Message Boil the potatoes until you can easily pierce them with a fork.Trim ¼ inch from each side of the potatoes and reserve these trimmings in a separate bowl.Dice the middle sections of the potatoes and reserve them in another bowl.Toss the ¼-inch tops with 2 tablespoons of olive oil, salt, and pepper.Overlap the seasoned tops in a well-oiled loaf pan.Mash the diced middle sections with the sour cream, olive oil, and the remaining seasoning.Gently fill the loaf pan with the mashed potato mixture, tapping down to evenly distribute.Bake in a 350°F (175°C) oven for 55-60 minutes.Let the potato crown rest, then unmold and serve.
