YOU ARE BOOTH #: 109 Please remember all alcohol for use during SAVOR Milwaukee has been paid for by the Milwaukee Journal Sentinel! (This is due to the way the liquor license is set up). Please send Kayla the first and last name of who will be responsible for checking out and in the alcohol for your booth! This will be the only person allowed to do so during the event and we will be checking for identification. Saturday night, please leave all of the product at your table at the end of the day so you are ready to go Sunday morning! DO NOT leave opened bottles on top of the table when you leave your exhibit space. We have had problems with attendees taking product from tables, so be sure everything is secured or draped with a table cloth, or stashed below the tables before you leave! On Sunday at the conclusion of the show your booth staff MUST return all remaining inventory open & or unopened to the Alcohol Inventory area. NO bottles opened or unopened are to be left on top of the tables, left in your booth space or taken from the WI Center. We need ALL bottles to be returned for us to inventory! We are asking for exhibitors to stop all alcohol sampling at 4:45 on Saturday & 3:45 on Sunday We will make an announcement over the intercom system at these times. This will give you time to clear tables of all open and unopened inventory before 5:00 when the show closes. 8

The use of routers, switches / hubs, DHCP, wireless LANs or other applications that allow the sharing of an IP address between multiple devices is PROHIBITED unless approved by the Wisconsin Center District Information Technology Department. Individuals in violation of this policy will be subject to the DISCONNECTION of their service • Wireless (Wi-Fi) Internet (Limitations and vulnerabilities): Wireless service is NOT for Mission-Critical uses and the Wisconsin Center District (WCD) cannot guarantee it will work for these uses, such as; the Registration area, Presenters and Exhibitors doing demonstrations with internet service. These services should definitely use WIRED internet connections. Wireless service is vulnerable to interference from other devices that transmit similar radio signals. WCD cannot guarantee that interference will not occur. For this reason, if a Client would like to use any of their own Access points (AP’s), router, hubs, etc. They must be pre-approved by the WCD IT Staff, at least 21 days in advance of the Event. Otherwise, they could cause conflicts in the Client’s own event, other Client’s events or the Convention Center’s own Network. Any damage and expenses caused by this would be turned over to the Client using unauthorized equipment. WCD has a large amount of Internet bandwidth for Wi-Fi use, but the actual maximum bandwidth available depends on how many users are using the Internet at the same time, at any given moment. Refunds will not be given for service issues found not to be the fault of WCD (such as using Wi-Fi for Mission-Critical uses listed above or misuse of the system).

Food Shows in Wisconsin Center District: Exhibit Halls In-House Caterer Special contracts with the in house caterer are required for all food shows when food is being prepared, distributed and/or cooked within Wisconsin Center District facilities or grounds. Fire Extinguishers When cooking, a fire extinguisher must be readily available within the booth. Exhibitors using heated oil or grease for cooking or any other purpose must be in attendance of this equipment at all times when in operation and must have a type “K” fire extinguisher present during the operation. Fire code prohibits the use of any “B” type extinguisher for the purpose of extinguishing a heated cooking oil or grease fire. Canopy / Tent The largest canopy size allowed on the exhibit hall floor for non-porous covering tent material is 600 sq ft. The two canopies need to be separated with a 10 ft aisle in-between them. You can use warmers or sterno's to heat food, provided you have at least 2 - 10 lb 'K" fire extinguisher per 600 sq ft area. Again, for general use 1- 10lb "ABC" fire extinguisher for every 100 sq ft. There is to be no cooking under the canopy. Example: (2) 20 x 30 canopies. No permit will be needed with the city. The Canopy / Tent has 3 or 4 open sides. The Canopy fabric needs to be perforated or porous, as not to obstruct fire sprinkler protection, made of flame-resistant material or treated with a flame retardant in accordance with NFPA 701. The City of Milwaukee Building Inspection Department requires such Canopied booths to be equipped with portable fire extinguishers. For general use, bring in 1 - 10 lb "ABC" Fire extinguisher per each 10 x 10 area. For cooking, only under a canopy with porous material, bring in 1 - 10 lb "K" Fire extinguisher per each stove. Flame Grills Depending upon available space, flame grills can be used for cooking outside of the exhibit hall on the MAC Loading Dock. Dock space needs to be arranged in advance with your Event Manager. Gas Stoves If gas stoves are being used, keep in mind that gas is available in the exhibit hall columns only. Animals No animals near food and cooking areas. Cooking Equipment Please notify Event Managers of cooking appliances that will be brought into the facility. An evaluation will be made according to the quantity involved and what other events may be taking place at the same time. * * * Preferred cooking methods: Electrical appliances and sterno hot plates. Cooking equipment should be placed on a non-combustible surface. Cooking equipment must be installed at a minimum distance of 4 feet (1.2 m) 1 of 3

Food Shows in Wisconsin Center District: Exhibit Halls * * * from visitors. Cooking equipment must be at a minimum distance of 2 feet (0.6 m) from all combustible materials or any other cooking device. Only fryers with an airtight cover are permitted. However, you are required to submit a model of the equipment concerned for approval to your Event Manager. Open fryers are not permitted, because there is no way to recover the grease and oil vapours. No portable cooking equipment using charcoal, wood charcoal, gas, propane or butane can be used inside the Exhibit Hall. Cooking Preparation Any cooking in a booth will require a special event permit and a sink in the booth. If you require a sink in your booth, sink must be connected to hot and cold potable water and drain system. WCD does not supply Hot Water heaters. Sample booths that do not have a sink in the booth must have the food cooked and/or portioned in an onsite commissary kitchen. This food is then delivered to the booth by “runners”. Food Storage Adequate refrigeration must be provided for all perishable food. A central walk-in refrigerator or reefer truck must be available to the booths. The event organizer should also provide a commissary area (complete with sinks) for any food storage or preparation. Ice for product display should also be readily available. Sinks * Sinks designated for hand washing and/or cleaning must be provided with an adequate supply of hot and cold running water. * The booth must be located in close proximity to sinks and washrooms for hand washing and cleaning purposes. Water and Sewer Each sampling booth must have access to an approved hand washing station with paper towels, and liquid soap. Waste water must be disposed of into a sanitary sewer Grease pit areas will be set up specifically for each event. Any waste water or grease disposed of in the bathrooms causing preventative maintenance will be billable to event organizer. Booth Equipment Hot holding units must be provided in booths which are storing cooked perishable foods. These units must be capable of maintaining a temperature of 140°F or 60°C. These units are only for holding the food at proper temperatures – not for cooking. The food must be a minimum of 140°F or 60°C when placed in these units. A mechanical refrigerator is required in each booth that is serving perishable food. The refrigerator must be capable of maintaining a temperature of 40°F or 4°C. Ice is for product display only. Food Display * Food area surfaces to be smooth, impervious and crack free. All food display tables should be covered in vinyl tablecloths. * Unwrapped food samples that are put on trays, must be placed in a single layer. Small trays should be used to ensure a quick turnover time. Samples 2 of 3
