the sport for years to come environment to discard what our FALL 2016

A LITTLE THOUGHT TO GIVING THANKS Brandie Cooper Communications Manager bcooper londonhuntclub com Every day around the globe people take time even if only a moment to give thanks and show gratitude for the blessings in their lives It is an emotion that we as humans share with one another regardless of language circumstance or belief connecting people who would otherwise be unconnected much like those who celebrated our nation s first Thanksgiving I HAVE FOUND IF YOU LOVE LIFE LIFE WILL LOVE YOU BACK Ar thur Rubinstein In a few short weeks we will gather with family and friends to celebrate the abundance in our lives We will give thanks for each other our health and our prosperity For the peace that we live in for the freedom we enjoy and for the support we find in each other We will show our gratitude because it is the essence of the holidays This feeling of gratitude is also a gift And while it is a gift it is one that will never truly be our own It is not ours to keep but ours to share to give and to receive The universe is always shifting Moving and changing challenging us in our daily routines It creates beautiful moments in our lives that will never fully be appreciated because we are too busy to see it pass us by Too preoccupied to feel its embrace before it slips away Too unavailable with what is to come to enjoy what is here Giving thanks and being grateful is a choice and one worth doing more than a handful of times a year It has the ability to make sense of the things in our life that don t make sense and free us where we might otherwise be held back For those that perceive this continuous gratitude as apathetic note that being thankful doesn t mean you don t desire more it means you are patient for what lies ahead So take a moment if not daily then weekly and be thankful Appreciate something no matter how small and be aware that it is present for a reason Be thankful for all the things the universe has sent your way and equally thankful for all the things it hasn t because each and every one has brought you right to where you are now exactly where you are supposed to be Happy Thanksgiving 20 FALL 2016

a SU MMER C A MP experience I had the distinct pleasure of sitting down with a camper from this summer s sports camps Eight year old Callum Morrisson is the Grandson of Jim and Lynne Finn and was visiting for a few weeks from California About 30 miles south of San Francisco I am informed so I know I m dealing with a young man interested in the details Callum loves to golf but especially loves to play tennis although its tiring its more fun he states The best part of the camps is that you can make new friends very easily Everyone is very nice and I hope I get to play with them all next year too His best camp buddy has become Max Slater Ron Slater s Grandson as well as Logan and Henry We talked a lot about the various activities that happen over the course of the day including all the games and activities in addition to the golf and tennis He explains that he learned some good putting and chipping skills with Wendy Shakelton and he really appreciated the humour of Mr Shorty Pants also known as Daniel our Assistant Tennis Pro But his favourite activity of all is the water gun fight which is done with perfect timing during the heat wave we were experiencing the week he was here Capture the flag was fun too but there were a lot of beetles He tells me how they got to touch a baby bunny and on a sombre note also found a dead chipmunk that fell out of his tree That one we didn t touch As the week wound down Callum was looking forward to dinner on Friday in the Clubhouse then it was off for a few more visits to family members in Canada before heading home taking with him the memories of his week at the Hunt Club Summer Camp like a number of people in his family before him In fact it goes back over twenty years from when Tim McKeiver started the camps shortly after he began at the Club as the Head Golf Pro Almost all of the members in their extended families have attended at some point including brothers sisters cousins and family friends What a great way to pass on the love of the Club through the generations and enjoy those hot and lazy summer days Jon Nusink 31 FALL 2016
