Crus Salad th Fennel d AvocadoCitrus fruits like oranges, grapefruits, and blood oranges are at their juiciest right now. Brighten up those gray January days with a refreshing salad featuring tangy citrus slices, thinly shaved fennel, and creamy avocado. This light yet satisfying dish is a burst of sunshine on a plate and a great way to pack in some post-holiday vitamins.Ingredients1 small fennel bulb1/2 cup thinly sliced red onion4 tablespoons white balsamic vinegar3 small oranges2 tablespoons olive oil1/4 teaspoon kosher salt1/8 teaspoon freshly ground black pepper1 avocado pitted, peeled and sliced2 springs fresh mint (optional)sea salt to tasteInstructionsCut the top o the fennel bulb, saving the fronds for garnish. Discard the stems.Trim the bottom of the fennel, quarter the bulb, and trim thetough core in the center.Thinly slice the fennel and place in a glass bowl.Add the red onion to the fennel, along with the vinegar. Toss to evenly coat and let it sit for about 20 minutes.Prepare the oranges by cutting the tops and bottoms o and placing it on one of the cut sides on the cutting board. Use a sharp knife to follow the curve of the orange and slice o the peel and any white pith. Turn the orange on the side and cut into 1/4 inch rounds. Arrange on a platter.Arrange the fennel and red onions on top of the orange slices, reserving about 8 slices of red onion and the liquid in the bowl.Finely chop the reserved red onion and return to the reserved vinegar. Whisk in the olive oil, salt, and pepper.Right before serving, arrange the avocado on top of the salad. Drizzle the dressing on top. Garnish with fennel fronds and mint, if using. It’s an inexpensive, rewarding project that will keep you warm and satisfied.Ingredients4 cups Whole Wheat Flour1 Packet Instant Yeast 2 ¼ teaspoons½ tsp Salt2 tsp Maple Syrup2 cups Warm WaterInstructionsAdd the flour to a mixing bowl with the yeast and salt and mix together.Dissolve the maple syrup in the warm water and then add to the dry ingredients.Mix - don’t knead - until you have a sticky well combined dough.Transfer to a greased 9x5 loaf pan.Cover and leave to rise for 20 minutes.While the dough is rising, preheat the oven to 390°F.After approximately 20 minutes when the dough has risen, bake in the oven for 40 minutes.January is a time for fresh starts, cozy evenings, and maybe a little balance after all those holiday cookies (not that we regret them). This classic dish combines tender chunks of beef, pearl barley, and winter veggies like carrots and celery in a rich, savory broth. It’s the perfect dish for a cozy night at home and is even better reheated the next day. Make a big batch on the weekend and enjoy the leftovers all week long!IngredientsFor the Beef1.5 pounds beef chuck or stew meat, cut into 1-inch cubes2 tablespoons olive oilSalt and freshly ground black pepperFor the Soup1 large onion, finely chopped3 carrots, peeled and diced3 celery stalks, diced8 ounces mushrooms, sliced3 cloves garlic, minced1 teaspoon dried thyme1 teaspoon dried oregano8 cups beef broth or stock1 cup pearl barley, rinsed2 tablespoons tomato paste1 tablespoons Worcestershire sauce1 tablespoon soy sauce (optional)2 bay leaves1 cup diced potatoes (optional)1⁄4 cup fresh parsley, chopped (for garnish)InstructionsPat the beef chunks dry with paper towels. The combination of salts works wonders to soothe tired muscles, while apple cider vinegar is known for its skin-cleansing properties.INGREDIENTS:1/4 cup baking soda1/3 cup apple cider vinegar1/4 cup sea salt or Himalayan salt1/4 cup Epsom saltHOW TO MAKE IT:Dissolve the sea salt, Epsom salt, and baking soda in a pot of boiling water. Pour the mixture into a container, add the apple cider vinegar, and shake it all up. Once your bath is warm, pour it in and soak for 30 minutes.This bath is a lifesaver when you feel sluggish, bloated, or just… blah.
