We are enjoying learning about this topic and hope you nd it intriguing!t h i n G s t o P o n d e rContinued on page 10Throughout most of Florida we are very lucky to have so many year-round resident bird species. Being located on the Atlantic Flyway, stretching from Greenland to the Caribbean and roughly bordered by the Appalachian Mountains on the West, Florida is smack dab in the middle of one of North America’s four major migratory bird flyways. Having a shoreline measuring more than 8,400 miles long that includes the Atlantic Ocean, Gulf waters and the Straits of Florida, it isn’t any wonder that the state attracts a hefty concentration of both resident and seasonal shorebirds, water fowl and a diverse mix of other feathered friends in numbers rarely seen at one time anywhere else. A walk on any of our beaches will gift you with up close encounters and endless viewing opportunities. Here are some more interesting descriptors for this month’s grouping of birds…A Pandemonium Of ParrotsParrots have been around for millions of years. In Florida, the parrots you see gathered here and there, flying about and in trees, are mostly the descendants of both accidental and purposeful releases over the past 60 years or so. No one really knows exactly when the descriptor for a group of parrots, A Pandemonium Of Parrots, came into being. However, one thing is for sure…the title perfectly describes their non-stop noisy, bordering on manic squawks, prattle, whistles and trills. Sometimes, a flock of these feisty birds is called a Company Of Parrots. This is because their colorful plumage is reminiscent of a full-dress military parade of old.

10 t h i n G s t o P o n d e rA Pod Of PelicansOften pelicans will line up in a row, like peas in a pod…so, a group of these birds lined up soon came to be known as A Pod Of Pelicans. Here in Florida, gatherings of these highly sociable and gregarious birds are a common sight. They can be seen diving headfirst into the sea and coming up with a pouch filled with fish and as much as three gallons of water. That’s why, while feeding, these groups are often referred to as A Pouch or A Scoop Of Pelicans and when flying in military precision, pelicans are known as a Squadron. After John Grisham’s book and movie, The Pelican Brief, became highly popular, many people began referring to a grouping of these fun to watch birds as, A Brief Of Pelicans.A Stand Of FlamingosThere are six species of Flamingos, but only the American Flamingo is found in North America, living in the wild in Florida. Groups of Flamingos are well known for standing around for long periods of time on either one or both legs—hence, the name for a gathering of these colorful birds is, A Stand Of Flamingos.Both Males and Females perform courtship dances. You can sometimes see an entire stand come together, like a flash mob, performing synchronized dance moves. When this happens, the group is referred to as, A Flamboyance Of Flamingos.A Kettle Of HawksHawks in the wild are seen mostly alone or in pairs. However, when migrating, they will come together forming, non-aggressive to each other, temporarily cooperative groups. It is widely thought that the term, A Kettle Of Hawks, describing a migratory gathering of these raptors, originated in England around 1400 CE to 1500 CE. This signifier comes to us from Falconry, where a mews is a birdhouse used to safely shelter many raptors.A Wake Of VulturesFound all over the world, except for Australia and Antarctica, vultures are a gregarious species and large groups roost together forming com-munities and nesting with their mates. They are mostly scavengers and when they gather to feed, they are often reminiscent of a family gathering at a funeral…hence, the name—A Wake Of Vultures.When circling in search of food or gliding on the air currents with wings spread, a group of these birds is known as, A Soar Of Vultures. And, when roosting together in trees they are frequently referred to as, A Committee Of Vultures.A Dole Of DovesThis moniker comes to us from Middle English and Old French with spellings varying from dule, dul, dool and finally dole. Early definitions of these words suggest grief and mourning. They are most likely referring to the mournful sound, likened to a lamentation, of the cooing of doves. 18 Coastal Blue Kitchen v Making it Easy!Designing a kitchen that allows ease of movement, is organized, and has an airy feel is the goal. Colors mirroring nature are all shades that work well in a coastal kitchen. A popular selection for flooring is luxury vinyl plank in white oak, ash, maple or blond. It’s a good choice for making the room feel light and open. It can handle sandy and wet conditions and is pretty much pet-proof—making it a practical choice for the home.Light colored marble or quartz countertops along with some turquoise glass décor and sandy-hued design elements can add a touch of coastal chic to the space. Magnetic or vinyl appliance coverings also known as appliance skins can be added to dishwashers and refrigerator doors to bring a pop of color against a white-hued kitchen. The tradeoff of having this type of table is that it needs a regular dose of love and care. But it is worth the little bit of extra time it takes to keep it in good shape, as it presents a stunning casual, nature-inspired feel in the space. Keeping this in mind, the use of placemats and coasters is vital in maintaining the beautiful finish of this type of table. The color white is considered a neutral and reflective hue that promotes relaxation. It also offers a clean backdrop to showcase wall décor and allows the bed itself to be the focus of the room.Dress the bed in light fabrics like linen and cotton utilizing different textures which helps to add depth and style. Keeping with the coastal theme, when selecting a headboard, a seagrass one is a good choice, and has several benefits. By including this natural and eco-friendly material it offers a beach-style texture, is durable, and contributes to a sustainable décor choice. Use semi-gloss paint as it is highly resistant to moisture. For simple and tranquil pleasures, design the space in a minimalistic style. Elevate the bathing experience with a soaking tub that is designed with increased depth allowing you to fully submerge yourself up to the shoulders in the soothing sensation of warm water.Evoke a sense of calmness and add a touch of nature with plants that offer a tropical feel such as, Boston ferns, bamboo, and spider plants. 34 ea turtles are air-breathing reptiles that spend most of their lives in marine waters. Like other turtles they wear a hard shell called carapace that offers them a bit of protection from predators. This shield has a specific size and pattern which helps to distinguish one species from another. Even though sea turtles have this defensive covering, unlike other turtles they cannot retract their limbs or head into their shell —this makes them vulnerable to predators, especially when they are young. They do have a way of camouflaging their presence called countershading. When sea turtles are viewed from above, their dark back blends in with the deep water. When viewed from below, the light underside blends in with the brighter sea surface. This coloring helps them merge into their surroundings and makes them less visible to predators in the water. These beautiful aquatic creatures depend on the beach habitat for reproduction. Sea turtles have powerful front flippers that allow them to swim hundreds of miles to their preferred nesting sites. They use a combination of environmental cues, beach attributes, magnetic fields and memories of their birth location to find their desired nesting spots. n a t u r e Sea Turtle PreservationS

35The nesting process starts with pregnant female sea turtles making their way back to the beach where they were hatched, while some may travel to a completely different beach, they will stay in the same region. They use their back flippers to dig a nest in the sand and lay their eggs. Then, after they camouflage the nest with sand, the female turtles make their way back to the water. The eggs incubate in the warm sand for about two months, but species, nest temperature and other factors come into play during this process, so the exact time cannot be determined. Female turtles do not stay to care for their hatchlings and do not reunite with them when they return to the ocean. Once hatched, the young will find the surf by being drawn to the natural light of the moon upon the water. When the hatchlings reach the water, they dive into waves and ride out to sea, swimming for anywhere between 24 to 48 hours, which helps them to quickly get into the deeper waters where they are less vulnerable to predators.Nesting season in Florida is from March through October with peak activity between May and July. Keeping this in mind, there are many ways that we can help to protect the sea turtle, here are a few: Turn off lights that are visible from the beach after sunset. Artificial light can cause confusion. Turtles depend upon the natural moonlight reflecting on the water to navigate back to the sea, and bright lights can disorient them and steer them away from the water and toward danger. It can also deter pregnant females from coming ashore to nest. Turtles dig at night, so it is important to leave a clear path from the water to the beach sand that does not obstruct their way as they move toward their nesting sites. When you see holes in the sand, fill them in so turtles and hatchlings do not become trapped. Pick up trash, most especially plastic netting and bags, so turtles do not ingest them nor become entangled in them. Cut and dispose of the plastic 6-pack rings that hold soda cans, as turtles can become ensnared within the rings. Although sea turtles are less likely to abandon their nesting site when they are laying eggs, some will stop the process if they feel stressed or in danger, so it is important to stay clear of nesting sites. Think twice about letting balloons go free on the beach or in neighborhoods as they can travel vast distances. Sea turtles eat jellyfish and balloons look similar. 39Back in 1993, I was one of the early adaptors of working with clients on a fee basis. The overall focus was to provide services rather than sales. The dogma morphed into an asset under management fee based on a percentage. Fees based on assets under management eat into your income and your wealth. Assuming $1 million in retirement assets, a 4% withdrawal rate would be $40,000 per year and the advisor’s 1% fee would be an additional $10,000 per year or 25% of your retirement income. Based on a Schwab Moneywise Calculation, $1 million invested for 25 years assuming a 7% return with an extra advisor’s 1% fee could eat up $1 million.Introducing the Transparent Advisor Movement—this new group is aiming for industry change. Financial advisors are trying to drive the profession to be more transparent about fees and services and recently met last month in Kansas City at a conference designed to be different from any other in the industry. Savory Cheese Tart INGREDIENTS1-1/2 cups all-purpose flour • 1/4 tsp. salt • 1 tsp. sugar1 stick very cold unsalted butter, cut into 32 pieces4 to 5 Tbsp. ice water • 12 oz. fresh mozzarella pearls • 2 plum tomatoes, sliced2 Tbsp. sliced black olives • 2 Tbsp. sliced mushrooms • Fresh basil 52

53G u l F G o u r m e tPink Champagne CocktailINGREDIENTS1.5 oz. orange juice1.5 oz. pomegranate juice3 oz. ChampagneOrange wedgeFresh mint leavesDIRECTIONSPreheat oven to 350° F. Wash and dry two 5.5-inch tart pans with removable bottoms, and set aside. Mix flour, salt and sugar to- gether in a small bowl, then transfer to a food processor. Add cold butter cubes. Process until mixture resembles coarse cornmeal with the butter pieces no larger than the size of peas. Add ice water and pulse just until the dough pulls together. Remove dough from processor, work into a ball, then flatten into a disc. Wrap in plastic and refrigerate for 30 minutes. When ready to use, divide dough in half, roll each portion out until it is 1/8-inch thick, and press into prepared pans. Pierce the dough several times with a fork.Put tarts in oven. Bake 15 to 20 minutes or until golden brown. Remove from oven and place on wire rack for 5 minutes. To release the ring from the tart pan, invert a serving bowl that’s slightly smaller than the hole in the bottom of the pan onto the countertop. Place the tart on the base of the bowl and gently press down to slide off the ring. Fill each tart with equal amounts of mozzarella pearls, then place tarts on a baking sheet. Pop back in oven for 1 minute or until cheese has melted. Remove from oven and top with sliced tomatoes, black olives, mushrooms and fresh basil. Serve immediately. DIRECTIONSPour orange juice and pomegranate juice into a chilled martini glass. Add Champagne and stir. Garnish with an orange wedge and fresh mint. 53

Dijon mustard1/2 tsp. kosher salt • Pepper to taste1/3 cup olive oil1/3 cup blue cheese crumbles3 slices bacon, cooked and crumbled2 Tbsp. freshly chopped chivesDIRECTIONSArrange cucumber, radishes, red onions, eggs and croutons on a salad plate and set aside. Whisk together red wine vinegar, Dijon mustard, salt and pepper in a small glass bowl. Gradually whisk in olive oil, adding more if needed. Add blue cheese, bacon and chives, and stir. Drizzle desired amount over top of salad and serve. 54

Add pineapple juice, agave nectar and coconut extract, then whisk well. Pour into a shallow baking dish and place in the freezer until mixture is semi-frozen. lWatermelon GranitaINGREDIENTS4 cups seedless watermelon chunks1/3 cup light agave nectarJuice of one lemonDIRECTIONSCombine all ingredients in blender and puree until smooth. Pour into a shallow glass baking dish and place in freezer until mixture is semi-frozen. lOrange GranitaINGREDIENTS One 12-oz. can frozen orange juice concentrate, thawed1/2 cup water • Fresh mintDIRECTIONSEmpty orange juice into a small bowl, add water and whisk well. Pour into a shallow baking dish and place in freezer until mixture is semi-frozen. When all three flavors have reached a semi-frozen state, use an ice cream scoop to dispense the granitas into a tall chilled martini glass. Garnish with fresh mint and serve immediately.

Line a 24-cup mini muffin pan with miniature paper liners; set aside. Combine flour, baking powder, and salt in a medium bowl. Whisk together until blended, then set aside. Pour milk and raspberry extract into a cup, stir together, and set aside.Measure butter and sugar into a large bowl of an electric mixer. Beat on medium-high speed until light and fluffy. Add eggs, one at a time, beating until thoroughly mixed. Stir in lemon zest. Reduce speed to low, slowly pour in prepared dry ingredients and milk mixture, alternating after each addition, ending with the flour and stirring just until blended.Scoop out batter using a melon baller and dispense into each of the prepared muffin cups. 57 57 57The Pavlova…A Regal Experience!Enjoy this luscious dessert topped with whipped cream and fresh fruit. Be surprised by the crisp shell and soft marshmallow-like center. This treat of sweetness is considered a classic dessert and was named after Anna Pavlova, a famous ballerina.Set your oven to 300° F to preheat. Place parchment paper on a high rimmed baking sheet. Find the center point and draw a 9-inch circle in the center of the parchment paper.Whisk together ¼ cup of white sugar and 1 Tbsp. cornstarch in a bowl and set aside. In a separate glass bowl beat the egg whites until soft peaks are created. Gradually add the remaining 3/4 cup sugar and beat until stiff peaks form and the sugar is completely dissolved. Then gently fold in the cornstarch mixture.On the prepared baking sheet spread ¼ inch layer of the mixture to fill the circle. Then, keep spooning in the remaining mixture while forming it into a tall cylindrical INGREDIENTS1 cup white sugar divided 1/4 & 3/4 • 3 eggs/use the white’s only1 Tbsp. cornstarch • 1 tsp lemon juice • 2 tsp of pure vanilla extract1½ cups of heavy whipping cream • 1-pint fresh strawberries • ½ cup powdered sugardisk, staying within the circle. Use a spoon to create a slight dip in the top like a volcano center. Use the spoon to shape the sides.Bake in preheated oven for one hour. Turn off the oven. The dessert should remain in the turned off oven for an additional 30 minutes (do not open the oven door). Then, remove it from the oven. The outer layer should be crisp and the inner moist. Cool on a wire rack.Beat the cream and powdered sugar in a mixing bowl with an electric mixer until thick. Spread the whipped cream on top of the dessert and top with your favorite fruit.DIRECTIONS
