Pork and apple stew
1 tablespoon of oil
1 large onion
1 garlic clove
450g diced pork
500ml low salt vegetable stock (2 tsp
1 teaspoon dried thyme or mixed
Black pepper to taste
Peel and dice the onion
Peel or wash the carrots, and slice
Cut the apple into quarters, remove the core and slice thinly

water to stop browning.
Heat the oil in a saucepan, add the onions and cook ov
er a medium heat until
Crush the garlic into the pan, add the pork and cook for 5 minutes, st
Add the carrots, vegetable stock, herbs and black pepper
. Drain the apple and
add to the saucepan. Stir well.
Bring to a simmer
, cover and cook for 30-40 minutes, stir regularly
Once the stew has cooked put the cornflour in a jug or cup, add 6 tab
water and mix until completely smooth, it should look like milk. P

and immediately stir until thickened.
