e g n a h C e t a m i l C OFFEE COULD CUT C 0 BY 2050 BY UP TO 5 PRODUCTION Coffee production could be cut by up to 50 percent in a few decades because of the effects of climate change a report has found I guess it s a story in other agricultural produce as well but in particular for coffee he told ABC NewsRadio s Sandy Aloisi The coffee industry is worth 19 billion worldwide with more than 2 25 billion cups of coffee consumed every day and nearly half of all Australians drinking coffee regularly But the report A Brewing Storm showed unless action was taken the effects of climate change would result in supply shortages and increased prices It s not just the heat which is a big factor which is driving some of the regions where coffee is produced uphill We re fearful that by 2050 we might see as much as a 50 per cent decline in productivity and production of coffee around the world which is not so good said Molly Harriss Olson the chief executive of Fairtrade Australia and New Zealand which commissioned the report John Connor CEO of the Climate Institute which compiled the report said there was a range of ways climate change was impacting coffee REDLANDS We re also seeing extra diseases increasing and being able to go up into those areas We re already seeing some of those pests increasing their range and we re already seeing higher temperatures affecting production and productivity

CONCERNS FOR FARMERS DEPENDING ON CROPS It s also affecting productivity because the higher temperatures are affecting both the physical and mental health of those that are working on the coffee plantations Mr Connor said Ms Olson said small changes in the climate could dramatically affect farmers coffee crops Our concern is primarily for the 25 million farmers out there whose entire livelihoods depend on this incredibly important global commodity she said These are among the most marginalised and poor communities in the world They typically live on less than 2 per day and mostly have less than an acre of land on which they are growing their crops HOW WILL CLIMATE CHANGE IMPACT COFFEE DRINKERS Mr Connor said the cost and quality of coffee was likely to pay the price of inaction on climate change For Australians wanting to drink their coffee it s going to choke up supply lines we could see higher prices as well as challenges of getting the coffee itself but flavour and quality is likely to be impacted as well he said REDLANDS Mr Connor said some coffee organisations had recognised climate change s threat introducing climate neutral offerings People should have a look around ask about what s going on with their coffee and are the people producing it paying attention to this issue he said But of course it also comes back to calling on Governments and companies to take action on climate change Because we ve got to build a new economy that doesn t threaten things in our lifestyle such as our coffee By Josephine Asher

Flavour Innovation The Alchemy Cordial Way What a pleasure to write a piece for the inaugural issue of Gobble and Gulp two of my favourite pastimes as it happens Here at Alchemy we have always been Obsessed with flavour and we love creating delicious natural products that delight our customers For more than 20 years we have been making our all natural cordials for grown ups our coffee syrups and our Chai elixirs We are also very fortunate in that we get to visit lots of cafes across Australia and to talk at length with the owners and staff about what is going on at their place and their wider community What we noticed in the market place is that things have changed rapidly in recent years and that the pace of change is only accelerating New food trends are spreading rapidly on instagram and facebook and restaurants and cafes that ignore this do so at their peril Consider the 18 month Freakshow milkshake phenomenon where a caf in Canberra started serving milkshakes topped with cake drizzled with cream syrup nuts and fairy floss Customers saw them photographed them and in weeks they were popping up in cafes everywhere Fortunately this trend appears to be relatively short lived or maybe that more accurately describes the life span of the consumers Other trends however show far more traction and longevity and one that we have embraced fully at Alchemy is the Superfood Latte These products do not have coffee in them but they look like and deliver a similar flavour experience to customers who are looking for a healthy wellness drink option REDLANDS I live on a farm where among other things we grow turmeric and for years we have grated this and made it into an anti inflammatory cordial that also happens to be delicious That recipe however was impossible to scale or to put into functional caf use so we set the task to create a turmeric based drink that a caf could easily use to make a delicious wellness drink 18 months and many iterations later we launched the Golden Turmeric Elixir at the Fine Food show in Melbourne to rapturous response We had caf owners who were trying to make their own relieved and delighted by the flavour functionality and ease of use Health food shops took it on and our superfood latte product was off and running We have added the Golden Turmeric Elixir to the range of drinks available at the Alchemy Cleveland Market stall so feel free to drop by there for a taste any Sunday Most of the caf customers we met when introducing the product around Australia asked us if we also had or could do a Matcha drink Matcha is a Japanese style of tea where the tea leaves which are shade grown to concentrate the goodness in the leaves are picked and then finely ground into a powder which is painstakingly whisked into hot water The resultant drink is very good for you but a bit of an acquired taste so once again our team started working on this challenge We wanted to make it primarily as a drink to be added to hot milk we wanted it to deliver the functional benefits of the original matcha to be broadly appealing to the Australian palate and most importantly to be made with a premium high grade regional matcha tea

BE PART OF REDUCING LOCAL FOOD WASTE Redland City Council is partnering with Griffith University to develop a unique social marketing campaign to reduce the amount of food waste that goes in local bins Redland City Mayor Karen Williams said the Waste Not Want Not campaign was designed to show residents how they can reduce the amount of food they waste The average Australian household throws away over 1 000 worth of food every year and locally about a quarter of what goes in our bins is food waste equating to 9 400 tonnes or about 1 175 waste collection trucks full of food wasted every year she said This food waste costs the city money and impacts the wider environment with much of it going to landfill turning into methane and greenhouse gas emissions campaign goals are to help the Redlands community make the most of what is already in their fridge The program includes a short online survey for residents to take so we can understand what foods we are working with she said Once Griffith University s survey results are collected and final preparations completed a series of community activities will be rolled out across the city to help reduce food waste save money and the environment These activities will include a series of events like cooking demonstrations at local shopping centres to show residents how they can use leftover food to make their next meal This partnership with Griffith University is designed to change local behaviours by showing residents how to reduce and reuse food waste We are really excited about the pilot campaign Imagine making spaghetti and meatballs using your leftover pizza It is ideas such as these will help us to reduce considerable food waste in households throughout the Redlands every year Social Marketing Griffith s Director Professor Sharyn Rundle Thiele said the pilot social marketing Used with the permission of Redland City Council REDLANDS

EATING OUT Gluten Free Style Living with coeliac disease does not have to mean an end to eating out Many restaurants now have gluten free options available Below are a few suggestions to help you when dining out To assist the hospitality industry to provide gluten free options that are actually free from gluten Coeliac Australia developed a Gluten Free Standard for food service providers This standard outlines the best practice for gluten free food preparation A Gluten Free Accreditation Program for food service providers has also been launched Choose restaurants that are Accredited by Coeliac Australia You can be confident when you see the Coeliac Australia gluten free symbol that these businesses prepare gluten free food using the best practice guidelines All restaurants that are licenced to use their gluten free symbol have undergone an in depth document review of all their practices passed an onsite audit provided laboratory testing results to show no detectable gluten in their gluten free menu items and provided proof of staff training CHOOSING A RESTAURANT Their members have access to the Member Referred Restaurant Directory in the Members Area of each state website that provides a list of restaurants shared by other members after having a great dining experience These restaurants are not accredited or endorsed by Coeliac Australia nor does Coeliac Australia guarantee that they have procedures in place to prevent cross contamination If you know which restaurant you will be going to try to research ahead of time Many have their menus listed on their website If there are no gluten free options marked on the menu it may be worthwhile giving the restaurant a call to see if they have a separate gluten free menu or whether they can alter some of their menu options to make them gluten free When phoning ahead try to call at a time when staff are less likely to be busy perhaps between lunch and dinner You may even be able to speak to the chef directly and explain your requirements Always include your requirement for a gluten free meal due to coeliac disease when making a booking This not only alerts the kitchen staff but highlights your request as not being a lifestyle choice REDLANDS

ON ARRIVAL AND WHEN ORDERING Politely explain to the waiter that you require a gluten free diet as you have coeliac disease and ask if they can explain the gluten free options to you Use the Catering Gluten Free card and leave one with the wait staff Be realistic with your expectations it is highly unlikely that everything on the menu will be gluten free particularly items that contain bread and pasta or are crumbed or marinated Although some restaurants now offer gluten free versions so you may be pleasantly surprised Be the last person to place your order so your request is more likely to be remembered DIFFERENT CUISINES Some cuisines offer a large selection of naturally gluten free dishes Take the opportunity to explore different cultures As always the ingredients and processes differ from restaurant to restaurant so always ask if the dishes are gluten free Try Thai Mexican Vietnamese Indian 29 29

REMEMBER If you don t feel confident about the responses you are receiving try another restaurant Be prepared to sometimes have to pay more as often it does cost more for restaurants to provide gluten free alternatives This may be owing to purchasing separate equipment for gluten free food preparation or the increased cost of the gluten free ingredients from their supplier If something doesn t seem right don t just assume it is gluten free question it For example if you have ordered soup as a meal and it comes served with crusty bread on the side double check that the bread is gluten free Alternatively if you have ordered a cake at a caf and it is sprinkled with icing sugar check that the icing sugar is gluten free And lastly if you had a great gluten free experience take the time to thank the chef Article by Coeliac Australia REDLANDS
