Weekend Getaway STAYCAMP PHOTOS BY SAVANNAH BOCKUS Alec Rachel Ninan along with their three beautiful children own StayCamp an off grid luxury campsite situated on 44 acres in Spartanburg SC After years of searching in the fall of 2021 they finally found the perfect piece of property to begin building their dream They sold their house in the city and traded their very comfortable life for a simpler one out in the country The two of them began clearing land with nothing more than a simple chainsaw and building out their first tent with lumber hand tools and a generator The first campsite The River Tent was launched on Airbnb at the end of September 2022 and has been a host to many special guests since The River Tent is a unique off grid luxury camping experience overhanging the river where you can hike along the trails relax by the waterfall or take a nap in a king size bed You can also use the supplied cookware to prepare a meal over an open fire or you have the option to order out at the many local restaurants all within a 10 minute drive This luxury 12 x15 tent is just the right size for a couple looking for a romantic getaway or even a small family looking for a peaceful adventure Alec Rachel s main goal with StayCamp was to create a space for people to come and disconnect from their busy lives their schedules and workloads by connecting with Mother Nature in a secluded setting Another goal is to aid in the growth of Spartanburg and its local businesses while still preserving its beautiful picturesque countryside Since launching our small family owned business StayCamp we have been blown away with the amount of support we have seen With guests coming from as far as Canada California and Miami to stay we have an overwhelming blessed feeling that we have found just the right spot We would love for you to connect with us on our social accounts staycampsc Alec Rachel Ninan

2 Add the egg yolks sugar sweet marsala wine and blackberry brandy shallow dish of ice water then combine the ingredients Heat the pour in the heavy cream and sabayon while stirring constantly vanilla extract into the bowl Start remembering to scrape the sides beating the cream at medium of the bowl occasionally to keep speed until the beaters leave The mixture will thicken to the point that the whisk leaves ribbons on the surface when lifted 3 Remove the bowl from the heat process usually takes about 4 6 minutes from start to finish 9x13 baking dish It should take the cold mascarpone on low 18 20 cookies for each layer speed for 1 minute to make it Break up the cookies as needed smooth Add the cold sabayon to fit them into the corner to the cheese and blend on low section of the baking dish for another 30 seconds on low speed until the sabayon is completely mixed in Cover the mascarpone bowl and refrigerate while you macerate the berries MACERATE THE BERRIES 1 Add the blueberries strawberries blackberries raspberries sugar lime juice zest and mint leaves together using a large spoon in a 4 quart mixing bowl Cover the 2 Brew 2 bags of green tea in 1 1 4 cup blackberry brandy GARNISHES completely cool remove the tea 2 pounds mascarpone cheese chilled 6 medium strawberries halved cut in halves 1 pound strawberries 12 blueberries 12 small mint leaves bags and press out any excess in the pot doesn t touch the bottom of 1 cup boiling water the bowl Bring the water in the pot up 2 bags green tea to a simmer over medium heat mixture a couple of minutes to soak in before spooning on the rest of the fruit Finally add the remaining mascarpone cream and spread it in an even layer over the mascarpone and score 12 serving pieces Arrange a strawberry half blackberry half raspberry blueberry and a mint leaf on each square 2 Refrigerate berry tiramisu for 2 1 Strain the juice that the berries released into a separate bowl cool green tea to the juice Save 2 medium limes juiced and zested the berry tea mixture Give the MAKE THE BERRY GREEN TEA SYRUP 1 Make a double boiler by putting a metal way with water making sure the water layer followed by the rest of berry tiramisu into 12 servings 6 ounces blackberries cut in halves 1 stem mint leaves minced 3 Repeat the cake ladyfinger hours before serving it Cut the You should have close to 2 mixing bowl over a pot filled 1 3 of the spread the cream into an even layer tea bags 6 ounces raspberries cut in halves 1 cup granulated sugar fruit Use an offset spatula to liquid from them Discard the MAKE THE SABAYON ZABAGLIONE UP TO 3 HOURS AHEAD hulled and diced mascarpone filling onto the 1 Spread the whipped cream least 30 seconds or up to 4 hours is macerating Once the tea is 12 raspberries layer Next spoon half of the refrigerate the mixture for at 1 2 teaspoon vanilla extract 1 dry pint large blueberries onto the cake layer into an even DECORATE THE BERRY TIRAMISU cup of hot water while the fruit left whole 2 Spoon half of the fruit mixture bowl with plastic film and 1 4 cup granulated sugar 6 large blackberries halved or 12 small mixture and arrange them in a single layer in the bottom of a Blend the mascarpone mixture FOR THE BERRY GREEN TEA SYRUP 1 Dip each cookie into the berry tea 1 In a large mixing bowl blend of the bowl and the beaters 1 4 cup sweet marsala wine ASSEMBLE THE BERRY TIRAMISU FINISH THE MASCARPONE FILLING mixer and scrape down the sides 1 cup granulated sugar medium high and whip the cream the bowl with plastic wrap and speed for 1 minute Stop the 2 cups heavy cream chilled increase the mixing speed to until it holds stiff peaks This completely chilled 6 egg yolks Once the sugar has been added to room temperature Cover to four hours or overnight until FOR THE MASCARPONE FILLING trails on the surface 2 Gradually sprinkle in the sugar and allow the sabayon to cool refrigerate the sabayon for three FOR THE WHIPPED CREAM AND BERRY TOPPING 1 Set a 3 quart mixing bowl in a to the mixing bowl and whisk to the yolks from curdling there 40 Ladyfingers 2 Packages WHIP THE CREAM cups of berry juice Add the the berries to add to the berry tiramisu during assembly Set this aside while you make the whipped cream Mother s Day B ERRY T I RA MI SU BELLE S RECIPES

BELLE S BITES URBAN WREN Over the years I have had an abundance of experiences in all different types of restaurants However I recently had without a doubt the best culinary experience of my life Enter Urban Wren a contemporary restaurant with a focus on crafting elevated food inspired by the chicness of wine country located in Markley Station right here in Greenville What began as a vision to bring a boutique urban winery and cheese shop to Greenville quickly blossomed into the desire to share artisan fare exquisitely paired with wine and to create a culinary experience like no other And when you walk into Urban Wren you are instantly greeted with what feels like the perfect marriage between a winery and a restaurant A large glass cellar is situated to your right while oak barrels line the back wall peeking out from behind the bar The venue itself is upscale yet the atmosphere feels casual and inviting The culinary team is led by creative mastermind Executive Chef Taylor Montgomery a well seasoned chef with a degree in culinary arts numerous industry designations and sixteen years of experience Many of the ingredients used are sourced locally and the menu changes with the seasons in order to preserve peak freshness in all dishes You ll find that many of the menu items have a Southern flair but you ll also find a wide variety of cultural ingredients from around the world intended to represent the diversity of the Greenville community Aside from the incredible culinary talent of Chef Montgomery there is another key factor that sets Urban Wren s cuisine apart from others Much of the fresh ingredients used on the menu are sourced from nearby Montgomery Sky Farm which is owned by Chef himself Located in picturesque Western North Carolina just outside of Asheville Montgomery Sky Farm prides itself on large scale vegetable production and sustainable farming as well as animal rescue and preservation breeding While it s the menu that absolutely steals the show we can t talk about Urban Wren without also talking about the outstanding hospitality and service If you visit soon I truly hope you luck out and get seated in Lauren s section although I m certain the entire staff carries the same expertise and attention to detail She was my server for the evening and her passion for the menu was abundantly clear from the start She knew intimate details about every single dish on the menu which is even more impressive when you remember that the spring menu had only launched just a few weeks prior She felt more like my own personal foodie spirit guide for the evening rather than just a server striking up conversation in order to get a better feel for what she thought I d enjoy the most from the menu She made me feel as if I was her only table and I don t think I ve ever felt as well taken care of at a restaurant as I did under Lauren s care at Urban Wren Aside from the obviously extensive wine menu Urban Wren s craft and artisan cocktails are something to behold The cocktail menu which also changes with the season is themed if you re sly enough to catch it This spring s menu might strike a cord with any It s Always Sunny in Philadelphia fans out there I tried both the Artemis Titos Vodka Orchard Pear Liqueur Chamomile Liqueur Lemon and the Kitten Mittens Lunazul Blanc Tequila Cointreau Mixed Berry Shrub Lime and I would absolutely recommend both The food menu is made up of two different sections small plates intended for sharing and larger portioned entrees I ll admit that 20 I m a sucker for small plates but it s definitely the way to go if you re attempting to taste as much of the menu as possible which was of course my goal for the evening While I enjoyed everything we tried my favorite dish was unequivocally the Undercover Poke It consists of the most tender flavorful melt in your mouth ahi tuna that you ve ever had in your life sitting amongst a chili mirin cold brew and topped with crispy rice paper that s garnished with shiso aioli and avo whip It s truly a must have menu item Other dishes of note from the evening include the Brussel Sprouts pickled baby onion bulbs goat lady chevre orange blossom honey green swipe toasted sunflower seeds Diver Scallops roasted sweet potato green chickpeas nduja amethyst butter early shoots and a Ceviche that was on special And for dessert I somehow managed to save room for the delicious Basque Cheesecake duck fat caramel warm strawberry compote almond crumble For a truly unique experience you can book the Chef s Table which accommodates six to eight guests and sits directly across from the kitchen giving its patrons a front row view of Chef Montgomery in action You ll be given a pre fixed six to nine course dinner and wine menu that highlight the freshest ingredients of the day sure to be an unmatched dining experience The combination of incredibly creative culinary talent and unmatched hospitality make Urban Wren one of the top restaurants in
