I started with Christmas cards, which led to addressing envelopes, and it just grew from there.”A fateful online calligraphy class with the talented Melissa Esplin changed everything. “She became a mentor and a friend, pushing me to take my skills further. (Seriously, how do we always end up with so many?) Whether they came from a backyard egg hunt or you just got a little too ambitious at the grocery store, there’s only one proper way to use them up—deviled eggs, of course.Now, let’s be clear: deviled eggs aren’t just for Easter. They’re a Southern staple, right up there with pimento cheese and banana pudding. They grace the table at every baby shower, tailgate, and holiday gathering, and if I see a tray at a party, you best believe I’m strategically standing near it.But as much as I love the classic, sometimes you need a lit-tle twist on tradition. So, here are three ways to shake up your deviled egg game—Classic Southern, Spicy Pimento Cheese, and Herby Spring Green. Make one or make them all (because we know you’ve got eggs to spare).Classic Southern Deviled EggsYou can’t mess with perfection. These are creamy, tangy, and everything a deviled egg should be.INGREDIENTS:6 large eggs, hard-boiled and peeled¼ cup mayonnaise (Duke’s, obviously)1 teaspoon Dijon mustard1 teaspoon apple cider vinegarSalt and pepper to tastePaprika, for garnishINSTRUCTIONS:1. Slice the eggs in half lengthwise and scoop the yolks into a bowl.2. Mash the yolks with a fork, then stir in the mayo, mustard, vinegar, salt, and pepper until smooth.3. Spoon or pipe the filling back into the egg whites.4. Slice eggs in half and remove yolks. Mash them in a bowl.2. Stir in mayo, cheese, pimentos, hot sauce, paprika, salt, and pepper until smooth.3. There’s just something about setting the table, lighting a candle, and filling my home with people I love that makes my heart feel full. But if you walked into my house an hour before any gathering, you’d probably find me bribing my kids with fruit snacks to pick up toys, stung unfolded laundry into a closet, and trying to arrange flowers while a toddler clings to my leg.Because here’s the truth: entertaining with charm is less about perfection and more about making memories. And when you’ve got three little ones underfoot, you learn real quick that perfection is a myth.I used to think hosting meant everything had to be just so—the right linens, the perfect centerpiece, a menu straight out of a magazine. But over the years (and after a few too many Pinterest-fails), I’ve realized that the most magical moments happen when you let go of the idea that it all has to look flaw-less. Some of the best nights I’ve had weren’t about the fancy details—they were about laughter in the kitchen, mismatched plates filled with good food, and friends who stayed way past bedtime because they just didn’t want to leave.USE WHAT YOU HAVE — IT’S ALREADY ENOUGHSome of the most charming gatherings come from using what you already have. She passed away in 2014, and at that time, I wasn’t into cooking the way I am now. She absolutely loved seafood, so if I had the chance, I’d cook her a gourmet scallop dish, something elegant and full of flavor. I’d love to see her reaction and share that moment with her.What’s one simple dish that, with the right technique or ingredient, can feel gourmet?Rice!It’s such a simple staple, but when cooked properly—with the right seasoning, aromatics, and texture—it can feel like a high-end dish. A little saron, coconut milk, or even a perfectly balanced herb- infused broth can take rice from basic to bold and elegant.What’s one ingredient you think is underrated and deserves more love in home kitchens?Fresh citrus.Lemon, lime, and even orange zest can completely change a dish.
