I just want to be cozy in my home, snuggled up on my blue velvet couch. Luckily, that is exactly what i get to do these days. With the weather this cold, the season is here for velvet! To me, velvet says winter! It is an uber luxurious and glamorous way to proclaim the season. Velvet is an extremely soft fabric which has a very rich look to it. It reminds me of royalty. A red velvet cupcake is known for its decadence and rich deliciousness. Like its cupcake counterpart, velvet fabric (in any shade, not just red) is just that- decadent and richly delicious. It is a decorating necessity to add some velvet into your home during the months of December-February. The cold weather demands it. Your home needs a dash of velvet to lend it the air of dignity and beauty that heralds with the winter coldness. So how can you bring the velvet home? 1. Velvet throw pillows! So very easy and so very available everywhere. Just look for a soft velvet pillow in a color that appeals to you. 2. Velvet sofa! So this one costs just a little bit more money than a pillow, but there is nothing as sumptuous as a velvet sofa! Am I right, or am I right?! A velvet sofa is plush and inviting and welcomes you to snuggle up in style. Hello long winter nights! 3. Velvet accent chair! If you want to inject more velvet than just a throw pillow, but are wary to throw away your brand new non-velvet couch, then this middle road is for you! An accent chair in velvet will do enough for your space to warm it up and make it truly beautiful. Go for a solid velvet or a patterned velvet. Those are just three of my good ideas to help you in your velvet endeavors. But velvet is truly everywhere! You may be in home goods this week and stumble upon the most gorgeous velvet accessory, and then feel compelled to buy it because of this compelling article. NUTRITION &YOU ALL ABOUT OILS Latkas, donuts, menorahs…OIL IS ON OUR MINDS. Visit the cooking oil aisle of your grocery and you will ind many types of oil from nuts, seeds, fruits and vegetables. Each oil has distinct lavors and properties that makes it a great addition to your cooking repertoire. In general, plant oils are a great source of monounsaturated (MUFAs) and polyunsaturated fatty acids (PUFAs). When used in place of saturated fats, these heart healthy fats may help reduce the risk of heart disease and stroke. MUFAs and PUFAs have been found to improve LDL cholesterol (bad cholesterol), lower blood pressure and reduce in lammation. Plant oils also provide essential nutrients such as vitamin E to help build and maintain cells. Let’s discover the various uses and bene its of an assortment of healthy oils. Canola oil: Both low in saturated fat and high in MUFAs and PUFAs, including omega3s, canola oil is light lavored making it a versatile ingredient. Replace solid fats such as butter or margarine with canola oil for a healthier alternative when cooking or baking. Canola oil works well for sautéing and stir frying, and for coating pots or the grill in order to prevent sticking. Olive oil: Olive oil is high in MUFAs and is a staple in the Mediterranean diet. Numerous studies have found that olive oil reduces the risk of cardiovascular disease. Extra virgin olive oil has less acid, a fruitier lavor, and a stronger aroma than pure or virgin olive oil. Olive oil labeled as “light” is often lighter in color and lavor, but not in calories. Use olive oil in dressings, sautés, for dipping, and to fry vegetables and meat. Flaxseed oil: Containing both omega-6 and omega-9 essential fatty acids, heart healthy laxseed oil is often advised as a vegetarian alternative to ish oil. Flaxseed oil has a low smoke point so it’s not ideal for cooking. Instead, it may be enjoyed drizzled over quinoa or combined with herbs and vinegar to make a salad dressing. Sesame oil: Sesame oil is rich in MUFAs and PUFAs and is typically used in Asian cuisines. It has a sweet, nutty lavor. Toasted sesame seed oil has a more intense lavor and aroma. Drizzle it over an Asian cabbage slaw and sprinkle on some black sesame seeds for a perfect salad. Coconut oil: Coconut oil is a saturated fat with a sweet taste, which is extracted from mature coconuts. Pure virgin coconut oil, containing no hydrogenation (the process of adding hydrogen to make a liquid fat hard), contains 92% saturated fat - the highest amount of saturated fat of any fat. So remember, coconut oil, like all saturated fats, should be limited to 7-10% of calories because it can increase your risk for heart disease, according to the 2010 Dietary Guidelines. Virgin coconut oil is high in lauric acid, a medium-chain fatty acid. Preliminary studies show that lauric acid may have a bene icial effect on your body’s cholesterol levels. Most saturated fats are solid at room temperature and are found in animal products, such as meat and dairy, and they contain cholesterol. However, unlike animal fats, coconut oil is a saturated fat that can be solid, semi-solid, or liquid at room temperature and does not contain cholesterol. Therefore, many health conscious bakers are now substituting coconut oil for shortening or butter. Additionally, vegans may use coconut oil in place of butter as well. www.fivetownslink.com DEALING WITH EAR INFECTIONS After all, diagnosing ear infections is one of the most important skills a pediatrician has to acquire...I was shocked to ind out that at least 50% of my patients ear infections did not respond to anitbiotics." David Elazar Simai, M.D. Diagnosing ear infections in Pediatrics is fairly simple. Properly treating ear infections, is in my opinion an art. I remember the overwhelming excitement I experienced when I diagnosed my irst ear infection. It was at approximately 9pm, I was a irst year pediatric resident at the now Cohen’s Children’s Hospital. My mentor Dr. Shoshana Wind was the attending in charge of the Urgi-Center at the hospital. She was instrumental in teaching many residents how to stop pretending they see ear infections and actually realize what they were staring at in those narrow ear canals. I was so proud of myself and felt I was doing such a service to the parents of an 18 month old girl who had cold symptoms and fever for a few hours. After conirming what I saw was actually a true ear infection, we discharged the patient with a prescription for amoxicillin and asked the parents to schedule a recheck with their pediatrician in 2 weeks. In the next two years, this euphoria repeated itself numerous times. After all, diagnosing ear infections is one of the most important skills a pediatrician has to acquire. I felt that I was able to diagnose these infections “in my sleep”. However, once I started working in private practice and had the luxury of actually rechecking ear infections after just 2 weeks, that euphoria completely dissipated. I was shocked to ind out that at least 50% of my patients ear infections did not respond to antibiotics. The accepted teaching at the time was that if the irst antibiotic fails, try a stronger one next. This too, was not effective. Merely six months into my practice, I decided to be cavalier and try a new approach. I used this approach when a child presented with a clear cut ear infection but did not appear to be in severe pain or about to rupture the ear drum. I would give the mother a prescription for an antibiotic, but would ask her to wait 24-48 hours before giving the antibiotics to the child. In that period, I suggested the mom was to ensure the child is comfortable by using analgesics (pain medicines) Tylenol or Motrin by mouth or ear drops containing topical analgesics. The mom was only asked to start the antibiotics if the child’s condition worsened in 1-2 days. What I found was amazing. Roughly 75% of the patients healed on their own. And more shockingly was the fact that their ears looked just as clear as the patients that were treated with antibiotics. To top it all off, the kids who did not get antibiotics did not have as many subsequent ear infections!! The best part of this story is that avoiding antibiotic use also prevents the unnecessary side effects that all antibiotics have: diarrhea, subsequent fungal diaper rash and the occasional allergic reaction to antibiotics, not to mention the risk of losing helpful bacterial lora in the gut. Currently researchers are discovering the protective value of the normal gut bacteria. Furthermore using antibiotics at a young age destroys the growth of bacteria and may increase chances of allergies and asthma. Practicing medicine offers abundant opportunities to get excited. When it comes to ear infections however, I traded in the excitement of diagnosing ear infections with the excitement of properly diagnosing ear infections. Today, I take special pride when I review a medicine log of an 18 month old patient who never took antibiotics. Yes, sometimes because of this approach I may spend more time reassuring and educating nervous parents, often in the late hours of the night. But in turn, I am able to sleep better, knowing that my patients are not victims of the wave of “defensive medicine” and antibiotic overuse. In the next issue, I will continue with the topic of ear infections that do warrant prompt antibiotic use. www.fivetownslink.com CLEAN EATING Oven Fried Yucca Latkes Ingredients: For the Latkes: 1 Yukon Gold potato, peeled 1 red onion, peeled 2 large yucca roots, peeled 2 eggs 1/2 cup spelt flour 1/2 cup Grapeseed oil For the Mango Jam: 2 mangos, peeled and diced 1 ounce champagne vinegar 2 ounces agave syrup Directions: Step 1: To make the mango jam: In a medium sauce pan, heat the mangos, vinegar, and syrup until soft and all liquid is evaporated. Using a stick blender, blend until smooth. Let cool and set aside. Step 2: To make latkes: Preheat the oven to 425˚ F. Line two large, heavy rimmed baking sheets with heavy-duty foil. Step 3: Using the grating attachment, grate the potatoes, onions, and yucca separately in a Food Processor. Using a colander, squeeze all the excess liquid out of the grated vegetables. Step 4: Combine the potato, yucca, and onion mixture with eggs and flour in a mixing bowl, incorporating completely. Step 5: Pour ½ cup oil onto each baking sheet, spreading it with a spatula. With a fork, scoop 12 small latkes onto each baking sheet, pressing to flatten into disks. Step 6: Bake the latkes until crisp on the bottom and sizzling, about 12 minutes. Flip the latkes, rotating the pans from back to front and top to bottom, and bake until crisp on the second side, about 8 more minutes. Transfer to a cooling rack lined with paper towels or paper bags, drain briefly, and immediately season with salt. Step 7: To serve: Top each latke with a dollop of jam and serve immediately. Yucca root, also sometimes spelled "yuca," is known by the names manioc and cassava. Native to South America, this starchy tuber is eaten throughout Latin America, South Asia, the Caribbean and Africa. Used to make tapioca flour, yucca has a texture a little chewier than the potato and a milder taste. After receiving her master’s degree in nutrition from Brooklyn College, Berg interned at Brooklyn Hospital Center where she focused on outpatient clinics as well as counseled clients in the areas of weight loss, nutrition related diseases, and bariatric surgery. She also specialized in Cardiac Pulmonary Care, prescribing tube feedings and specialized diets. Once she completed her internship, Berg worked at Resort Nursing Home in Far Rockaway before moving to her current part-time job with PSCH, a company which provides services for mentally ill residences throughout Long Island. Berg does private counseling as well. Read the interview below to learn more about Berg and nutrition, and be sure to check out her column in this issue of The Five Towns Link. Elana Dure: What about the ield of nutrition interested you? Leah Berg: I always loved food, cooking and baking. I knew that I wanted to do something in that ield. As a nutritionist, I also have the added bene it to help people at the same time, whether it’s with weight loss or nutrition related diseases. ED: What would you say is your favorite part about the job? LB: So many times people associate healthy eating with bad food. They think that dieting is such a terrible, daunting task. It’s so enlightening to help people see that dieting does not have to be such a dreaded undertaking and that healthy food really can be delicious. ED: So would you say the biggest misconception about nutrition is related to dieting? LB: Yes, de initely. People think that dieting has to be so hard and that they have to eat terrible foods, but there are so many delicious, healthy foods out there. You don’t even have to go to the health food stores. You can just take the regular foods that you are used to eating and change them into healthy foods. For example, my irst article for The Five Towns Link was about healthy substitutions and how you could change small things in your regular cooking and baking to make it healthier. ED: That is really interesting. Would you say there is a particular diet that is best for people to follow? LB: No, I de initely do not think that there is a one-size- its-all diet. Every person is different and every person’s diet is different. That’s why a nutritionist is so important. We try to take your exact situation—your likes, your dislikes, what has worked for you in the past, and what has not worked for you—and try to make up a diet that is tailor-made for you. ED: Which foods would you say are the best for people to eat? LB: If I would have to pick a certain group of foods I would say fruits and vegetables. They are illed with crucial vitamins and minerals and they are illed with much needed iber. But of course, you cannot live solely on fruits and vegetables. ED: On a different note, what are some commonly asked questions from clients? LB: A lot of people ask if they should go carbfree, which I am de initely not a believer of. I believe in eating a little bit from each food group. Also, many people ask if exercise is necessary when dieting, and the answer is yes, they go hand in hand. In order to lose weight, you need to burn more calories than you consume. That being said, the best way to burn calories is through exercise. LB: I de initely enjoy working in private counseling more than working in a nursing home. I see the most change when I’m doing private counseling and I get to work one on one with the clients. I get to experience their journeys with them, and I see how happy they are once they reach their goals. ED: How would you describe your counseling style? LB: I try to make it as individualized as possible for each client. Each person is different; what they eat and their style of eating. I try to really personalize the session for each client and it it to their lifestyle. ED: Do you think that this makes it more of a challenge at times? LB: It de initely makes it more of a challenge. It’s different than working in a nursing home or hospital where I simply ill out forms about each client based on looking at their charts. Instead, I sit down with the clients and igure out what they should be eating. It’s not something I can really prepare so much in advance before meeting with the client, because I want to work with each person and try to put the foods that they like into a diet plan in order to make it a healthier version of what they are used to. ED: How do you keep up with the changing science of nutrition since it evolves from year to year? LB: I’m constantly reading up on articles and different websites. To keep my nutrition license, I have to get these Continuing Professional Education Units (CPEU). It almost forces me to go to different seminars and read different articles in order to keep current in the ield. You’re NOT Alone Linda also suffered from Mental Illness.
