IngredientsSWEET POTATO CASSEROLE INGREDIENTS4 sweet potatoes medium4 tablespoons unsalted butter, melted¼ cup orange juice½ cup light brown sugar, packed3 tablespoons bourbon½ teaspoon kosher salt1 teaspoon cinnamon½ teaspoon nutmegFOR THE PECAN TOPPING½ cup light brown sugar2 tablespoon all-purpose flour½ teaspoon cayenne pepper⅔ cup pecan halves, raw2 tablespoons unsalted butter, melted1 teaspoon fresh rosemary, chopped InstructionsCASSEROLEPreheat the oven to 425 °F. Line a rimmed baking sheet with parchment BELLE’S RECIPESpaper or aluminum foil. Use a fork or knife to pierce holes in the top and bottom of the potatoes. Roast the sweet potatoes for 40 to 50 minutes or until they are very soft, and you can easily squeeze them with a potholder.Let the potatoes cool for a few minutes, slice them in half, and scoop the flesh into a medium-sized bowl.Add the melted butter, orange juice, light brown sugar, bourbon, salt, cinnamon, and nutmeg. Use a potato masher to mash the potatoes and combine all of the ingredients.Spray a one-and-a-half quart baking dish with non-stick cooking spray and add the potato mixture. Spread out evenly and set aside.TOPPINGTo make the topping, add the brown sugar, flour, pecans, melted butter, cayenne pepper, and fresh rosemary, to a small bowl and stir to combine the ingredients.Sprinkle this topping evenly over the sweet potato mixture.Bake the casserole for 30 minutes and serve hot.Southern Bourbon Sweet Potato Casserole

2828What inspired you to launch Horton Consulting, LLC, and how has your journey in orga-nizational coaching and career counseling evolved since then?Throughout my corporate career I always enjoyed those neat little lightbulb moments when someone “got it.” Whether it was learning something new or working through a problem. I always knew those moments needed to be a part of my journey to assist others. I wanted to help people discover their aha mo-ments! This is what inspired me to start my business. Since I started my business five years ago, I’ve become certified in several assessments and most importantly two coaching certifications. These have helped me hone my coaching skills to help people in all aspects of their career whether they are having issues in the current role or searching for a new career path.Can you explain the key services you oer, such as organizational coaching and career counseling, and how they can benefit women in the Upstate?Business and leadership coaching, career coaching and strategy, careers in crisis, career assessments, and workshops and training as well as resume writing and interview prep. As the wife of a retired SC Army National Guard Veteran, I devote volunteer and business eorts in coaching military Veterans in their careers. I enjoy working with high school students to help them determine career and educational paths as well as recent college grads who realize they don’t know what to do with their degree. Many of my career clients are mid-career women. They are seeking something with more purpose and happiness in their careers. I thoroughly enjoy connecting with them and helping them discover their strengths and apply them to dierent careers.For those looking to engage with your services, what does the process of signing up for coaching or assessments look like?Pretty easy. Reach out via phone, text or email. I have a quick chat with every single person to determine the appropriate services that align with their unique and personal needs. I follow up with an email that explains the recommended services and the investment in themselves.How do you tailor your coaching strategies to meet the unique needs of each client, especially women navigating career transitions?I have the strong belief that everyone should enjoy their career. Everyone is unique in their career journey, so it is important for me to customize a program specifically for them. I utilize various assessments, worksheets, and lots of questions during working sessions to get to the heart of the next best steps. Women look at their career with a dierent perspective than men sometimes. They undervalue themselves and therefore may not approach a promotion or a new career path. Through the coaching process, I uncover what’s holding them back and assist in mapping steps forward to have a fulfilling career while balancing their home life. I’ve assisted women who go back into the workforce after being a full time Mom, determine ideal roles for their next career step, transition out of toxic work environments, and out of the military.What are some common challenges you see among your clients, and how does Horton Consulting help them achieve those “Aha” moments?Specifically for career coaching, people sometimes find it dicult to put their value into words and therefore it isn’t reflected in their resume or during interviews. I help them define their accomplishments and vocalize them. The lightbulb goes o many times during this process! For those in their current roles who are experiencing challenges, I find that it’s typically related to communication breakdown. Each one of us communicates dierently and has unique needs. Some of us need data, some of us are intuitive, and some of us need to process before making decisions. I help people understand how they communicate, what their needs are and how to work through challenges in a calm and productive way. I love working with organizations to strengthen their leaders through the coaching process.With the holiday season approaching, what advice would you give individuals or businesses on how to eectively plan and reflect for the upcoming year?Great question. For individuals, assess where you are in your career. Are you happy? Are you challenged? Do you feel a sense of purpose? If the answer is no, then establish a plan on how to change your situation. Don’t wait until you’re so frustrated you want to just quit!For businesses, review the chal-lenges your team is having. Who is doing well but needs a little extra guidance to get to the next level? Who is struggling with working with or communicating with others? Who is the manager not connecting with on their team? Every organization can benefit from coaching to help people succeed. And if the people succeed, the company succeeds.What resources do you provide for clients who prefer to work with you online, and how can they access those services?I work with clients all over the U.S. I use Zoom to connect virtually and I also have a variety of workbooks that clients utilize oine in between sessions.Can you share a success story that highlights the impact of your coaching on a client’s career or organizational development?A woman reached out to me during my first year in business. She was in a highly toxic environment which included a micro-managing boss and very long stressful hours. Various aspects of her health were being impacted. She knew she needed a change but didn’t know how to best translate her last 12+ years with the same company into a dierent career. She was afraid to take a step out and away from the company as it was all she knew since college. We utilized a skill assessment, a work-life balance assessment, worksheets, and coaching sessions to determine steps forward. It took some time to get the courage to start interviewing but she did it and found a way out of the toxic environment by focusing on her unique skills and abilities! 36At the heart of every disaster, there are people like Tracy Roberts—women who step up, rally their communities, and make a difference when it’s need-ed most. Tracy, 46, is the owner of Atlas Home Team at KW Drive and has called Five Forks home for over two decades, alongside her loving husband Mike and their two children, Tillman and Mackenzie. But when Hurricane Helene devastated parts of Western North Carolina, a simple call to help quickly turned into something bigger than Tracy could have ever imagined. Now, Tracy reflects on how this experience deepened her gratitude and showed her the power of community, kindness, and love.How did you get involved with relief efforts after Hurricane Helene?I saw Lori and Isaiah from Happy Helicopters asking for help collecting supplies to fly into remote places in North Carolina impacted by Hurricane Helene. I called Lori instantly. We started with a card table and bathroom scale to weigh items going in Isaiah’s helicopter and it grew rapidly. I quickly realized that we could get to many places by ground transportation at the same time he was getting to the remote places by air. One of our team’s agents had a connection with the Walmart distribution center and got us 18 wheelers to haul items. Chris Sweet of Swamp Rabbit Moving jumped in to help. Volunteers showed up from sunrise to sunset daily to support the cause. We had many companies come with truckloads of necessities ranging from medical supplies to Nissin sending 16 pallets of Cup Noodles.Lori, Isaiah and I are so grateful for the support to help us get 1,000 tons of supplies to the mountains of North Carolina.What was the most heartwarming moment you experienced while volunteering?It has to be when we drove to Edneyville to hand out supplies at the No. 3 Fire Station. Hearing their stories of loss, fear, and confusion was heart-wrenching, but it became heartwarming as they expressed their gratitude for not being forgotten. Watching them carefully navigate through the supplies, only taking what they needed so others could still get help, was indescribable. I teared up when people came back with lists of what their neighbors—who couldn’t drive down—needed, so they could carry it up to them.Running the Runway Relief Project was heartwarming every second of every day. I just felt unbelievably grateful that God chose us to be the people who got to help them that day.With such a huge need, how did you stay motivated and energized?It was like a trauma response to just keep pushing forward and solving the problems that came to us and doing our best to be proactive.I kept thinking I would want someone to come save my kids and family if it were me. We cannot stop until the places we are delivering to are full and tell us to stop, so that is what we did.Was there a particular item you know people were especially grateful to receive?I don’t know if there was a particular item, but a feeling. They were grateful to receive “hope.” They need that to continue to push forward. How has your experience with disaster relief made you reflect on gratitude?My experience with disaster relief has made me even more aware of what matters and does not matter. I care even more about experiences and the people I share them with more than ever.What are you most thankful for as we wrap up 2024?The support of the hundreds of volunteers who showed up—giving their time, supplies, and expertise—made the relief project what it was. People came with valuable knowledge on how best to support the effort, shared their suggestions, and then taught others who were eager to help. Greenville-based artist Liz Rundorff Smith has carved a space for herself in the creative world through her vibrant work, collaborative studio life, and unique perspective. Not only is she an accomplished artist, but she also serves as the Assistant Gallery Director at Art & Light Gallery. In this interview, Liz shares her journey, her inspiration, and what keeps her connected to her art and community.How did you first discover your passion for art, and what led you to pursue it as a career?I’ve always loved art, and my mom called me an artist even when I was a small child, so I never really doubted that it was what I was meant to pursue. As a student, I didn’t fully understand what my career path would look like, but I knew I wanted to be an artist. When I went to school, I wasn’t aware of all the options in a creative field, so I studied studio art with a focus on painting and ceramic sculpture. Teaching crossed my mind, but I found my way into exhibition programming and carved out a career in art administration that supports my work as an artist. I can’t remember a time when I wasn’t trying to be an artist. At times, I’ve had more hours to devote to creating, but I’ve always stayed connected to my practice, even in small ways. I’ve always called myself an artist, even if it wasn’t always obvious to others. I believe being an artist is private, not necessarily public-facing. The journey doesn’t have to look like traditional success to be a vital part of who you are as an artist.Can you tell us about the creative community at 547 Perry? What’s it like sharing a studio with other talented artists?I’ve been in my studio at 547 Perry Ave. for five years, and it’s such an important part of my life now. It’s a beautiful, light-filled space that’s hard to imagine leaving. Sharing the studio with other women who are creative and hard-working is special because we all face similar challenges. I think artists really need each other—we don’t succeed alone, so having a supportive community is essential. My studio mate, Erin Hughes, is an encaustic artist with tons of technical knowledge, and I often rely on her for advice. I’ve been friends with Kate Furman for many years, and we’ve been there for each other through lots of life changes. My studio used to belong to Kate’s mother, Linda Furman, who passed away in 2020. Linda was such a unique and lovely person, and I like to think her spirit fills our space with love and peace.As the assistant gallery director at Art & Light Gallery, how do you balance your time between creating your own work and curating others’ pieces?In terms of logistics, I spend Mondays in my studio, as the gallery is closed, and I usually find a few hours over the weekend to work on my art. Art & Light Gallery has such beautiful natural light and an inspiring collection of artwork, so being there constantly feeds my creativity. I learn something new every day from other artists, collectors, and colleagues. Everything from how artists package their work to how they use their mediums influences my decisions as an artist. The gallery team—Teresa and Will Roche, Bracken Sansbury, and Chloe Compton—have been incredibly supportive. My transition from being a gallery-represented artist to working within the gallery has been eye-opening. I had no idea how many moving parts are involved in running a gallery! This experience has deeply influenced my artistic practice, and I’m sure it will continue to do so throughout my career.Your art is known for its bold use of color and texture—what inspires your style, and how has it evolved over the years?For several years, I worked with a black-and-white palette. When I had two babies under the age of two, I needed to find ways to work in small segments of time, so I limited my palette for consistency. But eventually, I wanted to explore color. I started painting the colors I saw in everyday life—like the inflatable pool in our backyard and the toys covering my house. This exploration evolved into using colors that evoked nostalgia and tied back to different times in my life. My current work is inspired by decor and design trends from various periods, and I’m interested in how color can bring a sense of nostalgia. I find inspiration in other artists, fashion, and both current and historical design trends.Do you have any fun or special holiday projects in the works this year? Can we look forward to any seasonal pieces from you?Yes! I’ll be creating a series of small encaustic works for the holidays. These pieces make perfect gifts and fit well in any space. Keep an eye out for them at Art & Light Gallery!What does your typical day in the studio look like? Do you have any rituals or habits that get your creative juices flowing?My days in the studio vary since my life is full of demands. But each day usually includes an iced coffee and music. I have a record player in the studio, and I love the ritual of picking out my mood for the day. I start by mixing paint and heating up my encaustic medium. I typically only mix three or four colors during a session and apply them to multiple sur-faces. I like working on both large and small paintings simultaneously, as it helps me keep the momentum going. I love the drama of big pieces, but there’s something so intimate about smaller works too.How has the Greenville art scene shaped your career? Are there any local spots or events you find particularly inspiring?I moved here in 2006 to work for the Artisphere Art Festival, and I stayed with them for 10 years. That experience holds a special place in my heart and really influenced my decision to approach my work with a business mindset. Though I’m not originally from Greenville, I’ve lived here longer than anywhere else, so it feels like home. I consider myself a southern artist and relate to the southern perspective. Southern artists are resourceful and resilient, and making things is part of the southern way of life. I try to honor that creative ingenuity in my work.For someone new to collecting art, what advice would you give when choosing a piece that resonates with them?There’s no “right” way to collect. As long as the work is original—handmade by the artist—and it speaks to you, then it’s valuable. By buying original art, you’re helping establish an artist’s career and success. Understanding how a piece was made can help you connect with the artist’s process and gain insight into their pricing. 45What inspired you to start MJ Custom Cookies, and how did you get into the art of custom cookie decorating?I started making decorated sugar cookies in 2020 after watching reruns of Holiday Baking Championship during the time I was furloughed due to COVID-19. There was one contestant that made beautiful sugar cookies that caught my attention. I soon found out that there is a lot more that goes into making these decorated cookies than I imagined. So, as a hobby I worked on learning all the different tips and tricks, perfected a few recipes and found I really enjoyed the process. Once we moved back to the Upstate, where both my husband and I grew up, I knew it was the perfect time to create a small business out of this hobby of mine.Can you walk us through the process of creating a custom cookie order, from concept to the final product?All my custom orders start out with your special event or occasion, from company milestones, to thank you treats, to your typical birthday or graduation celebrations! Customers will fill out a form on my website which streamlines your vision and gives us both an idea of budget and design. Then we will work on the design process. Customers will receive a digital mock-up of multiple design options to choose from, which will either be approved or adjusted based on their feedback. The final product will always be premium cookies individually heat sealed for safety and to maintain the integrity of your beautiful cookies. Customers can choose to add on decorative options like ribbons, boxes or card stock backers, which will go through a similar design and approval process.How do you balance creativity and customer requests when designing cookies that are both visually stunning and delicious?When balancing creativity and customer requests I like to let the customer lead the way. If you have a specific vision in mind, I will do my best to put that into cookie form. Most customers have a general theme or a loose vision. I love working with inspiration photos of decorations for your event, color schemes or important themes you want to feature. This helps me to ensure your cookies flow with the rest of your event and to create a cohesive design.What are some of the most unique or fun requests you’ve received for custom cookies?While I truly enjoy creating all my cookie orders, some of the most unique and fun requests have included a 2000’s themed Bachelorette party, a sloth themed birthday party, and a company milestone event for The Tsuri Company that included their favorite products in cookie form. The couple eloped, then had a celebration with friends and family at a local brewery, so the cookies were non-traditional and showcased their love for each other and the outdoors. This was special to me for a few reasons. First, I also had a non-traditional wedding at a small park with just close friends and family, and my husband and I also love visit National Parks and protected wild places. Second, while I have developed a more efficient design process using digital formats, I did not have any of those tools at the time, so this design was hand sketched on a piece of paper. I was so proud of how well the cookies turned out even though I didn’t have as many tools as I do now, and they are still one of my favorite sets I’ve ever done!Do you have any special holiday flavors or themes that customers should look out for this year? With the holidays right around the corner, what festive cookie designs are you most excited to create this season?I am very excited about my Holiday cookies this year! I am offering adorable Christmas friends sets where you can choose from a snowman, elf or reindeer “popping out” of a stocking that is customizable with your name and chosen stocking color. I also have 12 “Cozy Christmas” cookies which include designs like a lantern, sweater, stockings, fireplace, etc. The cozy Christmas sets are perfect for Holiday parties and events!For readers looking to order custom cookies for holiday parties or gifts, how early should they place their orders, and what’s the best way to reach you?Holiday Cookies can be pre-ordered up until December 16th. In 2015, PCFI launched its first annual fall film festival, the Tryon International Film Festival (TRIFF). 52InstructionsPreheat oven to 300°F degrees and spread bread cubes on 2 baking sheets in a single layer. Toast, stirring a few times until dry, about 30-40 minutes. Allow to cool then transfer to a large mixing bowl.Increase oven temperature to 375°F and butter a 2 1/2 quart baking dish.Add the sliced mushrooms to a dry nonstick skillet over medium high heat. Sauté for 5-10 minutes, until mushrooms have released their moisture and pan is dry. Remove from pan and set aside.In a very large skillet or pot over medium-high heat, melt the butter. Add the onions, celery, leeks, and 2 teaspoons kosher salt. Cook until soft and golden, about 10 minutes.Add garlic, sage, rosemary, thyme, mushrooms and 1/4 teaspoons pepper, cook, stirring often, for 2-3 minutes. Taste, add more salt if needed. Add to the bowl with the bread cubes, along with the chopped parsley.Pour chicken/turkey/veg stock and beaten eggs over bread mixture. Stir until mixture is fully combined and bread is moistened.Transfer to the baking dish, tightly wrap with foil.Bake for 20 minutes.
