Yechiel moved to the US from Belgium 7 years ago and later chose the Five Towns as his new home town. As a wine connoisseur, Yechiel partakes in many wine tastings and events . He has expert knowledge about the varieties and compositions of wines, and shared some of his knowledge with the 5 Towns Link staff. He lives in Far Rockaway with his wife and three-year-old daughter. Elana Dure: How did you irst get involved in the wine industry? Yechiel Denciger: My wife’s grandmother is the only kosher wine distributor in Canada. I used to work at her for a while. That’s how I got into the whole wine industry. In the beginning, I did sales only. Now, I expanded to tasting notes and wine ratings. ED: What is an important thing about wine that people may not know? YD: A very important thing is the glass you drink the wine in. Most people don't know that every grape variety has a unique size glass assigned to it. Also, it's very important to smell the wine. Every wine, and every grape, has its own uniqueness. The smelling of the wine is 50 percent of what you are going to taste. If you just taste the wine and you don’t smell it, you’re not going to enjoy it half as much. Use your wildest imagination to smell it. Some people smell berries, and some people smell earth. Every person smells something else, and in different grapes, different things. white wine, lies is the skin of the grape. To get a red color wine, the skin is left on for a little bit and the wine becomes red. If the grape has a deeper redness, the wine is going to be darker. White wine is made by immediately seperating the skin from the juice. There are also rosés, pink wines, where the skin is left on for a short period and then it is taken off. This gives it that pinkish color. ED: Which wine do you think is better? YD: I can’t really answer this question because everyone likes something else. There was a big wine taster, his name was Daniel Rogov, and he was once asked, “Mr. Rogov, what’s the best wine that you ever tried in your life?” and he said, “The best wine for a person is the wine that he likes.” In the summer I prefer a cold rosé or a cold white because it’s more refreshing to drink, and in the winter I de initely prefer a nice dry cabernet, a nice dry pinot noir or a syrah. ED: What is the difference between dry and sweet wine? YD: Dry wine is made by picking the grapes when it comes the time of harvest. For a sweet wine or late harvest wine, the grapes are left on the tree to harvest later. The longer the grapes stay on the tree, the sweeter they are. ED: Do wines taste different based on where the grape was grown? YD: De initely. Wine has a lot to do with the soil of where it’s grown. Let’s take, for example, Bordeaux. Bordeaux has very heavy soil and that gives the wine a richer taste. But when you smell the wine, you are going to smell earthiness and less fruit. Take a wine from Israel, where the climate is hotter, you will smell more fruit, sometimes even like a fruit punch. ED: What is the difference between red and white wine? YD: The difference between a red wine and a ED: What country do you think produces better valued wine? Twenty years ago, if you wanted a good kosher wine, the only good thing you had was Manischewitz. Today in Israel, I think there is about 300 boutique wineries. ED: What tips would you give people who were going to their irst wine tasting? If there is one thing they should remember to do, what would you say it should be? YD: Okay, number one is not to drink the wine, to spit it out. ED: When you go to the wine tasting, what do you think are the best questions to ask the winemakers? YD: Every year there is what we call vintage years and non-vintage years. In a vintage year, the bottle will be more expensive because there was enough rain and sun for the grapes to grow and give out amazing wine. In a non-vintage year, the grapes did not have such great elements causing the wine to be less expensive. So when you go, you should ask the winemaker how the harvest was, if it was a vintage year. You should also tell the wine taster what you are looking for in a wine- whether its full bodied, medium, spicy, fruity or earthy. ED: Why is that? YD: Because if you are going to drink everything, after a while your taste buds are going to get numb. Number two, is to swirl the wine in your mouth. Let the whole tongue feel the wine and spit it out after ten seconds. Also, eat a cracker in between every few wines you drink to clear the palate. Clearing the palate will help you taste the next wine much better. ED: What is your favorite thing about working in the wine business? YD: I get to socialize with a lot of people—a lot of wine lovers—about wine, and, every wine has its own story and I love listening to the stories. Have old clothes? ive ‘em a second chance! There is something to be said about a deep, dark brown dining room, and i am going to say it: dining rooms are more glamorous when painted chocolate brown! Oh, chocolate! I don't think it really needs explaining. You all know how you feel before, during and after eating chocolate. Chocolate is an experience. That luxurious feeling which envelops you while eating a chocolate truf le or even a simple hershey's bar does not happen after eating a yellow banana! A banana is so plain, so natural, so good for you, so sensible. Chocolate is its polar opposite: so rich, so divine, so delicious, so fattening, and so so wrong for you! So, if i were to ask you to choose one color to surround yourself with as you eat all of your food, including those ghastly peas, wouldn't you only want it to be chocolate, chocolate, chocolate brown? A chocolate painted dining room sets a mood. It evokes deliciousness. It is an invitation for a great time! What could possibly be a better stage for that ive course meal that you just prepared? People will want to stay in that dining room, swimming in its dark coziness, enjoying your peas, which for some odd reason, will taste a bit like chocolate themselves! I want you to take a good and honest look at your dining room right now. What is it that you see? White? Beige? Taupe? Goodness, cream? Do those colors do anything for you at all? You are limiting yourself with your choice of paint color, peoples! You will never be able to host a fabulous dinner party. How could you? Your dining room is boring and generic and expected. Your guests are not intrigued. You are not intrigued. You need to please their senses and provide them with something worth oohing and aahing over, over and over and over again! www.fivetownslink.com ALLERGY TIPS Each season brings its own, unique blend of allergens into the air. The fall brings three dominant allergens: Ragweed, Dust Mites and Molds. David Elazar Simai, M.D. The incidence of allergies is de initely on the rise, there are several theories that explain this fact. The “Hygiene Theory” claims that our generation is “too clean” and since our immune system is not constantly bombarded with a “healthy dose of germs”, our immune mechanism shifts to a more allergic mode. Being that allergies are de initely on the minds of many parents today, I wanted to share some useful information with you from a publication of the American Academy of Pediatrics. WHEN TO SUSPECT AN ALLERGY • Repeated or chronic cold-like symptoms that last more than a week or two, or develop at about the same time every year. These could include a runny nose, nasal stuf iness, sneezing, throat clearing, and itchy, watery eyes. • Recurrent coughing, wheezing, chest tightness, dif iculty breathing, and other respiratory symptoms may be a sign of asthma. Coughing may be an isolated symptom; symptoms that increase at night or with exercise are suspicious for asthma. • Recurrent red, itchy, dry, sometime scaly rashes in the creases of the elbows and/or knees, or on the back of the neck, buttocks, wrists, or ankles. • Symptoms that occur repeatedly after eating a particular food that may include hives, swelling, gagging, coughing or wheezing, vomiting or signi icant abdominal pain. • Itching or tingling sensations in the mouth, throat and/or ears during certain times of year or after eating certain foods. Common Allergies on the Home Front • Dust mites (dust mites are microscopic and are found in bedding, upholstered furniture and carpet as well as other places) • Furred animal allergens (dogs, cats, guinea pigs, gerbils, rabbits, etc.) • Pest allergens (cockroaches, mice, rats) • Pollen (trees, grasses, weeds) • Molds and fungi (including molds too small to be seen with the naked eye) • Foods (cow's milk, eggs, peanuts, tree nuts, soy, wheat, ish and shell ish) HOW TO MANAGE ALLERGIC NASAL SYMPTOMS • Nasal allergy symptoms can be caused by a variety of environmental allergens including indoor allergens such as dust mites, pets, and pests as well as outdoor allergens such as pollens. Molds, which can be found indoors and outdoors, can also trigger nasal allergy symptoms. • Allergy testing should be performed to determine what, if any, of these environmental allergens your child is allergic to. An important step in managing allergy symptoms is avoidance of the allergens that trigger the symptoms. • If your child is allergic to pets, the addition of pets to your family would not be recommended. If your child has allergy symptoms and is allergic to a pet that lives with your family, the only way to have a signi icant impact on your child’s exposure to pet allergens is to ind the pet a new home. • If your child is allergic to pests, professional extermination, sealing holes and cracks that serve as entry points for pests, storing foods in plastic containers with lids and meticulous clean up of food remains can help to eliminate the pests and reduce allergen levels. • Dust mites congregate where moisture is retained and food for them (human skin scales) is plentiful. They are especially numerous in bedding, upholstered furniture, and rugs. Padded furnishings such as mattresses, box springs, and pillows should be encased in allergen-proof, zipup covers, which are available through catalogs and specialized retailers. If you set your water heater higher than 120 degrees, the recommended temperature to avoid accidental scald burns, take care if young children are present in the home.) • Dehumidify - If your child is allergic to outdoor allergens, it can be helpful to use air conditioners when possible. Showering or bathing at the end of the day to remove allergens from body surfaces and hair can also be helpful. For patients with grass pollen allergy, remaining indoors when grass is mowed and avoiding playing in ields of tall grass may be helpful. Children with allergies to molds should avoid playing in piles of dead leaves in the fall. MEDICATIONS TO CONTROL SYMPTOMS Your child's allergy treatment should start with your pediatrician, who may refer you to a pediatric allergy specialist for additional evaluations and treatments. • Antihistamines – Ones taken by mouth can help with itchy watery eyes, runny nose and sneezing, as well as itchy skin and hives. Some types may cause drowsiness. • Nasal Corticosteroids - Highly effective for allergy symptom control and are widely used to stop chronic symptoms. Safe to use in children over long periods of time. Must be used daily. • Allergy Immunotherapy - Immunotherapy, or allergy shots, may be recommended to reduce your child's allergy symptoms. Allergy shots are only prescribed in patients with con irmed allergy. If allergen avoidance and medications are not successful, allergy shots for treatment of respiratory allergies to pollen, dust mites, cat and dog dander, and outdoor molds can help decrease the need for daily medication. • Vitamin C – studies have shown that Vitamin C aids in preventing and treating allergy symptoms. • Peppermint Tea – has natural anti-bacterial and anti-histaminic properties. • Wasabi - Anyone who has taken too big a dollop of wasabi (or plain old horseradish) knows that it makes sinuses and tear ducts spring into action. Here's a little experiment: the next time your neighborhood gets a dusting of fresh snow, go take a look around. Some roofs will hold the snow and some will melt it from underneath. The snowy roof is a sign of a well-insulated roof because it means the heat is not escaping. 2. Close off unused rooms. Shutting doors means you'll only heat the rooms you use most often. Close vents in unused rooms, too. On the other hand, do heat the basement -- even if you don't go down there much. A cold basement will make the 3. Set the thermostat back to 55 degrees or off at night or when leaving home for an extended time, saving 5-20 percent of your heating costs. www.fivetownslink.com CLEAN EATING Creamy Pesto Pasta Ingredients: Directions: Leaves from 2 bunch fresh basil 2 tablespoons pine nuts, untoasted 1 garlic clove 1/2 cup extra-virgin olive oil 1/2 cup freshly grated Parmigiano-Reggiano Salt and freshly ground black pepper 1 pound spelt or buckwheat pasta Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again. Cook the pasta in the boiling, salted water until al dente.
