Pork and apple stew
Serves 4
Ingredients
1 tablespoon of oil
1 large onion
1 garlic clove
3 carrots
2 apples
450g diced pork
500ml low salt vegetable stock (2 tsp
powder)
3tablespoons cornflour
1 teaspoon dried thyme or mixed
herbs
Black pepper to taste

Method
1. Prepare ingredients:
Peel and dice the onion
Peel or wash the carrots, and slice
Cut the apple into quarters, remove the core and slice thinly. Place in a bowl of
water to stop browning.
2. Heat the oil in a saucepan, add the onions and cook over a medium heat until
soft.
3. Crush the garlic into the pan, add the pork and cook for 5 minutes, stirring
regularly.
4. Add the carrots, vegetable stock, herbs and black pepper. Drain the apple and
add to the saucepan. Stir well.
5. Bring to a simmer, cover and cook for 30-40 minutes, stir regularly.
6. Once the stew has cooked put the cornflour in a jug or cup, add 6 tablespoons of
water and mix until completely smooth, it should look like milk. Pour it in to the stew
and immediately stir until thickened.
Top Tips
Babies 6 months+- mix stew with potato or rice before serving. Chop, mash or blend as
needed.
Vegetarians- replace the pork with butterbeans or Quorn.
Storage – keep in the fridge for up to 2 days. Freeze for up to 2 months and defrost
overnight in the fridge.
Reheating – bring to a simmer in a saucepan for 5 mins or microwave a portion for 5
mins, stir.
