Lightly grease a 12-cup mufn pan, or line it with mufn liners and grease the mufn liners. To make the mufns: In a medium-sized mixing bowl, whisk together the our, baking powder, and Foothill Farms® Cobbler mix, then toss the cranberries into the mixture, stirring to coat.In a separate bowl, or in a large measuring cup, whisk together the egg, oil, milk, orange juice, and orange oil or peel. Gently and thoroughly mix the wet ingredients into the dry ingredients.Using a mufn or cookie scoop, or a ¼ -cup measure, ll each mufn cup about ¾ full.Bake the mufns for 20 minutes, or until they’re nicely domed and a cake tester inserted into the center of one comes out clean. Remove the mufns from the oven, and run a knife around the edge of each one to separate it from the pan. Carefully tilt each mufn in its cup so steam doesn’t collect underneath as they cool. After about 5 minutes, transfer them to a rack to cool completely.Store mufns for up to 3 days in a plastic bag on the counter; or freeze, well wrapped, for up toone month.Chocolate Mousse CakeYields 2 cakesIngredients1 bag Foothill Farms® Chocolate Mousse Mix2 quarts heavy cream2 boxes chocolate cake mix (Eggs, oil and water per directions)Ganache (see Recipe)12 ounces semisweet chocolate chips1 1/3 cup heavy creamInstructionsMake the cake mix according to the manufacturer’s recipe. Pour the batter into a greased and oured sheet pan. Bake until done, times will vary based on oven and type of pan used.When the cake has cooled, cut into 4 inch wide strips, trimming the tops of the cake to create a at surface for a uniform cake.Place a slice of the cake on a fondant screen and coat with a ½ inch thick layer of mousse. Add a second layer, and coat with a ½ inch layer of mousse, repeat with and additional layer and top with a nal slice. With an icing spatula, use additional mousse to ll in any voids or cracks in the sides of the cake to create a smooth surface and at appearance.Assemble Ganache - RecipePlace the chocolate chips in a large bowl. Heat the heavy cream over medium heat to just before boiling. Pour cream over chocolate chips and stir with a wire whisk until the chocolate is fully dissolved and is a dark, shiny mixture.Take the hot ganache and slowly pour over the top of the cake to cover. Using a spatula smooth the surface, and pour additional Ganache allowing it to ow down the sides smoothing it with a spatula. Place additional mousse in a pastry bag and use it to pipe ourishes and decorations to enhance the appearance. Refrigerate until serving.Alternative instructions, when layering the mouse, place cleaned raspberries, sliced strawberries or cherries to add a twist to the avor. Line a standard mufn pan with paper or silicone mufn cups, and grease the cups.In a large mixing bowl, whisk together the Foothill Farms® Cobbler Mix, our, and baking powder. Set aside.In a large measuring cup or medium-sized mixing bowl, whisk together the eggs, milk, and vanilla.Add the wet ingredients, along with the melted butter, to the dry ingredients, stirring to blend. Add Blueberries and mix to combine.Scoop the batter into the prepared mufn pan; the cups will be heaped with batter, and the mufn will bake into a “mushroom” shape.
