www.fivetownslink.com CLEAN EATING The Best Crockpot Beef Stew Ingredients: 2 pounds beef stew meat, (cut into bite-sized pieces) 1 tsp salt 1 tsp pepper 1 medium onion, finely chopped 2 celery ribs, sliced 2 tomatoes, diced 2-3 cloves of garlic, minced 6 oz. can tomato paste 32 oz. beef broth 2 cups sliced carrots 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups) 1 tablespoon dried parsley 1 teaspoon oregano 1/4 cup white spelt flour 1/4 cup water Directions: 1. Combine beef, celery, tomatoes, carrots, red onion, potatoes, salt, pepper, garlic, parsley, oregano, beef broth, and tomato paste in the crock pot. 2. Cook on LOW for 10 hours or on HIGH for 6-7 hours. 3. About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. www.fivetownslink.com HOW TO MANAGE CROUP? Children with croup will have the usual symptoms of a cold (i.e. runny nose, fever and increased mucus production) along with a characteristic barky cough. David Elazar Simai, M.D. This week, I wanted to share with you some information about a common illness that affects infants and young children – Croup. Although usually croup resolves on its own, about 5-10% of children affected by it require hospitalization. As a pediatric resident at Cohen Children’s Hospital, I vividly remember croup as one of the most frequent reasons for late night and early morning visits to the Emergency Room. WHAT IS CROUP? Croup is a viral disease of the upper respiratory tract. It is caused by several different viruses such as Respiratory Syncytial Virus (RSV), In luenza and Para-In luenza Viruses, Adenovirus and Rhino Virus. Children with croup will have the usual symptoms of a cold (i.e. runny nose, fever and increased mucus production) along with a characteristic barky cough. HOW TO DEAL WITH CROUP? When your child wakes you up with a croupy cough, irst and foremost try and assess their breathing. If they appear to be gasping for air – call for medical help immediately!!! As a word of caution, if your child has a heart condition or a very high fever, they may not be able to handle any of the following solutions. You should call your physician and ask for help. If they are not gasping for air but do have a barky cough, you have a few options: Steam Shower – turn on the hot water in the shower and make the bathroom nice and steamy. Hold your child there for 10-15 minutes. Do not worry about taking them out from a warm shower to a cooler room. Usually, the steam shower will alleviate most “croupy” coughs. A Stroll Outside – if you feel your neighborhood is safe, take your child for a quick stroll outside. Otherwise, you could take them for a car ride and leave the windows open. Many times, parents bring their child to the emergency room and frantically describe how horrible their child’s croup is. However, by the time we observe the child, they are already better. The dramatic improvement is to the credit of the car ride – the humid air in the car cured the croup. The Croup Paradox – even though hot steam works to treat croup, the opposite also works. Holding the child next to an open freezer for a few minutes. Personally, I have never tried this one with my kids but this is an accepted method by many parents and physicians alike. Why it works? The cool vapor makes it easier for the child to breath. Prevention - if you hear your child’s cough during the daytime, assume that the cough will be significantly worse at night. Why? Because the air is much drier and hence more irritating to the child. Therefore, I often suggest leaving the bedroom’s window open an inch or two or using a cool mist humidifier overnight. WILL MY CHILD DEVELOP CROUP AGAIN? The answer is- most likely yes. Most children develop croup until the age of 3-4 years old. As long as the child’s airways are narrow and soft the above mentioned viruses will cause significant swelling that will result in Croup. At 3 years of age, the airways harden and widen enough to withstand the viral swelling. There are always exceptions however. I have per- sonally witnessed several kids that were older then 8 years old and required hospitalizations for Croup. Also, premature infants or infants that were intubated have extra sensitive upper airways and may develop croup for longer periods. If your child develops croup repeatedly, your physician may decide to prescribe a rescue medicine that will quickly reduce the swelling in your child’s upper airways and save you the trip to the emergency room. two offending viruses present in the air. NUTRITION &YOU YOUR GUIDE TO PORTION CONTROL In the age of super sizing, it’s easy to misjudge proper portion sizes. Over the years, portion size has gotten bigger, and so have many of our waistlines! With bigger food portions come additional calories and consuming extra calories can lead to obesity, diabetes, heart disease and even some cancers. A simple way to start being healthier is to choose to eat a little less. When you choose less, you will weigh less. Learning what a portion size actually is and eating that amount can be tricky. Here is a list of some simple guidelines to help you gauge just how many servings you are actually eating. First, let’s look at the grains. The usual serving size of cereal lakes is one cup. Instead of actually tak- ing a cup and measuring, think of the size of a baseball or two palms cupped together. To meet the serving size of ½ cup of cooked rice or pasta, imagine the size of the round part of a light bulb or one cupped palm. When eating a slice of bread, it should be no bigger than a cassette tape, and half of a bagel is equal to one serving. For protein, a serving size is generally 3 oz. When eating lean meat, chicken, or tofu, a 3 oz serving would be equal to the size of a deck of cards. With ish, however, imagine the size of a checkbook to meet the 3 oz serving. One serving of cooked dry beans is ½ cup, which equals the size of the round part of a light bulb. A serving of peanut butter or hummus is 2 tablespoons, which is comparable to a golf ball. Although we are told that almonds are healthy for us, keep in mind that a serving is only 1 oz, which is a mere handful of 23 almonds. When choosing yogurt or milk, a serving is 1 cup, which again corresponds to a baseball. However, when eating frozen yogurt, cottage cheese, pudding or ice cream, ½ cup will be your serving size. Lastly, a serving of cheese is 1 oz, which measures up to 3 stacked dice, a tube of lipstick, or your thumb. When looking at fruits and vegetables, 1 medium fruit and 1 cup of leafy salad is one serving size and should be equivalent to the size of a baseball. When eating cut up fruit or vegetables, whether they’re raw, cooked, canned, or frozen, ½ cup will be your serving size. ½ cup of 100% fruit or vegetable juice is also equal to one serving. A 1 cup serving of grapes measures about 32 grapes and 1 cup of strawberries is approximately 8 berries. When having a baked potato, it should be no larger than the size of a computer mouse. Lastly, when measuring fats and oils, 1 tablespoon corresponds to one serving size. Therefore, when enjoying oil, mayonnaise, salad dressing or butter, limit your helping to the size of a poker chip. Dietary recommendations are often given in servings. For example the USDA suggests we consume 4 daily servings of vegetables, 3 servings of fruits, 2-3 servings of dairy, 2 servings of meat/ poultry/ ish/ beans/ eggs/ or nuts, and 6-11 servings of grains, varying depending on age and sex. Now with these simple equivalencies to help remember serving sizes and a vivid imagination, we can try to get on the right path for the long winter ahead. www.fivetownslink.com Individuals in our Community Miriam Dure Miriam Dure is the owner of Savvy Sheek, a women’s clothing and accessories boutique on Central Avenue. In mid-November, the store will move locations to Cedarhurst Avenue. Dure considers Savvy Sheek a “one stop shop for all your clothing needs” and explained that her goal was to bring a colorful and lively store to the Five Towns area. Dure, who currently lives in Woodmere with her husband and three children, is proud of her accomplishment and hopes to see her work grow in the future. Read more to learn about Dure and her experience as a local business owner. Natasha Rudney: What inspired you to open a clothing store on Central Avenue? Miriam Dure: That’s a bit of an interesting story. I dabbled with [retail] in the past. I had a booth in a lea market and I sold some gifts from my house at one point. I enjoyed this kind of atmosphere. My other business , in a completely different ield, was downsizing so I knew I was going to have some time to do something else. A friend of mine who I went to college with 20 years ago moved back from out of town. We got together and decided to do the business; I was going to take care of the business end and she was going handle the retail end of things. We ended up going our separate ways, but that’s basically how Savvy Sheek started it. NR: Where did your interest in retail come from? Was it something you always wanted to do? MD: No, actually I thought I was going to go into the medical ield. I started school with nursing and I inished with ultrasound. When I was done with the course and started doing my training in the hospital, I realized that wasn’t really the ield I wanted to do. NR: So if you didn’t major in business, how did you know the logistics of starting a store? Did you have any business experience in the past? MD: I had no formal business training. I actually learned a lot of my business skills when I worked as an accounts receivable and payables administrator for a bread distribution company. After that, I ran another home business. I did all the administrative work and learned a lot from that. NR: What about retail attracts you to the ield? MD: I like talking to people and associating with people. That’s why I went into retail. I enjoy the customers, I enjoy helping them, and I enjoy the smiles on their faces when they are happy with their clothing purchases. It’s just such a good feeling to know that I am helping someone. NR: What are some challenges you faced with the business? MD: It’s very hard to run every aspect of the business. I do the administration, the bookkeeping, the buying, and the merchandising. I basically have to run it all so that can be very challenging. Also, sometimes if a worker can’t come to work I’ll have to cover for her. As good as the workers are, I’m still the one left to hold down the fort, so sometimes it gets challenging. NR: What is your favorite part of the job? MD: My favorite part of the job is having people buy the clothing and enjoy the clothing. It’s just the best feeling in the world. I’ve gotten a lot of positive feedback. It’s a really good feeling to know that my hard work is worth it because it puts a smile on someone’s face. NR: Did anything surprise you about the store? MD: Every now and then I get an out it in and I think to myself, “Oh my gosh, nobody’s going to buy this,” and the next day three people buy it. It’s interesting to see the dynamic of what stays and what goes because sometimes the thing you expect to sell the least sells out the quickest. Restaurants do well here, but the main clothing district is in Cedarhurst. NR: Looking back, what do you attribute your success to? MD: I don’t know if I’d consider myself a success, but I don’t give up easily. I just keep pushing. There are some days when you sit in the store and there are no customers. It does get stressful and worrisome, but I think positively and I hope for a better day. I just keep going. I think not giving up and being strong and independent in the business world is a strength. Thank God I’m not afraid to talk people [chuckle]. I try to give out one coupon a day to a stranger. I don’t have a problem with self-publication. Wherever I go, I tell people about the business and hopefully, God willing, it will do its job. NR: Do you have any advice for aspiring storeowners or business owners? MD: I can certainly say don’t give up. If this is a dream of yours, you have to make it work. We’ve had struggles, every business has their own struggles, and different things come along. If this is what you really want, you just have to push through it, move ahead and do it. NR: How did you get your strength to push past the struggles? MD: Well, sometimes things get tough, but unfortunately there is so much going on in this world that is so much worse than my struggles and my challenges. All I have to do is listen to the news for ive seconds and I’m already inspired to do my best. Because unfortunately this world is full of so many tzaros. www.fivetownslink.com VIVA ATHOME From Farm to Table I had been looking for new tablecloths for my dining room and kitchen tables for a while now. I wanted something with a pattern to liven up my beige, bare and blah dining room walls. The tablecloth only cost me $35.00! When I got home I sent a picture of the tablecloth to my friend, and guess what? She had bought the same fabric to use for a skirt! This is why we are friends. A tablecloth in a great print can really spice up a room and make it POP! (see picture 1) The tablecloth is AMAZING because 1) spills just bubble up and do not get absorbed. I clean it off with water or Windex, and the cow’s spots stay intact! And 2) it is cow print! (When animal prints go out of style I will have to redecorate my whole apartment). So when I saw faux animal skin tablecloths at my friend’s home a few weeks ago, I just had to have some for myself. They were so chic and expensive looking! I got mine at Beautiful Fabrics, located on Flatbush Avenue in Brooklyn. They have a huge selection of fabrics, (see picture 2) and they cut them to size. Their fabrics run from $12.99 a yard to $14.99 a yard. Very affordable! (Please excuse the poor photography). I chose this cow print for my dining room table. Cows make so much good possible (think ice cream, grilled cheese and hamburgers). Really, it’s the least I can do to honor them in this way. (see picture 3 & 4) Go get yourself over to Beautiful Fabrics and snag one of these pets for your table! It will make your apartment SO CHIC! And please let me know which one gave you puppy eyes and came home with you! Since I forgot about my kitchen table, I had to return to Brooklyn the next day and buy this metallic alligator baby for $25.00. She makes me so happy!
