It’s time to meet the woman bringing a little more light and compassion to Spartanburg!Sarah, can you share with us the story of what inspired you to become a counselor?I have always known that I wanted to work in a capacity that helped others. I spent the first decade and a half post college working as a developmental therapist with children with special needs. I truly loved my work, but after seeing the tremendous way that counseling helped me during some really hard seasons of grief, loss, and life, I knew I wanted to help others in the same way. Life can be really hard and really beautiful at the same time and after the loss of my father and then my little brother, I knew I wanted to become a therapist to honor them both, by helping others.What are the core values and mission of Sarah Parker Counseling? My mission truly is to come along side of people and give them a safe space to talk and empower them to be the agencies of change in their lives. The most important values I try to embody are compassion, autonomy, trust, and respect.Can you describe the range of services you oer and the types of clients you typically work with?I oer psychotherapy services for individuals of all ages, couples, and families. I tailor my sessions to the clients and what the individual needs are. I recognize that it is not easy to talk to someone that you don’t know about the things that you are going through, so I try to make my space as welcoming as possible. I use a few dierent theories and approaches in my sessions, and recognize that an approach that works for one individual may not work for the other. My heart truly is in being able to help others and I strive to do this with each and every client. I am a Christian, and so much of my life, especially my counseling practice, flows from my relationship with Jesus. I serve clients of all dierent faiths and backgrounds, so faith comes into the session overtly when welcomed and appropriate. But it’s the core behind what inspires me.How do you unwind after a day of counseling sessions? Any favorite local spots you like to visit? I feel pretty boring and old saying this, but I really love to just go home to my husband and 5 year old son at the end of the work day. We are homebodies but love to spend a lot of time with family and close friends.What’s a common piece of advice you find yourself giving to clients, especially those from our community? Life is hard, marriage is hard, it’s okay to need help, we all do. It’s ok to be where you are, just don’t stay there.What tips would you give to someone in our community who’s considering counseling but feels a bit apprehensive? Being nervous is completely normal. You are not alone in this. It is worth the eort to see if counseling is a good fit for whatever life has for you right now. I have had clients come in, usually encouraged by a loved one, that are really apprehensive about the process. I always make sure to take time out to answer whatever questions that they have to help put their mind at ease.What else would you like Belle to know about yourself and Sarah Parker Counseling?Right now, I am not contracted with insurance companies or Medicaid, so I am self-pay only. INGREDIENTSCHICKEN MARINADE1 and 1/2 pounds boneless skinless chicken breasts (can also use thighs)3/4 cup + 1 tablespoon freshly squeezed orange juice, divided1/2 cup + 1 teaspoon olive oil, divided1/3 cup + 2 tablespoons freshly squeezed lime juice, divided1 and 1/2 teaspoons lime zest, divided1 tablespoon honey1 teaspoon + 1/4 teaspoon cumin, divided2 and 1/2 tablespoons soy sauce2 teaspoons minced garlic1/2 cup coarsely chopped cilantro, dividedMANGO AVOCADO SALSA1 ripe mango1 ripe avocado1/4 cup finely diced red onion1/4 cup finely chopped red pepper1 tablespoon finely chopped jalapeñoFine sea salt and freshly cracked pepperCILANTRO LIME RICE1 cup rice 2 cups chicken stock or broth1 tablespoon butter1 large lime (2 tablespoons juice and 1 teaspoon zest)1/3 cup finely chopped cilantroSalt and pepper, to tasteINSTRUCTIONSMARINADE:Whisk together all of the marinade ingredients in a medium-sized bowl: 3/4 cup orange juice, 1/2 cup olive oil, 1/3 cup lime juice, 1 teaspoon lime zest, honey, 1 teaspoon each cumin, soy sauce, garlic, and 1/4 cup cilantro. Add salt and pepper to taste. Reserve about 1/2 cup of marinade, and pour the rest into a large resealable bag.Trim the chicken of fat. Pound the breasts to even thickness or slice in half to get evenly sized breasts and place in the bag with the rest of the marinade.Refrigerate for at least 30 minutes, making sure to flip the bag halfway through. Marinating for 2-8 hours is recommended.GRILL CHICKEN: Lightly oil the grill grate on a grill pan then place the marinated chicken on the grill. Discard leftover marinade.Grill for 10-12 minutes or until chicken juices run clear and internal temperature is at 165 degrees F. Flip the chicken halfway and brush it generously with the reserved 1/2 cup marinade.MANGO SALSA:Take the remaining 1 tablespoon orange juice, remaining 1 teaspoon olive oil, 2 tablespoons lime juice, remaining lime zest, and remaining 1/4 cup cilantro and toss together.Chop the mango and avocado into bite-sized pieces. Add to the salsa along with the finely chopped red onion, red pepper, and jalapeño. Season the salsa to taste with pepper, salt, and remaining 1/4 teaspoon cumin and stir to mix.CILANTRO LIME RICEBring 2 cups of stock to a boil over medium-high heat. Stir in the butter and rice and return to a boil. Reduce the heat to low, cover, and simmer until the rice is cooked through and tender. Stir in the lime juice, lime zest, cilantro, and salt + pepper to taste.Serve grilled chicken over a bed of cilantro-lime rice and add spoonfuls of the salsa on top. 2828BELLE’S DIYWHAT YOU NEED:Strawberry Crunchies1 cup all purpose flour, divided1/2 cup sugar, divided3/4 cup freeze dried strawberries7 tbsp salted butter, room temp, divided1/2 tsp vanilla extractIce Cream Layers1.5 quart container strawberry ice cream1.5 quart container vanilla ice creamWhipped Cream1 3/4 cups heavy whipping cream, cold3/4 cup powdered sugar1 1/4 tsp vanilla extract1/2 cup freeze dried strawberries Fresh strawberriesWHAT TO DO:Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or a silicone baking mat and set aside.To make the crunchies, you’ll need two bowls. One for the vanilla crunchies and one for the strawberry. Add 1/2 cup of flour and 1/4 cup of sugar to each bowl.Add the freeze dried strawberries to a food processor and grind into a powder. Add the powder to the bowl for the strawberry crunchies. Stir well to combine.Add 4 tablespoons of butter to the strawberry bowl and the vanilla extract and 3 tablespoons of butter to the vanilla bowl and use a fork to combine each mixture until it comes together to form a crumble.Lay the strawberry crumble evenly out onto one of the cookie sheets and lay the vanilla crumble evenly out onto the other cookie sheet.Bake the crumbles for about 5 minutes. Keep a close eye on it, particularly the strawberry crumble. The strawberry powder can brown quickly if left in for too long.Let crumble cool completely and then use your fingers to break into smaller pieces, if needed.Combine all of the crunchie pieces together and gently toss to combine.To layer the cake together, line an 8×3 inch cake pan with clear wrap that covers the bottom and goes above the sides of the cake pan. You’ll use the wrap that is sticking above the sides of the pan to lift the ice cream cake out later.About 20 minutes before you need it, set the strawberry ice cream out to soften. Add the softened strawberry ice cream to the prepared cake pan and spread into an even layer.Spread about 1 cup of the crunchies evenly over top of the strawberry ice cream, then freeze for about 2 hours, until mostly firm.About 20 minutes before you need it, set the vanilla ice cream out to soften. Add the vanilla ice cream to the top of the crunchies, then freeze until firm, 2-3 hours.Use the clear wrap to lift the frozen cake out of the pan, then place it on a cardboard cake circle or a serving plate. Set it back in the freezer.To make the whipped cream, add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl. Whip on high speed until sti peaks form.Frost the cake with the whipped cream, placing the cake back in the freezer as needed to keep it from melting.Quickly press the remaining crunchies onto the sides of the cake, then place the cake back in the freezer.Grind the freeze dried strawberries for the whipped cream into a powder and add it to the remaining whipped cream.Pipe a border around the top of the cake.Freeze the cake until ready to serve. Cake is best when stored well covered and eaten within 4-5 days. Join us for this exclusive interview as we delve into her inspirations, the essence of her brand, and her refreshing approach to fashion!Laura, what inspired your latest collection, and how does it reflect the spirit of spring & summer?My collections are always inspired by the dazzling sequin Mardi Gras gowns and lame’ disco jumpsuits that my mother held onto through all the years! As a child, my favorite hobby was getting lost in her magical closet and escaping into the glamorous worlds of these past decades! The Laura Citron collection celebrates the joy of playing dress-up! This season was no exception, but did I focus in on a few key motifs including hearts, butterflies, and roses. A happy Spring collection, but I like to say my brand is season-less, and can be worn any time you want to feel special! Can you share some key trends we can expect to see this season?Honestly, I try not to follow trends. I just design clothes that bring me joy! As the late Iris Apfel said, “I never buy what’s “in” or a “must-have. I buy what makes me happy.” I always encourage everyone to do the same! All that being said, sparkle and shine are still going strong! ;)What advice do you have for women looking to refresh their wardrobe for the warmer months?I’m a believer in what’s called “Dopamine Dressing.” It’s the idea that wearing/seeing bright colors releases a rush of dopamine into your brain, a.k.a, happy hormones! Whether it’s a pop of color, or a full head-to-toe look, Spring and Summer are the perfect seasons to try incorporating brightness into your wardrobe! Your mood will thank you for it!What are some must-have accessories every woman should have this spring/summer season?A smile, and a positive attitude!Have any celebrities worn your clothing?Yes! Being based in Nashville, my collection has attracted many musicians! My pieces have been worn by Lainey Wilson, Little Big Town, Lauren Alaina, Jennifer Nettles of Sugarland, Greta Van Fleet, and Jake Wesley Rogers, among others.What other notable press has your brand received?I feel very honored that my brand has received a good amount of press in only 8 years! My cloth-ing has been featured in Vogue, Cosmopolitan, Rolling Stone, Forbes, L’Officiel, and more! It’s been on magazine covers including Grazia, Southwest Magazine, and Nfocus. It’s been seen on national morning shows and late night shows, and featured on award show red carpets and stages, as well as album covers (and backs – We’re on the back of Lainey Wilson’s Bell Bottom Country album)! I still pinch myself in disbelief each time these things happen! The little girl in my mom’s closet would never believe it..What advice do you have for aspiring fashion designers who are just starting out in the industry?Don’t give up on your dreams! A career in fashion sounds glamorous, but it’s not for the faint of heart! In reality, it is a dicult, elusive, winding road filled with dramatic ups and downs, and only about 10% glamor! But if you want it bad enough, I’m a firm believer that working hard, not giving up, and being kind will eventually get you there! That is my recipe for success!What is your go-to guilty pleasure when you need a creative boost during late night design sessions?A little Diana Ross and a glass (or 2) of wine!Could you share a valuable lesson or piece of wisdom your mom imparted to you that continues to influence your life and work today?My mother will always be my favorite muse! From her fabulous closet, to her words of wisdom, to her joyful personality that always lights up a room! She has taught me SO much! Although we share a love of fashion and beauty, she has always reminded me that these things are just things, and what’s most important is love and kindness. 36SUSIE WALLACEOCCUPATIONAL THERAPIST PARENT COACHgirltalkFor more than a decade, photos of children with disabilities or chronic health conditions have been inspiring and educating people across South Carolina. Family Connection’s LOOK! Photography Exhibit, now appearing in Greenville at The Children’s Museum of the Upstate, is a traveling collection of more than 80 photos that showcase the importance of having an inclusive community. Now in its 11th year, the whole thing developed from an idea Susie Wallace got while driving home from a job interview. “I hoped that families and children who participated would have the joy of being recognized and highlighted for the unique beauty they possess,” she says. “I dreamed that the public would be inspired by the children’s photographs and get a chance to see children with disabilities in a positive and inspiring light.” What do you hope the LOOK! Photography Exhibit accomplishes? I hope that people see the LOOK! photos straight from their hearts and come away with a greater kinship and appreciation for the beauty of kids with disabilities and special healthcareneeds. I also hope that people use the bar codes to read the stories that go with the pictures and learn about where to find help and hope!How has adoption touched your life? We became foster parents in 2009 and became adoptive parents to our daughter when she was three years old. As a mom with three older bio kids, then 12-20, I thought I knew the parenting ropes. I soon learned that adoptive parenting requires unique skills and a heart that understands the grief and loss inherent in the adoption experience. I have spent the past 15 years growing so that I can beequipped to parent my daughter in a way that is helpful and geared toward her specific needs.How are you using your experiences with adoption to help others? Adoptive families need a lot of support and resources! I went back to school to get a master’s degree in clinical Mental Health so that I could develop the skills neededto lend my help to other adoptive parents. During my clinical internships, I saw how valuable Occupational Therapy mixed with counseling techniques could be. My approach is centered around increasing feelings of safety andbelonging and exploring adoption-related themes and challenges with parents and children. I enjoy networking with other adoptive families and the learning, idea-sharing, and brainstorming that comes from parents seeking tosupport their children in new and adoption com-petent ways. I just had the honor of com-plet-ing a 60-hour certifi-cate in Adoption Compe-tency with the Center for Adoption Support and Education in Maryland.What do you know now that you wish you knew at the beginning of your adoption journey? I wish I knew how much I didn’t know! I wish I knew that adoptive families are not like bio families and that is normal. I wish that I had read20 Things Adoptive Kids Wish Their Adoptive Parents Knew by Sherrie Eldridgeor Adoption Healing by Joe Soll,sooner. I am so glad that there are so many more resources, blogs, Facebook support groups, and trainings tohelp adoptive families now.What are you most looking forward to this summer? Part of my family is going to France to the town we lived in when my kids were young to experience with my 15-year-old and 3-year-old granddaughter who have never traveledabroad. I am also excited about helping to take care of two of my granddaughters (my son’s daughter who is 5 months and my daughter’s little girl who is 1 year) part of the time while their mothers work on their graduate studies.    What is your favorite summer tradition? Going on a family vacation with kids and grandkids and staying in a big fun house together in Orlando or Nag’s Head, NC.The LOOK! Photography Exhibit is at TCMU-Greenville through June 14th. Viewing of the exhibit is free with the price of museum admission.
