CHANGING DINING EXPERIENCES AT THE CLUB Michael Stark Executive Chef mstark londonhuntclub com As the Clubhouse Construction Project comes to a close new areas are opening every week for Members to use For the Culinary team this has become a very exciting venture One of the new additions to the Club is the Oxford Room The Oxford Room offers a new menu that has a more casual theme that reflects its surroundings and the banquet space has increased in size allowing the Club to hold larger events The Terrace is perhaps the most popular addition to the dining facilities With a large seating capacity wood burning fireplace and an al fresco atmosphere it is easy to see why it is so frequently requested Dining experiences are also changing The Oxford menu offers the diner a more casual experience with an eclectic menu featuring everything from hamburgers and pizza to premium steaks The Oxford menu will be an evolving menu with changes happening as the seasons change and ingredients fluctuate with them The Glenmore will remain an upscale space with premium offerings This menu will be shorter than before with a focus on select ingredients that are locally sourced and follow the seasons and their availability The Glenmore menu will change every month and will become a 12 seasons menu Finally one of the most exciting things that will happen this fall with the increase in kitchen sizes is our ability to offer cooking classes The intention is keep class sizes small and run two a month We will offer different themes including several classes on cake decorating These classes will take place in the kitchens during regular business hours which means you will not only be able to expand your cooking knowledge but see the bustle noise and heat of a working kitchen From everyone on the Culinary team I would like to thank you for your continued support and look forward to seeing you at the Club 14 2015 09 01 Club Life indd 14 FALL 2015 9 8 2015 2 18 28 PM

TO BE OR NOT TO BE VEGANISM Michael Stark Executive Chef mstark londonhuntclub com Veganism isn t a new trend but it has slowly regained popularity The following isn t necessarily an endorsement but simply an informative piece about this popular food trend The vegan diet is solely a plant based diet which has no allowances for products that come from or are made by animals There are many reasons that people adopt a vegan diet health animal rights environmental or religious The last several years have seen a rise in the vegan population which is still small 2 in the U S as of 2012 The reason for the rise is stronger media attention and a greater food awareness by the consumer over the last several decades With the global importation of foods from around the world it has also never been easier to be a vegan Vegan diets are appropriate for all stages of the life cycle according to American Academy of Nutrition and Dietetics It is important for vegans to plan their diets so they gain the nutrients they need and they are able to fill the gap left by the avoidance of animal products Some of the positive attributes of a vegan diet include that they are also lower in certain vitamins minerals and long chain omega three fatty acids which can lead to a deficient diet Vegan diets are lower in calories saturated fats trans fats and cholesterol and these are all positive attributes The health attributes of the vegan diet include research that suggests that vegans have a lower risk of cancers and that vegan diets are considered to be cancer protective although few studies have been conducted One of the largest attributes of veganism is the positive environmental effects that the diet has on a global scale Approximately 30 of the earth s surface is used for raising livestock this includes growing feed for food animals which has a large environmental impact A vegan diet requires 44 acres of land per year to sustain one person a traditional North American diet meat requires 2 11 acres of land per year to sustain one person With the growing global population more land will be needed to sustain a meat based diet 15 2015 09 01 Club Life indd 15 FALL 2015 9 8 2015 2 18 28 PM

A HISTORY OF THE CLUB FROM THE TRIANGULAR MATCHES Douglas Alexander Team Canada Member dsalexander rogers com This June the Club was honoured to host the Triangular Matches a multi day event from June 21 to June 25 These matches are played bi annually between top senior players from the United States United Kingdom and Canada Each country s Senior Golf Association hosts once every six years at their countries top golf courses The Matches have a long history dating back over ninety years and 2015 marked the 45th event While the history of the event was not lost on those that participated the history of our exceptional Club was also celebrated in a speech given by Past Club President and Team Canada Member Douglas Alexander It is great that we can all be here to enjoy friendly competition But that was not always the relationship between our countries particularly in this geographic area In the next few minutes let me share a little background that will lead into the history of our Club the development of our course and some of the great golfers who have graced our fairways I will also share some background on some wonderful gentlemen who have called the London Hunt their home If we go back 200 years to June 1812 we are not far from some of the sites where soldiers from America and the British colonies were engaged in battle primarily along the great lakes and at the Niagara River However there were skirmishes within a few miles of where we are today These battles against America may have been pivotal in developing a Canadian identity and forging a closer alliance with Britain However all was not well in the Provinces and there was frustration with the lack of political reform This ultimately led to the rebellions of 1837 and 1838 Why is this relevant to our history In 1838 London became a garrison city and reinforcements were sent here from Britain to quell the rebellion When not engaged in military exercises there was a desire by the more senior officers to pursue recreational activity Equestrian sport was popular and in 1843 the first shipment of foxhounds were shipped across the Atlantic It took another 40 years to form the London Hunt Club but that was our beginning It was on March 30 1885 that the London Hunt Club was formally organized Hound Kennels and a 17 2015 09 01 Club Life indd 17 Clubhouse were soon established in converted farm buildings Other early activities of the Club included lawn tennis bowling and archery Around the turn of the century the Club had a nine hole course on land adjoining the University of Western Ontario and in 1895 the London Club was one of the founding members of the Royal Canadian Golf Association This is one year after the founding of the United States Golf Association with both organizations having similar missions to develop a uniform set of rules to promote national competition Aware that Western University s expansion during the 1950 s would eventually jeopardize its course the Club purchased some 275 acres at this site Above Construction at the Club s previous Western location Robert Trent Jones designed a 27 hole golf course 18 of which were completed in 1959 with an intention to build the third nine when the course became too crowded In 1970 tennis courts were constructed and the game rapidly proved popular with a large number of Members The London Hunt and Country Club is quite unique in North America for its offering of a range of activities to all its Members foxhunting golf tennis skeet and trapshooting The Club has 474 families as Members a somewhat unusual feature is that spouses and children are automatically Members when a new Member joins the Club FALL 2015 9 8 2015 2 18 28 PM

A HISTORY OF THE CLUB FROM THE TRIANGULAR MATCHES Douglas Alexander Team Canada Member dsalexander rogers com As mentioned earlier the course was designed by renowned Golf Course Architect Robert Trent Jones and renovated in 2000 by his son Rees Jones one of today s leading Golf Course Designers who has worked on preparing many courses for the US Open Golf at the London Hunt and Country Club is rich in history having held numerous National Championships and events The Americas Cup Match was held in 1954 William C Campbell was Captain of the United States team and Jack Nash captained the Canadian Team which included Moe Norman In 1968 the original Shell s Wonderful World of Golf series visited the London Hunt Featuring Arnold Palmer and Jimmy Demaret as television commentators the event included winner Ben Arda of the Philippines Roberto DiVicenzo of Argentina and American Dan Sikes The Canadian Open was held here in 1970 the only time the Club has hosted the men s tournament and was won by Kermit Zarley We hosted the women s Canadian Open tournament in 1993 when it was the du Maurier Classic and a major won by Brandie Burton London Hunt then hosted the 2006 CN Canadian Women s Open won by Christie Kerr the Canadian Men s Amateur in 2010 won by Albin Choi and the CP Canadian Women s Open in 2014 won by So Yeon Ryu with a score of 23 under par Meanwhile many prominent Canadian golfers have been Members There are three portraits hanging in the Grill Room including one of Jack Nash Jack reached the quarter finals of the 1933 British Amateur he was a competitor in the 1935 United States Amateur three years after fellow Hall of Famer Sandy Somerville took the title he was a three time winner of the Ontario Amateur as well as winner of the Ontario and Canadian Senior s titles Jack earned a hallowed spot on the walls of the London Hunt and Country Club by taking 13 Club Championships The Ontario Golf Hall of Fame inducted him in 2001 18 2015 09 01 Club Life indd 18 Sandy Somerville s portrait is also hanging in the Grill Room Sandy is perhaps the best Canadian Amateur ever He won the 1930 Canadian Amateur at the Club one of the six National Amateur Championships he won between 1926 and 1937 He won the 1932 U S Amateur at the Baltimore Country Club s Five Farms course the first Canadian to win the U S Amateur In 1934 he recorded the first hole in one at the inaugural Masters Tournament He was known as Silent Sandy because he was quiet and wouldn t use three words when two would do But he knew everybody in golf and he had everybody s respect including that of Bobby Jones He was named the Canadian Golfer of the Half Century in a 1950 RCGA poll and was inducted into the Canadian Golf Hall of Fame in 1971 Sandy Somerville a true Canadian golf legend passed away in 1991 at age 88 Then there s Ed Ervasti A long time and I mean long time Member of the London Hunt accepted by most observers as the greatest senior golfer who ever lived Well into his nineties Ed was still playing 200 rounds a year and beating his age on virtually every occasion It is believed he beat his age over 3 000 times Try to let this sink in Ed was 93 when he shot 72 on a day when the weather was blistering hot this is thought to be the lowest round ever relative to age Nobody has broken his or her age more than Ed a six time Canadian Senior Golf Association Champion a winner of four US Senior Match Play Championships and 17 London Hunt Senior Championships Sadly Ed passed away this summer at the wonderful age of 101 Three great golfers and three great gentlemen part of the rich history of our Club I hope I have been able to share some interesting insights on our development as one of the oldest clubs in Canada We are very proud of our Club and are delighted to host the 2015 Triangular matches I am sure the competition will be intense but unlike our forefathers of 200 years ago we will be building lasting friendships and sharing a game we all love FALL 2015 9 8 2015 2 18 28 PM

GROUNDS REPORT Jayson Griffiths Golf Course Superintendent jgriffiths londonhuntclub com Golf is a beautiful game one that is in constant flux with nature changing day to day regardless of the best efforts of many Greenkeepers to provide consistent conditions The ebbs and flows of this year s spring and summer golfing weather can be paralleled with the tidal surges of the Bay of Fundy the impending El Nino to the variability of playing conditions at this summers four golfing majors In addition the arrival of cooler nights and shorter days bring the changing of leaves and a focus on late fall winter growing environment improvements including the continuation of the Tree Management Plan The Tree Management Plan now in the 2nd year has been prepared to affect key growing environments and to identify hazardous trees within the playable zones of the golf course including the removal of non native weak and declining tree features which inhibit necessary sunlight This carefully evaluated report once implemented will help lead to stronger safer healthier consistent playing surfaces in future seasons May s cool dry conditions were followed by weekly torrential rain events in June thereby limiting scheduled topdressing and cultural events amongst the busy golfing c al endar The co n tro ve rsia l modern green vs sustainable brown could be debated since golf s early days of walking dunes land courses to today s high input environments Most recently the USGA drought affected U S Open setup at Chambers Bay causing many a North American golfer to ponder the merits of the new brown On the other hand the playing of the 150th Royal and Ancient Open Championship was halted due to torrential rains and gale force winds One would ask whether the golfing greats of Harry Vardon and Old Tom Morris would have accepted the conditions and carried on Noticeable traffic stress improvements have been evident throughout the golf course these past few months and the Grounds Department acknowledge and thank the Membership for your continued course stewardship In addition we would like recognize the tremendous efforts by a number of Members in repairing ball marks divots and raking bunkers on a regular basis Once again the Grounds Department looks forward to a tremendous fall season where turf inputs recovery and growth will lead to even healthier playing conditions Enjoy the fall golfing season Most recently the playing of the PGA Championship at Whistling Straits presented a combination of both brown green and stormy conditions including the variability of bunker sand shot strategy from over 1 000 hazards Ebbs and flows do happen and it is in these moments of purity and excellence much like a well struck shot that captures our attention and desire to play this wonderful game Looking forward September and October are months where further improvements can be made to all playing surfaces The moderate soil and air temperatures allow for excellent rooting and seedling establishment Plans for the fall season include regular topdressing of greens surfaces in conjunction with the scheduled October and November deep tine aerification procedures These practices will help smooth the playing surface protect the crown firm the turf and dilute the build up of organic matter while maximizing the vertical movement of water 19 2015 09 01 Club Life indd 19 Spieth and Koepka take shelter as they putt in heavy rain during a practice round at the Royal and Ancient Golf Club of St Andrews FALL 2015 9 8 2015 2 18 29 PM
