REDEFINING CATERING
roomforty approaches catering from a non-

the standard catering model, we prefer to
close the gap between the great restaurant
experience and the catered format.

meets modern glamour.

create community around commerce.
C ATERING
We found it ironic that while ne dining may
be enjoyed any day of the week, a milestone
occasion requiring catering could mean settling
for mediocrity.
And so, a pioneer in Los Angeles’ food culture
was born. roomforty was created as “a restaurant
without walls”, meaning that we approach
catering with intention, inspired equally by the
Michelin Starred restaurants of France and the
warmth of an intimate dinner party.
From memorable food to impeccable service
to immaculate presentation, the heightened
experience of communal dining is at our core.
Whether casual or formal, intimate or sizable,
we bring warmth and attention to every detail,
ensuring that your guests are treated to a truly
luxurious experience.
Relentless in our commitment to excellence,
our goal is to ensure that your special event is
remembered as just that: incredibly special.

A UNIQUE APPROACH
The roomforty approach to extraordinary dining is what distinguishes us from
other caterers—and connects us to the great restaurants of the world.
Our approach is both ambitious and surprisingly simple.
And yet, its a challenge we grow more passionate about every day.
If hiring a caterer for your special event feels a bit daunting, these four benchmarks are
critical to us and will help determine the best approach for you and your guests.
The Fig House is a bespoke event venue nestled
between downtown Los Angeles and Pasadena,
in the heart of burgeoning Highland Park.
Open to private events, outdoor weddings and
receptions, exhibitions, productions, corporate
and private parties, The Fig House is an indoor/
outdoor event venue that transports you to a
place where mid-century California meets lush
landscaping, and modern glamour.
The Fig House was founded by Steve Fortunato as the rst venue within The
Hospitality Collaborative.
During the construction process, Steve Fortunato worked with HGTV design expert,
Emily Henderson, to transform and curate the space. The venue is a contemporary
spin on art-deco with a nod to the rich history of Highland Park. The artisan, stained-
glass windows by Judson Studios, are a tribute to Hollywood glamour. Farrow &
Ball paint and wallpaper selections illuminate the property with bold and decadent
personality.
The outdoor garden, designed by SALT features the perfect space for outdoor
ceremonies, dinners, cocktail parties and client experiences. The Fig House is
transformable, and presents a unique point of view, by way of design, to exist as is
or to be specically curated by our clients to meet the aesthetic of any event.
The Fig House will accomodate parties of up to 250 guests for a seated dinner
and up to 450 guests for standing cocktail parties. Its layout also has the ability
to allow an intimate ambiance for smaller parties under 100 guests.
We created The Fig House for hanging out, having fun, making memories, (and
you know, as the perfect Instagram backdrop). We hope you’ll love it as much as
we do.

STEVE FORTUNATO, founder + CEO
For Steve Fortunato, the meal has always been the
center point of community. Growing up, the kitchen
table was where his family gathered, as well as the
beginning of Fortunato’s journey in hospitality.
His passion for creating memorable meals and
moments, combined with his vision of hospitality,
sets him apart in the industry by strides.
Fortunato has based his career on the philosophy
that there is a difference between great service and
great hospitality - and that to be successful, you need
both. Fortunato believes service is a technicality, a
delivery of the product, while hospitality is dened
by the way the service feels. By tying in intuitive,
emotional and sensory characteristics, Fortunato’s
business has grown to the highest caliber that
continues to rise with every enterprise.
As a California native and graduate of Pepperdine University, Fortunato has worked
in hospitality since the age of 14, with over 25 years of serving experience. Fortunato
embraced hospitality as a long-term journey and began hosting dinner parties which
led to his pop-up dinners— the news of which spread quickly, thanks to the food
After 19 years in the business and a six-year stint with Los Angeles’ Patina Group, Fortunato
set out on his own to “redene the hospitality industry. After launching the catering
company roomforty, Fortunato opened the event venue The Fig House. Realizing that more
opportunities to expand his philosophy of hospitality were presenting themselves, he then
formed the parent company, Hospitality Collaborative. With an emphasis on catering, venue
development, venue management and event stafng, Fortunato brings a fresh experience to
the world of hospitality and special events.
Fortunato’s leadership has given his employees a platform to explore the connection of
community and hospitality. To achieve their level of success, the Hospitality Collaborative
team works to capture and honor the gathering of communities at the highest level of
attention to detail. Fortunato’s foundation and philosophy for his businesses begins and ends
with a connection - a connection to being vulnerable and nurturing, that allows his guests to
be their most authentic selves.
For years, Fortunato hired Pharmacie, an elevated beverage catering company, to handle
their beverage services. Pharmacie’s founder, Talmadge Lowe, shares the same vision and
passion for hospitality as Fortunato. Over time, as Fortunato’s vision grew for creating a
hospitality organization that had multiple components, it made sense to explore bringing
Pharmacie under Hospitality Collaborative, where Fortunato and Lowe eventually became
partners in Pharmacie.
Fortunato brings a passion to elevate and redene event hospitality and has been trusted
to serve a range of high prole clients from President Bill Clinton to Jay-Z, numerous
A-list celebrities, industry leading executives and exclusive Southern California weddings.
Fortunato was voted Pasadena Magazine’s Top Forty Under 40 in 2009, and in the same year
PAUL BUCK, director of operations
Paul Buck has always believed that building teams around
compelling values, commitment and hard work delivers
superior results.
Buck was immediately lured into the hospitality world
during his childhood. He spent the summers with his family
near the lake in upstate New York, and was enticed by the
communal and ever changing atmosphere of the nearby
hotels and resorts. He began working as soon as he could,
from cooking and serving, to recreational and social director.
Fast forward 35 years, and Buck has become a leader in the industry. He joins Hospitality
Collaborative as Director of Operations with unparalleled industry experience, from Director
of Operations for Union Square Hospitality Group in New York, to most recently the former
COO for the Patina Restaurant Group. While at Patina, Buck managed west coast hospitality
operations including restaurants, cafes and catering at nine cultural centers throughout
California. He also managed Patina Catering in Los Angeles.
His signicant work experience in management, strategic planning and execution, client
relations, nancial management, project management and contract negotiations has moved
the industry forward to new heights.
Buck couldn’t resist teaming up with Fortunato due to his impressive blend and solid top
talent who have adopted his core values. He admires how current and relevant Hospitality
Collaborative is, and is excited about the healthy pool of opportunities on the horizon.
LIBRY DARUSMAN, executive chef
Chef Libry Darusman joined the roomforty team
in the summer of 2010 as Executive Chef. Like
most chefs, Darusman genuinely loves food—
like few chefs, Darusman genuinely enjoys
people.
This combination, coupled with his experience,
innovation and passion for the culinary arts has
made him what Fortunato describes “the best
Chef I have ever worked with”.
Born and raised in Bavaria, Germany, Darusman
came to the states as a teenager and spent
his formative culinary years working with
renowned chefs Theo Schoenegger of Sinatra
and Patina, and Mark Gold of EVA. Overseeing
the pasta program at Wynn’s Encore Restaurant,
Sinatra, Darusman has truly mastered the art of
homemade pastas.
Blending his European background with
experience at some of the Wests best
restaurants, Darusman brings classic French
technique, rened presentation and detailed
attention to his eclectic, global cuisine.
TALMADGE LOWE, Pharmacie Events
Take the expertise of making signature cocktails, stir in the
mindset of discovering new and fresh ideas, and add in a touch
of southern hospitality: that is Talmadge Lowe.
Lowe has always believed in incorporating the southern
gentleman thinking in both his business and his life: work hard,
have respect, and always continue to grow and learn.
The door to Lowe’s considerable career opened in New York as a
bartender, where he mastered the art-form of creating cocktails
at the famous Orso Restaurant.
In 2002, Lowe packed his bags and headed to Los Angeles to
pursue his hobby. He gained invaluable experience by working
at The Kitchen For Exploring Foods, running Akasha Restaurant’s
catering department, and operating at Joan’s on Third as Director
of Events.
After years of experimenting and learning from the best, Lowe
was ready to begin his role as a creative entrepreneur. After
being one of the founders of the catering company Heirloom
LA, Lowe started an underground roving speakeasy called
Pharmacie.
The news of the cutting edge idea spread fast, which led Lowe to open it as a business after only three years. The
successful project began to open new doors, which led to the current and thriving partnership with Steve Fortunato
of Hospitality Collaborative.
Lowe believes a crucial part of hospitality is the relief and relaxation you get in having a delectable cocktail while in
great company. Hospitality Collaborative has given Lowe the opportunity to embrace his fresh ideas and discover a
new world of the cultural cocktail phenomenon.
